From the Editor Hello spring! And welcome to the September/ October issue of your Newcastle and the Hunter iMag. As always this issue is packed full of fun things to see and do, as well as the best places to eat and drink across the region. Spring is a glorious time to explore our beautiful Hunter. Why not camp, swim and hike in Towarri National Park where you’ll find sandstone outcrops, secluded waterholes, diverse birdlife and scenic lookouts, just 25km from Scone. Camping at the washpools waterhole provides a relaxing and gorgeous natural setting. The region is abuzz and there are many events with something for everybody. The beautiful village of Broke comes alive for the Broke Village Fair and Vintage Car Display on 11th September. From mine tours to magic and the vintage cars and farm machinery, there really is something for everyone in the family. Spring is in the air and so is the sound of music with many great music festivals around the

Identifying a Great Coffee Shop
When it comes to making great coffee, there is only one essential ingredient, desire; you have to want to. All the other steps required to make great coffee flow from this. While any coffee shop must remain viable, there are some ideals that can be incorporated into an efficient process. Grinding. GOD (grind on demand) is the method by which only enough coffee is ground at a time to dose the filter basket. Volumetric grinding fills dosing chambers in the grinder automatically, whether needed or not, and the coffee begins to stale quickly. An indicator of the GOD method is hearing the grinder operate only
when loading the filter basket. Look for coffee makers that minimise the time between grinding and extraction. Double Ristrettos. The first coffee produced during a shot is traditionally the best of the extraction. In a double group handle many coffee makers will dose two cups, meaning that each cup will get half excellent and half lesser quality. When a coffee maker runs the two first best halves to the one cup, it’s called a Double (Doppio) Ristretto. Look for shops that only run Double Ristretto’s. Milk Texturing. Milk should only ever be heated from cold to hot once. The jug should then be rinsed clean with water, also cooling the jug. Stomach upsets come from unclean jugs with repeatedly heated milk. Large milk jugs are easier to use than small ones and are favoured by unskilled operators. Look for coffee makers that use one jug per cup and rinse it. COFFEE

Hart & Hunter release the ‘Fox Force Five’ Shiraz Introducing the first red wine into the Black Series range – the 2015 Fox Force Five Shiraz. The inspiration for winemakers Jodie Belleville and Damien Stevens for Fox Force Five was to showcase fruit from five individual Shiraz vineyards and in Jodie’s words was “pure winemaking fun and fantasy”. This fantasy was met when the cooper agreed to the unusual request to make a barrel from five different forests. “The most fun”, says Jodie, “was in the blending of the individual batches from the five vineyards. Each batch was treated the same with extended cold soaking followed by time in oak, where the magic happens”. She continues, “An oak barrel is normally made from one forest, and we love the affect that this five forest oak barrel has had on the resulting wine, turning it into a delightful spicy beauty”.

Lyman, Polly and their son Trip are all set for a joyous Christmas 2004 at their elegant home in California. Their daughter Brooke, a writer, returns home after six years, for the holidays; she brings with her and seeks parental approval for a “tell all” family memoir. The family unit is completed by Polly’s sister, Silda, an alcoholic in recovery and of the opposite political persuasion from Polly and her husband. Lyman is a retired prominent Republican politician of the Reagan inner circle, following his successful acting career in Hollywood. Polly and Silda were screen writers in the movie industry. When all the skeletons have finally been revealed, lubricated by booze and years of resentment, it is hard to see how this family will continue, but maybe it always has been dysfunctional? The play has plenty of laughs, tears and an amazing climactic conclusion.

Newcastle holds City SuperMoto Newcastle Now Business Improvement Association is proud to be sponsoring the Newcastle City SuperMoto to be held on the 3rd and 4th of September at Newcastle foreshore. SuperMoto is a fusion of road racing and motocross aboard a derivative of a motocross bike that is equipped with road style wheels and brakes. The track is compact and tight – part road and part dirt. The event is unique as it incorporates Wharf Road as the tarmac segment and weaves into Foreshore Park for the purposebuilt dirt section. Riders come from various motorcycling disciplines, each with different strengths. The result is racing that is technical, fast and often unpredictable. Against the backdrop of Fort Scratchley spectators will be able to watch international riders including current Australian and 10 times British champion Chris Hodgson and former world champion Boris Chambon, as well as local heroes Broc Parkes and
Troy Bayliss battle for supremacy. Competitors from Thailand, Indonesia, Japan, Malaysia, India and Taiwan will be vying for valuable points in their quest to be crowned the FIM Asia Champion. Situated where the Hunter and Williams Rivers meet, about 25 kilometres north from Newcastle along the Pacific Highway, Raymond Terrace is home to Port Stephens Council. It is also the hub for the surrounding river flats farms and communities with two shopping malls and all essential services. The town has been bustling with a variety of industries since the early 1800’s and there are many beautiful historical buildings and attractions to remind of its long history. Good sandstone was quarried close to the town in the 1800’s and used in the local Anglican and Catholic churches, houses and stores. The Old Rectory and historic St. John’s Anglican Church are a wonderful example of these building. The Old Rectory has been lovingly restored and is a beautiful venue for a high tea or other special events. In its early days, a tannery and a steam sawmill were also built, and boat and shipbuilding, farming and dairying became important industries. The business centre developed in King Street, adjacent to the river, where many of the old two storey timber shops and residences still stand today. Nowadays you

can sample delicious chocolate and wonderful coffee at the famous King Street Confectionery, or discover treasures in the King Street Antiques and Collectibles shop. The ‘Terrace’, as it is called by locals, has a large sporting community and there are many sporting fields and facilities including a golf course, lawn bowls, tennis courts, netball courts, cricket, football and soccer fields. The Williams River is a popular skiing spot and hosts annual skiing events and boat racing, facilitated by two boat ramps close to the city centre. Riverside Park is located adjacent to the Hunter River on Hunter Street just a short walk off William Street, the main street in Raymond Terrace. This park is ideal for a rest spot or for a picnic with its scenic river views. The park boasts a great playground, barbecue and picnic facilities and a public wharf. Leisure and entertainment activities are catered for by the Hunter Botanical Gardens, an Aquatic Centre, Ten Pin Bowling Alley, YMCA Gym and Scotty’s Cinema. A rich wine growing area During the 1860’s, land settlement was extensive between Nulkaba and Pokolbin with wheat, tobacco and grape growing, the main crops. Coal mining was the principal industrial base of the Cessnock area for over fifty years. The Hunter Valley wine-growing area in Cessnock City is one of Australia’s oldest wine regions and one of the most famous with around 4,500 acres under vine. The vineyards of Pokolbin, Mount View and Allandale, with their rich volcanic soils tended by entrepreneurial vignerons, are also the focus of a thriving and growing tourism industry. The town has a number of fine restaurants, guesthouses and galleries. The Convict Trail is a conservation project that is restoring the convict-built Great North Road. This is one of Australia's national historic treasures. 32

Dashville Skyline 2016 Dashville Skyline is a celebration of the golden era of ‘Americana’ music from the mid‘60s and ‘70s and today’s nostalgic culture that surrounds it. Artists and music lovers come together in a celebration of the music and great songs that spawned from this influential period and the culture surrounding it, that has evolved and inspired so many. Along with the musical soundtrack, expect the best American cuisine, cars and culture alongside the relaxed family atmosphere that Dashville has become popular for. Organisers have shifted this year's Skyline to a Friday and Saturday, with a Sunday wind-down similar to that enjoyed at Dashville’s ever-popular Gum Ball music and arts festival. The name Dashville Skyline is derived from one of the first commercial Americana albums ever released, Bob Dylan's ‘Nashville Skyline’, from 1968. Back in the late ‘60s, Gram Parsons described Americana as ‘cosmic American music’; this was the time when traditional country music began to stray from its pop direction, blending with folk, roots, soul r'n'b, rock and psychedelia, to form an alternative style of country music. Pioneered by artists like Gram Parsons, Bob Dylan, The Band, The Byrds, Johnny Cash, Waylon Jennings, Creedence Clearwater Revival, Flying Burrito Brothers and The Grateful Dead, to name but a few, today Americana is a thriving subculture around the world, inspiring new and established artists, songwriters and musicians. This year’s event will also see the return of the immensely popular Sunset Super Round, which proved to be the “jewel in Skyline's crown”. Last year, artists collaborated on the main stage to pay homage to their favourite songwriters. The audience was treated to Holy Holy's full-blooded cover of Neil Young's 'Southern Man', Melody Pool and Ruby Boots' duet on Lucinda Williams' classic 'Fruits of My Labor' and William Crighton’s dark take on Neil Diamond’s ‘Solitary Man’. Headlining Dashville Skyline is the legendary Brian Cadd, a man whose music is sewn into the

fabric of Australian culture. A prolific songwriter since the late ‘60s, he was not only a member of The Groop and Axiom, but also the keyboardist for The Flying Burrito Brothers throughout the ‘90s. His songs have been performed by an incredible list of artists, from Joe Cocker to Ringo Starr and Glen Campbell. His solo hits include ‘Ginger Man’ and ‘Keep On Rockin’, ‘Sure Feels Good’ and ‘Making It On Your Own’ from Morning Of The Earth, and ‘A Little Ray of Sunshine’. Festival organiser Matt Johnston was honoured to have Cadd included in the line-up: “Brian Cadd is an absolute living legend. For me I think he represents a huge part of what this festival is about… supreme songwriting. It’s testament to the festival and the vibe that we are allowed to be graced by such special artists.” The festival runs from Friday, September 30 to Sunday, October 2, 2016. The world is coming to Gresford A world of photographs by internationally acclaimed photographers will be exhibited this September in the small rural village of Gresford. The exhibition is being run to raise funds for the Gresford community. “People & Places” will bring the world, through photography, to Gresford. World-class photographers, David Oliver and Peter Eastway will be there along with many other professional and amateur photographers, so you will get a chance to talk to the photographers; find out about the story behind the photograph. General viewing is from Saturday the 24th through to Sunday the 25th September 10am to 4pm daily. The exhibition starts on Friday night the 23rd September with a Red Carpet Gala opening. This fun night is about getting interviewed and photographed on the Red Carpet, Champagne and an excellent range of finger food prepared by local experts using fresh local ingredients. Those attending will get a chance to buy great photographs taken by David Oliver, Peter Eastway, Mike Cheeseman, and Noel Winter at auction below retail value. Tickets are limited and at $20.00 each are going quickly. Make a weekend of it in Gresford with many other activities and events being held over the weekend. Visit the beautiful, historic gardens, Natural Wood Furniture shop, New Gresford Museum, Bunna Bunoo Olive farm for tastings and purchases and then spend a fun night at the Gresford Amateur Performing Society with a live show on Saturday night. See the suspension bridge near St Anne’s historic Church and find the headstone in the cemetery of the soldier who fought in the Battle of Waterloo.
