Quick Meals after Long Shifts Is there anything more exhausting than coming home after a 12 hour shift, only to have to cook a meal? Of course, there are drive thrus, but we all know those are not very healthy choices. If the meal is quick and easy, you are more likely to prepare it. Check out some of these recipes: Ham      

Potato Skillet 4 potatoes, washed cubed and peeled 1 large onion, peeled and sliced thin 1 green bell pepper, chopped 1 red bell pepper, chopped 4 slices ham, cubed Salt and pepper to taste

Related: Healthy Food & Drink Choices Place potato cubes in microwave, cover and cook for 4 minutes on high Place cooking spray or olive oil in skillet Add onions and peppers to hot skillet, cook 2 minutes Add potatoes, salt and pepper Add ham, turn with spatula Cook on high until browned Chicken Enchiladas  Boneless, skinless chicken strips, sliced thin  4 flour tortillas  1 can cream of chicken and herb soup  1 can green chilis  Instant Mexican rice a (microwave for 90 seconds and it's done)  Shredded Mexican cheese Heat skillet and use cooking spray or olive oil, add chicken, cook 5 minutes Add chilis and soup, stir and continue cooking Microwave rice bag for 90 seconds, and pour into bowl Lay tortillas out, spoon chicken mixture down center, spread rice over top Add cheese, and wrap Tuna Salad  1 pouch or can tuna  Chopped lettuce
