Rosemary Collins Ingredients:

2 OZ GIN

2 OZ FRESH SQUEEZED GRAPEFRUIT

1 OZ ROSEMARY SIMPLE SYRUP

2 OZ SODA WATER

1. Shake grapefruit juice, gin, and simple syrup well over ice.

2. Pour into ice filled glass and top with soda water.

3. Garnish with fresh rosemary and a slice of grapefruit if desired.

Rosemary Simple Syrup Ingredients:

1 CUP SUGAR

1 CUP WATER

3-4 SPRIGS OF ROSEMARY

1. Combine all ingredients in a small sauce pan over medium heat

2. Stir to dissolve the sugar.

3. Reduce heat to low and simmer ever so gently for about 10 minutes, stirring occasionally.

4. Remove from heat and let rest for 1 hour. After 1 hour, remove the rosemary sprigs. Decant into an airtight container and store in the refrigerator for up to two weeks
