Now we want to buy again and wondered if you know if we can get a loan? —Yearning to Own Dear Yearning, We get this question a lot as of late. Here’s what our lenders are telling us: • If you apply for a Fannie Mae loan, you must wait only two years from the close of your short sale if you have enough cash to put 20 percent down. If you have only enough cash to put 10 percent down, you

will have to wait four years from the close of your short sale. • If you are an FHA buyer, you must wait three years from the close of your short sale. • If you qualify for a USDA loan, it’s a three-year wait. • If you need a jumbo loan, you’ll have to curb your enthusiasm. M

y wife and I were headed home after a lovely, two-and-a-half hour celebratory meal. I don’t recall the occasion, but I can remember the meal in vivid detail. I was in

my perfect zone: A time when I feel content after enjoying a meal and not yet planning what I will eat next. As I navigated our minivan through Anthem, I received a call. My buddy, Royce, called


with an offer of leftovers. He prepared a new dish he called ‘legit.’ He uses this word as an adjective to describe anything he thinks is special. Because I was in my zone, which usually lasts 53 minutes, I declined. With wide-eyes brimming with concern, my wife reached over to feel my forehead; she thought I was ill. I never refuse an invitation tied to food. Moments later, I was back on the phone (speaker phone, kids) with Royce and told him I would be there soon. I feel so loved when someone offers me leftovers. Royce ushered me to his pasta creation like a school boy excited about his macaroni art. He had every right to be so excited. In front of me was the best pasta dish I ever tasted. Royce braised short-ribs, tossed the meat with cream, cheese and spinach, gently rolled lasagna noodles around the mixture, and then cradled the rolls in tomato sauce. One bite and I knew I was eating the Rolls Royce of pasta. I almost forgot that I was driving the family minivan back home. Make this recipe. Enjoy this recipe. Live in the zone. Ciao Bella!

Rolls Royce RIBS 2 lbs. beef short-ribs, boneless 3 Tbsp. olive oil 1 onion, finely chopped 2 cloves garlic, thinly sliced 1, 6-oz. can tomato paste 2 cups red wine or beef broth 2 cups water Salt and pepper to taste FILLING 8 oz. heavy cream 8 oz. package frozen chopped spinach, thawed and water squeezed out 8 oz. mozzarella, shredded 2 Tbsp. pecorino cheese, grated Salt and pepper to taste PASTA 1 lb. lasagna noodles; cooked, drained 1 qt. prepared tomato sauce directions

1 Season ribs with salt and pepper. Heat olive oil over medium-high in large oven-proof pot. Brown ribs on all sides. Remove ribs from pot. 2 Sauté onion and garlic for 1-2 minutes. Add wine, water, tomato paste and bring to a boil. 3 Add ribs back to pot, cover and place in pre-heated 350 degree oven for 2 ½ hours. 4 In small sauce pan, warm heavy cream and stir in mozzarella and pecorino cheese until melted. Then stir in spinach. Add salt and pepper to taste. Set aside. 5 When ribs are cooled down (disregard liquid), fork-shred the rib meat and combine with the cream mixture. Season with salt and pepper to taste. 6 Lay lasagna noodles out and distribute the mixture evenly over each. Roll noodles and place in sauced baking tray, seam side down. Top each roll with additional sauce and sprinkle with grated cheese. Bake in 350-degree oven for approximately 30 minutes. Serves 4–6.

Save the rib cooking liquid for another day and use it as a sauce for gnocchi or your favorite pasta. Start cooking the cream mixture and lasagna noodles while the ribs are cooling down before shredding.
