Expect Shorter Short Sales Dear Doreen, I read somewhere that banks are speeding up the short-sale process. Do you know anything about that? I’m considering short selling but don’t want to be hung out for 6 to 12 months while the bank figures out what to do and when to do it. What’s the update? —Wondering in Willow Dear Wondering, as part of a settlement with state attorneys general, the five largest mortgage servicers are adopting new requirements for short sales, which should speed up what has previously been a lengthy process. Here are some of the new requirements. Servicers must… • Provide borrowers with a decision within 30 days of receiving a short-sale package request. • Notify a borrower within 30 days of any missing documents required to process the request. • Notify a borrower immediately if a deficiency payment is needed to approve the short sale, and estimate the amount of payment. • Form an internal group to review all short sale requests. Banks that take longer than 30 days on more than 10 percent of the short sale requests will be considered in violation of the settlement and will face fines of up to $1 million and $5 million for repeat offenses. let’s hope this works! —Doreen

Dolphins Do ‘Far Westerns’

our kids with the Anthem Dolphins joined more than 1,700 swimmers from the United States and Canada for the Far Western Swimming Championship in northern California March 29–April 1. For Emma Edmund, 10, who has gotten used to the Arizona sunshine, the cold and rain were the toughest part of the fourday competition of 9- to 18- year-old swimmers. Ten-year-old Isabella Wylie of Anthem participated in seven events (placing 20th or

better in five of those) and won a ninth place medal in the 50 backstroke. Wylie told In&Out the best part was, “when I got my medal and they were taking pictures and I got to shake hands with one of the Olympic medalists.” “Far Westerns” as the competition is called, is known as a steppingstone to the Olympics. Six of Scott Newell’s swimmers qualified for the event in this, his first season as head coach for the Dolphins. “This is one of the largest, most

recognized meets in the country. It has hosted many Olympic swimmers over the years, and not many swimmers in our state can say that they have swum there.” Edmund and Wylie agreed hanging out with their team was a highlight. “Everyone always cheers each other on,” said Edmund. And the Dolphins have a lot to cheer about. According to Newell, to have six qualifiers in a club of around 90 swimmers is “pretty amazing.” io APRIL 12, 2012 |

he U.S. Bureau of Land Management is looking for the shooter who killed five wild burros on the Herd Management Area north of Anthem. Around 400 wild burros roam the Lake Pleasant Herd Management Area, said Pamela Mathis, BLM spokesperson. The burros are often spotted around Anthem’s west side. The animals were found shot along the county line between Maricopa and Yavapai counties back in March. A sixth animal died in connection with the shootings.

Anthem, Desert Hills and Tramonto. Investigators hope someone may have seen something. “We are hopeful with the public’s help we will solve it,” Mathis said. “We are following leads,” she added.

Sauce… Gravy… Same Difference.

I

don’t care what you call it. I’ve witnessed arguments which lasted hours (and decades) over which is correct—Sunday sauce or Sunday gravy; meat gravy or meat sauce. I may make a lot of enemies today, but I was raised calling it meat sauce. To my family, gravy is brown, sauce is red. I always end the debate with one of my favorite oxymorons, “It’s the same difference.” I just realized I’ve been writing this column for over three years and never included a recipe for sauce. I guess I take my sauce too personally. What’s my favorite sauce for pasta? Might as well ask me which one of my kids I love the most. Impossible to answer. (Well not really, it’s the kid who passes by when I’m slumped on the couch and tosses me a Reese’s peanut butter cup without me texting them for one.) I guess I could answer the sauce question too. My favorite sauce is the last sauce I ate. Oh, so true. There are categories for pasta sauces and each holds many variations. A few examples: Dad’s quick-cooked meat sauce with fresh basil; Mom’s slow and low Sunday wonder. (By the way, it’s “Sunday sauce” because it takes hours to make and it’s special like Sunday.) I refer to meatless as marinara but that could mean hand-crushed whole tomatoes cooked in a couple minutes or a puree of tomatoes cooked a bit longer. There are sauces with cream, vegetables… countless combinations that make me seriously happy. Today, I get personal. I share with you one of my favorite sauces. Bolognese is what I cook to impress friends, show love for my family and apologize to my wife (flowers and chocolates are for newlyweds). Man up, smarten up and learn this sauce! The different shades of flavor in this Bolognese should make you understand how personal sauce is to me. I mean gravy. Ah, I mean who cares, ”It’s the same difference.” io

Bolognese Sauce 1 lb. beef, chopped 1 lb. veal, chopped 2 stalks celery, diced 1 carrot, diced 1 small onion, diced 4 garlic cloves, sliced 2 6-oz. cans tomato paste 1 cup whole milk 3 cups water 1 cup dry white wine ¼ cup pecorino Romano 4 tbsp. olive oil Salt and pepper to taste Directions

1 Heat oil over medium heat. Add onions, celery, carrots, garlic and a pinch of salt; sweat until soft (about 10 minutes). 2 Add veal and beef; stir until browned. 3 Add tomato paste, water, wine, milk, Romano cheese. Simmer over medium low heat, stirring occasionally, for 2–2½ hours. 4 Season with salt and pepper.

Larry’s tips: It’s not the prettiest looking thing when you first put in all the ingredients; don’t get nervous, beauty takes time. Option: After all the ingredients are in, transfer to 350-degree-oven for 3–3½ hours. You don’t have to stir and you can nap while the magic happens.
