If you own a dog or cat, you’ve probably thought about spaying or neutering your pet, although you may not understand all the reasons. • 1 tsp paprika
• 1/2 tsp dried oregano
• Salt and pepper, to taste
• Optional toppings: chopped fresh cilantro, sliced green onions, avocado, shredded cheese, or sour cream (use low-fat versions if desired)
In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté for 2-3 minutes until the onion becomes translucent and fragrant.
Add the diced bell pepper, carrots, and zucchini to the pot. Cook for 5-6 minutes, stirring occasionally, until the vegetables have slightly softened.
