A few slices of butter, a warm beverage, a toasty fireplace and a good book are all you need to complete the mood. The best part? It makes three loaves so you have enough to share with friends!

3 cups canned pumpkin puree 1 1/2 cups vegetable oil 4 cups white sugar 6 eggs 4 3/4 cups all-purpose flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 1/2 teaspoons salt 1 1/2 teaspoons ground cinnamon 1 1/2 teaspoons ground nutmeg 1 1/2 teaspoons ground cloves
TO MAKE 1. Pre-heat your oven to 350°F. Grease and flour three 9x5 inch loaf pans. 2. In a large bowl, mix together the pumpkin puree, oil, sugar, and eggs. 3. In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves 4. Add the dry ingredients to the wet ingredients and stir until well blended. Optional: add 1/2 cup to 1 cup (depending on your preference) mini chocolate chips, pecans or walnuts to the batter and stir well to incorporate. 5. Divide the batter evenly between the prepared pans. 6. Bake in your pre-heated oven for 45 minutes to an hour, until the tops of the loaves spring back when lightly pressed. Enjoy!
