Potato Gnocchi With Braised Short Rib Ingredients (serves 4) 4 baking potatoes 1 lb beef short rib 2 egg yolks 1 1/2 c all purpose flour 3 cup red wine 1 carrot 1 onion 1 bay leaf 2 sticks celery 2 cloves garlic 2 cups demi glace 2 oz. shaved Parmesan cheese 3 oz. butter salt and pepper to taste
celery then begin searing the short ribs on each side to form a crust. Add the chopped vegetables along with the bay leaf, wine, and demi glace. Bring to a boil the braise in the oven at 325 for three and a half hours. At the same time allow your potatoes to bake in the oven for two hours. When they are done, begin to boil a pot of water, then split the potatoes with a knife and push the inside of the potato out leaving the skin behind. Dust a large flat surface with the flour, place the potato on the flour, and mix the egg flour and potato together with your hands and kneed like dough. When you have a nice, uniform ball of dough, cut into four equal pieces, roll each piece out into a long tube and cut into one inch pieces. When this is done cook the gnocchi in the boiling water for two minutes. When they are done

Is he the most talented composer of all time? Many experts think so. The German born Johann Sebastian Bach was born to play music: his father and uncles all played, and as a youngster he mastered the violin and harpsichord and later became proficient on organ and clavichord. He won fame as a musician but his compositions were not received with as much enthusiasm. That was partly because Bach was wildly inventive, constantly incorporating new rhythms and forms from other countries and filling his melodies with textures and depths unfamiliar to the ear. Bach, also a talented singer, served as director of music to Leopold, but he suffered a combination of maladies in 1749, and his health declined rapidly. He died in 1750. Decades later, Bach’s compositions enjoyed a revival; the thematic detail, structural depth, and engaging drama prevalent in his best works proved to be enduring beyond his years. One of the first of the new breed of German composers to champion Bach became a crucial bridge in the transition between the Classical and Romantic eras of music. His name was Ludwig van Beethoven.
