1. NYE in NYC Yes – the concrete jungle where dreams are made of is on the list. Whether you want to join the crowds and find a completely squished cosy standing spot in Times Square to watch the famous Ball Drop or you’d prefer to opt for celebrating with a group of friends at a roof top bar to watch the fireworks light up the night across the New York City skyline; this city has endless amounts of options to make it your biggest New Years Eve ever.


2. New Year in Sydney Sydney is definitely one of the most spectacular places to spend New Years, with fireworks centred around the famous Harbour Bridge. The streets are filled with a young, fun crowd of people and the city’s pubs, bars and clubs are completely pumping. Recover on New Years Day in the sun at Bondi Beach, relax at the park by the Harbour or continue the party with the Summa Dayz festival. Summer in Australia is always a good option.

Start the Year in Amsterdam Amsterdam is an incredible place to visit all year round, but New Years in this infamous city brings even more debauchery; the city even starts celebrating as early as December 29th. Along with the typical club and pub parties, the city squares (Museumplein being the most popular) fill with people to witness the fireworks. Beware of stray firecrackers as this is the one time of the year that the sale of fireworks isn't prohibited.


5. Street Party in Edinburgh The Hogmanay Street Party is one way to send the ‘old’ year out with a bang and start the New Year in good form. This event hosts a crowd of around 80,000 party people and boasts some of Scotland’s biggest music artists. Hogmanay actually consists of a number of events held over a few days – so if you’ve got a couple of days in Edinburgh up your sleeve, it’s definitely worth checking out. 57

HONEY GLAZED HAM WITH PINEAPPLE AND MARASCHINO CHERRIES

Ingredients 3/4 cup Dijon mustard 1/2 cup light brown sugar, plus more for sprinkling 2 teaspoons chopped fresh thyme leaves 1 (14-pound) cooked and smoked cured ham, shank end 3/4 cup pineapple juice 20 canned pineapple rings 1/2 cup maraschino cherries Preheat the oven to 350 degrees F. Put oven rack in the middle of the oven. In a small bowl, mix together the Dijon mustard, brown sugar, and thyme.

Total Time: 2 hr 50 min Prep: 15 min Inactive: 15 min Cook: 2 hr 20 min Yield:10 to 12 servings

Put the ham in a large roasting pan, fat side up. Rub the ham with mustard glaze. Pour the pineapple juice into the bottom of the pan. Put the ham in the oven and bake for 2 hours, brushing every 20 minutes with the pineapple juice. Remove the ham from the oven. Turn oven to 400 degrees F.

Using toothpicks, decoratively adhere the pineapple rings around the ham and put a cherry in the center of the pineapple ring. Sprinkle the pineapple rings lightly with brown sugar. Return to the oven, uncovered, and bake until the pineapples turn a light golden brown. Remove from the oven to a serving platter and let rest for 15 minutes before slicing.


Ingredients Butter, for casserole 3 pounds sweet potatoes, peeled and cubed Salt 1 (4.5-ounce) can evaporated milk 1/2 cup brown sugar 5 tablespoons unsalted butter, melted 1 teaspoon vanilla extract 1/2 teaspoon ground cinnamon 2 eggs, beaten Freshly ground black pepper 1 cup coarsely chopped roasted, salted cashews 1/2 cup mini marshmallows 1/2 cup sweetened shredded coconut

Directions Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish and set aside. Add the potatoes to a large pot of cold, salted water. Bring to a boil over high heat, then reduce the heat and simmer until the potatoes are tender, about 20 minutes. Drain in a colander in the sink. Mash the potatoes in a large bowl. Add the evaporated milk, brown sugar, butter, vanilla, cinnamon, beaten eggs, salt and pepper, to taste. Mix together until smooth. Pour the mixture into the casserole dish and bake for 25 minutes. In a small bowl, toss together the cashews, marshmallows, and coconut. Remove the casserole dish from oven and top with the cashew mixture. Bake until the marshmallows are lightly toasted, about 5 to 10 more minutes. Remove the casserole from the oven and let cool for 5 minutes before serving.

DELECTABLE EGG NOG Total Time: 10 min Prep: 10 min Yield:6 servings

Ingredients 4 cups vanilla ice cream, softened 1 1/2 cups cold milk 1 1/2 teaspoons eggnog flavoring Freshly grated nutmeg, for garnish Directions In a large bowl, combine all ingredients. With an emersion blender, mix until creamy removing any lumps. *Cook's Note: Hand mixer works in place of an Emersion blender Pour into glasses. Garnish with nutmeg and serve.

Ingredients For the Cake: 1 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon freshly grated nutmeg 1/8 teaspoon ground cloves3/8 cup light brown sugar 2 large eggs 3/8 cup vegetable oil One cup pumpkin puree 1/4 cup whole milk Frosting: 1 8oz pacakge of cream cheese, softened 4 tablespoons of butter, softened 1 teaspoon vanilla extract, (or vanilla bean paste if you have) 2-3 cups powdered sugar

For the cake: Preheat the oven to 350F. Grease or spray a half sheet pan and line the bottom with parchment, set aside. In a medium bowl combine the flour, baking powder, baking soda, salt, and spices. Whisk together and set aside. In the bowl of a stand mixer fitted with a paddle attachment, beat the eggs and brown sugar for 2-3 minutes or until fluffy. Add the oil and pumpkin, beating until smooth. Gradually mix in the dry ingredients in 3 batches alternating with milk, starting and ending with the dry ingredients. Don't over-mix! Pour the batter into the sheet pan and use an off-set spatula to evenly spread it throughout the pan. (This batter pretty much stays where you put it, so if it is spread unevenly it will likely bake that way.) Bake for about 15 minutes, or until baked through and just slightly golden. (This bakes up pretty quickly since it's so thin, I would check it every minute or two after 10 minutes so it doesn't over-bake.) Allow cake to cool and then place a sheet of parchment on your workspace and carefully flip the cake onto it. Peel off the parchment. When cool- use a 3-inch biscuit cutter to stamp rounds out of the cake. Freeze the rounds until ready to frost. For Frosting: Whip the cream cheese and butter until light and fluffy. Add the vanilla and the powdered sugar, a little at a time until the desired sweetness and consistency is reached. To Assemble: Place one cake round on a piece of parchment and spread 2 tablespoons of frosting on top. Repeat with 2 or 3 more layers, and either leave the sides of the cake exposed or give it a crumb coat and frost the whole thing. Top with cake crumbs and (in my case,) toffee bits! 85

GARLIC MASHED POTATOES Prep Time 15 minutes Cook Time 4 hours Total Time 4 hours, 15 minutes Yield 8 servings

3 pounds red potatoes, chopped 1/4 cup unsalted butter 4 cloves garlic, crushed and peeled Kosher salt and freshly ground black pepper, to taste 1/2 cup sour cream 1/3 cup freshly grated Parmesan 2 tablespoons milk, or more, as needed 1/2 teaspoon dried thyme 1/2 teaspoon dried oregano 1/2 teaspoon dried basil 1/4 teaspoon freshly grated nutmeg 2 tablespoons chopped fresh chives

Lightly coat the inside of a slow cooker with nonstick spray. Place potatoes, butter, garlic and 1/4 cup water into the slow cooker; season with salt and pepper, to taste. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours, or until tender. Add sour cream, Parmesan, milk, thyme, oregano, basil and nutmeg. Using an electric mixer fitted with the paddle attachment, blend potatoes until light and fluffy, about 2-3 minutes. If the mixture is too thick, add more milk as needed until desired consistency is reached. Serve immediately, garnished with chives, if desired.

WHITE WINE BRAISED SHORT RIBS Serves 4 to 6

Ingredients: braised short ribs: 3 1/2 tablespoons extra virgin olive oil, divided 6 (bone-in) short ribs, trimmed 1 onion, diced 1 large carrot, peeled and diced 2 ribs of celery, diced 3 garlic cloves, lightly smashed 2 tablespoons minced thyme 2 tablespoons tomato paste 1 1/2 cups Ecco Domani Pinot Grigio 1 cup chicken stock 4 tablespoons cold salted butter, cubed salt and pepper to taste parsnip and rutabaga puree: 2 large parsnips, peeled and chopped 1 large rutabaga, peeled and chopped 1 garlic clove, lightly smashed 2/3 cup heavy cream, warmed 6 tablespoons salted butter, softened salt and pepper to taste gremolata: 2 tablespoons minced parsley 1 1/2 tablespoons shredded lemon zest 1 teaspoon minced rosemary 1 garlic clove, minced

Directions: 1. Preheat oven to 325°F. 2. Pour 1 1/2 tablespoons oil into a large Dutch oven and place over medium-high heat. 3. Generously season short ribs with salt and pepper and sear for 2 to 3 minutes on each side. Remove short ribs from pot and set aside. 4. Drain excess fat from pan and add remaining oil. Add onions, carrots and celery and sauté for about 5 minutes. Season with salt and pepper. Add garlic and thyme and continue to sauté for an additional 3 minutes. Stir in tomato paste. 5. Deglaze pot with white wine, making sure to scrape any browned bits that may have stuck to the bottom, with a wooden spoon. Boil until liquid has been reduced by one third. Add short ribs back to the pot, in a single layer and top with stock. 6. Bring to a boil, cover and place into the oven for 2 to 2 1/2 hours or until ribs are fork tender 7. Remove short ribs from braising liquid and set aside. Skim excess fat from top of braising liquid. Pour liquid (including braised mirepoix) into a blender (leave the center cap off and replace it with a damp towel, folded a couple times and your hand placed over it… this will prevent your blender top from exploding off [ due to the steam] as you blend) or using an immersion blender, blend together until smooth. With motor running, add cubes of butter until fully incorporated. Adjust sauce seasonings. Return puree back to the pot with short ribs; cover and set aside until ready to use. 8. For parsnip and rutabaga puree: Fill a large pot with salted water and add parsnip and rutabaga chunks. Boil vegetable until fork tender. Drain water from pot and transfer mixture to a blender or food processor. Add cream and butter and puree until smooth. Season with salt and pepper. 9. For Gremolata: Combine all ingredients into a small bowl and toss together. 10. To assemble: Ladle a scoop of the root vegetable puree into a shallow bowl and top with 2 short ribs. Top with a ladle of sauce and finish with a sprinkle of gremolata. Serve immediately
