Hampton Racquet Club hosted a PRO/AM tennis tournament to benefit the Retreat on Saturday.
The Hampton Classic Horse Show took place this past week in Bridgehampton. This past Sunday the Grand Prix VIP tent had many guests including B. Smith, Dan Gasby, Michael Wudyka, Sean Dalton, Tommy Hill, Larry and Maria Baum and Elisa Di Stefano to name a few. Many tables were festively dressed and a favorite among everyone was the Pilatus Aircraft table which came with its own flight attendant, Jodie Kranz.

Last Wednesday Guild Hall Red Carpet Film Series presented “Fish-A Memoir of a Boy In A Man’s Prison” by T.J. Parsell, based on actual events in this filmmaker’s life. Three short films were shown and T.J. Parsell along with actor Bryan Dechart, who plays Parsell in the film, and other cast members participated in a talk back session with the audience. Parsell is attending NYU Graduate Film School and currently working on making this into a feature length film.

Today’s Birthday: Jack Daniel, 1846 Not many people get to have a brand of whiskey named after them, but Jaspar Jack Newton Daniel’s signature is on every bottle bearing his name. Jack Daniel’s Old No. 7 isn’t just any whiskey – the Tennessee sour mash, which is technically bourbon, is the best selling whiskey in the world. Jack was the tenth youngest of 13 siblings, and he lost his parents early on. A local minister took him in, and as legend has it, the minister kept a still outside of town. When the congregation became alarmed at the thought of the minister drinking the devil’s brew he concocted, he sold it to “Jack.” The rest, as they say, is history. Jack only grew to be five foot two-inches but he became a legend in Tennessee and was called “Mr. Jack” or “Uncle Jack” by most folks. The Lynchburg brewery is a popular destination for visitors from all over the world. When he died, Jack’s nephew made the label black to mourn his uncle’s death, and it remains black to this day. Roasted Eggplant And Chick Pea Spread With Rosemary Flatbread Ingredients (serves 4) 2 large eggplant 1 10 oz can of chick peas (rinsed & strained) 2 heads of garlic 3 sprigs of rosemary 1/2 c all purpose flour 1/2 c durum flour 1/2 c cold water 1/4 c canola oil 1/4 c olive oil salt and pepper to taste
in aluminum foil and add a tbsp of oil. Roast in the oven with the eggplant for 60 minutes. While this is happening, chop the rosemary and mix together the flour, water, rosemary, salt and pepper until you have achieved a ball of dough. Set aside until you are ready to cook the flat breads. When the garlic and eggplant are done remove them from the oven and place the eggplant in a mixing bowl. When the eggplant are cool, peel away the skins and add the eggplant to the food processor with 1/4 cup of extra virgin olive oil. Pulse to a smooth consistency. Heat a metal sheet tray or a pizza stone in your 400-degree oven. Set
up an area to dust with all-purpose flour to roll the flat bread. Roll out several thin sheets of dough at a time and place them on the hot sheet tray or pizza stone. Allow them to cook for five minutes or until they are brown. When the flat bread is cool brush them with olive oil and break them into large pieces. Serve along side your eggplant dip.
