’M FREQUENTLY ASKED TO DEFINE “CRAFT BEER.”

I always struggle, though, because I have a different vantage point than most. The word “definition” means “the act of making something definite, distinct, or clear.” There are absolutes that I think of when I try to explain craft beer: authentic, local, community. However, much of the craft-beer world is not definite, distinct, or clear—and that’s why I love it. Four base ingredients are used to make beer, and they offer an endless number of variations. Style guidelines may be definite, distinct, or clear, but a group of beers within the parameters of a style will likely all have a unique flavor profile. We can define the style based on widely agreedupon guidelines, but each brewery’s interpretation of those guidelines leads to creations that are distinct in their own right. So to me, “craft beer” is personal. Like a brewer interpreting a style, we interpret our experiences with craft beer, defining and redefining it based on our own experience. From Ale to ’Za Meet ZwanzigZ, a pizzeria/ brewery named among the nation’s best. BY KAREN ASP

THERE’S NO BETTER MARRIAGE

than pizza and beer, yet when ZwanzigZ Pizza & Brewing first opened in Columbus in 2002, it was solely a pizza joint. Fast-forward 15 years, and ZwanzigZ has now become one of the nation’s top brewpubs, churning out award-winning beer and crowd-pleasing artisan pizza. One of its secrets? “To do all of this and be small at the same time is a challenge, but we like being small, as it allows us to give our customers a unique experience,” says Kurt Zwanzig, co-owner and co-founder with his wife, Lisa. When ZwanzigZ opened, it offered only carryout and delivery. But customers became enamored with its pizza, and three years later, the dine-in restaurant opened. Something, though, was missing, and that something was Mike Rybinski, Kurt’s college roommate who started homebrewing during that time. Savvy about the explosion of craft beer, the Zwanzigs began imagining making their own beer. In 2012, after a major expansion, they opened the brewery. Brewmaster Rybinski has been ➼ ON PG. 8

“The only thing I think about when brewing is what will make people happy,” he says. “I don’t want to make watery beer or over-the-top hoppy beer, just beer that’s full bodied, well balanced, and good tasting.” The wins at the Great American Beer Festival in October took all three by surprise. After two beers, The Ticket and Frankenwald Eisbock,

earned silver medals, ZwanzigZ was named Small Brewpub of the Year and Rybinski Small Brewpub Brewer of the Year. “I couldn’t believe what was happening and could barely walk to the stage I was shaking so badly,” Rybinski says. ZwanzigZ is slated to open a large headquarters in July, strengthening the happy marriage it’s got going, united, of course, by yeast. ★

industries, the world of craft beer seems to be in a steady state of change. Aside from managing day-today operations, brewers must keep current on new regulations, rulings, and trends. To help make sense of it all, the Brewers Guild created the Indiana Craft Brewers Conference. Greg Emig, president of Lafayette Brewing Company and president of the Guild’s board of directors, says the conference came about because brewers wanted educational opportunities to help them learn and grow their businesses. This year, the third annual gathering, held in March in Indianapolis, had three primary tracks—the business of brewing, science, and regulation. Subjects included producing barrel-aged beers, menu-labeling requirements, implementing a sensory-analysis program, and brewery safety, among others. Discussions were led by Hoosier brewers, as well as other Guild members and representatives from the Brewers Association. “Education is pertinent to the growth of our industry in many ways,” says Jon Lang, brewer and founder of Triton Brewing Company and chair of the Guild’s education committee. “Every day, we educate someone, whether it’s a co-worker, a supplier, or a customer, so why not educate each other, too?” The conference also brings together

“Education is pertinent.. to the growth of [the beer]r. industry. Every day, we.. educate someone, whether.. it’s a co-worker, a supplier,.. or a customer.”.. suppliers who might have that perfect service, material, or raw ingredient a brewer is looking for. This year, about three dozen such businesses were on hand. But don’t think it’s all work and no play—

after all, this is beer we’re talking about. Centerpoint Brewing and Indiana City Brewing hosted guests for socialization and plenty of brews. The hardest part of implementing the conference is choosing a date and location that works for the 120-plus members, Emig points out. It can be tough for brewers and owners to find the time, and it’s sometimes challenging to create content that’s relevant for breweries of all sizes. A few hurdles, though, don’t overshadow the meeting’s numerous benefits. Lang still references info from a Founders Brewing Co. presentation on starting a lab on any budget,


and appreciates being able to ask questions of government organizations, such as the state Alcohol & Tobacco Commission, to ensure Triton is following the law. But most of all, “I can’t forget the camaraderie,” Lang says. “Without our fellow brewers helping each other, it’d be a much harder and slower learning curve. It’s a fun, passionate industry, and I want it to be bigger and better.”

is always the goal when brewing, there’s plenty of actual science involved, too. For example, if you’re making an American Pale Ale, you need to know whether it’s in the IBU range it should be for that style. To find out if they’re on the right path, brewers can send their beer to the Chemical Analysis Laboratory at Purdue Food Science, the result of a partnership between Purdue University and the Brewers Guild. The lab launched earlier this year, about four years after the idea was hatched.

A BALANCED EDUCATION For future brewery owners or even those who want to take a homebrewing hobby to the next level, the Essentials of Brewery Operations course at Indiana University Purdue University Indianapolis gives them an opportunity to learn the ropes. Taught by Ron Smith, a certified Cicerone and a medalist in homebrewing competitions, the course covers the entire gamut of running a brewery, including brewing ingredients and processes, recipe formulations, hop and yeast varieties, quality-control procedures, and legal issues, to name a few. Students also visit breweries to see firsthand various brewing methods and equipment. “It’s a well-rounded course for anyone who wants to work in the craft-brewing industry,” Smith says. Prior to the class’s beginning, Smith asked the Guild for its support, and in the process of reviewing that request, D.J. McAllister,

“[The Brewers Guild was] curious how food science might be able to help craft brewers of Indiana,” says Brian Farkas, department head and professor of food science at Purdue. “Over time, it has evolved to where we are now.” A brewer submits two bottles or cans with a form that indicates what he or she wants tested, including alcohol and sugar content, color, IBUs (hops contribution), and pH. Then, using industry-standard methods, research scientist and lab manager Jean Jensen runs the sample through a series of tests.

“A lot of those in the craft-brewing industry don’t have their own in-house labs set up,” Jensen says. “We’re looking to fill that need.” And no, she does not taste the beers. “These are physical, chemical tests,” Farkas says. “They don’t tell you whether the product is good or not. They tell you if it’s in the specs you were shooting for.” The overall theme is quality. “We’re trying to support craft brewers and help them produce consistently high-quality products,” Farkas says. —L.K.

president and head brewer of Black Swan Brewpub and treasurer of the Guild’s board of directors, realized the class could fill a big hole for many breweries. “Part of our core mission is to advance the highest standards of brewing,” McAllister says. “All breweries are fighting uphill battles to educate consumers, find and train qualified team members, and ultimately grow our craft. When we find an opportunity to support our members in these battles, we give it serious consideration. The Essentials of Brewery Operations course clearly provided this opportunity.” There are no prerequisites (although students must be 21), and pupils do not have to be enrolled at IUPUI. In its first go-round this past winter, the class had about a dozen students. “While a course like this is never going to completely replace the on-the-job training that’s going to be required, it’s going to give somebody a really good head start in getting to the industry,” Smith says. Plus, it helps weed out those who, as McAllister says, look at brewing through rose-colored glasses. “They envision brewers sniffing barrel-aged beers or formulating recipes. Does it really matter out of which type of glass you drink your beer? Brew aficionados offer a resounding “yes!” “They’re designed to enhance certain characteristics,” says Andrew Castner, MashCraft Brewing partner and brewer. “The best places have different glasses for different beers. They all have value.” Here’s a look at some of the more common drinkware styles and what to sip out of each. BY BRENT GLASGOW 1

PINT/SHAKER GLASS You see the 16-ounce versions just about everywhere for two key reasons—they stack the easiest for those with limited storage space, and they’re cheap. With a tapered, cylindrical shape and wide mouth, they’re also easy to drink from. They come in 20-ounce styles, too.

SNIFTER Once only used for cognac and brandy, these are great for strong beers (8 percent ABV and above) with rich aromas, especially double or imperial IPAs and quadrupels. Use the same swirling motion you would with the hard liquors to release the bouquet.

WEIZEN If you really like wheat beers, this glass, which promotes a large head and traps the often banana-like bouquet, is the one for you. Tell your bartender to omit the head-killing fruit garnish.

STANGE Popular in Germany, it’s no surprise this glass is ideal for German kolsch, bock, and altbier brews, and other delicate beers. The Tom Collins glass clone magnifies hop and malt subtleties and provides an accurate, true flavor.

PILSNER Tall, slender, and V-shaped, this design retains the head that accompanies the beer of its namesake, while providing a window to its color and carbonation, and vent for the aroma. The main drawback is they’re usually only 12 ounces.

TULIP/THISTLE These stemmed glasses are made for Scottish ales, along with Belgians, barleywines, and other varieties that pack a punch. They promote foamy heads, bring out both hoppy and malty flavors, and, like snifters, produce a full aroma when swirled.

BREW CREW DEVOTED INDIANA CRAFT-BEER DRINKERS NOW HAVE A GROUP JUST FOR THEM. Hoosier State’s craftbeer biz is hopping, thanks to loyal localbrew swillers. To give those fans a special experience, the Brewers Guild created the IN Beer Brigade, which lets members support the Guild and local breweries while enjoying exclusive benefits. “Previously, there was no way for individuals to join and show their support for the industry, aside from attending our annual festivals,” says Tristan Schmid, communications director for the Guild. More than 600 Brigadiers have joined so far. While membership comes with several perks, undoubtedly the biggest one is an invitation to one of the multiple release parties at which you can sample (and, for premium members, take home) the exclusive beer. Last August, Three Floyds Brewing Co. and other Northwest Indiana breweries joined forces on Corn King, an IPA with locally grown and locally malted corn. This year, Sun King Brewing Company will host a collaboration with Central Indiana brewers. Richmond resident Susan Gardiner became a Brigadier to back Hoosier brewers—but the beer was a big draw, too. “I was intrigued by the opportunity to have access to one-of-a-kind collaboration brews that are exclusive to Brigade members, in addition to being able to—in a small way—support Indiana’s wonderful craft-beer community,” she says. What’s on tap in 2018? Upland Brewing Co. will host South Central breweries on a sour beer collaboration. —Laura Kruty and Zina Kumok ★

OT THAT YOU 1 should stereotype beer drinkers, but you can generally say this about them: They’re a giving group. So much in fact that breweries across the country are paying it forward to their local communities, but don’t think you have to travel outside the state to find opportunities to give back. You can have your pint and sip it for good in Indiana, too. Start with the three festivals put on by the Brewers of Indiana Guild: February’s Winterfest in Indianapolis, April’s Bloomington Craft Beer Festival, and July’s Indiana Microbrewers Festival in Indy. donation to the organization, while snifters are worth a 25-cent donation and five-ounce tasters and sodas 10 cents. To date, the brewery has donated over $60,000 to these charities. But that’s not the only way you can drink for a cause at South Bend Brew Werks. The brewery also features a special brew, usually released on the first Friday of the month, which has a separate charity partner. Choose that beer, and you’ll not only get a cap to put in one of the three aforementioned charity jars, but your beer will also generate an additional donation by the brewery to that beer’s charity partner. As Elegante says, citing the brewery’s motto, “It’s all about building a better community, one beer at a time.”

To celebrate the 137th anniversary of Wabash being the first electrically lit city in the U.S., Chapman’s Brewing Company held Pints for Power in March, raising more than $1,000 for families in need of help with their electric bills. Thanks to regular rescue events, as well as plenty of brews consumed at its location in Indy, Metazoa Brewing Co. has given more than $15,000 to animal and wildlife organizations. “A portion of every drop of our beer that the public consumes is continuing to get us closer to our goals,” says president Dave Worthington. CRAFTROADS BEVERAGE 1 If Monarch Beverage is the Goliath of beer distribution, you could say Craftroads Beverage is David. Monarch, based on Indianapolis’s east side, manages more than 500 brands and has a half-million-square-foot warehouse. Craftroads, a distributor located near Indy’s buzzy Mass Ave district, counts fewer than 10 brands as clients (as of press time), and its cooler spans a mere 4,000 square feet. who, along with Scott Fitzgerald, teamed up to launch Craftroads last summer, aren’t worried. Not when they have a combined 60plus years of experience in the beer biz and keen eyes for excellent brews and stories that resonate with customers. “We are adamant about beer quality,” Schembre says. They’ve turned away brands that don’t produce great beer and have smart marketing and solid financial ground. “Guys without these three—I don’t see them winning,” Schembre says.

Through its partnership with Fitzgerald’s third-party logistics company, FitzMark, Craftroads’s clients benefit from FitzMark’s nationwide warehousing, freighting, and supply-chain services. Affiliations with Container Logic, which leases fermenting tanks, and Keg Logistics, which manages keg rental and distribution, also fall nicely into Craftroads’s repertoire. As fans of craft beer, Schembre and Lewton see themselves as partners of their brands, helping them encroach little by little

CODO first likes to learn what makes a brewery unique and then sets about telling that story through a well-thought-out name, brand identity (including a logo and messaging), packaging, website, and signage. In the case of Big Lug, that meant a canteen logo in primary colors, a quirky mural featuring flying corndogs and beer-carrying eagles, sleek and modern pendant lighting, and exposed I-beams. Other CODO clients include 450 North Brewing Co., Centerpoint Brewing, and the Brewers Guild. Earlier this year, CODO put their expertise on paper and published the Craft Beer Branding Guide. “We tried to make it as much as possible for people with little to zero branding experience,” says CODO partner and designer Isaac Arthur. An increasing number of breweries understand the significance of good branding, Arthur says. But all the expertly designed logos, labels, and interiors are worthless without one critical factor. “The most important thing you can do is make solid beer,” Arthur says. “It doesn’t matter how good your branding is if your beer isn’t good.” ➼ ON PG. 28

After 25 years in state law enforcement, 20 of those as an excise officer, Don Breeden was looking for a change. So a little over two years ago, he launched Breeden PI Services, offering training, investigative, and consulting help for breweries and others in the alcoholic beverage industry. Through his consulting work, Breeden offers advice on creating a legally compliant floorplan, and can help owners navigate the potentially confusing world of permits, permit exceptions, and liquor-license acquisition. Breeden also teaches the training class required of all bartenders, servers, and liquor store clerks. He’ll touch upon topics like signs of intoxication, food-service laws, and using info on a (likely fake) ID to catch its owner in a lie. “I had a kid at Ball State saying he was from Speedway, Indiana,” Breeden recalls. “I asked him, ‘How far from the track do you live?’ He said, ‘What track?’” Breeden and his team occasionally go undercover to make sure liquor store employees are carding those they should be. If Breeden finds a violation of any kind, it gives the business an opportunity to right the ship—and save itself from costly fines—before an excise officer stops in unannounced. “At $1,000 per [violation], it can add up quickly,” Breeden says.

And if you snagged a Drink Indiana Beer T-shirt at Winterfest, you can toast Jim Pike’s company, which prints that item and others for the Guild. Distinct Images works with the Guild and breweries around Indiana to produce branded merchandise, such as tees, hats, and koozies. In all, more than 500,000 promo products are in its catalog. Often, one project allows Distinct to tap each of its services— such was the case with the Beer Brigade. “That showcased our creative side, our production abilities, and our fulfillment capabilities,” says Pike, president and owner. “All are areas we deal with day in and day out.” The company also recently partnered with Carson’s Brewery in Evansville to make products celebrating the Git-R-Done Cream Ale brewed in collaboration with Larry the Cable Guy. What’s hot in the merch world right now? Comfort reigns. “Everyone wants the super-soft T-shirt with the classic soft print,” Pike says. “We see that leading the market.”

area,” Luecke says. “We knew the Sisters of St. Benedict had some space, so we tossed it to them, and they were on board right away.” With the sisters’ literal blessing, Luecke and Hedinger took over the monastery’s former school art studio that closed about 15 years earlier. “It’s 1960s construction—a little Art Deco and little Catholic high school,” Luecke says. “The bathrooms are baby blue and powder pink. Even if you have a beer too many, it’s pretty easy to figure out which is yours.” The building already had natural gas, perfect for the gas-fired brewing system. They made a few cosmetic changes, including creating a cathedral ceiling. One area that remains a conundrum is the mini auditorium filled with rows of individual wooden seats. “We thought about it for concerts, maybe tearing out every other row,” Luecke says. “For now, we’re focused more on not running out of beer.” —B.G.

Some breweries refurbish one building, but 18th Street Brewery went much further than that. Things got started in 2012 at a former dry cleaners in Gary, which sat unused for a decade. “The owner had no plans for it until we came in,” says founder and head brewer Drew Fox. “We kept it simple and clean with the funds we had. We did probably 80 percent of the work ourselves.” When 18th Street won Best New Brewery in Indiana from ratebeer.com in its first year, they couldn’t keep enough beer, which necessitated a production and packaging expansion into another building across the parking lot. Co-founders Vince Luecke and Andy Hedinger had a unique vision for their Southern Indiana enterprise. “We liked the idea of having a brewery close to one of the two monasteries in the

and wasn’t in a strip mall.” They purchased the building in 2013 and ran into a few unexpected issues: All the floor joists from the second floor had to be reinforced. Then the building’s hollow-block concrete fell apart when cut, creating cracks that needed filling. They added an outdoor seating area and turned the vacant fire department building next door

into a distribution hub, but not everything was a remodel or new build—the hardwood floors, exposed beams, and concrete are original. Nearly three years later, the overflowing parking area and cars lining the main drag are a testament to Taxman’s popularity. “The south side needed to fill the niche of a farm-to-table restaurant,” Nathan says of the seasonal menu, “but the main benefit I’ve seen is that [Taxman] has become the local gathering place for people in Johnson County. People who were probably going out downtown are now staying here.” —J.U.

EILISE LANE CEO AND HEAD BREWER , Scarlet Lane Brewing Company, McCordsville Eilise Lane, who admits her beer fascination began before age 21, got into Sierra Nevada brews while attending Butler University. In 2006, she and husband Nick Servies moved to Oregon. The couple traversed the state known for its rich craft-beer culture, drinking, talking to brewers, and absorbing it all. One day at Bend Brewing Company, Lane asked to see the head brewer. “They said, ‘She isn’t here right now,’ and that was a lightbulb moment for me,” Lane says. The woman in question was the renowned Tonya Cornett, who, before brewing at Bend and others, learned the trade at Oaken Barrel in Greenwood. “She became my hero,” Lane says. “She wins so many medals with beautiful beers.” Lane started homebrewing, left her corporate gig, and enrolled at the American Brewers Guild. After brewing stints in Oregon, she and Servies decided to return to Indiana, and in May 2014, they opened Scarlet Lane in a former factory in McCordsville. Lane named the brewery after a beloved canine, who took the moniker from Scarlett O’Hara. “She was an amazing, happy little girl who persevered,” Lane says. KATE LEWISON & AMY BAYLOR CO-OWNERS, New Albanian Brewing Company, New Albany As teens, Kate Lewison and Amy Baylor worked at a joint started by their parents, who turned a failing Noble Romans into Sportstime Pizza. The names might have changed, but three decades later, the sisters are still there, at New Albanian Brewing Company. “We’ve had one W-2 our entire lives,” Lewison says. Before “craft beer” was part of the American lexicon, Baylor’s then-husband Roger had an idea: Pull the Buds and Millers from the menu and insert a revolving selection of American microbrews and imports. The sisters loved the idea, which in turn created a network of beer connoisseurs. “We had a small, captive audience, so we could teach people one on one about beer,” Lewison says. “We took away the crutches, as Amy says, and forced them into learning something new.” Baylor, Lewison, and Roger gained full control of the business in 1994 and created the New Albanian label. It took eight years and the liquidation of two regional breweries to get the right equipment, but in 2002, New Albanian became the town’s first brewery in 67 years. Many say family and business don’t mix, but that clearly doesn’t apply to Baylor and Lewison. “We’ve always been best friends,” Lewison says. “We’re the weirdo sisters who wanted to sit together at lunch.” LEWISON’S FAVORITE INDIANA BEER: Donum Dei Brewery’s Enkel Belgium Gold. KELI HANKEE CO-OWNER AND GENERAL MANAGER , Trubble Brewing, Fort Wayne As a project manager at a medical-device company, Keli Hankee finds parallels between that job and her role as co-owner and general manager of Trubble Brewing. “I spend a lot of time in the lab, so a brewery is kind of familiar,” she says. Hankee and her husband, Chad, knew a few folks who worked in the brewing industry and found themselves impressed with the camaraderie and collaboration they saw within the community. “After working in big corporations that didn’t always have a good work culture, that was really appealing,” she says. “Chad made really good beer, and we had some money to get things started. That, combined with some good market opportunities in our area, made it seem like a no-brainer.” By spring 2014, the couple was on a mission to manifest their own brewery. “We like to say that we’re sort of misfits, and that’s why we chose the name Trubble Brewing,” Hankee says. “We are who we are, and we’re looking for beer-lovers and employees who resonate at the same frequency.” Mission accomplished. Hankee considers the team she and Chad have cultivated to be their biggest success to date. “They care about us and where we’re going,” she says. “It makes working a 15-hour day feel like nothing because you’re doing it with your friends.” HANKEE’S FAVORITE INDIANA BEER: Three Floyds’s Gumballhead. —Amy Lynch

MAX SCHENK FOUNDER, Round Town Brewery, Indianapolis Max Schenk worked part time as a makeup artist in college while earning a telecommunications degree, but finding her way to Rock Bottom Brewery in 2007 was what really planted the seeds for her future career. “After I graduated, I went back to Rock Bottom full time so I’d have an income while exploring ways to put my degree to use,” she says. “A couple years later, I was hired part time by the same communications company I’d interned for, but in a different division than where I’d hoped to work.” Two years later, Schenk found herself craving new professional opportunities and left the company to pursue an entrepreneurial dream of opening her own brewery. “Craft beer was something I became passionate about that happened to experience unprecedented growth right at the time I was compelled to choose a path for myself,” she says. “It just made sense.” In early 2013, Schenk teamed up with former Rock Bottom brewer Jerry Sutherlin to get Round Town off the ground. “Once he was on board, I basically treated it like fantasy football—I began to build our team around the star quarterback,” she says. Schenk describes Round Town, which opened in October on the southwest side of downtown Indy, as laid-back yet determined to succeed. “We plan to grow organically and let the business tell us what’s next,” Schenk says. BARB KEHE OWNER AND FOUNDER , Ironwood Brewing Co., Valparaiso Barb Kehe began brewing in the early 1980s, long before craft beer was even cool. True, she loved beer, but she also had an ulterior motive: to save money. “One of my friend’s boyfriends, who lived in a town where a new store was selling brewing supplies, said we should start brewing because it would be less expensive than buying beer,” she says. Little did she know that in August 2013, she’d flip the equation and use beer to make money, opening Ironwood Brewing Co. She named her brewery after the ironwood tree—“I love trees so you could say I’m kind of a treehugger,” Kehe says, adding that the buds of the ironwood look like hops—and set up shop in a 900-square-foot 1930s house. The taproom features up to nine beers at a time, four house brews and usually three to four additional brews. Kehe believes what sets her beer apart boils down to basics. “I brew beer to style, sticking to style guidelines,” she says. She mainly flies solo in her day-to-day routine, although she does have two staff who help out. Along with brewing, Kehe holds several other roles, including bookkeeper, bartender, and taproom manager. And she loves it, no matter that she’s in a male-dominated field. “The industry has been very welcoming,” she says. KAITLYN HENDRICKS SENSORY MANAGER AND PUBLIC RELATIONS, Three Floyds Brewing Co., Munster When Kaitlyn Hendricks was earning her degree in elementary education, she had no idea that her career would ultimately usher her down a very different path. The summer before her senior year at Indiana University, Hendricks took a bartending job at Crown Brewing in her hometown of Crown Point. “That was really my introduction to craft beer,” she says. When Hendricks came back home after a student-teaching gig in Ireland, Crown offered her a full-time job, which presented quite a conundrum—a career in teaching or one in craft beer? Beer won out in the end, and Hendricks stayed at Crown for five years. In 2014, Three Floyds came calling, where Hendricks now helps with public relations and manages the sensory program. “The best way to evaluate beer is by tasting it, of course,” she says. “We have sensory checkpoints throughout the brewery where people are tasting the products and signing off on them for consistency.” Hendricks also runs a “beer school” program for brewpub employees, which covers topics like beer and food pairings. It’s a responsibility that dovetails nicely into her teaching experience. “What I love about working in this industry is the people,” she says. “My brewing colleagues have turned into my friends, and it’s cool to have that tight-knit network here.” HENDRICKS’S FAVORITE INDIANA BEER: Any sour from 18th Street Brewery. —A.L. ★

Bread Winner Turn a brewing by-product into a tasty side dish for your next meal.

Spent Grain Baguette

Spent grain is often used for animal feed, compost, fertilizer, and even as a means of treating wastewater(!). It’s frequently baked into human food, too. Swing by your local brewery and pick up some spent grain for this baguette recipe, developed by Figure Eight Brewing’s original chef, Krista Whitcomb. (Makes three one-pound loaves.) INGREDIENTS

12 ounces Raven Tor Oatmeal Stout 1 1/2 cups wet spent grain 2 Tablespoons sugar 1 Tablespoon yeast 3/4 cup dry/powdered milk 1 Tablespoon salt 2 eggs 5 cups bread flour Three baguette pans DIRECTIONS

1 ) Make a sponge by combining the beer, sugar, yeast, dry milk, and spent grain. Mix flour, salt, eggs, and sponge in mixer with a dough hook. Continue mixing for 12 minutes. The dough will be smooth and tacky but not glue-like. 2 ) Oil a bowl. Add dough, cover, and let rise for two hours. 3) Spray baguette pans. Place dough on a work surface and press or roll into a rectangle. Cut into three pieces and roll each piece into a tight cylinder. Place loaves, seam side down, into prepared pans. Cover and let rise for 45 minutes or until they double in size.

5) Cut three slashes on top of each loaf using a sharp knife. Put loaves in the oven and pour the water into your pre-heated skillet to create steam. 6) Bake for 15 minutes, then rotate the loaf pans 180 degrees and bake another 10 minutes until the tops are dark golden brown. Take pans out of oven and let sit for 10 minutes. Remove from pans and place on cooling racks. ★

4) Place a cast-iron skillet in the bottom of the oven. Heat oven to 400 degrees. Heat two cups of water to almost boiling and keep on hand for the baking cycle.
