Cranberry & Pecan Cheese Ball

Adapted from a recipe at Bramble Berry's SoapQueen.com blog

This recipe is simple and can be whipped up quickly as an appetizer for last minute guests. It also makes a perfect hostess gift or potluck contribution. The combination of cheeses is at once tart and sweet, and the pecans add a bit of toasted crunch and texture. It stores well in the refrigerator for about a week.

INGREDIENTS

8 oz. softened cream cheese (We used Philadelphia) 7 oz. sharp Irish cheddar cheese, finely grated (We used Boar's Head) 4 oz. honey goat cheese (We used La Bonne Vie) 2/3 cups dried cranberries (We used Ocean Spray) 1 cup roasted chopped pecans (We used Planter's)

(You can roast the pecans in the oven at 350 for about 10 minutes, or you can place them into a frying pan over low heat for about 10 minutes. In either case, stir occasionally to prevent burning.)

TO MAKE

1. In a large bowl, mix together the cream cheese, goat cheese, and grated cheddar until completely smooth. Mix in the cranberries.

2. Transfer the cheese mixture onto plastic wrap or wax paper and use your hands to form a ball. Wrap the cheese in the plastic wrap or wax paper and place into the fridge. Allow the cheese ball to chill for at least 2 hours, up to overnight.

3. Once the cheese ball is chilled and firm, remove the wrap. Use your hands to press the pecans onto the outer surface of the cheese ball until completely covered. Chill until you are ready to serve with your favorite crackers.

One of my favorite things to do on weekends is visit local farmer's markets. From the man preparing fresh to order omelettes with eggs and herbs from his farm, to the woman selling handmade goat milk soaps and cheeses she makes in her kitchen, I love the aromas and the community I experience when I am in their midst.
