Penne with Sun-dried Tomato Pesto Ingredients: 12 oz. penne pasta 1 c. (packed) fresh basil leaves 1/2 c. freshly grated Parmesan

1 (8.5 oz) jar of sun-dried tomatoes in olive oil Salt and freshly ground black pepper 2 garlic cloves

Directions: Cook pasta in a large pot of boiling salted water until tender but still firm, stirring occasionally. Drain, reserving 1 cup of the cooking liquid. Meanwhile, blend the sun-dried tomatoes and their oil, garlic, salt and pepper, to taste, and basil in a food processor and blend until the tomatoes are finely chopped. Transfer the mixture to a large bowl. Stir in the Parmesan. Add the pasta to the pesto and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and serve.

Co-op Energy Efficiency Program

The Co-op Energy Efficiency Program consists of a loan and rebate program to help our member-owners manage the cost of installing energy-efficient improvements in their homes. While there is value in practicing no-cost and low-cost measures, more extensive energy efficiency improvements obviously make a bigger impact on your power bill. Our energy auditor can discuss your usage patterns with you, target efficiency opportunities, and uncover potential energy efficiency improvements that can be made. BE PREPARED BEFORE SEVERE WEATHER STRIKES This time of year, we tend to see even more storms and showers than usual. Unfortunately, even mild storms can turn severe in an instant so it is important to take every storm seriously. That means being prepared! Preparing for storm conditions before they happen can make all the difference.

Know Where to Go

Check the emergency evacuation routes for your area. Locate any shelters near you or make plans to stay with friends or family, if needed.

Build a Kit

An emergency kit should contain essentials like food, water, batteries, flashlights, toiletries and prescriptions. Seal important documents in plastic to protect from damage.

Make a Plan

Have a family communication plan in place tailored to your family's needs. Consider having alternate means of communication in case cell connections are disrupted.

Stay Informed

Download a weather app on your phone for updates or have a weather radio. Follow our social media pages for updates during storm related outage events.
