Summer sizzles on the Central Coast! Summer fun is never too far away on the Central Coast in January – from kids activities to big sporting events, live entertainment and of course true-blue Australia Day celebrations! Our local racecourses have plenty of great horse racing meets scheduled throughout the month – Gosford’s Gold Cup event is staged on Friday 10 January, while Wyong Race Club will host race meets either side of the Australia Day weekend. The Central Coast Mariners continue their championship defence in the national A-League football competition, and they host two games in January, facing Melbourne Heart on Sunday 5 January and then a huge Australia Day Eve derby with local rivals Newcastle on Saturday 25 January. Both matches are hosted at the stunning Bluetongue Stadium on Gosford Waterfront. Kids will love the Central Coast for their summer school holiday fun – there’s heaps of ideas, with workshops and more across our shopping centres and recreation precincts. Starting on January 11, Gosford Musical Society Juniors are

staging a production of “Seussical the Musical” which is sure to be a hit with the young ones at Laycock Street Theatre! Teenagers will be keen to check out the X-Up Freeride Festival over the 17-19 January weekend at Warnervale as well, with plenty of BMX and biking action. Before the holidays wrap up, it’s time to celebrate Australia Day! Festivities begin on Saturday 25 January with Canton Beach’s annual “Australia Day Eve” waterfront event. Sunday sees grand Australia Day celebrations across the region, with The Entrance providing live entertainment all day and into the evening, finishing with Fireworks , while Gosford City’s celebrations are spread across Wagstaffe for breakfast, Gosford waterfront at lunch, then culminate

Bushcare Program Seeking Volunteers The end of the year is a time that we use to reflect on our achievements from the past year and to set some new goals for the coming year. Central Coast Conservatorium Central Coast Conservatorium will be enrolling new and returning students in January for the commencement of Term 1 on January 28th. There are vacancies in all instrument lessons; Strings, Piano, Guitar, Woodwind/ Brass/Percussion, Vocal and Contemporary Music Studies as well as Musicianship, and general interest/ music appreciation classes. Vacancies also exist in our ensembles program, which can be an adjunct to your oneto-one lessons, rounding out your musical education by consolidating performance and improvisation aspects of your playing. Joining an ensemble can also be a fun, social outlet for all ages; we have ensembles for the young and the young at heart. Why not try the Adult String Beginners group on Saturday mornings, or the adult flute choir on Mondays. Or you might fancy yourself joining a band, such as the Central Coast Big Band, where you will even get to perform in the public arena. There is something

There will be a large display of stationary engines of all sizes from 1/4 HP up to 50 HP, petrol engines, crude oil engines, diesel engines, from Australia, England and USA with the odd engine from NZ, Canada or continental Europe, also hot air engines - which despite their massive size produce very little power. Farm machinery such as pumps, chaff cutters, roller mills and electricity generating sets. Vintage tractors, cars and trucks will add to the spectacle. The piece de resistance will be the steam engines. There will be two steam portable engines - one from the USA and one from England. “Sooty� the traction engine that is coming is road registered and for the first time in many decades the public will see a steam engine trundling down the main street of Gosford - a sight not to be missed. The important point is that this is a Machinery in Motion show, all Machines will be operating - not static displays as in museums. Listen to the odd sounds of different engines, smell the smoke and steam from the steamers. Look at the beautiful restorations of cars, trucks, tractors and engines, some of them extremely rare and valuable. The Central Coast Machinery Club Inc. shed at Gosford showground will have the shutters open for viewing of great interest is the Blackstone straight eight 300 HP diesel engine which was the original back-up power supply for Richmond Air Force Base.

SUMMER IN THE GARDEN Looking after your soil is the key to a luxuriant and easy care garden. With a little “Tender Loving Care” for the soil, your precious plants will thrive and grow over the summer...even on the sunniest of days. The first step is to look after yourself..... Slip Slop Slap before you get down and dirty ! Try to garden in the cool of the morning or the longer evenings and leave midday for the Lizards. Next step is to provide some food for your plants. Spread around some manure or pelletised organic fertilizer such as OrganicExtra to gently feed the new growth over the growing season. If the soil seems dry, consider using a soil wetting agent to improve water penetration and save on water. Its easy to scatter on at this stage, or use a liquid form from a watering Can. Now you need to provide some insulation and protection for those important roots....a little summer blanket ! There are many types of mulch

from pine bark, through sugar cane to pebbles. The common factors are that they hold moisture in the soil, keep the heat out, and help reduce weeds. It’s hard to think of a plant that does not appreciate mulching, just keep it a little away from the trunk of the plant, and make it nice and thick. Lucerne and Sugar Cane are best for the veggie and flower gardens. Use Tea Tree or Eucalyptus mulch around shrubs and natives. Polished pebbles really highlight your succulents in a pot or the garden. Last of all is the watering. With rain still scarce it is important not to waste town water, so irrigate gardens deeply a couple of times a week. Use the cooler times of the day so that the water doesn’t just evaporate back into the atmosphere. Small pots might need watering every day in the height of summer, larger ones maybe every second day.

Well I’m about to give you a general insight, it is quite interesting to know, that if locally made, it does not come out of a box , put together, and hey presto. There are many people involved in creating your very unique kitchen, so I have put together a photo collage to show you. Of course, anyone who would like a guided tour at my factory can always come down, the doors are always welcome. Once your design hits the factory it goes through a planning stage all the products associated are ordered, dates set for the installation, trades given these dates to set aside, and the orders go into the factory (photo 01). The board to make your kitchen comes in large packs (photo 02), then it goes to the computerised cutting machines where a programmer has programmed the sizes and door profiles into the computer and sets the button for it to be cut out (photo 03). From here, if it is a painted polyurethane kitchen, which is the most durable of all finishes, then it will come to a polishing shop like mine, it gets counted, marked up, as to where it needs to be painted then off to the sanding machine to scuff the board so the paint sticks to it (photo 04). Then the edges go through a process with the orbital sanders (photo 05). Next the undercoat

booth to be undercoated (photo 06), then more sanding (ref photo 05), then all the dust gets blown off it (photo 07) and into our full enclosed booth to have the top coat sprayed on (photo 08).

The next day after it is dry, it gets cleaned and sent back to the joinery shop to get put together by a very friendly joiner (photo 09), some pieces may need to be edge taped, this is the way that is done (photo 10). After the joiner is happy that the job is complete to his satisfaction (photo 11) it is stacked up ready to be delivered on the installation date for the team of trades to come in a and install your kitchen, the last of the process is a beautiful secretary (photo 12) sends out the invoice for payment.

Although sometimes things do go wrong , but as you can see when there are so many processes there is always room for error. There is never anything that can’t be fixed, quickly and easily, but I do stress that this is one reason to shop locally with local people. The Carousel This historic icon has charmed and delighted young and old at The Entrance since 1930. It has seen a number of owners since its arrival in Australia from France in the early 1900s and is now part of the National Trust classified Haas Family carnival, a family that has 400 years of carnival ancestry. The carousel, which was built in the late 1800s in Germany, was originally ‘powered’ by a pony but was converted to steam at the turn of the century. It remained steam driven until the 1950s when an old chev. engine was installed, and was converted to electricity in the 1970s. Its reed pipe organ, operated by bellows, remained in commission until 1950. Music is now supplied by tape, although the organ front has been restored. The carousel has pride of place on The Entrance waterfront where it is visited by not only today’s children, but by the parents, grandparents and great-grandparents of those children.

The Italian Restaurant Every now and then you just have to say thank you to those that look after you when you go out to enjoy a meal at a favourite place. My friends and I want to say just that to Steve and his team at one of the most pleasant dinning venues on the Coast. On the waterfront at The Entrance the view is so relaxing you are already in the right frame of mind when you sit down. When you look over the Menu to choose your sumptuous meal expect this to take a little time, as the menu is extensive and mouth-watering you may change your mind a few times before you finally decide on something and that could be to come back often enough to work your way through the menu, as we have done many times now. This is why we come back often because the food is always delicious and well presented; we have never been disappointed, ever. There are not many places you can say that every time you dine there the food is getting better and better. Some of our favourite dishes are the Pork Spare Ribs, Oysters Kilpatrick, The Barramundi, Scampi, scaloppini any of the Pizzas. The pasta is made on the premises and the Gnocci is just superb. The Bruschetta is the best we have tasted, one could just go on and on, it is all so good. As you see by this photo our last meal was the Seafood Platter. Now my friend this is finger licking good. Finished with a superb coffee and a Mr Pissa gelato. YUM. Another good reason to come here is it is pet friendly if you have your dog with you ask for a table to be made up on the boardwalk and they will comply. What Lifejackets must be carried A lifejacket can save your life if you are wearing it, and skippers should ensure that all passengers and children onboard are aware of where jackets are stowed and how to use them correctly. Any vessel venturing into open (ocean) water must have a Type 1 lifejacket for each person onboard. Children must have a Type 1 or Level 150 lifejacket of the appropriate size for the weight/size of the child. Adult lifejackets are not suitable for children. Children under 12 on a

boat less 4.8m must wear a lifejacket at all times. On a boat 4.8m to 8.0m every child must wear a jacket when in an open area of the boat and when the boat is underway, that is, under power, sailing or just drifting. All persons must wear a lifejacket when boating at night; when boating alone; when crossing a bar; and when in open or ocean waters. It is the skipper’s responsibility to determine a situation of ‘heightened risk’ such as if broken-down, during a storm, in high or choppy seas or in

Seafood paella Ingredients 2 cups fish, prawn or chicken stock ½ tsp. saffron threads & smoked paprika 1 tbsp. virgin olive oil 1 med unpeeled green prawn - per person 1 baby octopus - per person ¼ red Spanish onion - diced 1 clove garlic - finely diced 1 medium tomato - roughly chopped 1 to 1 ½ cups paella rice (Arborio) ½ red capsicum, roasted, peeled, deseeded and cut into 8 strips ¼ cup frozen peas

6 black mussels - scrubbed and de-bearded 6 vongole or pippies (soaked in cold water

for 30min-1hr)

1 lemon, cut into wedges Procedure • Add stock to saucepan, bring to boil, reduce heat and add in saffron. Keep the stock on low. • Heat olive oil in paella pan on a high heat and lightly sauté whole prawns and remove. • In same oil, sauté octopus briefly and then remove and set aside. • Add more olive oil to pan, stir in onion, garlic, smoked paprika. Sautee until tender • Add tomatoes and cook for another 3-4 minutes. Add octopus and stir. Add rice.

Garnish with lemon wedges. Serves 4 as a main

Our commercial fishing business has been operating from Kincumber for the past 9 years and we have the freshest fish in town, straight from the boat to our shop, which is located 400m from the scenic road roundabout towards Macmasters Beach. Our catch consists of Snapper, Ocean Jackets, Bream, Trevally, mullet (when in season ) and Lobsters. We also have local Oysters, school prawns and a variety of frozen products. As our weather warms up, our catches continue to increase and our lobsters start to move heading out to sea for food. Our boys know when and where to put their traps out. During the winter months when the mullet are running we keep the male mullet for lobster bait. They split and salt the mullet and hang out to dry for a few weeks, the lobsters love this feed, it also lasts longer in the traps. About mid November is when our lobsters are available. We have tanks on our premises, where we store them for up to a month ready for transport. If you need lobsters, just pick them from our tanks and we can pack them for you, we cook everyday, so your choices are cooked, live, or asleep! “What the …. is Sage Smudging?” Sage smudging is a North American Indian tradition whereby you cleanse yourself, others, an object, a room or a dwelling of negative, stale or stuck energetic particles. When you light dried sage leaves or a sage stick it releases aromatic white smoke - the belief is that negative energy attaches to the smoke and is carried away with the smoke … that my friend is why it is important to have open windows or doors to guide the smoke out when you smudge indoors … out and up to Father Sky … release, release, release! Technique: use small clockwise circular movements from bottom to top , if smudging yourself or a person do front, back, up both sides, under arms and under each foot; all the time releasing skywards … giving thanks to Mother Earth, Father Sky, Sister Moon and Brother Wind. If smudging a room or dwelling use the same clockwise circular movements from top to bottom, getting into all the corners, around windows and door frames … and gently guiding the smoke out, out, out the window or door, releasing to Father Sky. Did your sage stick go out? Blow on it or light it again; it’s not big deal if it goes out, I keep a candle burning so I can just hold the sage stick over the flame to re-invigorate the smoke. Keep your sage stick or leaves in an Abalone (or Paua) shell and use eagle feathers to assist with circulating and guiding the smoke. Even though the North American Indian tradition is to use eagle feathers don’t get stuck on this point - I have a few I use that are local to my area – Sea Eagle, Kookaburra and Pea Hen (yes for a while we had one wandering our neighbourhood!). I feel all these feathers have been gifted to me by Nature for healing, they all hold significance to my home, healing space or local beach, 3 places of energetic importance to me … maybe you will come across a feather and delight in using it! Go with the flow, go with what is being shown to you as you walk your path in life. And finally my gift to you this month – a beautiful ceremonial prayer to add to your smudging process if you wish: From the East we seek the lessons of childhood, to see with the trusting innocence of a small one the lessons of Spirit From the South to learn the ways of questioning, the fire and independence of youth, the truths and how they help us grow along this path From the West where the grandparents teach us acceptance of responsibility, the responsibilities that come during the years of adult life and family. From the North where the Elders who by their long lives have stores wisdom and knowledge, may we learn to walk in balance and harmony with them.
