Happy Maslenitsa week! From February 16th till February 22nd Russia celebrates Maslenitsa. To welcome a good and hot spring - you need to eat a maximum amount of pancakes and be in a good mood all the time! And at the end of the week remember to burn something like a big handmade doll=) Maslinitsa tends to be a very happy and fun festival, most of the festivities are centered around family rituals bust most importantly it is staged to wave a big farewell to winter. Most are happy to say goodbye to the long cold winter! Usually for Maslenitsa you need to visit family and friends, sing Russian songs, drink “Medovukha”, eat pancakes, wear traditional beautiful costumes, play snow wars, c onstruct castles from snow and at the end of the week burn the Maslenitsa doll – which is the spirit of winter. Every day of the Pancake week has its own significance and a special ritual.

Day 1 Welcome day On day one all the daughter- in – laws ought to visit their husbands parents and spend the day with them eating pancakes. On this day people construct snow hills and castles (that could be very funny) and start to make pancakes. Old and unwanted things are collected up and tired up together into a Big Maslenitsa Doll. When the doll is ready people put it on a picket and take it around for all to see.

Day 2 The Flirty day Day two is the day for young people! Young single girls are introduced to young lads and they would go sliding down snowey slopes or sledding. Toboggans are very popular and of course a lot of pancakes are eaten! To welcome others, it is tradition to say: “ We have snow hills and pancakes are done, – Welcome to our home!”

7) Heat up your skillet and add a bit of oil to it (my preferred method is to stir around oil between each pancake using half a potato stuck on a fork, cut face down). Pour the batter into the pan (max. 1 ladle) and quickly tilt the skillet from side to side, forming an even circle. When the sides of the pancake start to look dry and a bit golden, flip the pancake over with a thin spatula. Wait about the same length of time, or slightly less, flip the pancake onto a large plate and spread a pat of butter on top.
