The fresh flowers and baby lambs are in the fields and the weather is getting warmer. Spring is a great time of year for local produce, try your hand at making some of these recipes with Dorset’s freshest, seasonal ingredients.

BROCCOLI AND CHEESE TARTS Perfect for a spring dinner party or as part of a vegetarian Easter lunch.

Spring Recipes

Ingredients:

• 12 spears of purple sprouting broccoli • 2tbsp olive oil • 2 shallots • 3 large eggs • Yolks of 2 additional eggs • 250ml double cream • 150g grated cheese • 35g cream cheese • Salad leaves to serve • Mini pastry cases if you don’t fancy making your own

If you’re making your own pastry, you’ll need: • 300g plain flour • 120g butter • 2 tbsp ice cold water Pick up the cheese of your choice from one of the suppliers on page 9 This works best with a Wensleydale style cheese but pick whatever one suits your taste. You can pick up cream from page 10 and the rest of your ingredients at markets or delis.

Method: 1. If you’re making your own pastry, you will need to start with this. Cube the butter add it with the flour to a bowl and rub together until you have a mixture that resembles bread crumbs. Add the water to form a dough and tip out onto a floured surface. Knead it briefly, shape it into a disc and put in the fridge for around 15 minutes. 2. Preheat the oven to 200c. 3. If you’ve made your own pastry, get it out of the fridge, otherwise, prepare your premade cases. Roll it out on a floured surface to around the thickness of a pound coin and put into individual tins. Chill for another ten minutes. 4. Line each pastry base with baking paper and fill with beans or rice and blind bake for fifteen minutes, take out and remove the paper and beans and return to the oven for a further ten minutes until golden. Take out and leave on the side. Reduce the oven to 180c. 5. While you’re cooking the pastry, blanch the broccoli in salted water and boil for three minutes, drain and then refresh in ice cold water. 6. Slice the shallots and gently fry in oil for 10 minutes until soft and golden. 7. Whisk the eggs, the yolks, cream, cheese and cream cheese in a jug and season. Divide the shallots equally among the cases. Break the broccoli into smaller florets and divide these between the cases and then pour over the egg mix making sure there is an even amount in each one. 8. Bake in the oven for 25 minutes until golden and just set. 9. Allow to cool at room temperature for a few minutes before taking them from the tins and then cool thoroughly before serving with a side salad.


ROAST LAMB This is the traditional Easter dish, but this version uses Dorset lamb and is lighter than the usual.

Ingredients:

Method:

• 2 onions • 2 carrots • Boneless leg of lamb • 4 garlic cloves • 2 tbsp olive oil • If you want to serve with vegetables, we recommend:

1. Start by getting the oven nice and hot, heat it to 220c.

• 800g baby carrots • 500g broad beans • 600g peas Use the best Dorset lamb for this recipe, see page 16 or visit one of the region’s butchers. The veg can be picked up all over the county as part of your usual shop and you can find local olive oil on page 15.

2. Peel and thickly slice the onions, carrots and garlic. Put the onion and carrots into a large roasting tray with the lamb, with any excess fat removed, on top, skin side up. Pierce the lamb with the tip of a sharp knife and poke the garlic slices into the holes. Rub the lamb with olive oil and season to your taste and then pour 100ml water into the tray. 3. Roast uncovered for 45 minutes in the top of the oven. Depending on whether you like your meat medium or well done, you can either take it out at 45 minutes or leave for a further 15 minutes. When you’ve finished cooking the lamb, rest it under foil for ten minutes while you cook the accompanying veg. 4. Bring a large pan of water to the boil and add the carrots. Cook for around 8 minutes before adding the peas and beans. Cook for a further two minutes, drain the veg and toss with a small amount of oil. 5. Carve the lamb into thin slices and serve with the veg for a healthier alternative to the traditional Easter roast.

STEWED RHUBARB Rhubarb comes into season in April, try this with some delicious Dorset cream or custard.

Ingredients: • • • • •

500g fresh slender rhubarb 15g caster sugar Juice from one orange 2 star anise 1 cinnamon stick

Rhubarb grows in gardens and farmyards all over Dorset and you can get it at farm shops and delis or from small holdings. Serve it with Dorset cream or custard, you can find places to get cream on page 10.

Method: 1. Trim and cut the rhubarb and put it into a saucepan with the sugar, orange juice, star anise and cinnamon. Cover with a lid and bring a gentle simmer. 2. Stir once then recover and cook over a very low heat for about 5-7 or until the rhubarb is softened but still holding its shape. 3. Serve warm with cream or custard.

BRAISED CHICKEN AND TOMATOES

A quick and simple, light casserole style dish giving you plenty of time for enjoying the sunshine.

Ingredients: • • • • • • • • • • •

2 tbsp olive oil 3 shallots 4 chicken legs 300ml chicken stock 2 large garlic cloves 400g cherry tomatoes 400g cannellini beans 1 green chilli 175g polenta 85g cheese Knob of butter

You can pick up olive oil from Dorset suppliers, check page 15. Get your chicken from one of our local, free range farmers, see page 16 and your cheese from page 9. You can pick up the other ingredients locally too.

Method: 1. Preheat your oven to 190c and while it is warming up, finely slice your shallots. Heat half the oil in a shallow casserole dish over a low heat and add the shallots until they are soft, take them out of the pan and leave aside. 2. Season the chicken to your taste, turn up the heat and add them to the pan with the remaining oil making sure they are browned all over. 3. Put the shallots back in the dish and pour over the stock. Peel the garlic but leave whole and add these as well as the tomatoes and beans. Finely slice the chilli and add this. 4. Bring the mix to the boil and then cover and put in the oven for half an hour checking that the chicken is cooked through. Uncover and cook for a further ten minutes so the sauce reduces. 5. While the casserole is cooking, prepare the polenta according to the instructions on the packet. Season generously, remove from the heat and stir through grated cheese and butter. Serve the polenta with the chicken on top and enjoy!


GRIDDLED HALLOUMI WITH SALAD Sample some of Dorset’s local halloumi with this light lunch.

Ingredients:

Method:

1. Cube the watermelon and finely slice the shallots, place both in a bowl and add 4tbsp of olive oil and the balsamic vinegar. Cover and put in the fridge for around 20 minutes.

300g halloumi 2 small shallots 100ml olive oil 4tsp balsamic vinegar 750g watermelon Juice of one lemon Breadcrumbs/ crutons.

If you want to make your own crutons or breadcrumbs, try this: • 75g slightly stale bread • 1-2 cloves garlic • ½ chilli

2. Heat the remaining oil in a pan and fry the breadcrumbs until golden. If you’d like to make your own, remove the crust from slightly stale bread and blitz. Alternatively, cut into small squares and fry for crutons. While the bread is frying, finely chop the garlic, half, de-seed and chop the chilli and add to the heat to give the bread some flavour. Remove from the heat and leave to the side. 3. Slice the halloumi and brush each piece with a little oil, heat a griddle pan and cook the cheese on both sides until it is just starting to melt, but still holding its shape. 4. Remove the watermelon from the fridge and toss to make sure the oil is evenly distributed. Divide the salad into servings, place the halloumi on top, squeeze over the juice of one lemon and add the crutons or breadcrumbs. Serve immediately.

If you’re making your own breadcrumbs or crutons for the salad, you can pick up bread from any number of bakers on page 6 and if you’re following our suggested cruton/breadcrumb recipe, chillis and garlic are also available locally.

GIN AND TONIC ICE LOLLIES A naughty and refreshing treat for the grown-ups with a splash of Dorset gin!

Ingredients: • • • • •

6 slices of cucumber 6 mint leaves 75ml gin 250ml tonic 50g caster sugar

Dorset has a great many gin producers in a variety of flavours, use either plain gin or something flavoured to make these, you can find a range of distillers of page 41. Alternatively, if you don’t fancy making your own, you could always buy similar ice lollies from one of the ice cream, lolly and sorbet producers in the region!

Method: 1. Slice the cucumber and push into a lolly mould with a mint leaf. 2. In a jug, stir the gin, tonic and sugar together until the sugar is completely dissolved and the tonic loses its fizz. Divide the liquid between the moulds, this should make 6 lollies, and freeze for up to four hours.

AUBERGINE AND LENTIL BAKE Enjoy this seasonal veg dish for something a little different.

Autumn Recipes

For a tasty, healthy option that the whole family, meat eaters included, will enjoy, give this aubergine and lentil bake a try. The dish is naturally gluten free and you can make substitutions to make it vegan or dairy free if need be.

Ingredients: • • • • • •

2 aubergines 3 tbsp olive oil 140g lentils 2 onions 3 garlic cloves 300g cooked butternut squash • 400g chopped tomatoes • 125g ball of mozzarella You can easily pick up locally grown aubergines and squashes all over the county, stock up at your next visit to a local farmers’ market or shop. Find locally produced mozzarella and other cheeses on page 9 and any oils on page 15.

Method: 1. Cook and prepare the squash as your starting point. Chop the squash into chunks and either boil or roast, depending on your preference. Once cooked, set aside for later. 2. Heat the oven to 200-220c. 3. Cut the aubergines lengthways into ½ cm sliced, brush both sides of each slice with the oil and lay on baking sheets. Season to your taste and bake them for 20 minutes, turning half way through until tender. 4. While this is cooking, prepare the lentils according to the instructions on the packaging. 5. Add the remaining oil to a large frying pan and heat. 6. Finely chop the onions and garlic, add them to the heated oil and cook until soft. Add the cooked squash and the chopped tomatoes and stir through with a little water, half fill the tin from your tomatoes and use that. 7. Simmer for 15 minutes until the sauce as thickened before adding the lentils. 8. Spoon a layer of lentils into a baking dish, top with aubergine and continue layering with aubergine being the top layer. Scatter your mozzarella over the top and bake for 15 minutes until the cheese is golden.


ROAST GROUSE WITH RED WINE GRAVY Tantalise your taste buds with this gamey dish. Why not make a change this autumn and instead of eating the same old meats, try something a little different with this dish. Grouse is delightful at this time of year, especially when covered in a rich gravy made with locally produced red wine. Try serving it with seasonal veg or a good hearty dollop of mash.

1. Heat your oven to around 200c, put the fat in a roasting tin and pop it in the oven to heat up.

100g goose or duck fat 2 whole grouse 300ml red wine 1 garlic clove 300ml chicken stock ½ tbsp redcurrant jelly.

Find grouse on page 16, you can ask for it to come prepared with the feathers and innards removed to make it a little easier for you! Dorset produced red wine can be found on page 38 and you can easily pick up your other ingredients at butchers and at local shops and delis.

2. While the fat is warming, you can season the birds, make sure to do this all over and when the fat is searing hot, put them in the tin breast side down and roast for 20 minutes. 3. Take them from the oven and rest them on a plate covered with a parchment while you make the gravy. 4. Firstly, pour off most of the fat, but keep the juices from the grouse in the tin and place it on the hob on a high heat. Smash the garlic cloves and add with the wine and cook for five minutes until it has reduced by around half and then pour in the stock and bubble until the gravy has a syrupy consistency. Stir in the redcurrant jelly, take out the remaining garlic and season to your taste. 5. Put a grouse on each plate and pour over the gravy, you can then serve with the side of your choice, including vegetables, potatoes or salad – whatever you like!

APPLE AND BLACKBERRY CRUMBLE Dorset apples and a buttery crumble, perfect for autumn evenings. Apples and Blackberries start appearing everywhere during the autumn months and this sharp, sweet, buttery dish makes a wonderful sweet for the whole family. Why not get the kids involved and go out picking blackberries and then making it together?

1. Pre heat the over to 190c and start on the crumble topping.

For the crumble 120g plain flour 60g caster sugar 60g butter

For the fruit filling: • • • • •

300g apples 30g butter 30g demerara sugar 115g blackberries ¼ tsp cinnamon

2. Cut 60g butter into cubes and place in a bowl with the flour. Using your fingertips, rub together to create a light breadcrumb texture. Put this aside. 3. For the filling, peel, core and cut the apples into roughly 2cm chunks. 4. Put the butter and sugar in a medium pan and melt together, cook until it becomes a light caramel. Stir in the apple slices and cook for 3 minutes, add the blackberries and cinnamon and cook for around another 3 minutes. 5. Spoon the fruit mix into an oven proof dish and sprinkle the crumble mix over the top until covered. Bake for up to 20 minutes and serve warm, with perhaps a custard or a nice ice cream!

We all know that no one does cider quite like the breweries of Dorset, so if you have any left over from the autumn harvest, use it to create this tasty twist on a classic soup, perfect for keeping you warm during the winter months.

30g butter 2 onions 3 garlic cloves 100ml cider 1 potato 450ml stock 50ml double cream

Flick through to our cider producers on page 35 to find the best cider for your recipe and to page 10 for some inspiration for where to get your cream and butter. Pick up your veg for this recipe at one of the many farm shops and farmers’ markets across the county. A full list of year’s farmers’ markets can be found on page 22.

Method: 1. Start by heating the butter in a saucepan, while it is melting, peel and slice the onions, the potato and the garlic cloves. Add the onions and cook for around 10 mins or until soft and golden, add the garlic and heat for a further minute. 2. Pour the cider into the pan and add the potato and any seasoning, such as thyme or other herbs and simmer. 3. After simmering for around 2 minutes, stir in the stock and the cream and bring to the boil. 4. Once boiled, continue to simmer for around fifteen minutes and transfer the mixture to a blender. Blitz until smooth. 5. Serve straight away or store it in a fridge/freezer until you’re ready to eat. Why not serve with some freshly baked bread from one of Dorset’s many bakeries? WINTER GREENS PIE A comforting meal for meat eaters and vegetarians alike. Vegetarians like comfort food during the winter too and this recipe can be easily adapted to make it gluten free or vegan should you need it. Ideal for the whole family or for dinner parties, this is a great way of getting everyone to eat healthy greens while feeling full and warm during the winter months.

Ingredients: For the filling

For the pastry

• 1 tbsp olive oil

• 225g plain flour

• 1 onion

• 250g butter – cold but not hard, or use half butter half lard if you like.

• 2 garlic cloves • 1 tea spoon of nutmeg • 400g mixed winter greens – you can choose what you like best, but kale, spinach and other leafy greens from this season will work well. Take a look at page 24 to see what is in season. • 300g mascarpone, use a dairy free version or leave out if you want to make this vegan. • 30g grated cheese (use a dairy free option if you want to make this dairy free.) • ½ lemon

• 150ml ice cold water. • Or use pre-made pastry, you will need around 320g. • 1 egg to glaze – optional. You can get oil for this recipe from Dorset suppliers, check page 15, you can also speak to our Dorset cheesemongers about cheese options, see page 9. Pick up your greens, veg and spices from farm shops or a local farmers’ market.

Method: 1. If you’re planning to make your own pastry, do this first. The pastry will need to be chilled for an hour before cooking, or you can make it the day before and leave it in the fridge. A pre made pastry can be kept in the fridge or a cool place until it is needed. 2. To make the pastry start by sifting the flour into a large mixing bowl and then put this in the fridge for a few minutes, the trick to puff pastry is layers, so everything will need to be very cold! 3. While you’re chilling the flour, cut the butter into small cubes and add it into the flour. Use a round bladed knife to stir the butter around the bowl until each one is covered in flour. Pour the water and then working quickly, use the knife to bring it together into a rough dough. 4. Wrap the dough in cling film and chill in the fridge for fifteen minutes or so. 5. Lightly flour a worktop and then the pastry and roll it out into a square, fold the bottom third up and the top third down. You will need to repeat this around four times. Chill for an hour before using or overnight if you like. 6. Once the pastry is chilling or if you’ve decided to get a pre-made roll, you can get started on the rest of the pie. 7. Pre-heat the oven to 200 degrees and while its heating up prepare the veg. Chop the onion and crush the garlic cloves. 8. Add the oil to a large saucepan and heat, add in the onion and gently fry until soft. Stir in the garlic and nutmeg and cook for a few minutes then add the greens with a splash of water until wilted. Stir in the mascarpone or cheese alternative, the grated cheese and the juice of half a lemon. Stir the mixture well. 9. Get the pastry and roll it out until its about the thickness of a £1 coin, you can either use it just to top the pie or encase the veg – it’s up to you. Add the filling and cover the pastry however you want, you can decorate with a lattice design, crimp the edges, or just leave it as it is. 10. Seal the pastry to the edge of the pie dish. 11. If you want a golden brown top, glaze with a beaten egg, but this is optional. 12. Bake the pie for 35 minutes until it is risen and golden, allow to cool for around ten minutes before serving.

5 Dorset dishes you have to try! Dorset is home to some of the very best high quality produce and some of the tastiest traditional dishes in the UK. Take a look at five traditional Dorset dishes that you absolutely have to try!

DORSET APPLE CAKE As if anyone is coming to Dorset and not grabbing a delicious slice of apple cake from the first café they come to! Dorset apples are well known for being sweet and tangy, that’s where we get all that amazing cider from after all. You’ll find a whole host of varieties of Dorset Apple Cake all across the county but one thing remains the same – they all feature locally grown apples and they are all delicious. Make sure to order a slice and add a hearty dollop of local clotted cream!

DORSET HORN If you’re a lover of lamb, you won’t want to miss out on Dorset Horn. This lamb dish is so tender it literally melts in your mouth. You’ll find versions in restaurants and eateries all over or if you fancy making your own version at home, you can buy cuts from local butches, farmers’ markets and food events.

PORTLAND PUDDING A pudding fit for a King! That’s not a lie, this is also known as Royal Pudding and was a firm favourite of King George III who would regularly visit Dorset and stay at the Portland Arms where he would always order their house special, the Portland Pudding. Simply put, this is a rich pudding made with dried fruit and candied peel similar to a steamed pudding and is served with a sweet sauce.

DORSET BLUE VINNEY WITH DORSET KNOB This very special cheese has been awarded Protected Geographical Status so only cheese made in Dorset can use the name. It’s a crumbly, firm cheese that goes brilliantly a top a Dorset Knob. These crispy, savoury biscuits are made from bread dough and have been produced by the same producer for over 100 years. There is a regular Dorset Knob Throwing Festival to celebrate it where you can take part in a range of knob themed activities! The next one takes place in 2021.

LOCAL SEAFOOD Is it cheating to lump all the region’s seafood in together? Probably, but there are so many tantalising dishes on menus all over the county and with the abundance of coastline offering some of the freshest seafood and fish in the UK, we couldn’t not mention it.
