Love Replaces Hurt This is a beautiful new exhibition at Maitland Public Hospital running from April to June featuring gorgeous Maitland images by Daughter of The King Photographer Michelle Morgan Ward, a widow who found healing in a time of losing her husband and father to their six children, to cancer. Her postcards have delighted us for years now in 36 cafes and post offices throughout Maitland and Newcastle. Her first exhibition Love Replaces Hurt focuses on cheering up patients. Michelle received an award from Maitland Hospital's General Manager Di Peers for improving patient, visitor and staff wellbeing. Over 90 works for sale! Donations from each piece are going to the Pink Ladies hospital volunteers. The works explore hurt, identity, love, empowerment, beauty and creativity. It’s a story of a widow’s journey from grief to joy, beautifully unfolded on the walls of Maitland Hospital. Her stunning images are spiritually inspired and speak of seeing beauty amidst troubled times.

During May, artists Kay MacFarlane Smith and Peter Erson Smith will take over the main gallery while at Gallery 139 Julia Flanagan and Matthew Tome will be exhibiting experimental paintings and sculpture. In June, Gallery 139 will be collaborating with another Hamilton gallery, Acrux Art Gallery to present the group exhibition LITTLE where all works will be 20x20cm or less. If you're only in Newcastle for a short time, don't miss a visit to Newcastle Art Gallery. Brett Whiteley's 11m high 'Black Totem II' and John Olsen's iconic ceiling painting 'The sea sun of 5 bells' 1964 are both on permanent display, and free guided tours of current exhibitions are held every Saturday and Sunday at 11am. If you're a local, you might be interested in the annual Gallery Society Lecture on Thursday 15 June from 6pm with Pulitzer Prize awardwinning art critic and author, Sebastian Smee. The collection includes work by John Perceval, Grace Cossington-Smith, Ken Whisson, Charles Blackman, Jon Plapp, Danila Vassilieff, Euan Macleod, Imants Tillers and Tony Tuckson. The Arts Centre is two hours drive from Newcastle and visitors can also enjoy the world heritage Wollemi National Park or take in a wine/cheese tour. There are also the popular monthly Roaming Art Tours designed to give visitors and locals an insiders look into the sometimes hidden art community. How to order the coffee you really want
The key is knowing how to order your coffee! A well conveyed coffee order helps the coffee maker understand what you want, and ordering in the sequence of preparation is ideal. This sequence is size, style, milk and sweeteners. For example “large, flat white on full (cream milk), 1 sugar”. All Espresso coffee beverages are based on ‘shots’ (25-30ml) of Espresso extracted coffee.
The perfect location ...
As cup size increases, so should the number of shots. Stronger coffee should be ordered as extra shots, because there may already be 2 or 3 shots in the size ordered. Milk comes in three textures: Flat (almost no air introduced), Latte (textured with air but consistent micro-foam throughout), and Cappuccino (slightly over-textured milk to create a layer of denser foam on top). Milk comes in three temperatures: Hot, Extra Hot and ‘Insane’. A great way to start a fight is to tell the coffee maker what temperature the milk should be. Milk thermometers are the most unreliable device on earth and good coffee makers don’t use them because they are unhygienic and slow. If you want extremely hot milk, ask for “As hot as you can make it” or my favourite, “Hot enough to light a cigarette!” Article by Jake Bush King Street Confectionery

Balsamic Strawberry Cheesecake A really simple cheesecake recipe that marries the beautiful taste of strawberries with our barrel-aged balsamic. A great dessert to make when strawberries are in season. INGREDIENTS • 250g digestive biscuits • 50g butter • 1 tbs brown sugar • 1 tbs honey • pinch ground nutmeg • 200ml double cream • 100g cream cheese • 1 tbs icing sugar • 150g chopped strawberries • 6 whole strawberries cut in half • 60ml Pukara Estate Barrel Aged Balsamic Vinegar
METHOD
Place biscuits in a food processor and blend until crumbs. Melt the butter, brown sugar, honey and nutmeg in a small saucepan. In a mixing bowl combine biscuit crumbs and butter mixture well. Press biscuit mixture into the base of a round cake tin lined with plastic wrap and then refrigerate. Place the chopped strawberries in one bowl and cover with most of the Balsamic Vinegar, set aside. In another bowl place the halved strawberries and cover with the rest of the Balsamic Vinegar and refrigerate. In a large bowl, whip the double cream until peaks form. Beat in the cream cheese and icing sugar and gently fold through the chopped strawberry mixture and spread over the biscuit base. Refrigerate until firm. Top with halved strawberries and keep in the fridge until ready to serve. Barrel Aged Balsamic Vinegar - Combine with your favourite Pukara Estate Olive Oil and use as a vinaigrette or marinade. Use a dash to add depth to a braise, mix through a pasta sauce or just simply dip with fresh crusty bread.

Business Exit Planning: the earlier the better Around 700 Baby Boomers turn 65 each day in Australia, and many own micro to medium enterprises. Many are hoping to sell their business to contribute to funding their retirement. Something has changed fundamentally since the Global Financial Crisis of 2007-08. I have seen very capable business brokers take businesses to market that, on paper, should sell quickly and for a lot of money, but struggled to sell. Sale is just one exit option available. Getting your exit plan together and making proactive steps toward it as early as possible is key. Some hardcore exit planners believe you should know the price, terms and timing of your exit before you even commence business! If you are an advisor to small businesses, I suspect that many of them will be in this at-risk group who need to start planning. Newcastle whale watching season set for record numbers The annual whale watching season is set to start on June 3 and Newcastle boasts some of the most stunning locations to watch those frolicking giants of the sea. NOVA Cruises General Manager, Peter Hanrahan, says this year is set to be a bumper season with the highest recorded numbers of Humpbacks set to pass Newcastle since whaling ceased on the East Coast back in 1962. “Back then it was estimated there were only 200 to 500 Humpbacks left in the East Coast population. This year we are anticipating over 24,000 Humpback whales to pass the Hunter coastline. We are slowly making our way back to predicted pre-whaling numbers of up to 40,000 Humpbacks” Mr. Hanrahan said. From late May through to early November Newcastle’s stunning coastline comes alive with the annual migration of thousands of humpback whales. The whales are making their way from feeding grounds in the Antarctic Southern Ocean to the warmer waters off northern Queensland.
As well as whales, dolphins, seals, sea birds and sharks can be seen from the city’s shores. Guests onboard NOVA Cruises can be confident in spotting a whale with the company boasting a 93% sighting rate last season. For the few that are unfortunate enough not to see a whale the company offers a free return stand-by cruise to try their luck again. Capturing the imagination of Queen fans both locally and internationally, Director Johnny Van Grinsven attributes the show’s continued success to the attention-to-detail; everything from the costumes, instruments and even the lighting cues have been designed to replicate those seen in real Queen concerts. Making the show authentic is credited to the close consultation of Peter Freestone, Freddie Mercury’s best friend, biographer, assistant and constant companion for the final 12 years of his life. Freestone has schooled the cast and producers on the characteristics and nuances of the original band in order to perfect the performance. Raymond Terrace Situated where the Hunter and Williams Rivers meet, about 25 kilometres north from Newcastle along the Pacific Highway, Raymond Terrace is home to Port Stephens Council. It is also the hub for the surrounding river flats farms and communities with two shopping malls and all essential services. The town has been bustling with a variety of industries since the early 1800’s and there are many beautiful historical buildings and attractions to remind of its long history. Good sandstone was quarried close to the town in the 1800’s and used in the local Anglican and Catholic churches, houses and stores. The Old Rectory and historic St. John’s Anglican Church are a wonderful example of these building. The Old Rectory has been lovingly restored and is a beautiful venue for a high tea or other special events. In its early days, a tannery and a steam sawmill were also built, and boat and shipbuilding, farming and dairying became important industries. The business centre developed in King Street, adjacent to the river, where many of the old two storey timber shops and residences still stand today. Nowadays you

can sample delicious chocolate and wonderful coffee at the famous King Street Confectionery, or discover treasures in the King Street Antiques and Collectibles shop. The ‘Terrace’, as it is called by locals, has a large sporting community and there are many sporting fields and facilities including a golf course, lawn bowls, tennis courts, netball courts, cricket, football and soccer fields. The Williams River is a popular skiing spot and hosts annual skiing events and boat racing, facilitated by two boat ramps close to the city centre. Riverside Park is located adjacent to the Hunter River on Hunter Street just a short walk off William Street, the main street in Raymond Terrace. This park is ideal for a rest spot or for a picnic with its scenic river views. The park boasts a great playground, barbecue and picnic facilities and a public wharf. Leisure and entertainment activities are catered for by the Hunter Botanical Gardens, an Aquatic Centre, Ten Pin Bowling Alley, YMCA Gym and Scotty’s Cinema. There are plenty of motels situated close to town and a choice of caravan parks.

Step back in time with the King Street Heritage Festival King Street, Raymond Terrace was the main street of a busy river port in the days when the Hunter River was the highway. Goods were brought upstream from Sydney and Newcastle while logs and farm produce were shipped out. The business precinct was moved to higher ground in William Street after the big 1955 flood after which King Street languished. The STEP BACK INTO KING STREET HERITAGE FESTIVAL 20 May 2017 is a day to celebrate the past and enjoy simple old-fashioned activities. By closing the street to traffic for the day, the aim is to step back in time and raise awareness of the heritage of the area as well as have fun. A rich wine growing area During the 1860’s, land settlement was extensive between Nulkaba and Pokolbin with wheat, tobacco and grape growing, the main crops. Coal mining was the principal industrial base of the Cessnock area for over fifty years. The Hunter Valley wine-growing area in Cessnock City is one of Australia’s oldest wine regions and one of the most famous with around 4,500 acres under vine. The vineyards of Pokolbin, Mount View and Allandale, with their rich volcanic soils tended by entrepreneurial vignerons, are also the focus of a thriving and growing tourism industry. It aims to emphasise and celebrate the unique and essential role that Indigenous languages play in cultural identity, linking people to their land and water and in the transmission of Aboriginal and Torres Strait Islander history, spirituality and rites, through story and song. “Aboriginal and Torres Strait languages are not just a means of communication, they express knowledge about everything: law, geography, history, family and human relationships, philosophy, religion, anatomy, childcare, health, caring for country, astronomy, biology and food. Each language is associated with an area of land and has a deep spiritual significance and it is through their own languages, that Indigenous nations maintain their connection with their ancestors, land and law,” Ms Martin said. Here in Lake Macquarie we speak Aboriginal words daily with Wangi Wangi, Awaba, Buttabah, and Dora Creek from the Aboriginal word Doree Doree that means a creek running into the lake. The day also has Aboriginal and Torres Strait Islander arts, crafts and clothing stalls. There will be many free activities for the kids. Service providers such as Life Without Barriers, Hunter Primary Care and Community Activities Lake Macquarie will be there to provide free advice and promote the services they provide in Lake Macquarie. Aberdeen Highland Games 2017 This year’s event will be the 18th Annual Aberdeen Highland Games and we look forward with great expectations to this premier event for the Upper Hunter. Great interest has come from the pipe bands and it seems we will be up to maximum capacity. The Tartan Warriors will be back with their amazing feats of strength, as well as the many stall and food outlets. The traditional Ceilidh will be held in the evening, with a Kirkin Service on Sunday morning 10.30 am at St Mark’s, Aberdeen. Our Chieftain this year will be the Hon. Sandy MacDonald, ex-senator for New South Wales. Sandy has been a great supporter over the years and it is most fitting that he becomes our honoured guest this year. This year the Games will host the Australian Tug of War championships. The Australian Tug of War Association, through the Maitland Tug of War club, has had a close affiliation with the Games over the past 15 years and this will be the fourth occasion that the national titles have been staged in conjunction with the Aberdeen Highland Games. Teams will be coming from four states. Competition will start at 8.30 am on the Saturday morning and will go on for most of the day. Further we wish to announce that we expect the ADF Federation Guard to be with us again this year, subject to them being called away on official duty. Hon JAL (Sandy) MacDonald is a wool and beef producer at Wallabadah near Quirindi. He is a fourth generation Australian Scot. His paternal grandfather, JML MacDonald, came to Australia in 1865 from Arbroath, Scotland. His maternal great grandfather, James Richmond, also came to Australia in the 1860’s from Scotland and became a pioneer in the Australian Merino industry. Sandy was elected to the Australian Senate for NSW between 1993 and 2008. He served as Parliamentary Secretary for Trade, and then Defence. He was admitted to the Executive Council in 2005. Since leaving Parliament he has been a company director including serving on the Australian Government ANZAC Centenary Advisory Board. He is also the Chairman of Defence Housing Australia (DHA), which provides over 16,000 Defence residences for Australian Defence Force (ADF) members. DHA plays an important role in the Australian community as a substantial house builder and developer for the purpose of providing quality housing to serving ADF personnel. Sandy is married to Alice and has three children; a daughter at University of New England doing Primary Education and twin boys in year 12. Sandy is delighted to be included in this iconic annual Highland gathering held here at Aberdeen. This is a wonderful community activity that he has long enjoyed. He very much enjoys his Scottish heritage.
