Danceathon All are welcome to a family danceathon Friday beginning at 7 PM at the Springs School gym. Admission is $5 per person or $15 per family. There will be a DJ, snacks and other refreshments for sale. The danceathon is sponsored by the Springs Fire Department Ladies Auxiliary to raise money for the Relay for Life team, which is participating in an American Cancer Society effort.

Pub Quiz The Ladies Auxiliary of the Montauk Friends of Erin, to benefit the 50th Anniversary St. Patrick’s Day Parade, hosts “Pub Quiz,” at Montauk Downs on South Fairview Avenue Friday at 7 PM. Join quiz master Rori Finazzo Butterfield for a cash bar, snacks, prizes and raffles. Pre-paid reservations are recommended. Today’s Birthday: Kevin Costner, 1955 Kevin Costner, the son of a ditch digger, is a California-bred actor who is liked by men for his rugged roles and women for his good looks. Costner grew up in Ventura and yearned to perform, but his high school did not offer theater classes. He did sing in his church choir and was an avid writer. Costner attended Cal State Fullerton, where he majored in business and studied acting at night. Richard Burton, during a chance meeting on an airplane, told Costner if he was serious about acting he needed to immerse himself in it. His wife almost divorced Costner when he announced he was quitting his job. After a few bit roles -- he played a dead guy in The Big Chill -- Costner impressed fans and critics with his slightly over the top role as the little brother in Silverado. That role propelled him to stardom. He was offered the role of Elliot Ness in The Untouchables with Sean Connery. The peak of his career came in 1991 when his pet project, the film Dances With Wolves, earned him an Oscar for Best Director. After that Costner suffered through a slump, most-spectacularly in his bomb Waterworld. Worry not. Costner invested heavily in an oil-cleanup system that is remarkably effective at cleaning up tanker spills. The investment presumably kept him in the chips even after the noted ladies man – who’s known for his wandering eye – had to pay his first wife an estimated $80 million divorce settlement. He’s an avid golfer who took his own shots in the movie Tin Cup.

Poached Salmon With Saffron Scented Couscous And Roasted Vegetable

Ingredients (serves 4) 1 ½ c couscous 1 ½ lb salmon fillet 1 lemon (sliced thin) 2 tbsp olive oil 2 tbsp butter ½ c white wine 1 shallot 1 tbsp capers 2 carrots (diced) 2 red peppers (diced) 1 c frozen peas 1 zucchini 1 red onion (diced) 2 parsnips (diced) 1 bay leaf 1 tbsp cumin 1tsp saffron salt and pepper

Method Begin by portioning the salmon into four portions of about five or six ounces each. Now find a deep pan, one that can hold the liquid the

salmon will be cooking in, and add the sliced lemon, white wine, capers, 1 cup of water, cover in tin foil and cook in a 400 degree oven for 20 minutes. Toss the cut vegetables in the olive oil and roast them in the 400 degree oven for 15 minutes. While this is happening add the shallot, saffron, bay leaf, and cumin to 2 ½ cups of water and bring to a boil. Once the mixture has been brought to a boil, remove the bay leaf and pour the hot mixture over the couscous and cover with aluminum foil. Let the couscous steam in the liquid for five minutes, then fork in one tbsp of butter. When the vegetables are done mix them into the couscous and top them with salmon. The remaining poaching liquid can be reduced and you can add another tbsp of butter to the liquid to make a nice sauce to finish the dish. www.chefjoecipro.com

Now Playing The Iron Lady (PG-13) Meryl Streep, of course, nails the role of former Great Britain Prime Minister Margaret Thatcher, but an uninspired script keeps the film from ever really taking off. Sherlock Holmes: A Game of Shadows (PG-13) We never did buy into Robert Downey Jr. playing the world’s smartest detective, just as we have trouble seeing him as a super hero (re: Iron Man.) This is really just holiday season junk from Warner Brothers, a splashy, noisy action filled romp that offers little in substance. New Year’s Eve (PG-13) How can a movie with the greatest cast in the history of cinema bomb so badly? Garry Marshall has assembled an allstar cast to romp through Katherine Fugate’s sometimes funny but often mean-spirited script consisting of a dozen vignettes, all occurring on (duh) New Year’s Eve. Halle Berry, DeNiro, Jon Bon Jovi, Jessica Biel, and Sarah Jessica Parker are among those who go down with the script. Mission Impossible Ghost Protocol * (PG-13) We know, we know, it’s hard to fathom that Tom Cruise can be such an effective macho guy. In this episode his character, Ethan Hunt, goes undercover after the IMF is shut down. His mission: clear the good name of the agency. Guess what? It rocks, a mesmerizing action ride so intense that it ranks among the year’s best. Don’t miss it. Tinker, Tailor, Soldier, Spy * (R) The remake of John Le Carre’s spy novel – the author co-wrote the script – is a wonderfully directed thriller during which the audience unravels the cluses. Set at the height of the Cold War, Britain’s secret intelligence unit has apparently been compromised by a doubleagent. A disgraced former spy, played by Gary Oldman, is hired to find the mole. Tom Hardy, Colin Firth and John Hurt co-star. Oldman will surely get Oscar support for his remarkable performance, and the film, a legitimate cliffhanger, may earn a nomination as well.
