RED PEPPER & CHICKEN STIR-FRYSpicy
• 2 red bell peppers, sliced into thin strips
• 2 chicken breasts, sliced into thin strips

• 1 tbsp olive oil
• 1 tbsp soy sauce
• 1 tbsp honey
• 1 tbsp Sriracha sauce (or to taste)
• 1 clove garlic, minced
• Salt and pepper to taste
DIRECTIONS
Heat the olive oil in a large pan over medium-high heat.
Add the sliced chicken and garlic to the pan and stir-fry for 3-4 minutes or until the chicken is browned on all sides.
Add the sliced red bell peppers to the pan and continue stir-frying for another 2-3 minutes until the peppers are slightly softened.
In a small mixing bowl, whisk together the soy sauce, honey, Sriracha sauce, salt and pepper.
Pour the sauce over the chicken and pepper mixture and stir well to combine.
Continue stir-frying for an additional 2-3 minutes until the chicken is cooked through and the peppers are tender but still slightly crispy.
Remove the pan from heat and serve immediately, garnished with chopped fresh cilantro or green onions if desired.
