Fast Foods Stores Set up When I sat down to write this article I cast my mind back to a conversation that I have had numerous times with many of my friends here in Kenya. This conversation changes a little from time to time but it basically starts off like this:

The truth is that Kenya is becoming urbanized at an unprecedented increase of almost four percent per year. Experts worldwide talk about the effects of urbanization and often refer to how these changes make us cash rich and time poor. We only have to take a look at Mombasa road to see the affect this is having on our ability to manage our time. Being stuck in a matatu for three to four hours a day leaves us with very little time in the evenings to prepare our favorite home cooked meals. This is where we see our fellow Kenyans turning to the bright lights and shining banners of the various fast food outlets. The convenience of being able to stop

we are spending our money with these international brands and not our own. I know how much I love Kenyan cuisines, let’s hope that some of you reading this take action and we see the rise of many more Kenyan born fast food franchises.

Bakery Set up Insights Bakery Layout & Design One of the most important components of a successful bakery set up is by ensuring that proper planning has gone into your layout and design. Not only will this facilitate the production process through suitable positioning of products and equipments, but it will help to eliminate problems which may jeopardize product quality and eliminate bakery turnovers. Extraction and Ventilation The right extraction with filtering system for Ovens, Fryers, Proofers and Stoves must be provided in every set ups. Ventilation is vital for bakery for better results for it needs sufficient air flow to keep the bakery comfortable at working temperatures to restrain on overworking and have optimal production which in turn increases its life span and reduces breakdown time. Special considerations are given to air conditioning in relation to air flow over product displays for its key on quality of the final product as well. Practical Principles which assists in the design and layout of a bakery include: • Flexibility Bakery layout design should incorporate ease movement of equipments and workspace without making it major costs. Electrical points, drainage and water supply must be laid out in such a way that it will accommodate the moves within the affected areas. • Food safety Food safety and safe work procedures are two non- compromisable elements of the design. They must be always take priority in the decision making process.

• Hygiene and Housekeeping It’s important that layouts avoid creating small confined areas which will hamper the work flow and creates clutter which is not easy to clean. • Drainage Ensure proper drainage for floor cleaning, oven and prover drains, wash hand basins and wash up areas. Proper grease taps and accessible floor ducts are of priority. The proper drainage system must be carefully laid out so that it can accommodate future changes. • Electrical supply Before committing to the site make sure three (3) phase power supply is available to take care of immediate and future requirements. Additional supply thereafter or at last stages has proved to be a costly exercise. • Water Supply Water supply system within a bakery set up must be flexible and accessible to allow for equipment and department layout changes • Refuse Area All bakeries produce a lot of refuse that must be stored safely for collection. Sufficient space for holding bins must be reserved and have rodent proofers or trappers. Water supply for the area is important due to sequences of cleaning at regular basis on aspect of hygiene management. • Wrapping / Packaging / Holding Area This area is very important as the production and sales areas. It needs to be carefully thought out and designed to ensure smooth product flow with adequate storage and workspace for wrapping and packaging products for sale.

A production range dictates what production area/departments needed for both short term and long term should be considered at the set up stage, this will help on ease of work flows at the peak time of productions. In baking section, proper extraction and drainage is essential for the ovens and proofers.

a. Cold room Cold chain is important for food safety requirement hence there should be adequate cold storage space for storing chilled ingredients. A strict policy of storing cooked separated from raw must be maintained. There must be sufficient refrigeration space to store semi processed components and unbaked products as a buck up stock.
