Social Life Magazine and Rand Luxury presented “St. Barths The Hamptons” gala at East Hampton Studio on Saturday night. A portion of the evening’s proceeds went to benefit VH1 Save the Music. In attendance were Theresa Giudice, Tamra Barney, Eddie Judge, Grizz Chapman, Carly Blair, Jared Evan, John Hamilton, Michael Wudyka, Geir Magnusson, Eddie Shapiro, Bradford Rand, Justin Mitchell, and Devorah Rose.

On Saturday, the skies over Three Mile Harbor were lit up by the most famous family of fireworks, the Gruccis, as The Clamshell Foundation presented the “Great Bonac Fireworks Show.” At the same time, the Duke family home hosted a benefit for The Max Cure Foundation for pediatric cancer and Fundacion Amistad, founded by Luly Duke. A barbecue dinner, entertainment by members of the Big Apple Circus, live music by Washington Duke’s band, “The Dukes of Brooklyn” and other family activities took place.

Bay Street Theatre’s fundraiser “Rock The Dock!” returned to the Long Wharf in Sag Harbor on Saturday evening. LAMBDA

Lambda Legal, a national organization committed to achieving full recognition of the civil rights of lesbians, gay men, bisexuals, transgender people and those with HIV through impact litigation, education and public policy work, hosted its annual Hamptons fundraiser this weekend. Guests included Executive Director Kevin Cathcart, Dr. Jack Drescher, Dr. Mark Blechner, Fred Becker, Jayne Sherman, Joyce Whitby, Rebecca Seawright, Isa Goldberg, Katherine Graham, and Richard Socarides.

Presented by Traditional Home Magazine to benefit Southampton Hospital, the Hampton Designer Showhouse opens annually to the public to showcase high style interiors by A-list interior designers. The designers had less than three weeks to prepare their spaces. Noticeable design trends in the house are the use of Mongolian sheepskin rugs and analogous colors schemes. This year’s showcase took place at 80 Flying Point Road, with an exclusive opening preview gala on Saturday evening. The event was elegantly catered with live piano music by the pool. nature. On Saturday he will discuss his latest work, The View from Lazy Point: A Natural Year in an Unnatural World, a New York Times Editors’ Choice, at the Amagansett Library.

Safina has studied nature as a scientist, stood for it as an advocate, and conveyed his travels in “lyrical non-fiction writing,” he said. “Why do our institutions fail to sense these dangers? If I wasn’t frustrated, I wouldn’t be doing any of this work.” He urged people to make a difference by “trying to do the right thing,” and to maintain hope that change is possible. In his first book, Song for the Blue Ocean, Safina reports the depletion of the world’s fish population, and equally troubling, that nobody knew it was happening. Since then, his mission has been to make sure people are “informed of these problems and not add to them.” In his latest work Safina follows the arc of the seasons from his home waters of Eastern Long Island at Lazy Point, to points across the globe, from the Arctic to Antarctica and across the tropics. In the book, we see a world “brimming with vitality,” but also changing for the worst, with much at stake. But amidst all the “gloom and doom” around us, Safina still finds solace in the resilience of living things. “The world still sings,” he concluded. The challenge now is “to keep the music alive for those who’ll follow.” His appearance is part of the “Authors After Hours” series and begins at 6 PM – admission is free. Today’s Birthday: Liv Tyler, 1977 If you live in the Hamptons, you’ve undoubtedly seen this dressed down affable mom without realizing who she is. Liv Tyler is the offspring of rock royalty and a gifted model and actress. Liv’s mom, Bebe Buell, a former Playboy Playmate and a fixture on the rock scene, gave birth to Tyler Rundgren in 1977. Her father was thought to be the rocker Todd Rundgren. Years later, however, Bebe realized that Liv’s real father was Steven Tyler, the lead singer of the rock band Aerosmith and more recently a judge on “American Idol.” Liv attended a series of exclusive private schools and was modeling professionally by the age of 14. She was cast in her first movie role at the age of 17. She received rave reviews for her part in Bernardo Bertolucci’s Stealing Beauty (1996). Soon afterward, Peter Jackson approached her to discuss one of the most ambitious movie projects ever undertaken -- he planned on doing a The Lord Of The Rings trilogy – three films that would be filmed over a two-year period. The films were a smash, and the third installment swept the Oscars. Tyler’s performance as the enticing Elf maiden Arwen Undómiel made her a superstar. She married musician Royston Langdon in 2003 and gave birth to their son, Milo William Langdon in December 2004. Christian Bale For “The Dark Knight Rises” By Winnie Bonelli

In this era of CGI filmmaking, a few taps on a computer keyboard can instantly produce a legion of extras. Director Christopher Nolan, however, nixed the cost-cutting measure and opted for 1000 humans to swing, punch and grapple with each other near the New York Stock Exchange during the climatic moments of The Dark Night Rises. Naturally, the iconic star of the Batman series, Christian Bale, was in the center of it all. The third and final installment of Batman’s trilogy witnesses the Caped Crusader squaring off against his latest nemesis, Bane (Tom Hardy), a muscle bound mercenary, who has turned Gotham City into a virtual prison. Ironically, this all played out only blocks removed from Occupy Wall Street, a fact that didn’t escape actor Bale’s attention. “There’s something about Chris’s ability to always make his films topical. Nothing was happening when he wrote the script and when we first started filming. I just looked at him and asked, ‘How the hell did you know?” It almost seems fitting, Bale pointed out, “I think in many ways, Batman has always been topical. This character was an answer back in 1939 in England and the uselessness individuals felt against the humongous World War II tragedy. There have been many wonderful spoofs since, but I think Chris has returned it to its topical inception.” The Dark Knight Rises bares little resemblance to the typical, formulaic summertime blockbuster with a spandex-attired superhero. Granted, the props, like his new customized

bat-chopper and jaw-dropping action sequences are worth the price of admission. Yet there’s also a well-crafted psychological dimension that will satisfy the most intellectually discerning moviegoer. “I always wonder about big movies. And I tried doing a couple and, respectfully, I don’t think they quite managed what Chris has made,” Bale commented. “A moviegoer can see this for pure entertainment value and enjoy the roller coaster of the movie, then leave, and that’s all they have to think about, but if they wish to, they can see an awful lot more into it.” Bale is certainly no stranger to big movies. In fact, the Wales-born actor snagged a starring role in Steven Spielberg’s Empire of the Sun when he was just 13 back in 1987. While he’s appeared in more than 40 feature movies, a few of the highlights include the role of serial killer Patrick Bateman in 2000’s American Psycho and Dicky Eklund in 2010’s The Fighter, the latter earning him an Oscar as Best Supporting Actor. Yet Bale’s name is likely to remain synonymous with 2005’s Batman Begins, 2008’s The Dark Knight, and the current The Dark Knight Rises. Doing the necessary press rounds still causes Bale some discomfort, but it’s nothing compared to the first time he slipped on Batman’s signature costume. He laughingly confessed, “I thought, ‘Oh Chris has to recast.’ The claustrophobia was just unbelievable. I stood there and thought, ‘I can’t breathe. I can’t think! It’s just too tight. It’s squeezing my head. I’m going to have a panic

attack, right this second.’” Bale requested some privacy, then spent the next 20 minutes weighing his options. “In the same way Bruce Wayne improves the suit, I improved the suit and it actually became far more comfortable. That panic attack aspect disappeared, because I was able to rip it off myself if I ever did start seeing stars and couldn’t breathe,” Bale related.

After wrapping up his final scene for The Dark Knight Rises Bale again sought out some quiet time. “It was the realization of everything we’d done and a real pride of having achieved what we had set out to do. It was a very important moment for me. It’s been a very important character and the movies, themselves, have changed my life and my career. So I just wanted to appreciate that for a little while.”

Hara-Kiri: Death of a Samurai (NR) * Takashi Miike has created a remarkable film earmarked by his stunning camera work and gripping performances. On the surface it is the tale of a samurai who wants an honorable death by ritual suicide, but the plot runs far deeper, and branches out in many unforeseen directions. This film may not be screened on the East End, but New Yorkers should take note to look for it in the city.

Luscious Lobsters At Gurney’s

Last week, The Independent journeyed out to Gurney’s Inn in Montauk to experience the weekly Oceanfront Lobster Bake at the resort. Sitting in the dining room overlooking the ocean, the looming storm clouds seemed almost nonexistent as live steel drum music echoed throughout the cafe and “Larry the Lobster” greeted guests. Waiters dressed in flowered shirts bustled around the room as diners poured in and the scent of steaming lobsters began to fill the air. First up at the buffet were smoked bluefish filets with sliced heirloom tomatoes, cucumbers, cocktail sauce and a horseradish dipping sauce. A mountain of peel and eat shrimp cocktail sat adjacent to the bluefish with the same duo of dipping sauces. On the other side of the room, there were mussels steamed in white wine, garlic and parsley. Two heaping bowls of Mesclun salad in a light Dijon vinaigrette and tomato and onion salad completed the appetizers and offered a mild transition into dinner. Lobsters weighing in at a pound and a half were steamed and served

simply with lots of drawn butter, lemon and local corn on the cob. As diners began to dig into meaty lobster claws and succulent tails, waiters personally tied lobster bibs for each guest. For those who didn’t want to indulge in the tasty crustaceans, hamburgers, hot dogs, marinated barbecue chicken, sweet and hot Italian sausages and broiled fish were also ser ved. Side dishes included boiled Red Bliss potatoes with a touch of butter and fresh parsley. Mounds of cole slaw added a light, refreshing, and summery touch to the meal. For dessert, diners could enjoy strawberry shortcake with a creamy vanilla icing, chocolate chip cookies, orange vanilla cookies and freshly sliced watermelon accompanied with coffee and tea. Gurney’s will be offering the lobster bake every Wednesday from 6 to 8:30 PM up until Labor Day. Adults are $49 per person and children under 10 are $39, plus tax and gratuity. Roasted Cauliflower Ravioli With Lobster & Corn Reduction Shiitake Mushrooms Ingredients (serves 4) 1 2 lb Lobster 2 c durum flour 2 eggs (beaten) 2 ears corn 1 head of cauliflower 3 tbsp butter 1/4 c of milk 1/4 c olive oil 1 carrot 1 tbsp tomato paste 1 onion 1 cup chopped shiitake mushrooms 1 bay leaf 1 sprig of thyme 1/4 c all purpose flour 1/2 c white wine 3 celery stalks salt and pepper to your liking 4 sprigs of tarragon

Method The first step in the lengthy process of preparing this dish will be to make your pasta. If you have a Kitchen Aide with a dough hook attachment simply place the durum flour in the mixing bowl and form a cone shape with a small depression at the top, like a volcano, where you will place your beaten eggs and then turn the Kitchen Aide on at low speed. Watch the mixture closely. When a solid ball of pasta dough is formed remove it from the mixing bowl, wrap in plastic and set it aside for a few minutes until you’re ready to work with it. If you do not have a Kitchen Aide, the old fashion way will work just fine. Flour a cutting board and form the volcano shape, add the egg at the top and slowly incorporate

the ingredients until a ball of pasta dough is formed. Stand the corn cob lengthwise and carefully slice the corn from the cob. Set the corn kernels aside for later and add the cob to a stockpot along with half the onion, carrot, thyme, bay leaf, and celery. Fill with one gallon of water and bring to a boil. Once the stock reaches a boil place the lobster in for 10 minutes. Remove and immediately submerge the lobster in an ice bath and reduce the stock to a simmer. When the lobster has cooled, cut open the tail and claws to remove the meat and set it aside in the fridge until later and return the lobster shells to the stock along with the tomato paste. While the stock simmers cut up the cauliflower florets, toss them in olive oil and season them. Roast at 400 degrees for 15 minutes, rotating the tray half way through the cooking process. When they’re done place them in the food processor or blender with two tbsp of the butter and the milk then blend until a smooth thickened puree is achieved. Set in fridge to cool. pry it from the back of the cabinet. If not, a rolling pin and some elbow grease will work fine. Form the ball of pasta dough so that it fits into the machine. Press the pasta through a few times starting at the thickest setting, working it down to the one setting that will produce a nice thin sheet of pasta. Then using a cookie cutter punch eight large circular pasta sheets. Brush four of them with water and place a spoon full of the cauliflower puree in the middle of each. Then, cover each with another sheet of pasta. Carefully press the edges together removing any air pockets and then seal the ravioli using a fork. Set aside on a floured plate until you’re ready to cook them. After about two hours of simmering, the stock is ready to be strained, and the sauce is ready to be finished. Start a roux in a small pan with the all purpose flour and the rest of the butter. Cook it over medium heat for about five minutes, stirring often so it does not burn. Then strain the stock and blend it with the roux on high until a sauce consistency is reached. After hours of painstaking work we are ready to assemble our dish. Bring a small pot of salted water to a boil then drop the ravioli in. In a large sauté pan heat one tbsp of olive oil then add the mushrooms and the corn kernels. Deglaze with white wine and let reduce for one minute. Add the lobster and corn sauce and the chunks of lobster meat. When the ravioli floats in the boiling water they are ready to be finished at two minutes in the sauce on a medium low heat. Plate the four ravioli and garnish with a sprig of tarragon. www.chefjoecipro.com
