Premier McKeeva Bush yesterday accused the Auditor-General of acting like a hitman – guilty of bureaucratic interference and harassment. The astounding comments came after Alastair Swarbrick blamed the country’s leader for dodging financial regulations and costing the public purse almost half a million dollars. He said the Government paid nearly half-a-million dollars in extra fees for a loan, while routinely violating regulations governing tendering and procurement, also affecting creation of a CCTV network and the 2009 Cayman Jazz Fest. In his latest report, released to the public yesterday, Auditor-General Alastair Swarbrick blamed Premier McKeeva Bush for dodging financial regulations and negotiating an ultimately failed $155 million loan in 2010 from New York-based Cohen and Company, costing the public purse $450,000. Bob Marley has inspired a hymnal for St. George’s Anglican Church

Music from the legendary Jamaican Reggae icons Bob Marley and Peter Tosh, will be sung alongside other traditional Christian songs in St. George’s Anglican Church. In an unprecedented and courageous move towards expanding the church’s Christian outreach, the Bishop of Kingston, the Right Reverend Dr. Robert McLean Thompson, has embraced the inclusion of Marley’s music in the Church hymnbook. But the 63-year-old said he still struggles to relate with the youth of today – and says he has problem with young men showing their underpants! The Bishop, who is the father of two boys, ages 27 and 28, believes it’s time for the Church to advance their efforts to understand the young people and the needs of society. The move to induct the music of the late Jamaican Reggae musicians, Bob Marley and Peter Tosh, into the musical repertoire of the Church was explained by the Bishop. He said: “The Church needs constantly to engage the language of the culture in which it operates in the world. “The way it worships and speaks to the world cannot be like it was 100 years ago.” By having his cultural and liberating music played during Christian

worship, the Reggae legend will be creating a “Natural Mystic,” which is also the name of one of his songs. But the Bishop said adapting some of the musical culture of the society could pose a serious problem to the modesty and divinity of the church if it is not properly managed. He said: “The danger is, if the church adapts too much of the contemporary cultures, it then cannot be distinguished from the rest of the world.” During his interview with iNews, the Bishop admitted he is no expert at youth psychology, but will not give up on them. He said: “There are many things about the modern age that I still do not understand, like rap music and certain kinds of fashion. “When a young man is wearing

The Bishop is here as part of an annual visiting responsibility of the Jamaican Diocese to oversee the church’s operations here. The Bishop and his wife are currently here for 10 days.

iStrange Ariz. street sign prank warns of ‘rogue panda’ FLAGSTAFF, Ariz. (AP) — Authorities in Flagstaff, Arizona, are assuring residents there are no rogue pandas roaming the city after some pranksters got creative with an electronic street sign. The Arizona Department of Transportation-controlled sign was set up to warn drivers not to make left turns at a busy intersection. But motorists heading to work Monday morning got an entirely different message: “Rogue panda on rampage.” A passer-by reported the hacked sign to police at about 3 a.m. Monday. Transportation Department spokeswoman Mackenzie Nuno says the sign was restored to its original message by 11 a.m. Flagstaff police Lt. Ken Koch tells the Arizona Daily Sun that residents can rest assured there are no problems with rogue pandas in the city.

Ohio town frets its huge, old flagpole is a hazard

RAVENNA, Ohio (AP) — A northeast Ohio community wants to wash its hands of a towering flagpole well over 100 years old that officials fear is a tempting hazard. Within the last year, two people thought to be under the influence of alcohol or drugs climbed up the 150foot flagpole in front of the Portage County Courthouse in Ravenna. Ravenna Township Trustee Patsy Artz says both were lucky to survive and calls the flagpole “an accident waiting to happen.”

In the same report, Mr Swarbrick also criticised procurement of government’s closed-circuit television system, saying the business case for the $2 million network had been weak, relying solely on an analysis of implementation and operations by the Royal Cayman Islands Police, but not cost options. The process was further compromised by a $344,000 advance payment to The Security Centre contractor, the report said. Mr Swarbrick criticised change orders implemented by the contractor, but not properly specified in the contract; and the questionable division of the agreement into three separate documents of just less than $50,000, thereby skirting legal requirements that the Central Tenders Committee (CTC) scrutinise contracts worth $50,000 or more. Finally, the report found the $1.2 million Department of Tourism contract for 2009’s Cayman Jazz Fest

was neither tendered nor reviewed by the CTC; that work started before the contract was signed; that the department paid in advance for a number of services; and that the BET Event Productions contractor did not gain written approval for expenditures on hotels, artists and other suppliers. “The premier said that he would save $24 million with the Cohen loan,” Mr Swarbrick said, noting that Mr Bush disregarded Ministry of Finance and CTC recommendations that government accept bids by First Caribbean International Bank (FBIC) and the Royal Bank of Canada (RBC). Overriding that advice, Mr Bush paid legal and arrangement fees to Cohen that were $147,000 more than those charged by FBIC, which ultimately provided government’s long-term loan. “The contract with Cohen and Company did not provide a loan as the original tender requested,” Mr Swarbrick wrote. “The contract was awarded without going through an open tendering process while disregarding the advice of officials.” Mr Bush hit back yesterday afternoon, however, saying Mr Swarbrick was “biased” and that his 33-page report was “coming from an individual who is partially informed, spiteful and guilty of bureaucratic interference and harassment”. “He has not considered the total cost of the matter, and is trying to make me look bad, going at length to say ‘’me’ and not mentioning ‘Cabinet’,” he said. Had Cohen fulfilled its contract, Mr Bush said, “I steadfastly maintain

that the 4.5% interest rate cap, at a cost of $4.8 million, would have saved $24 million and would have justified not taking the offer by First Caribbean and RBC. “I never interfered with the CTC and always worked through [Financial Secretary] Ken Jefferson. I made no decisions on my own and have not tried to hide anything. I went to the Cabinet and to the public via the media and the Legislative Assembly. I was trying to get the best costs we could get for the people of this country,” he said. The Auditor-General was “being used as a hitman,” Mr Bush said, promising, “they will be exposed soon” in a forthcoming statement. Saying it was ”not my decision” -- and that his 11 recommendations to remedy loopholes in procurement processes had only “just been referred to the LA at this point” -- Mr Swarbrick said he was not contemplating legal action, but would wait for his office’s oversight body, the Public Accounts Committee (PAC). Chairman of the committee, Sister Islands MLA Moses Kirkconnell, said the PAC and Mr Swarbrick would meet on 6 September, but were unlikely to consider the new report in any detail. “We are backed up six months with reports, so our objective is to get through all the work we have not had a chance to look at.” Mr Kirkconnell said. “It’s up to the members to decide, and while this report will be discussed a bit because of the public interest in it, we will be setting up a schedule of meetings. We have a whole process to go through.”

Rising costs are eroding profits Two major food companies said that they are facing mounting pressure from rising raw material prices which are eroding profits. Tingyi (Cayman Islands) Holding Corp, China’s biggest maker of packaged food, said cost pressures would persist in the second half as its gross margin stayed near the lowest level in at least a decade. “It may take a longer period of time for prices to return to a lower level,” the maker of Master Kong noodles and ready-to-drink tea said in its earnings statement on Tuesday. The first-half gross profit margin was 26.1 percent, the second-lowest level for a six-month period since at least 2001, according to data compiled by Bloomberg. Net income rose 16 percent to $229 million, Tingyi said in a statement to the Hong Kong Stock Exchange. Sales climbed to $4.1 billion as revenue from instant noodles rose 22 percent. Tingyi’s smaller rival in China, Want Want China Holdings Ltd, also said it faced “tremendous pressure” from surging raw material costs. Want Want raised prices for some products, according to a statement to the stock exchange in Hong Kong on Tuesday. It plans to start marketing activities in the second half to try and improve profit margins, the company said. “Since last year and in the first half of this year, our group faced tremendous pressure from surging costs in raw materials, which significantly affected our profitability,” Want Want said. info@ieyenews.com

Senior Investigating Officer Mike Cranswick has taken over the reigns of the investigation for missing Kerran Baker. Chief Superintendent John Jones said, “Mr. Cranswick took over the investigation from Detective Inspector Burden who went on annual leave just over a week ago.” Mr. Jones went on to say, “There have been no further significant developments in terms of locating Kerran. “At this time we are still continuing to plough through CCTV footage. “We continue to await some forensic results in relation to the examination of various premises. “As it stands we still have a major incident room running in relation to the investigation and we still have detectives assigned to the inquiry. The investigation is still very much in progress. “We have had no further information on the whereabouts of Kerran. Her last sighting, just to remind you, was just after 7pm

Hammer Horror legend Jimmy Sangster dies at 83 Jimmy Sangster, the British writer, producer and director famous for his association with Hammer Films, has died at the age of 83. Sangster began at the studio as a production assistant in the early 1950s and went on to become one of the chief architects of the Gothic horrors for which Hammer Films became famous. The cycle began with The Curse of Frankenstein in 1957, which he wrote, and continued with Dracula (aka Horror of Dracula, 1958), The Revenge of Frankenstein (1958) and The Mummy (1959). The movies revived the monster classics for the first time since the Universal horrors of over a decade before and made household names of Peter Cushing and Christopher Lee. Hurricane Irene passed very close to the Turks and Caicos Islands on Wednesday night but thankfully the eyewall missed the populated islands. Damage should be less than when Hurricane Ike hit there in 2008 causing 200 million dollars worth of destruction. At the time of writing, Irene is heading for the Bahamas and will probably be there today (Thu). Hopefully, the capital, Nassau, will escape the full brunt of the storm. Where will Irene go next? Libyan FM says Gadhafi’s reign is over LONDON (AP) — A report from British broadcaster Channel 4 says Libya’s foreign minister has declared that Moammar Gadhafi’s grip on power is over. Speaking from a home in Tripoli, Abdul Ati al-Obeidi says he was not in contact with other members of Gadhafi’s regime. He said yesterday it now appears Gadhafi has exhausted all his options. Gadhafi’s sprawling government compound was stormed by thousands of rebels a day earlier. Pro-regime snipers cut off the road to Tripoli’s airport on Wednesday, fired at motorists near the capital’s

port and launched repeated attacks on Moammar’s Gadhafi’s sprawling government compound, stormed by thousands of rebels a day earlier. Still the opposition fighters claimed they now control most of Tripoli. Streets were largely deserted, scattered with debris, broken glass and other remnants of fighting, while rebels manned checkpoints every few hundred yards. Gadhafi loyalists fired shells and assault rifles at fighters who captured the compound on Tuesday. Abu

Pacino, ‘Scarface’ cast celebrate film’s legacy LOS ANGELES (AP) — Al Pacino says he got burned while making “Scarface.” Literally, he grabbed the hot barrel of a gun that had just shot 30 rounds during one of Tony Montana’s violent scenes. “My hand stuck to that sucker,” the 71-year-old actor recalled. He couldn’t work for two weeks. Pacino relayed the experience during a discussion with “Scarface” co-stars Steven Bauer, Robert Loggia and F. Murray Abraham and producer Martin Bregman at a party Tuesday heralding the film’s Blu-ray release. Part of the charm of the film,

Pacino said, is that it wasn’t initially a hit. “It’s one of my favorites because of its whole evolution,” he said. “It (was) sort of eviscerated after it opened by the press. ... Nobody was fond of it, except it had good audience participation.” He said “it’s almost a miracle” audiences continue to discover and appreciate the film. He wanted to make it after being inspired by Paul Muni’s performance in the 1932 original. Sidney Lumet suggested he make the main character Cuban instead of Italian. Strauss-Kahn free after NY court ends sex case NEW YORK (AP) — Dominique Strauss-Kahn, his wife by his side, walked to a Manhattan courtroom through shouting protesters carrying signs that read: “Put the rapist on trial — not the victim.” Just hours later, the French diplomat was a free man — his attempted rape case formally dismissed. The greatest leaders are servants Colin Wilson

Do you know who said that? Actually quite a lot of colin.wilson@ieyenews.com people have. Possibly the greatest leader of all time, depending on your beliefs, preached this continuously. The person I am referring to is Jesus Christ. Whether you are a Christian or not, all his preaching had great wisdom. Can anyone deny that the statement at the top of my Editorial embraces wisdom? Other people have added other words to it e.g. ‘…at heart’, ‘first’, etc. All superfluous, really. I have heard many campaign speeches and acceptance speeches from politicians, military commanders and the like containing the same phrase. They are full of humility. Some thank God, and the public listening roars with approval. Maybe the person saying this actually believes it at that time, but being more than a little cynical I doubt it. The other saying that, unfortunately, is executed far more is – “power corrupts.” Rt. Rev. Bishop Thompson, Anglican Bishop of Kingston, Jamaica is visiting here on Grand Cayman and he made the point this morning (24) at a service commemorating the Apostle, St. Bartholomew, “if only our leaders were servants first and foremost they would be held up as being ‘great’ and the world would not be in the mess and full of turmoil it is now.” Words of wisdom indeed. I can understand, even though I disagree, with people saying they are agnostics or atheists but what I

cannot understand is their blinkered sight and plugged ears when the Bible is so full of wisdom, and refuse to read or listen to its message. You may have noticed that the ‘iThought’ of the day at the bottom of the Editorial page is taken from the Book of Ecclesiasticus (also called the Wisdom of Sirach or just Sirach, so as not to confuse it with the Old Testament Book, Ecclesiastes). These thoughts were written nearly two hundred years B.C. although evidence has come to light that it could have been written much earlier. It was relegated to the Apocrypha because when the Books of the Old Testament were put together no Hebrew text could be found. However, various Hebrew texts have since been discovered including one that is the oldest ever found. Its messages resembles Proverbs, except it is the work of a single author. We might be four thousand years in the future from when it was written, we might be two thousand years in the future from Jesus’ teachings, but wisdom never changes. It is not how much power a leader can wield to imitate God it is how much he is humbled to want to serve the people who put their trust in him in his election. Bush answers back

CI$854,000 was NOT paid to Cohen & Co. At paragraph 47, page 14, of the Auditor General’s Report, it is stated that Cohen & Co. arranged for two short-term loans to be provided to Government. The loans did not come from Cohen & Co itself, but rather Cohen & Co “arranged” or “brokered” for the loans to be provided to Government by Scotiabank and Banque Havilland. It is for carryingout these arrangements that Cohen & Co was paid an arrangement fee. The amount of fees paid to Cohen & Co was US$180,000; using an exchange/conversion rate of CI$0.83 = US$1, the amount of US$180,000 is referred to in Table 4, page12, of the Auditor General’s Report as CI$149,400. Thus the amount paid to Cohen & Co was US$180,000 or CI$149,400. For the sake of completeness and full-clarity, the amount of CI$854,775 referred to in the Auditor General’s Report - Table 4, on page 12 – is made-up as shown in the table below. The Government has consistently and steadfastly maintained the position that had Cohen & Co been able to arrange an “interest rate cap” of 4.5% at a cost of approximately CI$4.83 million (refer to paragraph 44, page 14, of the Auditor General’s Report), the savings in interest costs, estimated at CI$24 million (see paragraphs 34 and 44 of the Report), arising from such a financing transaction would have justified not choosing the recommendation for the joint

In pursuing this possibility, the Government was striving for the “national good” by seeking to achieve the lowest interest cost for the Islands that it could. It is the pursuit of this “national good” over a few months that led to costs of CI$854,775 stated in the Auditor General’s Report. The Government firmly maintains that efforts to minimise costs - which are for the good of the Cayman Islands - represent goodvalue efforts. The following need to be addressed: Firstly, the $307,000 of fees is in respect of the loan from FCIB alone – RBC was not involved in the third-round tender that was accepted by Government; that successful tender was in respect of a loan from FCIB alone.

The joint FCIB-RBC tender was in respect of the second tender – see Table 3, page 7 of the Report. Secondly, the joint FCIBRBC offer was an offer for the provision of long-term financing to Government – not short-term financing. The fees of $307,000 emanating from the successful tender by FCIB are lower than fees arising from previous-round tenders because tenderers in the thirdround “sharpened their pencils” – evidenced by reduced fees – as such tenderers were much keener the third-time around to secure the provision of financing to Government. The existence of reduced fees in the third-round tender is a benefit to Government and it is a positive feature emanating from the thirdround tender.

Strongest quake since ‘44 jars East Coast MINERAL, Va. (AP) — Tens of millions of people from Georgia to Canada were jolted Tuesday by the strongest earthquake to strike the East Coast since World War II. Three weeks before the 10th anniversary of Sept. 11, office workers poured out of New York skyscrapers and the Pentagon, relieved it was nothing more sinister than an act of nature. There were no known deaths or serious injuries, but cracks appeared in the Washington Monument and the National Cathedral, which had three capstones break off its tower. Windows shattered and grocery stores were wrecked in Virginia, where the quake was centered. The White House and Capitol were evacuated. The U.S. Geological Survey said the quake registered magnitude 5.8. By West Coast standards, that is mild. But the East Coast is not accustomed to earthquakes at all, and this one unsettled some of the nation’s biggest population centers. In New York and Washington, people said their thoughts were of an explosion or terrorist attack. In some cases, workers in Washington mentioned the tremors in phone calls to colleagues in New York, and seconds later, the shaking reached there, too. Hundreds of people spilled out of the federal courthouse blocks from ground zero after the quake struck just before 2 p.m. EDT. Workers in the Empire State Building rushed into the streets, some having descended dozens of flights of stairs. The quake was felt as far north as Toronto, as far west as Indiana and Kentucky and as far south as Atlanta and Savannah, Ga. It was also felt on Martha’s Vineyard off Massachusetts, where President Barack Obama, who is vacationing there, was getting ready to tee off in a round of golf. The White House said there were no reports of major damage to the nation’s infrastructure, including airports and nuclear facilities. Two nuclear reactors at the North Anna Power Station in Virginia were automatically taken off line by safety systems, said Roger Hannah,

a spokesman for the U.S. Nuclear Regulatory Commission. The plant is in the same county as the quake’s epicentre, about 80 miles southwest of Washington and 40 miles northwest of Richmond, Va. The Park Service closed all monuments and memorials on the National Mall, and ceiling tiles fell at Reagan National Airport outside Washington. Many nonessential workers in Washington were sent home for the day. The Capitol was reopened by late afternoon for people to retrieve their things. At the Pentagon, a low rumbling built until the building itself was shaking, and people ran into the corridors of the complex. The shaking continued, to shouts of “Evacuate! Evacuate!” The main damage to the building, the largest single workspace for the federal

government, came from a broken water pipe. The National Cathedral said it had sustained “significant damage,” with three capstones, each shaped like a fleur-de-lis, breaking off the main tower. “The Courtroom, The Poor Man’s Theatre”, is a collection of anecdotes taken from real-life dramas in the courtrooms of the Caribbean. The book, written by Mr. Justice Kipling Douglas, a retired judge of the Cayman Islands and Jamaica, and retired Chief Justice of the Turks and Caicos Islands, covers a span of nearly four decades. It is divided into three sections, named after the three jurisdictions where the judge presided, and contains nearly 100 entertaining stories. Some of them are funny, others more serious, but all are a fair sprinkling of the Judge’s keen wit. “I started writing the book about two years ago,” Judge Douglas, 81, said. “I was invited to talk at the Rotarian club and chose ‘The Courtroom’ as a topic.” The club members showed a good deal of interest. “It occurred to me that if people showed so much interest I should write it down – the more I wrote the more cases came back to me,” he said. The anecdotes describe intimate details related to courtroom procedures as well the manoeuvres of agents and officers of the court, and reveal the whispered

The cases in the book concern a wide range of different kinds of case, including arson, indecent assault, drug trafficking, obeah, divorce, prostitution, death by misadventure and many other fascinating matters. One of the funniest stories in the book concerned a charge of indecent exposure brought against a tourist who had taken all his clothes off for a swim on a deserted stretch of Seven Mile Beach. “When the officer arrived at the spot where the clothes lay she saw the defendant swimming several yards from the shore. By doing so she instigated the offence of indecent exposure for which she arrested him when he complied with her request. At that point the man reached for his clothes, whereupon she stopped him and told him that he must not interfere with the evidence,”

the book says. The tourist was only allowed to put on his clothes after being driven all the way to the police station. “It was astonishing that such a charge actually reached the court. There was no evidence that when the man undressed he was aware that he could be seen by anyone, and therefore could not be said to have acted indecently at the time,” the book says. Judge Douglas actually began a career in Journalism, ending up as editor of the West Indian Life Magazine, before deciding to study law in his late twenties. After studying Latin, a requirement for a law student at that time, Judge Douglas entered the Honourable Society of the Middle Temple in London, where he took his bar exams. Judge Douglas will be attending a special book-signing event at Hobbies and Books in George Town between 12 and 2, on both Friday and Saturday this week.

Forth rushed the dogs, and cast themselves in a solid mass upon the little heap. “Hounds of Satan?” said Pierre. “They are, indeed,” replied Antoine. “But leave them now, my friend, and close the door, since warmth is a blessed gift.” But Pierre still stood on the threshold, every now and then darting out to administer a rap to the gluttons, or to pull forward the younger and weaker ones. He presided with exactest justice over the whole repast, and ended by bringing into the kitchen a forlorn and drearily ugly young animal that had not obtained his share on account of the preternaturally quick side snatchings of Lebeau. To this dog he now presented an especial banquet in an earthen dish behind the door. “If there is anything I abhor, it is the animal called dog,” he said, seating himself at last, and wiping his forehead. “That is plainly evident,” replied old Antoine, gravely. In the mean time, Anne, Tita, and the boys had thrown off their fur cloaks, and entered the sitting -room. Père Michaux took his seat in his large arm-chair near the hearth, Tita curled herself on a cushion at his feet, and the boys sat together on a wooden bench, fidgeting uneasily, and trying to recall a faint outline of their last lesson, while Anne talked to the priest, warming first one of her shapely feet, then the other, as she leaned against the mantel, inquiring after the health of the birds, the squirrels, the fox, and the tame eagle, Père Michaux’s companions in his hermitage. Round this fire-place were set like tiles rude bits of pottery found in the vicinity, remains of an earlier race, which the half-breeds brought to Père Michaux whenever their ploughs upturned them— arrow-heads, shells from the wilder beaches, little green pebbles from Isle Royale, agates, and fragments of fossils, the whole forming a rough mosaic, strong in its story of the region. From two high shelves the fathers of the Church and the classics of the world looked down upon this scene. But Père Michaux was no bookworm; his books were men. Have you ever-tried cooking Chinese food yourself at home? It’s not that difficult. Here are some tips. Equipment: To start you really only need a good knife and a wok. Woks come in all shapes and sizes, non-stick, flat-bottomed, even electric but I still prefer my old carbon steel wok with it’s rounded bottom and one wooden handle. This is a Pau wok. These are readily available online (if you can’t find one locally) and less expensive than other varieties. Before you will be ready to cook with such a wok you have to season it. Scrub it with a cream cleaner to remove any residues of machine oil and dry it carefully. Put the wok on the hob over a low heat. Rub the inside of the wok with two tablespoons of cooking oil using kitchen towel. Let the wok heat slowly for 10 to 15 minutes then wipe the inside with more kitchen towel. The paper will come away black. Carry on coating, heating and cleaning off until the kitchen towel comes away clean. Your wok is now ready to use. After use, wash only in water without detergent and dry thoroughly over a low heat. You may also apply a little oil if you wish. This should prevent the wok from rusting but if it does develop rust just scrub and season again. You will also need a wok stand, particularly if you have an electric hob. This keeps the wok stable if you are using it for braising or deepfrying. For stirring, any spatula, slice or slotted spoon will do. Ingredients: Bear in mind that some ingredients don’t keep well if left unused. Just select something simple from your chosen cookery book at first. You can expand your selection as you progress through different dishes. Some common store-cupboard ingredients that you will almost certainly need are dark and light soy sauce, some sort of cooking oil and sesame oil, cornflour and rice wine or sherry. to blog visit www.ieyenews.com

Techniques:

Stir-Frying: This is the most well known Chinese cooking technique. Your wok comes into its own as it’s shape and size (at least 14 inches diameter with deep sides) is ideal for quick cooking. The secret is to have all your ingredients ready in advance. Meat should be cut according to the recipe but normally in thin strips. Vegetables likewise but in any event should be of similar shapes and sizes to ensure even cooking. Long thin vegetables such as spring onions, carrots or asparagus are often cut on the diagonal so that more surface area is exposed for quicker cooking. Measure out sauce ingredients - check the recipe - if they are all added to the dish at the same time, you can put them all in one small bowl. If cornflour is included, don’t forget to give it a good stir before adding to the other food. Once everything is prepared, heat your wok until it is very hot then add oil and stir ensuring the oil is evenly distributed over the surface of the wok. Before you add your ingredients. the wok should be so hot that it is almost smoking to prevent the food from being greasy. The exception is if you are flavouring your oil with garlic, chili, spring onions, ginger or salt these will burn if the oil is too hot. Now add your other ingredients in the order stated in the recipe and

toss them over the surface of the wok ensuring that nothing rests in one place for too long and moving the food from the centre of the wok to the sides. Deep Frying: Using a wok upon a stand uses less oil than a deep fryer or saucepan but you may find these safer and easier to use. Under no circumstances leave it unattended. Make sure the oil is hot enough before adding ingredients or the food will end up very greasy. Test it by dropping in a small piece of prepared food or a cube of bread. If the oil bubbles up around what you dropped in then it’s hot enough. All food to be deep-fried must be dried thoroughly on kitchen paper or drained of its marinade before cooking otherwise it will spit. Shallow Frying: Fry food on one side, then the other and drain off any excess oil before adding sauce ingredients. A normal frying pan is fine for this. Steaming: You can use a bamboo steamer in a wok, a heatproof plate placed on a rack in a wok or other large pan or a normal US/European steamer. If using a bamboo steamer or plate in a wok, bring about 2 inches of water to a simmer. Put your rack into the wok and balance your plate or steamer of food on it. Put the lid on your steamer or wok and check occasionally to see if the water needs topping up (use water which is already hot). Braising: This is used for tougher cuts of meat and involves gentle cooking of meat and/or vegetables in flavoured stock. Red braising is the technique where food is braised in a dark liquid such as soy sauce, which gives the food a red/brown colour. This type of braising sauce can be frozen and re-used.

Wild world: Millions of unseen species fill Earth WASHINGTON (AP) — Our world is a much wilder place than it looks. A new study estimates that Earth has almost 8.8 million species, but we’ve only discovered about a quarter of them. And some of the yet-tobe-seen ones could be in our own backyards, scientists say. So far, only 1.9 million species have been found. Recent discoveries have been small and weird: a psychedelic frogfish, a lizard the size of a dime and even a blind hairy mini-lobster at the bottom of the ocean. “We are really fairly ignorant of the complexity and colorfulness of this amazing planet,” said the study’s co-author, Boris Worm, a biology professor at Canada’s Dalhousie University. “We need to expose more people to those wonders. It really makes you feel differently about this place we inhabit.” While some scientists and others may question why we need to know the number of species, others say it’s important. There are potential benefits from these undiscovered species, which need to be found before they disappear from the planet, said famed Harvard biologist Edward O. Wilson, who was not part of this study. Some of modern medicine comes from unusual plants and animals. “We won’t know the benefits to humanity (from these species), which potentially are enormous,” the

Pulitzer Prize-winning Wilson said. “If we’re going to advance medical science, we need to know what’s in the environment.” Biologists have long known that there’s more to Earth than it seems, estimating the number of species to be somewhere between 3 million and 100 million. Figuring out how much is difficult. Worm and Camilo Mora of the University of Hawaii used complex mathematical models and the pace of discoveries of not only species, but of higher classifications such as family to come up with their estimate. Their study, published Tuesday in the online journal PLoS Biology, a publication of the Public Library of Science, estimated the number of

species at nearly 8.8 million. Of those species, 6.5 million would be on land and 2.2 million in the ocean, which is a priority for the scientists doing the work since they are part of the Census of Marine Life, an international group of scientists trying to record all the life in the ocean. The research estimates that animals rule with 7.8 million species, followed by fungi with 611,000 and plants with just shy of 300,000 species While some new species like the strange mini-lobster are in exotic places such as undersea vents, “many of these species that remain to be discovered can be found literally in our own backyards,” Mora said. Outside scientists, such as Wilson and preeminent conservation biologist Stuart Pimm of Duke University, praised the study, although some said even the 8.8 million number may be too low. Hedges knows firsthand about small species. He found the world’s smallest lizard, a half-inch long Caribbean gecko, while crawling on his hands and knees among dead leaves in the Dominican Republic in 2001. And three years ago in Barbados, he found the world’s shortest snake, the 4-inch Caribbean threadsnake that lays “a single, very long egg.”

Biodiesel is a fuel made from vegetable oils. Rapeseed and soybean oils are the most commonly used, although other vegetables oils such as mustard, palm oil, hemp and jatropha have been tried and seem to show a lot of potential. These are listed or called Virgin Oil Feedstock. We also have waste vegetable oils that are byproducts from animal fats like tallow, lard and yellow grease.

APPLY SUNSCREEN PROPERLY.

The end of the school year is here and savvy moms and dads by now have made all the arrangements for summer. Summer camps and leisurely days at the pool or beach are just a few of the summer rituals for many families. However if you're tempted to let your child play outdoors for even a few minutes without proper sun protection, you might want to think twice. Adolescence and childhood are critical periods during which exposure to UV radiation is more likely to contribute to skin cancer in later life. Children with fair skin, blond or red hair and blue or green eyes are at the highest risk of sunburn. But darker-skinned children also need sun protection. With this in mind, it’s important that parents teach their children how to enjoy fun in the sun safely.

LIMIT OUTDOOR PLAYTIME BETWEEN 10A.M. AND 4P.M.

Apply a thick, even coat to all exposed areas 20 - 30 minutes before your child goes out in the sun. Choose a sunscreen with SPF (Sun Protection Factor) 15 or higher. Make sure it's labeled "broad spectrum," which means it blocks both UVA and UVB sunlight. For your little ones, sunscreen that contains zinc oxide or titanium dioxide should be selected as these compounds are less irritating than others. Sunscreen sticks are best for the face because they are sweat proof and less likely to drip. Don't forget nose, ears, hands, feet, shoulders, and behind the neck; lips can also burn, so apply a lip balm with SPF protection. Reapply sunscreen every 2 to 3 hours, or after sweating or swimming.

COVER FROM HEAD TO TOE. Wearing protective clothing and hats is one of the primary ways of warding off UV damage. When wet, light coloured clothing transmits just as much sunlight as bare skin. Keep your kids covered with dark colours, long sleeves, and pants whenever possible. And don't forget the accessories: sunglasses with UV protection to guard against burned corneas, and hats to prevent sunburned scalps and faces. Protective clothing, hats with wide brims, and sunglasses are just as important for babies. At the beach, bring along a large umbrella.

Biodiesel is an environmentally friendly alternative to the petroleum diesel we use today. Did you know Dr Rudolf Diesel the inventor of the diesel engine was showing his newly invented engine at the Paris exhibition running on peanut oil in 1893? During a speech at the same exhibition he was quoted as saying “the diesel engine can be fed with vegetable oils and will help considerably in the development of the agriculture of the countries which use it.” The diesel engine was therefore designed to run on biodiesel fuel and not petroleum gas. Biodiesel is a clean burning fuel that would reduce the carbon dioxide emissions of today’s vehicles by up to 100%. Biodiesel is also biodegradable and non-toxic. However, you should never fuel your vehicle with clean or used grease or vegetable oil that has not been converted to biodiesel. It will damage your engine.

Parents, you are the best teacher by practicing sun safety yourself. If your child sees you following sun safety rules, he'll take them for granted and follow suit. Teach every member of the family how to protect their skin and eyes. With proper supervision, children can learn to protect themselves and enjoy summer fun without sacrificing the health of their skin.

Avoid unnecessary exposure when the sun's rays are at their strongest. Even on cloudy or cooler days, ultraviolet (UV) rays remain strong. Shady spots can be just as tricky because of reflected light. If your child is playing outdoors during these hours, make sure to apply ample sunscreen.

WATCH OUT FOR MEDICATIONS. Some medications increase the skin's sensitivity to the sun, so make sure to ask your doctor whether your child may be at risk. Prescription antibiotics and acne medications are the most notorious culprits, but when in doubt, ask.

Busch, who doesn’t need a license to compete in NASCAR, also was fined $1,000, sentenced to 30 hours of community service and put on one year of unsupervised probation. He pleaded guilty to speeding and no contest to reckless and careless driving in North Carolina District Court in Iredell County. Busch addressed the court before his sentencing by District Court Judge H. Thomas Church, apologising again for driving 128 mph in a 45 mph zone in a bright yellow 2012 Lexus on May 24. “I think you’ll be different in the future,” Church said. “I sure will, your honour,” Busch replied. Busch and his wife, Samantha, were in the car when he was pulled over on a two-lane road in an area near a subdivision, a day-care centre and a church. The hand-built LFA sports car was on loan to Busch from Lexus for a 24-hour test drive. Busch attorney Cliff Homesley argued that his client wasn’t being treated the same as other people in similar circumstances, citing a July case of a 21-year-old convicted felon who was caught doing 128 mph and received a $300 fine and no loss of license.

iSports Netball Association congratulates Molly Cayman Islands Netball Association would like to congratulate the President of INFA (International Federation of Netball Association) of which CINA is a member. Mrs. Molly Rhone has been awarded the fourth highest honour in Jamaica, “The Order of Jamaica” for her contributions to the Sport of Netball locally and internationally. She has been with the netball fraternity for approximately 40 years. She became the first and only Jamaican female to head an international sporting body. Mrs. Rhone was an outstanding all round track and field athlete but excelled in Netball representing Jamaica at Under 21, Under 23 and Jamaica Vice Captain of the national team to the fourth World Netball Championships in 1975.

These three boxers will be carrying some weight on their shoulders. Kendall Ebanks, Jesse Bodden and Dariel Ebanks will travel more than 7000 miles to represent Cayman in the AIBA World Boxing Championships. The trio are currently training for the fights of their lives which will be held next month in Baku, the capital city of Azerbaijan. They will join hundreds of boxers from around the world to battle it out for the prestigious medals at the tournament. And if successful, it will be next stop London for the 2012 Olympic Games. “We’re all going there to win,” said Light Welterweight Kendall. “Nothing else will do. We want to bring gold

back to Cayman.” For 20-year-old West Bayer Kendall it will be an extra special journey. After an impressive showing at the Pan America Trials in Panama he was hand picked to receive personal training and will be flying out to the former Soviet Union a week before his fellow pugilists. “It is a real honour to have been picked. They saw potential when I fought in Panama and it is a fantastic opportunity to train with some of the best in the world. “I remember when I was about 16 years old I watched a previous World Championships on DVD and thought to myself one day, that could be me.” Kendall flies out to the camp on September 10th. He will be joined by 28-year-old Middleweight Jesse and 22-year-old Light Heavyweight Dariel

on the 22nd. Their journey has been sponsored by a combination of the Cayman Boxing Association and the Olympic Committee. Jesse, from George Town, added: “We are all really excited about the journey that lays ahead. Personally I’m really looking forward to it, but maybe not the cold so much.” If they can secure a silver or gold medal then it will be automatic qualification for the Olympic Games in London. Failing that, if they finish in the top ten they will enter the Olympic trials to secure a place in next year’s games. But there’s only talk of medals at the Dalmain Ebanks Boxing Gym where the three lads train every spare minute they can. Continued on page 16
