February As we enjoy the heat of the summer we have to thank Andersons Boatshed (p33) for the BBQ Boats. I had a wonderful day with friends cruising around the waterways. The boats have a toilet on board so you can happily spend a whole day out there, pet friendly so your dog is welcome provided you bring something waterproof for them to curl up in as it is a long day. I also think you need a cushion to sit on as the benches can become very hard. Take lots of water with you too and then just enjoy a fantastic day on the water. This month we celebrate a major event on the coast, Luka Chocolates are opening a factory/ Chocolateria on their site at The Wyong Dairy in Alison Road. If you have not yet given yourself the treat of your life and tasted their hand made chocolates you had better get there fast, I think that they have the best Chocolates I have tasted here in Australia. When you have tasted them
yourself I am sure you will agree with me. Now we will be able to DRINK it as well. YUM can’t wait; see pages 12 & 13 for more information and mouthwatering photos. Want a Happy Valentine? Ettalong Beach Foreshore Reserve Redevelopment On the 21 December 2013 a large area of the Ettalong Beach Foreshore Reserve was reopened to the public. The $5.2 redevelopment included a new sandstone seawall, the upgrade of park and stormwater infrastructure, a Beach Facilities Building, the renourishment of Ettalong Beach. Completion of the shared cycleway/footpath from Picnic Parade to the Ferry Wharf and the construction of the new amenities building at Ferry Road in 2012 were also completed with the funding. Gosford City Council worked closely with the neighbouring property owners, the Peninsula Chamber of Commerce and the Ettalong Beach Business Group to ensure the redevelopment enhanced the natural characteristics of the area and
met the needs of the local community. The upgraded park includes two new playgrounds, barbeques, picnic settings, bench seats, a shared cycleway/footpath, a drinking fountain, fitness equipment and a dinghy launch. Improved access and a greater area for passive recreation were achieved through the realignment of the car park and reclamation of a section of the foreshore. The redevelopment had a $2 million dollar funding contribution from the Federal Government, $300,000 from the NSW Government’s Metropolitan Greenspace Program and just over $83,000 from the NSW Office of Environment & Heritage, and $2.79 million from Gosford City Council.

Their repertoire spans three centuries of major works for string orchestra including works by living Australian composers. ABOUT MAGGIE FERGUSON In 2003, after two decades as a classical violinist and chamber musician, Maggie Ferguson went to Buenos Aires to study the orchestral tango at Escuela de Tango Emilio Balcarce. In 2007, she began studying the bandoneon and in 2009 she created Tango Oz with Sydney Youth Orchestra, Australia’s first national tango training orchestra. Maggie currently teaches chamber music and tango performance at Sydney Conservatorium High School. She is committed to taking tango music to students in regional areas. In August 2011 Maggie recorded the album Tango Project Loca Bohemia in Buenos Aires playing both violin and bandoneon. She will be joined by Andres Linetzky on piano for this concert. SUMMER IN THE GARDEN Looking after your soil is the key to a luxuriant and easy care garden. With a little “Tender Loving Care” for the soil, your precious plants will thrive and grow over the summer...even on the sunniest of days. The first step is to look after yourself..... Slip Slop Slap before you get down and dirty ! Try to garden in the cool of the morning or the longer evenings and leave midday for the Lizards. Next step is to provide some food for your plants. Spread around some manure or pelletised organic fertilizer such as OrganicExtra to gently feed the new growth over the growing season. If the soil seems dry, consider using a soil wetting agent to improve water penetration and save on water. Its easy to scatter on at this stage, or use a liquid form from a watering Can. Now you need to provide some insulation and protection for those important roots....a little summer blanket ! There are many types of mulch
from pine bark, through sugar cane to pebbles. The common factors are that they hold moisture in the soil, keep the heat out, and help reduce weeds. It’s hard to think of a plant that does not appreciate mulching, just keep it a little away from the trunk of the plant, and make it nice and thick. Lucerne and Sugar Cane are best for the veggie and flower gardens. Use Tea Tree or Eucalyptus mulch around shrubs and natives. Polished pebbles really highlight your succulents in a pot or the garden. Last of all is the watering. With rain still scarce it is important not to waste town water, so irrigate gardens deeply a couple of times a week. Use the cooler times of the day so that the water doesn’t just evaporate back into the atmosphere. Small pots might need watering every day in the height of summer, larger ones maybe every second day.

Creating your perfect kitchen Have you ever thought about the processes your kitchen goes through, after you have seen the sales people, had the design picked out, colours and finishes chosen etc ?

Well I’m about to give you a general insight, it is quite interesting to know, that if locally made, it does not come out of a box , put together, and hey presto. There are many people involved in creating your very unique kitchen, so I have put together a photo collage to show you. Of course, anyone who would like a guided tour at my factory can always come down, the doors are always welcome. Once your design hits the factory it goes through a planning stage all the products associated are ordered, dates set for the installation, trades given these dates to set aside, and the orders go into the factory (photo 01). The board to make your kitchen comes in large packs (photo 02), then it goes to the computerised cutting machines where a programmer has programmed the sizes and door profiles into the computer and sets the button for it to be cut out (photo 03). From here, if it is a painted polyurethane kitchen, which is the most durable of all finishes, then it will come to a polishing shop like mine, it gets counted, marked up, as to where it needs to be painted then off to the sanding machine to scuff the board so the paint sticks to it (photo 04). Then the edges go through a process with the orbital sanders (photo 05). Next the undercoat

booth to be undercoated (photo 06), then more sanding (ref photo 05), then all the dust gets blown off it (photo 07) and into our full enclosed booth to have the top coat sprayed on (photo 08).

The next day after it is dry, it gets cleaned and sent back to the joinery shop to get put together by a very friendly joiner (photo 09), some pieces may need to be edge taped, this is the way that is done (photo 10). After the joiner is happy that the job is complete to his satisfaction (photo 11) it is stacked up ready to be delivered on the installation date for the team of trades to come in a and install your kitchen, the last of the process is a beautiful secretary (photo 12) sends out the invoice for payment. Then hopefully everything goes in as planned and everyone lives” Happily Ever After” Reads a bit like a fairy story doesn’t it. Although sometimes things do go wrong , but as you can see when there are so many processes there is always room for error. There is never anything that can’t be fixed, quickly and easily, but I do stress that this is one reason to shop locally with local people. Creating the perfect chocolate... The grand opening of Luka Chocolate Factory and Chocolateria at the Wyong Milk Factory will take place on February 8th 2014. This will give you an opportunity to see how premium quality handcrafted chocolate is made. February - the month to give flowers With Valentine’s day being in February it reminds me of the importance of flowers in our lives. Flowers have been used by man for centuries for many occasions. For romantic occasions, such as a bunch of red roses, received from an admirer, or someone we love, as a sign of love and affections. Birthdays, thank you gifts, religious ceremonies, weddings, deaths, nearly every occasion that you can think of, flowers are always a major contributor to provoke a sense of feeling. It is said that flowers have a magic of their own, they have a spirituality that helps to evoke feelings of contentment, joy, even sometimes sadness. They are used to aid in prayer and meditation, as they can allow the persons involved to find focus, by using the beauty of the flower both through the senses of sight and smell, as a very pleasing focal point. There is no comparison to the real thing and artificial flowers, although, when there is no real flowers around and you want to brighten up a table or a space then todays artificial flowers, that have come a long way since nannas plastics can do the trick. The new silk varieties are

The Carousel This historic icon has charmed and delighted young and old at The Entrance since 1930. It has seen a number of owners since its arrival in Australia from France in the early 1900s and is now part of the National Trust classified Haas Family carnival, a family that has 400 years of carnival ancestry. The carousel, which was built in the late 1800s in Germany, was originally ‘powered’ by a pony but was converted to steam at the turn of the century. It remained steam driven until the 1950s when an old chev. engine was installed, and was converted to electricity in the 1970s. Its reed pipe organ, operated by bellows, remained in commission until 1950. Music is now supplied by tape, although the organ front has been restored. The carousel has pride of place on The Entrance waterfront where it is visited by not only today’s children, but by the parents, grandparents and great-grandparents of those children.

The Italian Restaurant Every now and then you just have to say thank you to those that look after you when you go out to enjoy a meal at a favourite place. My friends and I want to say just that to Steve and his team at one of the most pleasant dinning venues on the Coast. On the waterfront at The Entrance the view is so relaxing you are already in the right frame of mind when you sit down. When you look over the Menu to choose your sumptuous meal expect this to take a little time, as the menu is extensive and mouth-watering you may change your mind a few times before you finally decide on something and that could be to come back often enough to work your way through the menu, as we have done many times now. This is why we come back often because the food is always delicious and well presented; we have never been disappointed, ever. There are not many places you can say that every time you dine there the food is getting better and better. Some of our favourite dishes are the Pork Spare Ribs, Oysters Kilpatrick, The Barramundi, Scampi, scaloppini any of the Pizzas. The pasta is made on the premises and the Gnocci is just superb. The Bruschetta is the best we have tasted, one could just go on and on, it is all so good. As you see by this photo our last meal was the Seafood Platter. Now my friend this is finger licking good. Finished with a superb coffee and a Mr Pissa gelato. YUM. Another good reason to come here is it is pet friendly if you have your dog with you ask for a table to be made up on the boardwalk and they will comply. Being on the water at night can be one of the most relaxing and enjoyable pleasures of boating. The sun isn’t making you squint, and an offshore breeze replaces the heat and humidity of the day. However, when twilight fades the familiar landmarks disappear, it’s as though your boat has been dropped into a strange new waterway. What you see is a confusion of coloured lights, some on the water and some on the land. Skippers know that, “Every vessel shall at all times proceed at a safe speed” to avoid a collision. At night, it is even more important to maintain a proper lookout and all onboard need to be involved. In particular, watch out for the shadow of a boat without an anchor light fishing.

The human eye takes about 20 minutes to adjust to darkness. If you turn on a cabin light, it ruins your night vision. If you need a light, use a red bulb in your cabin lighting. Crucially, use proper navigation lights. Most instruments have a dim feature, so use it. Any light, including from instruments, will interfere with night vision. Night boating requires special attention by the skipper. There is a natural tendency to want to use a spotlight at night, just like headlights on a car. Headlights won’t work on the water. You’re not on a street where cars approach you from predictable directions. On the water, boats may be approaching you from anywhere. Once you are familiar with boating at night it is enjoyable, just take it steady until you get used to the difference, and remember to light up at night.

Our commercial fishing business has been operating from Kincumber for the past 9 years and we have the freshest fish in town, straight from the boat to our shop, which is located 400m from the scenic road roundabout towards Macmasters Beach. Our catch consists of Snapper, Ocean Jackets, Bream, Trevally, mullet (when in season ) and Lobsters. We also have local Oysters, school prawns and a variety of frozen products. As our weather warms up, our catches continue to increase and our lobsters start to move heading out to sea for food. Our boys know when and where to put their traps out. During the winter months when the mullet are running we keep the male mullet for lobster bait. They split and salt the mullet and hang out to dry for a few weeks, the lobsters love this feed, it also lasts longer in the traps.

Method Fill a large saucepan with water add salt bring to boil, add your pasta, (the water should taste like the ocean). “What the …. is the Mayan 13 Moon calendar?” The Mayan 13 Moon calendar is based on the Universal laws of Nature … the theory is that being in tune with the moon cycles and working in harmony with a 13 moon calendar brings your life into alignment on many levels. The ancient Mayans understood and utilized this calendar which they called ‘Tun Uc’ meaning ‘Moon Count’. They actually derived it from the mathematical equations of our galaxy (not shy on brains, the ancient Mayans!) The calendar we generally follow today is called the Gregorian calendar – it is a work based system of economics and taxes - embodying the concept of time which compartmentalises chores and promotes a rigid structure in our daily lives. In stark contrast the 13 moon calendar encourages a harmonisation with the flow of universal equations (the mathematics of our galaxy) and the pulse of natural time. Thus managing and manifesting your day following a 13 moon calendar becomes a joy because you are in tune with the bigger picture – still challenging but somehow invigorating and uplifting too as time becomes a dynamic creative flow twirling and entwining with your life like beautiful silver strands of DNA. See how opposite (and creative!) that concept is to the rigid mindset of how time that we normally acquiesce to? How does it work?
