Wednesday, November 27 - During November and December, The Retreat, eastern Long Island’s only domestic violence shelter, will be offering support with their annual “Adopt-AFamily Program.” Volunteers are asked to donate holiday presents or gift cards for a family in need. Thursday, November 28 - The First Presbyterian Church on Main Street in East Hampton continues its tradition of offering a free holiday meal to all who wish to attend. Seating is at 11:45 AM, with dinner served at noon. Take out is available, beginning at 11:30 AM. It’s become a tradition in East Hampton Village – the annual tree lighting at the Maidstone on 207 Main Street with a very special guest – Santa. The event will feature live holiday music from local choirs, cookie decorating, holiday refreshments and more. Non-perishable food items will be collected for the East Hampton Food Pantry. There will also be a toy drive for Toys for Tots. A collection box will be available for new unwrapped toys and will remain in place throughout the holiday season. Inside at the Living Room restaurant, an a la carte menu and a Swedish Christmas Table menu will be offered in the dining room beginning at 6:45 PM. In a lot of ways the unspoiled beauty of our beaches and woodlands is even more apparent in the starkness of winter. The documentary filmmaking team of Sag Harbor’s D. A. Pennebaker and Chris Hegedus will be honored at the Hamptons Take 2 Documentary Film Festival Gala on December 7 at Bay Street Theatre in Sag Harbor.

The sixth annual Hamptons Take 2 Documentary Film Festival will showcase the screenings of 22 documentary films, “all docs, all day,” for three days beginning December 6 at the Bay Street Theatre in Sag Harbor. The festival will feature a wide variety of illuminating documentaries dealing with art, politics, biography, sports, humor, and the environment. the animals were shipped to New York. As legend has it, most were eaten on the way, but a few made it out to the East End, specifically to duck farms located in Mecox, Center Moriches, and the North Fork. These birds became known as Long Island Duck, and became a world famous culinary feast. At one time Long Island had 80 duck farms, and still has two of the nation’s largest producers, including Crescent

Duck Farm in Aquebogue. There are several interesting recipes on the farm’s website, including Apricot brandied duck and breast of duck with figs and Grand Marnier (see www.crescentduck.com/ recipes). The preferred cooking method, at least in East End restaurants, is to split the bird in half, bake it at around 325 degrees for two hours or so (depending on the size) then finish it off under the broiler so the skin crisps. It’s traditionally with l’orange or a comparable fruit-based sauce, which usually consists of the fruit, sherry, sugar, shallots, and sometimes a little butter. The problem with cooking duck this way is it difficult to prepare for a decent-sized family, since each half-duck commands a fair amount of space. In the old days, ducks were cooked whole, like chicken and turkey, and stuffed – the traditional bread based, often with cranberries and/or mushrooms. Try a rice-based stuffing, which becomes extremely tasty as it soaks up the natural flavors of the bird. Pre-cook some brown rice and mix it in a bowl with diced onion, mushroom, shallots, chestnuts, carrots, turnips, and whatever else seems appropriate. Clean out the duck cavity and loosely stuff. You can cook the remainder in a separate dish, adding a little duck fat as the bird renders. You can cook two or three birds depending on how many people are eating. For our favorite recipe, we return

to the duck’s Far Eastern roots. Our former neighbor, Cathy, is Chinese. She would slowly cook her duck all day in a covered Dutch oven. The end result was remarkably tender. Layer the bottom of the pot with a mixture of soy, Teriyaki sauce and some sake. Place the duck, stuffed with rice, on a rack. Set the oven at about 150 degrees and let it cook all day. Something remarkable happens about eight hours later – the skin begins to brown, even though the bird is covered. Raise the heat to about 300 and let it cook for another 20 minutes or so. Then, take the top off. The bird should be almost fully cooked at this point (check with a thermometer). Put it under the broiler (but not too close) and let the skin get crispy. After about five minutes or so, put duck sauce on the bird and broil some more, until the sauce begins to blacken and burn. Take the bird (or birds) out of the oven and place on a carving board. Meanwhile, whip up a fruit based sauce – raspberry works perfectly. Clean the meat off the bird and divvy it up, served on a bed of the rice stuffing, chopped scallions, and a ramekin of sauce. Make your side dishes local – cauliflower, sprouts, and broccoli from the local farm stands, and don’t forget pumpkin for pie. After a couple glasses of wine everyone will want to pick at the bones so put them on a big tray in the center of the table and let everyone get down with their bad selves.

It took me three days of trying to remember what my nephew Nick gave me for Christmas last year. It only takes me seconds to remember the time we went to a spin class at B-East together; the hour was so marked with laughter, hijinks, and classic Nick sotto voce commentary as to find a forever place in the family lore. I want more of that. Don’t we all? Nick’s gift -- under armor from a super trendy designer – was lovely, and thoughtful. But like more and more people I know, the focus has shifted away from amassing more stuff. This year, I want to add to the family lore and amass more memories. I want to give, and get, time. Luckily, the East End offers an array of ways to spend quality time with friends and family. The possibilities are endless, and totally dependent on individual desires, quirks, and taste. Autumn 2013 has brought Hampton Daze editors loads of beauty and wellness fun beginning with the Spa Soirée in NYC. Spa Soirée is an industry networking mixer that began in Sag Harbor last spring. Having a Hampton’s party vibe, the soirée brings various professionals together to mingle, exchange business cards and build relationships. All of the top hospitality businesses, spa associations, software and cosmetic brands came together over food, fun, and cocktails at Sen Restaurant NYC. Daze editors then boarded Virgin America airlines to Viva Las Vegas for the International Spa Association Conference. Each year, Hampton Daze and The Independent Newspaper head to ISPA where a select group of spa professionals come together annually to meet and discuss new industry trends, experience educational seminars, and become more aware of any new and existing exhibitors available. Our editors covered the conference from start to finish and left with a “Santa” bag of beauty surprises. One of our event educational pamperings included an Eye Contour Treatment from a top Sothy’s aesthetician using ice cold porcelain spoons, authentic petrissage-like technique and relaxing pressure point work. In the old days, parents could ship their kids off to the movie matinees prevalent during holiday vacation. It might cost all of a quarter, and the movie houses would offer an all day card beginning with cartons and ending with some kid-friendly comedy or adventure. Nowadays, the kids are more prone to stay in the house (and underfoot) playing video games, eating junk food, and in general making any kind of peace and quiet impossible. Anyhow, sending the brood to spend a whole day at the movies would entail taking out a mortgage to cover the tickets, five-dollar popcorns, and $4.50 Big Gulps. So Hollywood has repositioned itself – most holiday openings are aimed at adults who might be anxious to call in a baby sitter after a few days of having the kids home. There are a few kid-friendly, family-orientated films on tap as well – just in case there are still a few traditional families out there. One such film comes courtesy of Disney, the animated fantasy Frozen, from the creators of Wreck-It Ralph, a well-done remake of the classic Hans Christian Anderson fairly tale The Snow Queen. It’ll be out Thanksgiving weekend and of course, will be available in 3-D. It’s a visual delight. The last-minute run of Oscar contenders begins in earnest on December 13 with American Hustle. It is the follow up to David O. Russell’s Silver Linings Playbook, which received multiple nominations. The cast is rich in Oscar pedigree: Christian Bale, Jennifer Lawrence, Bradley Cooper, and Amy

Adams. It’s for mommy and daddy, kids. Speaking of Bale, he’s front and center in Out Of The Furnace, Scott Cooper’s follow-up to Crazy Heart. Once again the cast is to die for: Woody Harrelson, Casey Affleck, Forest Whitaker, Willem Dafoe, Sam Shepard, and Zoe Saldana. This is a grim film, rated R, and there is “stoner language, drug use, and violence” – in other words, a perfect holiday treat. The Hobbit Part 63 is due out around the same time, and it’s 17 hours long. We’re just kidding, but The Hobbit: The Desolation of Smaug is long and considered too dark for most kids. It’s part II of a trilogy. Speaking of Disney, Tom Hanks stars as Walt Disney in Saving Mr. Banks, and he has gotten some Oscar buzz. Look for it in theaters December 13. Anchorman 2 is due out a week later, and no, Will Ferrell won’t be nominated by the Academy. Parents and children alike will get some laughs, though – add a star if you liked the original. Want a Christmas-themed movie for Christmas? Tyler Perry’s A Madea Christmas will be released mid-December. It’s PG-13 and stars Perry and Larry The Cable Guy -- nothing says “yuletide” like Larry.
