It’s a perfect time to take a walk on the beach or visit our galleries, cultural centers, and restaurants. Most of all, it is a time to bond with our loved ones – neighbors, friends, and family. This is our 21st year here at The Independent, and we are proud to deliver the news to our loyal readers on both forks – we are the only newspaper that distributes in all five towns. As always, The Independent is free of charge. All of us – our publishers, staff, office crew, and award winning writers, would like to thank you for picking us up every week. Books For Kids
By Miles X. Logan
The Big Bad Rain Monster
Jeralyn (Jerry) Lash has been coming to Noyac for as long as she can remember, and her childhood memories of the idyllic life on the beaches and waterways form the foundation of her children’s book, The Big Bad Rain Monster. Now Jeralyn LashSands, she has been coming back ever since, to the same house she shares with her brother, Frank. “My parents purchased a house on Noyac Bay - it has been in the family for over 60 years. Every summer my kids, grandchildren and I gather at the house and pickup where we left off the year before. An uncle who lives nearby once said, `There’s no place like Noyac,’ and how right he was.” Beautifully illustrated, The Big Bad Rain Monster is told with warmth and heart, and is meant to be read aloud and shared by teachers, parents and young readers. The plot centers around Young Sweetie Bumpkins, who lives in a cottage with her parents, Mama Angel and Papa Blue Eyes and their two dogs, Sir Grumbles and Lady Chee-Chee. But Lady Chee-Chee is terrified of rain and something has to be done! With her parents, Sweetie Bumpkins comes up with an unusual and loving solution which proves that no matter how scary something is, there is always a way to overcome the fright. Children will love the funny dogs and situations and the delightfully silly names of the characters, while adults are sure to appreciate the gentle message about conquering fear. Lash-Sands has also made her story as topical as it is timeless, with references to health food stores, organic lifestyles, music and farmers’ markets. Lash-Sands forged a love for the water as a child in Noyac, and it’s grown deeper over the years. Nowadays, Lash-Sands spends the offseason living by the ocean and walking the beautiful beaches of The Bahamas with her two dogs by her side. Butterfly Comes To Town
Karen Fredericks is no stranger to Indy readers – her cartoon “Is It Just me?” graces our editorial page every week. She is a nationally known illustrator – her work has literally appeared in every major newspaper in the country. There is considerable buzz about her first self-penned illustrated children’s book, Butterfly Comes To Town with good reason: her previous effort, How

Pleasantville. Ant, her new neighbor is smitten -- he can’t wait to meet her. But his curmudgeonly friend, Worm, is less than thrilled about the new neighbor. “Now that she’s here, Pleasantville will never be the same again!” Worm warns Ant. Could this be true? Ant intends to find out. Butterfly Comes To Town is the first of the Ant And Butterfly children’s picture book series by award winning author and illustrator, Karen Fredericks. The book’s gentle humor and colorful illustrations make it a perfect choice for children of all ages. It is available digitally at Amazon for a special introductory price of just 99 cents. Local Flair
Want to try something a little different for Thanksgiving dinner? Instead of the traditional turkey how about something local like the Anas platyrhynchos domestica, better known as the Pekin Duck. An ancestor of the Chinese mallard, the Pekin were originally found in the canals in Nanjing, China. How can this be local, you ask? Well, in the late nineteenth century some of

the animals were shipped to New York. As legend has it, most were eaten on the way, but a few made it out to the East End, specifically to duck farms located in Mecox, Center Moriches, and the North Fork. These birds became known as Long Island Duck, and became a world famous culinary feast. At one time Long Island had 80 duck farms, and still has two of the nation’s largest producers, including Crescent
Duck Farm in Aquebogue. There are several interesting recipes on the farm’s website, including Apricot brandied duck and breast of duck with figs and Grand Marnier (see www.crescentduck.com/ recipes). The preferred cooking method, at least in East End restaurants, is to split the bird in half, bake it at around 325 degrees for two hours or so (depending on the size) then finish it off under the broiler so the skin crisps. It’s traditionally with l’orange or a comparable fruit-based sauce, which usually consists of the fruit, sherry, sugar, shallots, and sometimes a little butter. The problem with cooking duck this way is it difficult to prepare for a decent-sized family, since each half-duck commands a fair amount of space. In the old days, ducks were cooked whole, like chicken and turkey, and stuffed – the traditional bread based, often with cranberries and/or mushrooms. Try a rice-based stuffing, which becomes extremely tasty as it soaks up the natural flavors of the bird. Pre-cook some brown rice and mix it in a bowl with diced onion, mushroom, shallots, chestnuts, carrots, turnips, and whatever else seems appropriate. Clean out the duck cavity and loosely stuff. You can cook the remainder in a separate dish, adding a little duck fat as the bird renders. You can cook two or three birds depending on how many people are eating. For our favorite recipe, we return

to the duck’s Far Eastern roots. Our former neighbor, Cathy, is Chinese. She would slowly cook her duck all day in a covered Dutch oven. The end result was remarkably tender. Layer the bottom of the pot with a mixture of soy, Teriyaki sauce and some sake. Place the duck, stuffed with rice, on a rack. Set the oven at about 150 degrees and let it cook all day. Something remarkable happens about eight hours later – the skin begins to brown, even though the bird is covered. Raise the heat to about 300 and let it cook for another 20 minutes or so. Then, take the top off. The bird should be almost fully cooked at this point (check with a thermometer). Put it under the broiler (but not too close) and let the skin get crispy. After about five minutes or so, put duck sauce on the bird and broil some more, until the sauce begins to blacken and burn. Take the bird (or birds) out of the oven and place on a carving board. Meanwhile, whip up a fruit based sauce – raspberry works perfectly. Clean the meat off the bird and divvy it up, served on a bed of the rice stuffing, chopped scallions, and a ramekin of sauce. Make your side dishes local – cauliflower, sprouts, and broccoli from the local farm stands, and don’t forget pumpkin for pie. After a couple glasses of wine everyone will want to pick at the bones so put them on a big tray in the center of the table and let everyone get down with their bad selves.

Home For The Holidays 2013 If you think cats are aloof and indifferent, “Batman” will change your perception. This black and white kitty is super affectionate and enjoys the company of people, cats and dogs. Batman spars with his best friend, a long haired dachshund, but always with claws in. He engages in a playful boxing match, and surrenders by rolling on his back. Batman was rescued as a feral kitten, neutered and socialized, but is in need of a permanent home. He is approx. 9 mos. young, very sweet, litter trained. For more info, call 631-219-8529 or visit www.rsvpinc.org.

Dhonna and Booby Goodale don’t exchange gifts with each other, but for the past 19 years they’ve done their best to make sure Christmas is a special holiday for others -- the Goodales have clothed and outfitted over 1000 children and their families. The couple also buys these families a traditional Christmas dinner. This holiday season they have decided to open their Flanders home, with “The Goodale Holiday House Tour,” and the proceeds will be used to fund an annual shopping spree for homeless kids. The tour features 12 themed Christmas trees, and the entire Goodale estate is decked out. Guests will be treated to live music with surprise musical guests, holiday cocktails, a stream of holiday movies in the cinema room, a free raffle entry, a sumptuous gourmet lunch and A list caroling around the fireplace. The Goodale estate also features a fully equipped gym, a library, three pianos -- two baby grand pianos and a Steinway

With the holiday season quickly approaching, locals will be decking their respective halls using Hamptons-based businesses to get the job done. Everything from Christmas tree ornaments and holiday-themed table settings, to holiday wreaths and trees will be available from several local haunts. New to the Hamptons scene this year is Serena & Lily Beach Market in Wainscott. A complete holiday collection is available at the new shop, including elegant holiday candles, holiday glassware and plates, tree ornaments, and snowflake-like paper pendants to hang around the house. The store also has great gift options. The holiday collection ships for free, ending on December 18. Serena & Lily is located at 332 Montauk Highway. Call 631-537-5544 or visit www. sereaandlily.com for more info. Hildreth’s Home Goods, a staple for the Hamptons, is also gearing up

for the festivities. Both East Hampton and Southampton locations are offering seasonal home goods for the holiday season. Proving to be a consistent one-stop shop for winter goods, everything from table linens, candles, glassware, pillows, wreaths, rugs and even dish towels are available throughout the over centuryold locale. For Thanksgiving, the store has staged possible table settings, complete with color schemes, cutlery, dishware, and suggested floral arrangements. Check them out on Facebook to learn how to set the most beautiful table for your next holiday party or just pop in to the store. Christmas ornaments (both for the tree and the home) are, of course, in stock as well. Hildreth’s has stores in Southampton (51-55 Main Street, 631-283-2300) and in East Hampton (109 Pantigo Road, 631-329-8800). Marders in Bridgehampton is known for their dozens of themed Christmas
trees on display throughout the store each year. The shop also sells holiday-ready plants, wreaths, ornaments and topiaries. Christmas trees in all shapes and sizes are also available as are evergreen branches to decorate the front porch, patio, or deck. Make your own holiday wreath at Marders on December 8 and/or December 15. Call the Garden Shop at 631537-3700 to register and pay in advance. The nursery and store are located at 120 Snake Hollow Road in Bridgehampton. Lynch’s Garden Center in Southampton also offers simple and elegant outdoor holiday decorations for this time of year. Christmas tree options are available as well as holly plants, camellias and fragrant sarcococca for those green thumbed decorators. Wreaths and garlands are sold readymade as well as in bundles if you want to make your own. Lynch’s is at 175 North Sea Road. Call 631-283-5515 with questions or for more info. Here are some tips to keep your holiday decorating fun and fresh, but simple, inexpensive, and elegant: • Group several clear glass vessels in varied shapes and sizes and fill them with same colored ornamental balls. It’s a surefire way to dress up any table setting, fireplace mantle or coffee table. • Tree ornaments can also be hung from a windowsill to dress up the house (from both indoors and outdoors). • Fill a silver bowl with a large bunch of candy canes, adding a tasty holiday pizzazz to any room.
November 27, 2013

• Tuck a bunch of tall amaryllis into a glass cylinder and wrap stems with a wide red or white ribbon. • Erect matching containers on either side of your driveway, walkway and front door with evergreen shrubs or small trees, strung up with mini-lights, ornaments, and/or bows to offer a warm, inviting path to your home.

It took me three days of trying to remember what my nephew Nick gave me for Christmas last year. It only takes me seconds to remember the time we went to a spin class at B-East together; the hour was so marked with laughter, hijinks, and classic Nick sotto voce commentary as to find a forever place in the family lore. I want more of that. Don’t we all? Nick’s gift -- under armor from a super trendy designer – was lovely, and thoughtful. But like more and more people I know, the focus has shifted away from amassing more stuff. This year, I want to add to the family lore and amass more memories. I want to give, and get, time. Luckily, the East End offers an array of ways to spend quality time with friends and family. The possibilities are endless, and totally dependent on individual desires, quirks, and taste. Below, find just a few ideas. Got culture queens and kings on your list? You’re in luck on the East End, thanks to a bounty of institutions, each of which boasts a plethora of opportunities for bonding activities. See a show together at the Westhampton Beach Performing Arts Center, get tickets for those summer Monday night comedian showcases at Bay Street Theatre in Sag Harbor, browse the latest exhibit at the Parrish Art Museum, enjoy cocktails and a concert at the newlyrefurbished Suffolk Theater in Riverhead, or stop in Guild Hall in East Hampton to peruse the gift shop together. And if your culture critters like to travel, wrap up a book of Hampton Jitney passes with the promise of days to come touring the Big Apple. Got young folks who are music lovers?
Get tickets to a show locally, or at any of myriad upisland venues like The Emporium in Patchogue. Even more fun? Head out to karaoke at Gurney’s or open mic at 230 Elm in Southampton. There’s a multitude of memories to be made enjoying the great outdoors. Head out to Montauk Point for a seal hike, or over to Buckskill Winter Club for an ice skating session. Never tried it before? All the better for bonding. You could present the plan along with some warm weather gear from a local shop like the Outdoors Store in East Hampton. And if those outdoor endeavors feel a little too chilly – try swinging a racquet at a local venue like East Hampton Indoor Tennis or Future Stars. Set the stage with equipment you pick up at the new Dick’s in Riverhead or Gubbins Running Ahead. While you’re there, check out other accouterment you could wrap up with a promise of activities to share. Why not get a jump on the perennial New Year’s Eve vow and start working out with a friend? Passes to the luxurious Gurney’s Seawater spa are a gift anyone would love. Make it all the more special by hitting the pool together. Sure, a Planet Fitness membership is a great gift for your sister or brother. Ratchet up the giving by make plans to go to the gym together. It’s a win/win/ win. You get fit, have fun, and spend time with a loved one. Nothing says your Christmas gift has to be used at Christmas time, either. Some warm weather ideas? A round of golf (played together, of course), a kayak paddle, bike ride, Jet Ski sojourn, and
Happy Holidays
fishing are all fun activities to try with a loved one. This next one combines the love of fitness and music. Plus, it’s ripe for lots of laughter, depending on how coordinated your family members are. Take some dance classes. Pick a style and it’s likely you can find classes offered locally. We like line dancing, cuz you get to wear a cowboy hat. Finally, when it comes to bonding experiences, everybody’s got to eat. Dinner, lunch or breakfast for two at one of the region’s awesome eateries is always a sweet and practical gift. How about trying a cooking class together? Loaves &

Fishes on Main Street in Bridgehampton runs classes, as do several local libraries. Grab a little utensil at William Sonoma or Hildreth’s to illustrate the present. Or, if everybody’s of age, make a plan to try one of the drink recipes the folks at Hampton Bays Wines & Spirits publish with their ads. Even better, grab a bottle of something new and invent your own libation. Drink responsibly, though, you want to remember the time you spend together. Overall, it isn’t that hard to conceive strategies for spending time with friends and family. All it takes is a little imagination and time.

Autumn 2013 has brought Hampton Daze editors loads of beauty and wellness fun beginning with the Spa Soirée in NYC. Spa Soirée is an industry networking mixer that began in Sag Harbor last spring. Having a Hampton’s party vibe, the soirée brings various professionals together to mingle, exchange business cards and build relationships. All of the top hospitality businesses, spa associations, software and cosmetic brands came together over food, fun, and cocktails at Sen Restaurant NYC. Daze editors then boarded Virgin America airlines to Viva Las Vegas for the International Spa Association Conference. Each year, Hampton Daze and The Independent Newspaper head to ISPA where a select group of spa professionals come together annually to meet and discuss new industry trends, experience educational seminars, and become more aware of any new and existing exhibitors available. Our editors covered the conference from start to finish and left with a “Santa” bag of beauty surprises. One of our event educational pamperings included an Eye Contour Treatment from a top Sothy’s aesthetician using ice cold porcelain spoons, authentic petrissage-like technique and relaxing pressure point work. Following this outrageous experience was a full explanation of the line on display and products to bring home in a gorgeous sequence-lined purse. What else would you expect from Sothy’s? Sold in over 80 countries around the globe, we believe this brand will be a new favorite in the Hamptons! We always love to see our local spa friends, such as the management team from Gurney’s Inn Seawater Spa, Hampton Sun, Naturopathica, Mind
Body, TNG Worldwide and more at the conference too. Returning to New York, we visited some great spas such as the Setai Hotel & Spa on Wall Street. Discovering retail products on display that also exhibited at ISPA was the ever-so-amazing HydroPeptide skincare line. Another cutting edge brand at the Setai on Wall Street is the high-tech Clarisonic system which has treatments for both the face and the feet. Although it’s always awesome to get pampered at a spa destination, there is nothing like the therapeutic benefits of the in-home spa experience. There is no doubt that this season, we found fabulous Fall beauty finds for preserving the youth and well-being for our readers. Enjoy!
NEW! Holiday Finds! www.Yves-Rocher.com
In the old days, parents could ship their kids off to the movie matinees prevalent during holiday vacation. It might cost all of a quarter, and the movie houses would offer an all day card beginning with cartons and ending with some kid-friendly comedy or adventure. Nowadays, the kids are more prone to stay in the house (and underfoot) playing video games, eating junk food, and in general making any kind of peace and quiet impossible. Anyhow, sending the brood to spend a whole day at the movies would entail taking out a mortgage to cover the tickets, five-dollar popcorns, and $4.50 Big Gulps. So Hollywood has repositioned itself – most holiday openings are aimed at adults who might be anxious to call in a baby sitter after a few days of having the kids home. There are a few kid-friendly, family-orientated films on tap as well – just in case there are still a few traditional families out there. One such film comes courtesy of Disney, the animated fantasy Frozen, from the creators of Wreck-It Ralph, a well-done remake of the classic Hans Christian Anderson fairly tale The Snow Queen. It’ll be out Thanksgiving weekend and of course, will be available in 3-D. It’s a visual delight. The last-minute run of Oscar contenders begins in earnest on December 13 with American Hustle. It is the follow up to David O. Russell’s Silver Linings Playbook, which received multiple nominations. The cast is rich in Oscar pedigree: Christian Bale, Jennifer Lawrence, Bradley Cooper, and Amy
Adams. It’s for mommy and daddy, kids. Speaking of Bale, he’s front and center in Out Of The Furnace, Scott Cooper’s follow-up to Crazy Heart. Once again the cast is to die for: Woody Harrelson, Casey Affleck, Forest Whitaker, Willem Dafoe, Sam Shepard, and Zoe Saldana. This is a grim film, rated R, and there is “stoner language, drug use, and violence” – in other words, a perfect holiday treat. The Hobbit Part 63 is due out around the same time, and it’s 17 hours long. We’re just kidding, but The Hobbit: The Desolation of Smaug is long and considered too dark for most kids. It’s part II of a trilogy. Speaking of Disney, Tom Hanks stars as Walt Disney in Saving Mr. Banks, and he has gotten some Oscar buzz. Look for it in theaters December 13. Anchorman 2 is due out a week later, and no, Will Ferrell won’t be nominated by the Academy. Parents and children alike will get some laughs, though – add a star if you liked the original. Want a Christmas-themed movie for Christmas? Tyler Perry’s A Madea Christmas will be released mid-December. It’s PG-13 and stars Perry and Larry The Cable Guy -- nothing says “yuletide” like Larry. Last but not least, Meryl Streep makes her bid for an unprecedented 175th Oscar nomination in August: Osage County. The adaption of Tracey Lett’s Pulitzer Prize winning play also stars Shepard, Juliette Lewis, Chris Cooper and Dermot Mulroney. It’s in theaters on Christmas Day and advance word is it packs an emotional wallop.
