Plantation owners held festive barbeques, and even though there were many pigs, very little was exported out of the south, which caused a self-sufficient amount of food for Southerners. It was popular for church picnics and political rallies. Barbeques were a cheap way of swinging the voter’s opinion. People just love food! Barbeque is a little different depending on where you go. On the East Coast the meat is chopped and the sauce is usually peppery vinegar. Coleslaw and hush puppies are served as sides. A bit further south, in Georgia and South Carolina they use a more mustardy sauce for their barbeque. Barbeque can be viewed as a Southern icon. Tradition is very important when it comes to barbeque. The way my family has done it for years is the most important thing, because it brings people together over something wholesome, food!
