What is a single origin coffee? On a broad level the country of origin could define Single Origin. A coffee may be known as a Colombian or a Brazil for example. You can then complicate matters by breaking the origin down to a region of the country, the village, the estate or the lot (as in auction lot). It is generally agreed that beans produced in the following ‘Origin’ countries have a typical flavour - Kenyan is winey, Indonesian is earthy, Ethiopian fruity, citrus. Why do we blend coffee? A single origin coffee rarely offers the complexity required for Cafe style coffee, so we blend several

origin coffees. The blend should be robust enough to provide flavour when drowned in milk and subtle enough for a shot of short black (espresso). By tweaking your blend by as little as 5% you can alter the flavour from bold enough to punch through milk to as flat in flavour as a chip with no salt. Is there really that much difference between the coffees? Not only is there a difference between coffees, there are distinct flavour profiles produced by the same coffee across different brewing methods and water temperature. Ethiopian Yirgacheffe (which has as many letters as pronunciations) is one of the few Single Origin coffees that carries itself across many methods including the drowned cafe drinks referred to earlier. Ethiopian Yirgacheffe is equally at home in a French Press, Pour-Over and Cold Brew. Top Tip When blending coffee it is important to know what brewing method you are blending for. This racy kaleidoscope swings from comedy to absurdist farce as the characters become enmeshed in their own selfish search for satisfaction, most of this takes place in a slightly surreal restaurant. A rich wine growing area During the 1860’s, land settlement was extensive between Nulkaba and Pokolbin with wheat, tobacco and grape growing, the main crops. Coal mining was the principal industrial base of the Cessnock area for over fifty years. The Hunter Valley wine-growing area in Cessnock City is one of Australia’s oldest wine regions and one of the most famous with around 4,500 acres under vine. The vineyards of Pokolbin, Mount View and Allandale, with their rich volcanic soils tended by entrepreneurial vignerons, are also the focus of a thriving and growing tourism industry. The town has a number of fine restaurants, guesthouses and galleries. The Convict Trail is a conservation project that is restoring the convict-built Great North Road. This is one of Australia's national historic treasures. 18

Maitland Regional Art Gallery Maitland Regional Art Gallery has an award winning reputation, not just for its programming but also for its architecture. In September MRAG, as it is fondly referred to by locals, was announced joint winner Lower Hunter Urban Design Awards – Heritage category, shared with Civic Theatre, Newcastle. Many artists respond to the architecture of the building in creating artwork for exhibitions there, such as Heather Ellyard’s continuum – uncertainties, above and below which runs until 29 November, as does Olivia Parsonage’s soft scape patchwork cities on throughout November and December. Stephen King’s sculpture will play up to the building to dramatic effect when it opens on 5 December. Stephen King is perhaps best known for his work in Sculpture by the Sea both in Bondi, Sydney and Cottesloe WA, where he has been invited to exhibit for the past 15 years and awarded the main prize in 2013 for his work Fallout. King lives on his family property in Walcha, with farming playing a huge role in his work “the land seems to imprint something on what you are doing.” King states “Australia itself affects what artists do. Living with the land, you are a bit closer to whatever that is”. King employs humour and storytelling in his work to address the more serious questions about our relationship with the environment. As a grazier King has become interested in genetics and the continuum of life. Moving from carving into lino to using a chainsaw to sculpt logs; the land continues to influence his art. This exhibition looks back at 30 years of work and showcases the achievements of an artist who has quietly achieved prominence through commitment and dedication to his practice.
