Mark’s choice of appetiser is pan-fried Hokkaido scallops with apple ginger,r and crispy coppa ham. The juicy shellfish are lightly seared, their succulence complemented by a delicate echo of apple. The main course, again ocean inspired, accentuates the Andaman k and matching croquette. Sea: moist White snapper steak, Other chef’s recommendations reveal a capacity for adventurous combinations. Marinated raw sea bass comes with pomelo, coriander, chili lemon, ginger and lotus root; Seared yellow fin tuna with greens, avocado, watermelon and ponzu citrus dressing. A Mixed grill of Andaman seafood includes the local catch of the day. Char-grilled cauliflower provides an inventive vegetarian option. For carnivores, Australian rib-eye steak with rissole potatoes and oyster mushrooms, rocket, asparagus, garlic and Béarnaise sauce admirably fits the bill. There are artisanal ice creams inspired by local fruits, and crisp organic salads. The attention to detail is exceptional. Nothing is too much trouble. Every dish is accompanied by exquisitely chosen vegetables and herbs with matching BOOK NOW sauces and dips. Ingredients are ultra-fresh. ONLINE Most of the seafood is purchased twice daily from Rawai fish market, and there is a stress on local, organic produce. The Nai Harn has undergone many transformations over the years. Nowadays, Rock Salt, a pebble’s throw from the waves lapping Nai Harn Bay, is perfect for a pre-prandial cocktail. Relax to funky music, admire the roseate sunset, and peruse the list of ‘Tribute and Signature Cocktails’ created by Salim Khoury. Awarded the accolade of UK ‘Bartender of the Year’ in 1992, and famous for his stewardship of the London Savoy’s American Bar, he has long been associated with The Nai Harn.

Little wonder the cocktails are so memorable. My partner has a Nai Harn Sunset, a deep pink confection made with Balls gin, fresh water melon, basil, lime and Prosecco. Mine, a Nai Harn Cooler,r is a luscious offering: Kristall gin combined with zesty orange marmalade and the juice of lime, orange and pineapple. Also on the list are: Rumble, Blushing Monarch – featuring gin and Campari and, of course, Lady Nai Harn. For a main course, a must-try is the ‘piece de resistance’, the Andaman Platter,r a comprehensive sea-food offering for two, which pays homage to the very essence of Phuket’s marine heritage. Sea shrimps, tiger prawns, Fine de Claire oysters, steamed Rawai clams in chili, ginger, coriander and coconut milk, served with all the trimmings. Less demanding on pocket and palate, sample Mediterranean inspired flavours: Souvlaki – barbequed pork kebabs with grilled peppers – or the Italian-inspired Blue Mushroom Pizza. Dessert was a Coconut Pannacotta (with fruit salad and homemade passion fruit ice cream) that looked good and tasted divine. My partner’s reluctance gave way and an order for one became two. It was just too hard to resist. To top it all, there’s a DJ playing every Friday from 4 pm -10 pm. Daily Happy Hour ‘Buy 1 Get 1 Free’ from 5.30 - 6.30 pm. Rock Salt, despite its alfresco, dramatic beach setting, is cosy and intimate. The funky music, alcoves and different levels add to its charm. Comfortable sofas, attentive but unfussy service and valet parking, make the whole experience a relaxed, and pleasurable one.

There is, of course, an air-conditioned option, still with the sea view. We begin with drinks – a classy Oz chardonnay available by the glass – then adjourn to the spacious restaurant where the cool sounds from a trio playing jazz standards, filter through. From a selection of 14 starters, all living up to their stated claim to be “fresh and delicate”, I opt for the King Prawn Salad, a crunchy, spicy amalgam of sliced baby eggplant, lemongrass, lime, mint and chili paste, the perfect green complement to massive grilled prawns. My partner’s seared marinated scallops, on a bed of asparagus and fresh leaves, are succulent and enhanced by an intense chili-garlic sauce. The ‘new’ Boathouse is already celebrated for two iconic dishes: the slow-cooked Duck Confit in “tangy” tamarind sauce and the Lamb Shank Massaman. The restaurant’s most popular offering, this southern Thai curry featuring lamb on the bone is served in a delectable and aromatic sauce with sweet potatoes. Massaman like you have never experienced it. Sensational. The Gaeng Kathi Neua Poo, yellow crab meat curry in coconut milk with betel leaves, is densely flavoured and creamy. Also recommended are Grouper Fillet, Razor Clams with Cashews and Okra, and Smoked Roasted Pork Neck in Green Banana Curry. BOOK NOW The wine list is legendary. Everything up ONLINE to Chateau Petrus. I settle for an Australian Shiraz, the perfect partner for a sumptuous repast. Sizzling Nights also include live entertainment – on Sunday a band and on Thursday a ‘show’; on our night it was a Polynesian show complete with authentic sounds, polished dancers, grass skirts and fire jugglers. The assembled diners loved it! While the sun went down, we made a start on a very pleasant Concha Y Toro, Reservado – a Cabernet Sauvignon reasonably priced at just THB 1,400++ a bottle. In no rush, we sauntered inside for what turned out to be the first of several ‘attacks’ on the tempting choices of ‘before-the-grill’ delights. Be careful not to overdo this moment! It’s so easy to ‘graze’ the hard-to-resist buffet – and forget to leave room for the grill! Still taking our time, enjoying the show and the general beachfront ambience, we finally felt ready to tackle the ‘main event’. Melt-in-the-mouth imported steak, tender and juicy pork loin, simple but perfect jumbo prawns, the freshest fish and a spicy Italian sausage all found their way to our table – cooked with a happy smile to perfection. Not sure if we were too full to sample the mouthwatering desserts, we sat back for a while longer, enjoyed the show and… we were ready. This is where worries about waistlines must be forgotten. The restaurant manager came over and offered us some advice on the in-depth menu, and while we unanimously decided on 18 Months Aged Burrata Cheese for a starter, a waiter appeared and served us a refreshing welcome drink combination of prosecco, honey and lemon grass. Cool and crisp, it paired well with the creamy textures of the Burrata Cheese. We decided on steaks grilled medium well for our main course. I chose the Australian Grass Fed Black Angus Tenderloin while my dining partner fancied a 12 oz. U.S. Chilled 250 days Grain Feed Prime Beef Rib Eye. Both steaks were grilled to perfection and featured a simple olive oil and black pepper rub. Our waiter recommended Dijon Mustard on the side to bring out the flavour of the meat. We choose sides of Creamy Spinach with Nutmeg and Peanuts and Wild Field Mushroom with Shishito Peppers. Served in individual crockery, the dishes taste smooth and earthy. Bodega & Grill features a fully-stocked wine cellar with over 150 varieties of international wines. After a short tour of the cellar, we made a decision. Choosing a glass of savoury Cabernet Sauvignon we decided to order dessert. The Tiramisu was light and fluffy, more resembling a cheesecake than the traditional Italian dessert. If you are looking for an upscale dining experience in a romantic setting, featuring premium cuts of steak, fresh local seafood, an extensive wine list and sumptuous desserts, Bodega & Grill located in Angsana Laguna Phuket is a wonderful choice. The ambiance and the service alone will guarantee a return visit.

The Cove Phuket

Our host suggests we arrive early at The Cove for the renowned sunset. Sadly, in the evening´s only `blip´, leaden skies at Ao Yon obscure the setting sun. But the view from this secluded spot on Cape Panwa is still spectacular: out in the darkening bay, the wooded shapes of Lone, Coral and Aew islands and, in the distance, a misty Koh Racha. And everything that can be controlled by human agency is perfect. Edina, our host, emerges from the low-rise villas (for this is also an exclusive resort) to greet us warmly and guide us to scrubbed wooden tables (seating for 25) at the beach´s edge. With sand underfoot and coconut palms above, the sense of a sea-shore dining experience is palpable. The main menu, sensibly laminated in plastic, makes for anticipatory reading; predictably strong on seafood, most is sourced daily from the local fish market while fresh vegetables come from Hydrofarm. Exotic cocktails are a house speciality, so we kick-start our evening with a splendid Margarita. The wine list is small but world-wide in range: six whites, eight reds and rosés. On cue, the so-called `small dishes´ arrive, complemented by a glass of house wine, a Signus merlot from Chile. The portions are in fact not `small´ but generous: a melt-in-the mouth Tuna carpaccio with mojito dressing, thin slices of Parma ham classically garnished with melon, and - the pièce de resistance - a superb Crab mayonnaise: creamy meat inside an upturned crab shell surrounded by triangles of crisp pitta bread. Utterly delectable.

The main course menu features nine `fishy´ dishes - from Japanese sashimi-grade tuna steak to fish and chips - and five meat offerings including Oz rib-eye steak, pork ribs and a tasty-looking beef-burger. 13 sourdough wood-fired pizzas, with authentic Italian ingredients, are attractively priced. Fernando, Edina´s Spanish partner, recommends the fish of the day and my partner opts for the Stir-fried, black pepper crab. They arrive accompanied by individual bowls of green salad, French fries and various garnishes and sauces. A nice touch. My dish, a local Jack fish (trevally) cooked in foil, is fresh and delicately flavoured. The pepper crab, one of The Cove´s signature dishes, is remarkably fine: large pieces of crab cooked in a rich, semi-sweet sauce. My Thai partner pronounces it one of the best crab dishes she has tasted. We finish with a plate-cleansing pistachio ice-cream. In the bar area, where there is covered seating for more diners, the wooden slatted doors still allow the sea-breezes to waft in from the cove. Sand underfoot, palms and sea almonds add to the sense of being at one with nature. The Cove, in existence for a mere nine months, is Saigon based Deck Group 2´s first Thai venture. It deserves to succeed. Just 20 minutes´ drive from Phuket Town, the restaurant is a bit off the beaten track, but the journey is well worth the effort. Edina and Fernando run the enterprise with enormous charm. The atmosphere is reposeful and idyllic, the service discreet. Indeed, if you are looking for an `alfresco´ beach-side dining experience, reasonable prices and a fresh, invigorating cuisine, then this is the place to be. 19

Two Chefs Patong was buzzing when we arrived at 8.30pm - a good sign, especially when others nearby were very quiet! If you arrive by taxi, get dropped at the door, but if you´re coming by car you´ll need to hunt for parking and may need a short walk back. Seating is all open air with fans. At the back of the restaurant there´s an acoustic guitarist strumming away with a selection of middle-of-the-road songs, adding to the open air ambience and complementing Patong´s passing people parade. We got stuck into a couple of great cocktails: a raspberry Margarita and a sizable mug/jug of Mojito, mixed exactly as I like it. Then our starters arrived really quickly - mine a wonderfully creamy Lobster bisque flavoured with saffron and served with garlic bread, my partner´s a tasty Toast Skagen (prawns in mayonnaise with dill and lemon on toast). For main course, we shared a combination plate of Ribs, chicken legs, crispy potato wedges, salad d and dipping sauces and a Wooden platter with grilled salmon, sautéed spinach, mashed potato oven baked with red wine and lemon and thyme hollandaise sauce. Superb and perfect food to share! For dessert it was Apple pie à la Two Chefs with vanilla sauce and a Crème brûlée - both perfectly excellent. Easy listing live music, efficient service with attentive staff, a huge variety of menu choices - and a chance to try Scandinavian food at its best. Lucky for us they´ve opened in Patong. Not so lucky for the surrounding restaurants...

Most up-market restaurants in Phuket boast either a beachside setting or a panoramic view. Only a select few possess both virtues. The Hyatt’s Sunset Grill is such a rarity. The signature restaurant of a 200-room hotel, it is perched precariously on a steep hillside above ‘Millionaire’s Mile’. A shuttle service takes you heavenwards, where – through expansive picture windows – you gaze down on a palmfringed shore and an inky sea, jewelled with lights. The whole sweep of Kamala Bay is before you. At sunset it must be truly spectacular. A gin and tonic is an appropriate aperitif; a glass of elegant French Pinot Noirr the perfect complement to the feast that follows. Bottles of wine are attractively arranged on a large, flower-bedecked table, where it is possible to inspect the labels before making one’s choice. One of many thoughtful touches.

The new chef Heiko, responsible for creating an innovative range of dishes based on quality grilled meats and widely sourced seafood, has prepared a special menu. It begins, like the view, in spectacular fashion, with a huge stack of exotic sea-food, artistically presented atop a pile of vaporous ice. Alaska crab, scallops, lobster, jumbo prawns – all utterly fresh and savouring of the sea. The king crab claws – the ‘pièce de résistance’ – are so large, they require a massive effort to crack open their armour, in order to enjoy the succulent white meat. The confection is served with an exotic choice of sauces: Saffron aioli, Thousand island dressing, Marie Rose sauce or Tabasco. Great care is taken to create appropriate accompaniments. My partner chooses another seafood dish: a lavish dish of squid, delicately seasoned with garlic and ginger, and garnished with green leaves. She requests a spicy chili sauce, and pronounces it excellent. For the main course, the special menu offers Australian beef tenderloin (150 days grain fed) – which completely lives up to its name – matched with a foie gras slice, gravy and red onion jam. The truffled and buttery mashed potatoes are superb. My partner’s choice is lamb, which arrives in the form of three juicy grilled chops, served with traditional mint sauce. The luscious dessert reiterates the Alaskan theme: a generous Bombe Alaska flambé with forest berries and cognac. It is a rich and satisfying way to conclude our celestial experience. The buggy, thank heavens, is there to take mere mortals back to earth.

Riso, cozze e patate Traditional Apulia’s baked rice with mussels and potatoes Ingredients (four servings) 1 kg black mussels, preferably from the Mediterranean Sea 500g Italian rice “Vialone Nano” 400g fresh potatoes 60 ml extra virgin olive oil 2 cloves fresh garlic 1 bunch fresh parsley 1 glass white wine (for cooking) Freshly ground black pepper to taste

Preparation Heat a spoon of olive oil in a large skillet with two cloves of garlic, skin on and cracked open. When hot, pour the mussels, previously cleaned, add the wine and cover the pot. When the mussels are all open, turn off the heat and let them cool down. Gently remove the meat from the shells, discard the shells and filter the resulting liquid.

PLUM PRIME STEAKHOUSE Bring to boil the mussels’ liquid and adjust its saltiness, adding either more water or a little salt. In a pot, heat the remaining oil and toast the rice in it, then add diced potatoes (5 mm) and the mussels’ liquid, simmer without stirring for 11 minutes exactly. Add the mussel meat and simmer for another 5 minutes. Turn off the heat, add more extra virgin olive oil and finely chopped parsley, cover the pot to rest another 5 minutes, then serve.
