President's Note A Chara, At the end of another year of twists, turns and uncertainty, our priority at IHI has been to support our members. We understand the challenges, and we hope that in some small way, the delivery of on-topic webinars, coffee and conversations, training, and support has helped you and your teams. Reflecting on IHI Hospitality & Tourism Professionals Day and the key issues discussed, talent and attraction management. As we know, the stop-start nature of the restrictions is having a devasting effect on our talent, and the lack of available pipelines is further adding to the pressures within properties. Gaining an international talent perspective from both Duncan O'Rourke and Bill Walshe, allowed us to broaden the conversation with our panel of leading industry experts. In addition, their contribution to the session gave us plenty of thought-provoking ideas for consideration. It is clear that the challenges we face are global, and the need to promote our industry and create awareness of the diversity of roles has never been greater. It's important to remember that Pre –covid our industry in Ireland was worth €9 billion with an exchequer contribution of €2 billion and employment levels of 260,000, was the fastest-growing sector and the largest indigenous employer on our island. Hospitality and Tourism Globally was also the largest employer in the world. Over the past 20 months, we have seen the value other industries have placed on recruiting tourism and hospitality employees. In some instances, employees have been targeted directly due to their transferable skills. Therefore, there is a huge responsibility on us as custodians of the industry in Ireland to nurture, educate, develop and retain the next generation of hospitality and tourism professionals. ARAMARK PUTS CLIMATE CHANGE ON THE MENU
Megan Delaney named Aramark Ireland’s Chef of the Year 2021 with climate friendly menu
Megan Delaney has been named the winner of Aramark’s Chef of the Year 2021, making an impression on the judges with her take on a plant forward menu. In total, seven of Aramark’s finest chefs competed against each other in a thrilling live cook off. They included Stephen Power, Irish Prison Services Training Centre; Megan Delaney, SAP Dublin; Danko Loncar, Avoca Monkstown; Sinead Connolly, Avoca Rathcoole; Andy Byas, JP Morgan and Jeff Murphy from Apple, Cork. Competitors were required to prepare, cook, and present two portions of a main course dish. Each dish had to be at least 75% plant based with a focus on using Irish seasonal fruits and vegetables. Each competitor was also required to present two portions of a hot dessert course with Fairtrade chocolate as the key ingredient. Megan wowed the judging panel, which included Ross Lewis, Michelin Star Chef from Chapter One Restaurant, with a main dish of tempura of stuffed courgette flower, seared monkfish, curried pumpkin velouté and cauliflower rice, followed by a white chocolate and raspberry fondant. The highly competitive competition saw second place awarded to Andy Byas, while Stephen Power was highly commended for his exceptional hygiene standards.

We are focused on creating locally sourced, seasonal, and sustainable menus, with a close to zero food waste approach. With the help of our teams and partners, we’re committed to creating and serving healthy, delicious meals.” Following the announcement, Megan said: “I feel very honoured to have won the title of Aramark Chef of the Year title. Congratulations to all the other finalists and a very big thank you to Derek Reilly and the Aramark team for coordinating such a well organised, streamlined, and exciting competition. It’s great to be back in the kitchen and competing at such a high level.” Following her win, Megan will now go on to compete in Aramark’s European Chef’s Cup in Prague. The Aramark Ireland Chef of the Year event was supported by Unilever Food Solutions and Hugh Jordan.

The videos produced by our roving correspondent "AKA" Cynthia O'Neill, Membership & Events Executive, are a clear reminder of why we do what we do every day. Given the current climate of uncertainty, it's understandable it can become somewhat clouded, so it's good to take time and reflect. "It's our Passion; It's Our Pride, It's Our Profession" Guest speakers Duncan O'Rourke, CEO, Northern Europe, Accor and Bill Walshe, CEO, Viceroy hotels, delivered two thought-provoking presentations on Talent Attraction and Retention. Our panel of leading industry experts expanded the conversations with lots of learning outcomes. For me, the morning had one clear message: the need to rebuild trust around the industry to attract and retain talent and make it an attractive career path for students. With regards to the challenges facing their clients, and in particular the hospitality industry, the team believe the biggest challenge currently is the recruitment and retention of talent. During the lockdown, people re-assessed their lives as a whole and, in particular, their working lives. When service industries closed their doors for a prolonged period people had much more time to evaluate things. The result was they started to question their priorities, the need for work-life balance, etc. When the industry re-opened some were fearful about returning to the workplace, others were concerned about long term security. It is also noted that a lot of hospitality employees went back to their home countries and did not return to Ireland. All this resulted in huge numbers leaving the industry. According to a recent article in the Irish Times over 30% have left the industry since the start of the pandemic and have taken up work in other sectors such as healthcare, retail and construction. According to the Restaurant Association of Ireland over 70,000 have left the hospitality sector since the start of the pandemic. This in turn puts additional pressure on those that have stayed in the industry. Some of them are experiencing huge levels of stress and burnout. Failure to take action now will continue to bring huge challenges to hospitality around the recruitment and retention of talent. At Action HR Services, the team believe there are many ways the industry can overcome the challenge of staff shortages. Catherine and Dominika feel the industry, as a whole, needs to be rebranded building a culture of trust, positivity and caring. Employees need to feel respected and empowered and work in an environment of belonging and purpose. Starting with induction and onboarding programmes, all other stages of the employee journey need to be re-looked at. There need to be clear career progression paths for employees and training and development must be invested in. Improving terms and conditions of employment, the introduction of well-being initiatives and improvements in the area of work-life balance will make the industry more competitive and attractive. Another area that Catherine and Dominika are passionate about is providing feedback and recognition which make employees feel valued and appreciated. Research shows that giving attention to both of those areas will, not only lead to better results for the business but will make employees much more likely to stay. There is a clear link between employee recognition and retention. Indeed, a recent study by Achievers spanning 1,700 respondents found a clear link between recognition and retention. 55% of respondents were planning to switch jobs and the lack of recognition was the number one reason. 69% even said that better rewards and recognition would encourage them to stay on at the company. Sodexo cooks up tasty videos with social impact for Focus Ireland A series of tasty video recipes ‘cooked up’ by Sodexo Ireland chefs for its charity partner Focus Ireland has just been launched. ‘A Simple Guide to Everyday Meals’ is the first-ever recipe video series developed on behalf of the homeless charity, supporting its strategic aim to develop essential life skills for families exiting long-term homelessness. Sodexo’s Jennifer Rabe (head chef at Bord Bia) and John Core (chef and group business manager at VHI) with Nicola Stewart of Focus Ireland were at the launch in the Focus Ireland Family Centre in Dublin.
The video culinary ‘first’ also underpins Sodexo’s commitment to providing skills-based mentoring and needs-led services to support local communities, as part of its Social Impact Pledge. Filmed in Bord Bia’s demo kitchen in Dublin, Sodexo’s volunteer chefs demonstrated how to quickly prepare and cook tasty, nutritious, budget-friendly family favourites. Each recipe is packed full of nutrition, with almost all of them designed to feed a family of four for around ten euros each. The dishes are made using standard supermarket ingredients using a minimal amount of kitchen utensils. A print copy of the cookbook A Simple Guide to Everyday Meals’ will also be available to families accessing Focus Ireland’s Family Centre in Dublin, with tips and advice on what to buy to cook healthier versions of favourite recipes without losing taste.
