Artist-in-residence: Nettie Edwards at Lacock Abbey this Summer Monday 5 June – Friday 23 June, weekdays 11.30am – 4.00pm Returning to Lacock this June, Artist in residence Nettie Edwards will be sharing her work and giving regular demonstrations in the Botanic Garden of Lacock Abbey.

Image: Sweet Pea Anthotype - © Nettie Edwards

Nettie creates beautiful ethereal images called anthotypes, using a process invented in 1842 by early photographic pioneer Sir John Herschel. The process uses dye made from crushed plants, which is coated onto paper in several layers and exposed to direct sunlight over a period of time – this could be days, weeks or months depending on the weather.

Nettie’s work is particularly pertinent to Lacock; Herschel was a good friend of William Henry Fox Talbot, who famously invented the first photographic negative at the abbey in 1835. The two friends frequently wrote letters to each other, comparing notes on their latest experiments. You can see Nettie working in the Botanic Garden during weekdays from Monday 5 to Friday 23 June which will include three demonstrations each day. Normal admission charges apply. Lacock Abbey and the Fox Talbot Museum are open to visitors throughout the year. National Trust members and under 5s go free.

You can see Nettie working in the Botanic Garden during weekdays from Monday 5 to Friday 23 June which will include three demonstrations each day. The colour of the image all depends on the plant used to make the dye and Nettie has been working closely with Lacock head gardener, Sue Carter, to grow specific plants for her residency this year. ‘We’ve been growing ‘Bull’s Blood’ which is a fabulous red-leaved beetroot for Nettie to use in her anthotypes,’ says Sue. ‘We’ll also be dredging up some Canadian pondweed, as this makes a really good dye. I’m really looking forward to seeing her pictures during the residency.’

The Queen of everyday cooking Mary Berry is one of the UK’s best-known and most respected cookery writers and television presenters, with over 80 books to her name, and over 6 million sales worldwide. Awarded the CBE in 2012, her gentle personality and classic family cooking style are a remarkable contrast to some of the more outspoken celebrity television chefs - just one of the reasons why, even after over 40 years in the industry, she is so well loved. Headlining at The Bath Festival (May 19th - 28th) this year, Mary talks about here new book 'Mary Berry Everyday', what her family think of her cooking as well as what she would cook for the Queen. We also give you a chance to win a copy of her new book.

Everyday is a fantastic family cookbook. Can you explain the thought process behind the book? I was thinking about, as the title suggests, ‘Everyday’. Everyday can be just with the family, it can mean having friends around; it can be a special occasion. This book is giving the recipes I have done for a long time a bit of a twist. There aren’t too many ingredients in the recipes either, which was also important. But you must also remember ingredients do change. For instance, Butternut Squash and Quinoa are used a lot more now. People see Quinoa on the supermarket shelf and they know they have had it in a restaurant but they don’t know what to do with it. And so, I have added a few more ingredients to the Quinoa in order to make it tastier. I want to inspire people to cook and I do think a book is a nice thing to have. I am very lucky that people do trust me and that they do have a go. Can you name some of your favourite recipes from the book? I like the ones I can make ahead because we are all busy and I like to do something that is suitable for the weather – things that are in season, things that aren’t too complicated. I’ve included some summery recipes in this book, plus casseroles with dumplings. Usually with dumplings, it’s a blob! What I have done is taken a suet crust and flattened it out and then made it into a Swiss roll, putting horseradish in the swirl. It’s delicious. Did your family try the recipes first? All the recipes are tried out at home. My family tell me what they think. And yes of course I do take constructive criticism! The children might say ‘oh yuck’ or someone may say ‘that takes too long to do’ and those don’t go in the book. But I make sure there aren’t too many of those! It’s important not to have too many ingredients or pieces of equipment. There are lots of amazing tips and techniques included in the book. If you had to pick out a few vital tips, what would they be? It’s a good idea to have a set of digital scales. Not so much for savoury dishes, but definitely for baking because if you do go heavy on an ingredient, it can alter the whole texture. If people want the same result as I have been showing them on television, a set of measuring spoons is ideal, too, especially if they want the same flavour – and particularly so with spices. Does your husband, Paul, ever try to butt in and help you with the cooking?! What’s his speciality?

Paul is wonderful. He is always there for me. Take today. I have a big day today and he was so brilliant, cleaning and tidying everything up after breakfast. But him do the cooking?! You must be joking!!!!! I do the cooking at home and on the rare occasion I am not well, he will always make an omelette. And after two or three omelettes, I am normally better! And what savoury dish is your stand out speciality when you are cooking for friends and family? It depends on what sort of occasion it is. If it’s a cold winter’s day, I might do beef stew with horseradish dumplings or I might do a fillet of beef en croute. It really depends what it is for. As a rule, however, my first course would very likely be on a little plate for everybody with maybe a salad or a terrine. It would be ready to serve. And then the main dish, I prepare ahead

and so then I simply need to reheat it or add something like cream or fried mushrooms. For the pudding, I do two – one luxurious one and also, some fresh fruit prepared without any sugar in a bowl. You offer it to them but they never want it and we have it for breakfast the next day! Are you keen to involve your family in your work life more nowadays? Annabel and I have cooked together since she was young and we had a Salad Dressings and Sauces business together which we sold a few years ago but still have approval on the new products. The grandchildren are in the new series of Everyday, which is accompanying the publication of my book. In one episode, I make Goat’s Cheese and Atalanta helps me milk the goats. As we were walking up, I said to her ‘have you ever milked goats before?’ Quick as a flash, she replied ‘no granny, I have never milked nothing’! But she was so successful at milking the goat and I was no good at all! It’s good to involve children in helping to cook and choosing a recipe they can do well. If you have their friends around to play, you can make pizzas and let them choose your toppings or you can make cakes. They need someone there to help weigh things out but it is a lot of fun. You are everybody’s favourite cook. You have become part of British culture. Do you get embarrassed or are you flattered – especially nowadays? People are so nice and I am very, very lucky. People touch me on the arm in a supermarket and gently lean over and say things like ‘that Lemon Drizzle cake, we love it’. Most say ‘thanks to you, my children have got into baking’. It’s so lovely of them to say that. You’ve got a TV series accompanying this book, and a show about Britain’s Great houses which you are about to film; do you have any other TV plans in the pipeline? The historic houses series will be very interesting. We are researching it now. We will be going to country houses that have families living in them and I will be going behind the scenes and seeing how they live, watch them grow their vegetables, and find out if they have any tips or recipes they have been handed down over the years. It is not going to be a history lesson because we want it to be informal. The country houses series will go out in 2017. Do you ever drag your friends along to your cooking demos? In the new series of Everyday, I have asked some very close friends to a party in the final episode. There is a lot of hanging about but I hope they love coming. Our friends are really good. They are always very kind. If I am going to something like Strictly, I take a friend along as they enjoy it or one of my family members. And finally, if ever the Queen rang you up to invite you to cook for her, what three-course meal would you serve? I have been to Buckingham Palace for lunch in the past. What would I cook? I know she loves things made from British ingredients. I would use something very much in season, something light and something I thought she would enjoy. I think I would ask her first because she must have some favourites that I don’t know about. I would do a twist on something she suggested. Enjoy long, lingering Sunday Roasts at The Gainsborough

The origins of Father's Day There is a school of thought that believes Father's Day is a relatively recent concept, conceived to compliment the already popular Mother's Day and celebrate the paternal side of parenting. It may, therefore, surprise you to know that scholars believe the earliest Father's Day message came from a young boy called Elmesu, who lived 4000 years ago in Babylon (modern day Iraq), and carved a message on a card , out of clay, wishing his Babylonian father good health and a long life. Father's Day remained an annual appreciation in several countries all over the world but only became popular in Western culture during the early twentieth century. Although there are numerous potential 'founders' of Father's Day in Western society, one persons efforts stand out above all others. Born in Arkansas, but raised just outside of Spokane, Washinton, Sonna Smart Dood had seen the success obtained by Anna Jarvis, promoting Mother's Day in the US, and took it on herself to make sure fathers were honoured throughout the nation.

The first Father's Day celebration was in Spokane, Washington on June 19, 1910 and although it didn't have much success initially it was on her return from College in the early 1930's that Dodd started to raise awareness of the day on a national level. Having gained the necessary support from trade groups that may benefit from the celebration (tie manufacturers, tobacconists etc..) and from 1938, the Father's Day Council, founded by the New York Associated Men's Wear Retailers to consolidate and systematize the commercial promotion, Father's Day celebrations became more widespread. Despite her best efforts, Fathers Day still hadn't been embraced by the American public. Many took a cynical view that, like Mother's Day, it was a synthetic celebration solely for the purposes of commercial industries to make more money. Despite presidential backing, it wasn't until 1966 that President Lyndon B. Johnson issued the first presidential proclamation honouring fathers, designating the third Sunday in June as Father's Day.

Although there are numerous potential 'founders' of Father's Day in Western society, one persons efforts stand out above all others. Dodd's own father, William Jackson Smart, was a Civil War veteran and a single parent who reared his six children after his wife died in child birth. After hearing a sermon about Jarvis' Mother's Day in 1909, she told her pastor that fathers should have a similar holiday honouring them. Although she initially suggested June 5, her father's birthday, the pastors hadn't enough time to prepare their sermons, and the celebration was deferred to the third Sunday of June.

24 inbath

Six years later, the day was made a permanent national holiday when President Richard Nixon signed it into law in 1972. It was soon after that Father's Day was adopted by the UK, although not a national holiday, many of us take the opportunity to treat our 'Dad's' in the form of gifts, meals or just a relaxing day.

We all spend more time communicating through our screens than we’d like. So when it comes to spending precious time with friends and family, we believe that it’s best done in person. Nothing quite compares to a good old-fashioned face-to-face conversation, nor those warm happy moments with familiar faces.

Abbey Hotel:

One of Bath's trendiest spots, Allium, welcomes their new Head Chef Rupert Taylor is the new Head Chef of Allium in Bath. With a wealth of experience, he brings a fresh approach to the award-winning restaurant, showcasing local produce and clean flavours with a modern twist. Congratulations on being appointed Head Chef at the Abbey Hotel. For those who aren't aware of your background, can you tell us a little about your career so far. I’m Bath born and bred, so I started at Homewood Park before going to the Royal Crescent Hotel, Newbury Manor, The Fat Duck and Fifteen Cornwall. I did a stint as a private chef, then moved onto The Bell at Skenfrith, worked on celebrity cruises, and more recently have worked at The Swan Inn, Swineford, Whatley Manor and The Methuen Arms before moving to head up the team at the Abbey Hotel in January.

For those who have yet to experience your food, what can they expect? My menus are designed to invite the diner to want more than just one thing; I want everything to sound really enticing to encourage guests to come back for more. We take produce the customers can relate to and elevate it into something special, whether that’s a great burger or a beautiful piece of fish. What is your food ethos? To showcase the seasons and local produce with clean flavours and modern techniques.

What attracted you to the role at the Abbey Hotel?

Who has been the biggest influence in your career to date?

The Abbey Hotel is one of the trendiest spots in Bath and it definitely caters for people who like the finer things in life, while also being relaxed. Allium is one of Bath’s best restaurants and it has a great reputation, like the Abbey as a whole, for always being one step ahead.

It’s a toss-up between my nan, who was a home economics teacher and got me into everything growing up and Heston Blumenthal. Heston is a massive influence on me, in the way that he can take a simple dish and make it extremely technical.

As we come into the summer, what ingredients will find their way onto the menu this season? English peas, strawberries and crab. It sounds like an exciting year for the Abbey Hotel. What events are currently planned into the calendar? We’ve always got a jam-packed events calendar at the Abbey. I’m hosting a monthly supper club, there are terrace takeovers involving local foodies and drinks producers, wine dinners and more… What is your food hell and food heaven? Food hell is button mushrooms, as they’re completely tasteless. Food heaven is scallops as they’re so versatile – you can serve them raw or cooked, they go with everything and taste divine. Allium is open daily for breakfast, lunch, afternoon tea and dinner. They offer a fantastic special price set menu: two courses for £20 or three courses for £25. No.15 Great Pulteney: Social dining in a cool and relaxed atmosphere

No.15 Great Pulteney is an elegant and vivacious new boutique townhouse hotel on the very grandest street in Bath. A place where you can indulge in everything from the very finest artisanal food to exceptional afternoon teas and carefully-curated drinks. We speak to Head Chef, Dan Miles, to find out more about No.15, what to expect from the menu and what the future holds. No.15 has a very calming, relaxed atmosphere. How much has that influenced your menu? I love what Ian, Christa and Jonathan have put together at the hotel, it’s so quirky and beautiful. The food we’re doing at Cafe 15 is totally influenced by the relaxed atmosphere as it’s all about a more social style of eating. We want customers to feel comfortable ordering a couple of starters, just a salad or a threecourse meal. As we move on, I think sharing dishes and more interactive dining is definitely on the cards.

"

What are your first memories of food and has that influenced your style throughout your career? The first thing I remember is making toffee fudge, and toffee apples with my dad and sister when my mum was at work – it was great fun as a six-year-old! I never set out to be a chef, it’s something that has grown with me as I have got older. It’s something I absolutely love and is an integral part of my life. A lot of thought has clearly gone into building the wine list – how important has this been in adding to the overall dining experience? We’re really lucky to have some brilliant wines on our list, many of which are unique to us in the South West. So there’ll always be something interesting to accompany whatever you want to eat. What exciting things are planned for this year?

The South West is full of amazing producers, but there’s no better feeling than discovering a huge patch of wild garlic right near my house. What can we expect to see on the menu this summer? Lemon verbena and elderflower are coming through for May, so there’ll be some interesting desserts featuring those. I can’t get enough of seasonal produce, so you’ll see everything from Cheddar strawberries, courgette flowers and, one of my favourites, Italian cocoa beans on the summer menus.

I’d invite Andrew Flintoff, Shane Warne and Darren Gough, my three favourite cricketers. We’d have a massive fish pie in the middle of the table, some craft beers and we’d talk about cricket and have a great old time! RC250: A year to remember 2017 marks the 250th anniversary of the Royal Crescent. And to celebrate such a momentus event, InBath takes an indepth look at one of the most iconic buildings on the Crescent: The Royal Crescent Hotel. Over the next 8 pages, we will look at the hotels colourful history, fothcoming events to mark the 250th celebrations as well as the what this luxurious hotel has to offer. It is not known exactly when the City of Bath became recognised for the healing quality of its waters, but it is widely agreed that the Roman’s developed the city Aquae Sulis ‘The Waters of Sulis’ in 60-70 AD. Since then, the city has grown to become a designated World Heritage Site with the impressive sweeping arc of the Royal Crescent standing magnificently above it. 2017 marks the 250th anniversary of this 18th century architectural feat, and at its heart lies The Royal Crescent Hotel & Spa which is leading the city in a year of celebrations to mark this milestone year. Today, Bath attracts a global audience of those seeking to experience the history and heritage for themselves. Many things have changed since architect John Wood The Younger laid the foundation stone of the sweeping Georgian arc on 12th May 1767 at the top of a green hill which offered the upper classes a refuge from the city smog below. John Wood The Younger was the son of notable architect John Wood The Elder who is responsible for much of the impressive architecture that we say today throughout the city, including: St John’s Hospital, Queen Square and The Circus. As the son of such a distinguished figure, it comes as little surprise that the passion for buildings ran in the blood of John Wood The Younger and resulted in the arc of yellow stone.

For the past 250 years the Royal Crescent has been a timeless part of the city, remaining seamlessly untouched by the years whilst the city below it has become a metropolitan, vibrant hub of activity. The Royal Crescent Hotel & Spa seeks to celebrate the vitality of the city and mark the timeless luxury of these incredible buildings. To celebrate this momentous year, The Royal Crescent Hotel & Spa has devised a number of exciting and unique opportunities to ensure that guests and residents can join in the celebrations. From celebrating the British past time of ‘taking tea,’ to exploring the gastronomic changes over the past 250 years, the elegant 45 room hotel is using RC250 as their iconic platform to offer once in a lifetime experiences from May to October. The Royal Crescent Hotel & Spa is one of the few places in the world where people can sleep in a building that dates back 250 years. The hotel is steeped in history but with a modern contemporary feel that one comes to expect from five-star luxury. RC250 incorporates every element of the hotel, from superb gastronomy, sumptuous spa treatments and incredible packages, to the special little touches of Floris, Taittinger Champagne and chocolates.

To celebrate this momentous year, The Royal Crescent Hotel & Spa has devised a number of exciting and unique opportunities to ensure that guests and residents can join in the celebrations.

The Royal Crescent Hotel & Spa is perfectly positioned for making the most of this exciting year, having been awarded 5 Red Stars and 3 AA Rosettes, which makes the hotel the epitome of understated luxury in the heart of one of the world’s most iconic works of architecture. Behind the gorgeous Grade One façade of The Royal Crescent Hotel & Spa lies an oasis of private walled gardens that spread over an acre and provide the perfect spot for enjoying the specially created RC250 Afternoon Tea. Bath’s origins stem from spas, and to the rear of the hotel gardens lies the former coach house of the Royal Crescent which has been transformed into The Spa & Bath House complete with pool, sauna, hot tub and much more, providing the perfect spot to relax and rejuvenate both body and mind. Today the city of Bath attracts an audience from across the globe and the Royal Crescent continues to be one of the main attractions, demonstrating the timeless fascination that it commands when one stands on the lawn and looks back on the magnificent bow of yellow Cotswold stone that has stood on the hill for 250 years.

The Colourful History of The Royal Crescent The sweeping arc of the Royal Crescent has been home to numerous people throughout the years who have proven themselves to be as notable as the architecture that they inhabited. It is hardly surprising that the Royal Crescent has such a colourful history when one looks back at the people who have called it their home. The Georgian features and elegant touches of the Regency Period can be seen throughout the Royal Crescent, both in the exterior and interiors. Over the course of the last 250 years, the Royal Crescent has evolved from housing the Georgian elite, to playing the backdrop to 21st century block-buster movies.

transformed into The Royal Crescent Hotel & Spa. The Duke of York is another personage, and today the spectacular blue suite that is named after him and features striking views across the lawn, perfectly befits the deference and grandeur that he commanded. There were also figures of contention who have lived in the Royal Crescent, amongst them and perhaps most notably are the women. The 18th Century was a time when Europe’s Enlightenment reached maturity and the number of literate began to rise, as a result people began to converse around literature, politics and the arts like never before.

The Georgian features and elegant touches of the Regency Period can be seen throughout the Royal Crescent, both in the exterior and interiors. Walking along the cobbled street of the Royal Crescent, gazing over the expansive lawn and the changing levels of the city in the distance, it is clear that the haven which the Royal Crescent offered from the bustle of Bath 250 years ago is very much present today, as the city continues to be an increasingly popular spa destination. The Royal Crescent has also played a significant role in noteworthy literature; as one stands leaning on the iron railings of the Royal Crescent, it’s obvious why Jane Austen found this location such an inspiration for her novels; Northanger Abbey and Persuasion. Lord Nelson is just one of the renowned men to have stayed in the building that has been

36 inbath

Social reformer Elizabeth Montagu defied 18th Century society norms and instead created informal literary societies where scandalously both men and women would go to converse. Her society was called ‘The Bluestockings Society,’ and for those seeking a taste of life as a member, The Royal Crescent Hotel & Spa has created a bespoke cocktail to be enjoyed as guests converse sipping on the bright Blue Curacao of a ‘Queen of the Blues’ in The Montagu Champagne and Cocktail Bar. Another woman who caused heads to turn on the Royal Crescent was Amabel Wellesley-Cole, the daughter of the Duke of Wellington, who refused to comply to the rule that all doors on the Royal

Social reformer, Elizabeth Montagu Crescent be painted black, a rule which remains in place to this day. Instead, Amabel chose a canary yellow for her front door and refused to change it. As a mark of respect to this head strong young woman, who in 1972 challenged the local council, the door of number 22 remains a vibrant yellow. The Royal Crescent Hotel & Spa’s graceful Grade One frontage conceals the secrets of the many guests who have inhabited the building. Today, the heavy oil paintings, elegant ceilings and well used hearths reveal a little of the history of the building, and if walls could talk, The Royal Crescent Hotel & Spa would certainly have a few secrets and revelations to tell. Falling asleep under one of the many remarkably ornate ceilings of the hotel’s rooms and sumptuous suites, it’s easy to let one’s imagination conjure up images of the vibrant characters of the Royal Crescent, who have all contributed throughout the centuries to its colourful history.

RC250: Creating memories for mind, body and soul Taking tea has been a British past time for over 250 years, and as the trend for relaxing with a cup of tea, enjoying delicate finger sandwiches and indulging your sweet tooth continue to thrive, The Royal Crescent Hotel & Spa are giving guests a unique opportunity to enjoy an RC250 Afternoon Tea. Created by the hotel’s award winning executive head chef David Campbell, the RC250 Afternoon Tea takes inspiration from the colourful past of the Royal Crescent, its unique architecture and the culinary changes that have taken place during the past 250 years.

In recent years, Bath Gin has become something of an emblem of the city, and as the trend for British Gin distilleries continues to grow, chef Campbell created the RC250 Afternoon Tea Bath Gin Kaffir as the perfect sweet indulgence to showcases the modern successes of Bath’s gin distilleries. The iconic shape of the Royal Crescent is the reason for it being heralded an architectural accomplishment of its time, and to celebrate the iconic shape, executive head chef David Campbell has created a delicate Juniper Crescent that is the perfect sweet treat and a nod to the architectural milestone.

Served in the quiet calm of The Dower House or on a warm sunny day to be enjoyed in the hotel’s private gardens, the RC250 Afternoon Tea reflects the history of an iconic British pastime. Delicate finger sandwiches are filled with rich Coronation Chicken or wonderfully pink Roast Beef with a generous serving of English Mustard Mayonnaise.

The hotel recognises that importance of teas perfectly complimenting the culinary elements of an afternoon tea and that’s why they have selected Ronnefeldt to be their hotel partner to offer the very finest accompaniment. For the anniversary of the Royal Crescent, the hotel worked with Ronnefeldt to create a bespoke

RC250 Tea which features a flowery and mild China tea blended with delicate rose petals to create a wonderfully subtle aroma. To enable guests to continue the RC250 celebrations at home, The Royal Crescent Hotel & Spa has created a bespoke tea box of Ronnefeldt Tea which can be purchased from the hotel. Of course afternoon tea isn’t just about the tea, and to celebrate 250 years in style, the hotel offers glasses and flights of Taittinger Champagne for that perfect note of fun for a celebratory afternoon tea experience. Available May- October 2017, the RC250 Afternoon Tea is £55.00 per person and includes a flight of Taittinger Champagnes. In The Spa & Bath House, The Royal Crescent Hotel & Spa continues to celebrate the origins of the great city of Bath. To mark the 250th anniversary, the hotel has created an RC250 Massage using a bespoke combination of Elemental Herbology oils designed to relax and rejuvenate both body and mind for those seeking some calm amidst the buzz of the city. The unique RC250 Massage oil features aromatic essential oils including: grapefruit, juniper berry, rosemary and geranium, to create a bespoke opulent oil, a bottle of which will be gifted to each couple at the end of the massage so that they can continue their spa journey at home. The 90-minute RC250 Massage treatment begins with an invigorating macadamia and papaya scrub that rejuvenates the skin and increases circulation. The next step in the

After the massage, guests can enjoy the soothing ambience of the hotel sitting in their robe in the spa garden surrounded by the aromatic scent of herbs and fresh flowers, with a glass of crisp Taittinger Champagne to toast 250 years of the Royal Crescent. Available May-October 2017, the RC250 Massage is £250.00 for two people and includes a bottle of the RC250 Elemental Herbology oils, and a glass of Taittinger Champagne. Over the course of 250 years, gastronomy has changed and evolved almost beyond recognition. The way that we source, produce and the techniques used to cook our food have developed considerably and The Royal Crescent Hotel & Spa’s executive head chef David Campbell has created a bespoke RC250 Taittinger Tasting Menu, to reflect and celebrate the gastronomic evolution of the past two and a half centuries. Each dish of the carefully created RC250 Taittinger Tasting Menu has been expertly paired with a wine or Champagne selected by the hotel’s sommelier, to offer a unique experience of culinary excellence combined with fine wines and dishes that champion British cuisine and take diners on a culinary journey through British history. “Our aim for The Taittinger Tasting Menu was to give people an insight into the

ever-changing food and techniques that we use. We have reworked classic dishes to bring 250-year-old tastes up to date and paired them with fantastic wines” – Executive head chef David Campbell To create the RC250 Taittinger Tasting Menu, head chef David Campbell explored the dramatic culinary changes and how we approach food, and used his findings as the inspiration for the carefully selected dishes which have all been reimagined for the 21st century palette. “Gastronomy has moved forward, especially in the last 30 years where we have seen huge strides forward in the level of food and depth of choice for the consumer. Even if you go back as short a time as the mid-eighties, and compare with now, it’s plainly obvious that food and gastronomy have taken giant leaps forward”Executive head chef David Campbell

Championing British cuisine and local produce, the ‘Mackerel Tartar with Gentleman’s Relish, Leek Ash and English Sorrel’ perfectly captures the essence of British cooking. The Leek Ash demonstrates the changing culinary techniques which have enabled chefs across the globe to transform ingredients into works of edible art. When John Wood The Younger laid the foundation stone of the Royal Crescent in 1767, regularly consuming meat would have been a luxury of the rich, and prior to the invention of refrigeration, the meat would have been heavily salted for preservation. Chef Campbell wanted to use this traditional technique of salting to create his lamb dish which features ‘Salt Marsh Lamb with Garden Peas and Bacon, Mint Sauce and Lamb Broth.’ Instead of completely preserving the lamb in salt, chef Campbell has created a dish which uses salt to delicately balance the flavours to suit the modern palette whilst retaining elements of the traditional method of preservation. To cleanse the palette, a delicate deconstructed ‘Gooseberry and Elderflower Crumble’ represents a British favourite that has stood the test of time, with various versions of the classic crumble remaining a household favourite today.

The opening of the celebratory menu starts with a delicate ‘Cucumber Soup with Earl Grey Tea Cured Salmon, combined with Lime and Nasturtium Leaf. ’Paired with a Taittinger Brut Reserve, the subtle flavours of the dish are carefully balanced with the wonderful acidity of the Champagne.

Dessert features a British classic ‘Eves Pudding with Somerset Apples’ which chef Campbell has reimagined to create a unique dish with flavours reminiscent of the late 17th Century apple sponge but with a modern twist. Enjoyed with a glass of Taittinger Nocturne, the Eves Pudding is the perfect closing curtain to a menu which features just once in 250 years.

The art of modernising historic dishes is showcased in the ‘Bath Chaps,’ a traditional Bath dish that chef Campbell has modernised, retaining all the unique flavours associated with Bath Chaps but using a 65-day dry aged middle white pork and using a contemporary style to finish the dish.

Available May-October 2017, The Taittinger Tasting Menu is £125.00 per person and includes a six-course tasting menu paired with wines and Taittinger Champagnes (the menu is subject to change to incorporate seasonal produce).

Local schools such as KES Soul and Prior Park Big Band will appear in the same line-up as 1950's Rhythm & Blues band Harlem Rhythm Cats, blues band Agent Philby & The Funtans, and covers band The Bourbons with their great acoustic style and harmony arrangements. This area will be a hive of activity with music, art and street theatre.

Milsom Street will transform into ‘Carnival Street’, coming alive with outdoor parades including the ever popular Jamma De Samba playing vibrant rhythmic music on Brazilian percussion instruments; and Horning Glory, an 8 piece group of horn owners playing 'brassed-up' arrangements of popular songs in a New Orleans brass band style. There will also be FREE Bath Carnival costume making workshops so that everyone can be part of the festival buzz.

The streets, parks and venues in the city will be filled with a multitude of arts from electro-swing, to cheerleading, to Chinese shadow puppetry.

Queen Square will become the ‘Festival Square’ filled with the sound of music featuring up and coming bands, in association with Moles.

Komedia will host nine events throughout the evening. Highlights include the Bath Spa Big Band Society who’ll play all time classics with an eclectic mix of old school ballads and hard funk blow outs; The Maitree Express, a 7 piece band influenced by roots music, reggae, ska, hip hop, funk, swing, drum & bass and beats; and tribute act The Blues Others who pay homage to the well-known film by faithfully reproducing all-time classics such as Everybody Needs Somebody, Soul Man, Gimme' Some Lovin', Shake a Tail Feather and Rawhide.

This year’s headliners in the square include Sleeptalking, a young 5 piece alt-rock band who count Michael Eavis as one of their fans. Bare Knuckle Parade who started life busking on the streets of Bath and have quickly become one of the cities much-loved bands; and former Bath College band made good, Bite the Buffalo, a guitar and drum combo made up of Zambian brothers Stos and Miti Goneos. As well as live music, the square will also have a variety of pop-up food and drink stands provided by local suppliers so everyone can fill their boots for the evening ahead.

The Abbey will showcase a number of performances, starting with the school’s commission ‘Wild Voices’. Composer Richard Barnard and visual artist Edwina Bridgeman

have worked with students from a number of Bath schools to co-create music and visuals in celebration of the city’s cultural landscape with a performance in the Abbey that will launch the festival. Other performances include The City of Bath Male Choir who first came to national prominence when they came 5th in the BBC TV show Last Choir Standing. True, UK buy to let transactions have roughly halved in the last year and it seems that property investors aren’t keen to expand their portfolios, but there has if anything been an increase in available properties. As for rents, it seems landlords have avoided passing on higher costs to tenants. Just as house price growth has slowed, so has growth in rents. Across the UK as a whole, rents grew by around 1% last year. In London they actually dropped.

The next thing we did made the real difference. Our PL2 team set aside an early evening where they would spend two hours speaking with all of their registered buyers looking within the area and price bracket. Low cost mortgages offer opportunities for home buyers Since the government placed a tax raid on the buy-to-let industry last year, the number of landlors applying for mortgages has dropped by 44% according to the Council of Mortgage Lenders. As landlords have found it harder to secure loans for purchases, lenders have compensated for this shortfall by slashing mortgage rates for potential buyers. Yorkshire Building Society were the first to cut their prices, offering a two-year deal at a record low 0.89%. Subsequently, this move caused a price war with lenders offering 'ludicrously low' levels and cutting repayments by hundreds of pounds per year.

It seems that lenders are fighting over the same group of people; those with large depsoits who can boost the coffers of lenders, subsequently filling the void left buy those buy-to-let landlords. As lenders fight amongst themselves over the lowest rates to temp customers, there is one catch that will almost certainly rule out a number of borrowers. In order to qualify for the best deals , a borrower will need to have a pretty hefty deposit; somehwere in the region of 40%. It seems that lenders are fighting over the same group of people; those with large depsoits who can boost the coffers of lenders, subsequently filling the void left buy those buy-to-let landlords. In return, these borrowers will receive the historically low rates. There are other caveats that can also make these generous offers seem less generous. With a number of the offers on the table you will find a relatively high 'product fee'. This is a one-off fee, paid to the lender, on completion can be as much as £ 1,500 and could also include additional costs such as valuation and legal fees. Also, once the two-year fixed rate has elapsed you will need to seek a new mortgage deal or you may find yourself paying the lender's standard variable rate which could be as much as 5%; a major increase in your monthly costs.
