Orange Date Nut Cake

INGREDIENTS:

  • 4 ½ cups sugar (2 ½ for glaze)

  • 2 sticks butter

  • 4 eggs

  • 1 ½ cups orange juice (1 ¼ for glaze)

  • 1 ½ cups buttermilk

  • 4 cups flour

  • 1 tsp. salt

  • 1 tsp. baking soda

  • 1 cup chopped dates

  • 1 cup chopped pecans

DIRECTIONS:

Cream butter and 2 cups sugar together well. Add eggs, one at a time. Add buttermilk and 2 tbsp. orange juice.

Sift salt, soda and 3 cups flour together and add to batter. Use remaining flour to cover dates and pecans, and then fold them into the batter.

Pour into well-greased and floured tube pan and bake 30 minutes at 350 degrees.

Meanwhile, mix 2 ½ cups sugar and 1 ¼ cups orange juice in a small pot and cook for ten minutes.

Once the cake is ready, pour the glaze over the hot cake and let cool before removing from the pan.
