Sweet Potato Casserole With Marshmallows Ingredients: Cooking spray 2 large eggs 1/2 tsp. kosher salt 1/2 c. milk
1 tsp. pure vanilla extract 1/2 c. packed brown sugar 8 tbsp. butter, melted 4 c. large sweet potatoes, peeled and cubed
For topping: 1 c. chopped pecans 2 1/2 c. mini marshmallows 1/2 c. all-purpose flour 4 tbsp. butter, melted 1 c. packed dark brown sugar Directions: Preheat oven to 350°. Grease a 9 x 13 inch baking dish with cooking spray. In a large pot, bring potatoes to boil. Reduce heat and simmer until tender. Drain, let cool, and transfer to a large bowl. In a large bowl, stir together potatoes, sugar, butter, vanilla, milk, eggs, and salt until smooth. Pour into prepared dish. In a medium bowl, stir together sugar, flour, and butter until it clumps. Stir in pecans and spread evenly over potatoes. Top with marshmallows. Bake until golden, about 30 minutes.

Holiday Food Drives
Join us in the fight against hunger! We will be collecting money and non-perishable food items at our offices from Nov. 1 until Dec. 9 to benefit the Montgomery Area Food Bank (MAFB). We are also sponsoring 12's Day of Giving on Dec. 9, 2022 at Renfroe's Market where we will be collecting food, toys and monetary donations for the Christmas Clearing House, MAFB and Toys for Tots. For your donation valued at $5 or more, we will give you your choice of one of our adorable stuffed animals, including our newest addition, Lucas the Llama! 2023 YOUTH TOUR We are currently accepting applications for our 2023 Youth Tour. The competition is open to any high school junior who lives or goes to school in one of the eight counties served by Dixie. Applications are due Jan. 6, 2023. The Montgomery Youth Tour will be held Mar. 14-16, 2023 and the Washington Youth Tour is scheduled for June 18-23, 2023. Once all applications are received, students will be contacted to schedule an interview time. Interviews will be held on Fri., Jan. 27, 2023. The 2023 Youth Tour Packet and Application are available at www.dixie.coop/youth-tour. Our scholarship program is available to any graduating high school senior who is the dependent of a cooperative member. The scholarship funds can be used at a four-year or two-year college or university, as well as any technical or trade school.
