From the Editors... By no stretch of the imagination could I be described as a fashionista. My wardrobe thrives on practical (read comfortable) items that can be worn anywhere and everywhere – work to the couch, dinner to the movies – you get the picture. So it is with some irony that I have to admit to being really excited to see H&M open its doors to reveal some 3000 square metres of fashion and homewares this month. With H&M setting up shop at Charlestown Square, it is becoming clear that the Hunter is fast becoming the fashion capital of regional Australia. Also opening this month is the new Cotton On flagship store, and those in-the-know have more exciting news from certain international brands that they are keeping tight-lipped about – for now at least! This month we also spoke to Dr. Karen Phillip, high profile clinical psychotherapist about her new book OMG We’re Getting Married and the steps young couples can take to ensure their marriage remains ever-blissful. As you can guess – this includes a fair bit of up-front communication to enable issues to be resolved before they eventuate. This issue is also a treasure-trove of information about staying healthy over winter. From stress and sleep problems to too many fruit and vegetables (yes you can apparently eat too many) to natural therapies for cancer treatment and losing weight – everything you need to know is right here. So grab a cuppa (green tea of course) and settle down for a darn good read! If you intend (like me) to spend the vast majority of winter in this position (that is, on the couch with a cuppa), then you’ll find some handy hints about sprucing up said couch with some gorgeous cushions (which, thanks to insideout, you can also win!) You’ll also want to be sure to get the sofa ready in time for Rio 2016, which kicks off in August. This month we speak to first-time Olympian Scott Westcott about his upcoming debut (at 40 years of age no less). The Winter School Holidays are in full swing and if you’re scrambling to find new and exciting ways to keep the kids occupied we’ve got some great (and creative) suggestions to ensure the “I’m Bored” holiday catchcry is not once uttered! I walked into the gym for the first of what turned out to be 108 continuous days of exercise. The amount of support I received from everywhere was overwhelming, it was a great boost and for the first time in a long time I felt like I was no longer alone.

FREE STATE OF JONES Written and directed by four-time Oscar nominee Gary Ross (The Hunger Games, Seabiscuit, Pleasantville), and starring Oscar winner Matthew McConaughey, Free State of Jones is an epic action-drama set during the Civil War, and tells the story of defiant Southern farmer, Newt Knight, and his extraordinary armed rebellion against the Confederacy. Banding together with other small farmers and local slaves, Knight launched an uprising that led Jones County, Mississippi to secede from the Confederacy, creating a Free State of Jones.
Free State of Jones is in cinemas July 21st.
The wine was made by whole bunch pressing the grapes and was fermented using wild (natural) yeast from the vineyard. It underwent malo-lactic (secondary) fermentation and was kept in new French oak barrels for maturation prior to bottling in December 2015.

INTOUCH WHAT'S ON Local Violinist Rebecca Gill
The 2016 Newcastle Music Festival is an 11-day event and will showcase a diverse range of musicians, including outstanding local performers and highly acclaimed guest artists. The festival aims to foster the development of young musicians through a number of events in which students have the chance to learn from and perform alongside exceptional local and guest professionals. With a packed program of some 21 concerts, master classes, recitals and a classical music quiz show (think a classical Spicks & Specks), the festival promises to be a treat for all music lovers. The festival is the brainchild of locals Ross Fiddes and David Banney, who are joint artistic directors heading an enthusiastic committee of volunteers with a background in events and music. “We hope that this year’s Festival will set down a model for an ongoing annual event, and we have plans for some international stars to be on the bill for 2017,” said Banney, himself a conductor and musician.
Festival to Showcase Local and International Talent August 2016 is shaping up to be a month of music in Newcastle. The centrepiece will be the first Newcastle Music Festival, to be held in city venues from Thursday 11 August to Sunday 21 August.
Performers in 2016 include internationally acclaimed mezzosoprano Deborah Humble, who is one of Australia’s best known and most successful opera singers. Having been a Principal Artist for both Opera Australia and The State Opera of Hamburg, she has embarked upon a freelance career which takes her all over the world. Ms. Humble will appear in recital on the 11th of August, will give a master class to aspiring singers on the 12th of August and will be a panel member in Our Music, the music quiz game on the 13th of August. Also featuring will be the stunning Sydney-based Acacia Quartet. Founded in 2010 by violinists Lisa Stewart and Myee Clohessy, violist Stefan Duwe and cellist Anna MartinScrase, Acacia Quartet has quickly won great respect for their versatile and inventive programs often coupling an established

repertoire with the unorthodox. Acacia will perform in concert on 19 August, they will workshop with aspiring string players on the 20th of August and contribute to the massed strings concert on the 21st of August, including providing the string quartet section in the multi-layered Tallis Fantasia by VaughnWilliams. Audiences will also be privileged to experience the violin prodigy Ariana Ricci and the highly awarded soprano, Ayse Göknur Shanal. Local performers, many with national and international careers, include cellist Anthea Scott-Mitchell, violinist Rebecca Gill premiering works by Newcastle-born composer Chris Williams, flautist Sally Walker, the very versatile soprano Susan Carson, and Andrew Chubb, a well-known interpreter of the piano music of American composer Philip Glass. The Christ Church Camerata, Opera Hunter, and Newcastle University Choir, Festival Opera, as well as Newcastle Youth Orchestra, Hunter School of the Performing Arts and the Hunter Singers, are all festival participants offering delightful concert repertoire in a range of settings. The festival even has a school string orchestra from Hobart involved. A gala concert in Christ Church Cathedral will close the Festival. For this, there is an open invitation to Hunter Region string players to participate. This is a chance for string players of all levels of attainment to play in a massive string orchestra under conductor David Banney. Local businesses and other organisations are sponsoring the eleven-day event, providing welcome financial support and inkind contributions. You have gone from being the “boy next door” to one of our most recognisable faces - how has that changed your life? Nothing for me has changed that much. I have been playing music for a long time and now, I just get to do that on a bigger scale.

Fletcher Pilon Fletcher Pilon, often known as “Fletch”, is a young Australian Singer/Songwriter from the Central Coast. He has performed to millions of viewers on various stages with his most notable accomplishment to date being named Winner of Australia's Got Talent in 2016. He was due to open for Cody Simpson in 2015 on his Gold Coast and Sydney shows when his little brother, Banjo, tragically passed away after a skating accident. Fletcher soon released his independent debut EP titled "Banjo" dedicated to his younger brother. The EP went to number 1 on the Singer/ Songwriter i-Tunes charts and so too did his single "Infinite Child." Fletcher is now touring with "The Banjo Tour" across various venues in Australia, including a gig at Lizotte’s Newcastle on July 16th, 2016. How did you get into music? I got into music initially from a young age performing in front of my school in a Michael Jackson tribute show. I was 8 years old and from then on I started coaching and lessons with Gina Jeffreys and later Greg Gould, which lead to more performing and gigs, gaining experience.
As the winner of this year’s series of Australia’s Got Talent, you pocketed a hefty $250,000 in prize money. Have you spent any of it yet? How are you planning to use the prize money? The one main thing that I've bought is a Gibson Les Paul 59' Reissue Guitar, which I'm so stoked about. When I auditioned for the show, people asked me what would I get if I won. Jokingly, never expecting to win, I said I'd get a Les Paul, so I did! I'm going to use the money wisely for my career and life ahead and be smart about my decisions. Rumour has it that rapper, Nicki Minaj, shared your story with her 42 million Facebook followers - how did that come about and what did it do for your own FB profile? I was so stoked when I found out that Nicki Minaj shared my audition. I'm not sure how she saw it, but I'm very grateful that she liked it enough to share it. I also got a few more followers from it myself which was cool. I also read that your “17 Year Old” goal was to go on a surfing holiday to Byron Bay - has that changed since AGT? Can you share some of your other “year” goals? That's something I still want to do, yet when I said that I was just kind of throwing it out there. I definitely have very strong goals for my music and other areas of my life. By 18 I want to be as big as possible in the music industry, and I'm going to work very hard to make that a reality. Biggest love - Surfing or Music? (sorry - you have to choose one!) Up until recently, I would've chosen surfing any day, but I'm loving music so much right now, so I’d have to go with music. Favourite Food? Pineapple or any good fruit. Favourite Movie? Austin Powers Series. Mike Myers is a legend.
What can the audience expect from your upcoming Lizotte’s performance? I'd like to think that everyone can walk away from What does music mean to you? INTOUCHFEATURE WITH DOCTOR ROSS NOBLE KAREN PHILLIP “I was always inclined to do this type of work, I guess I got that from my mum who was in organisations where she wasn’t a formal counsellor but she just did it anyway,” she said. “Then I got married very young, 20-years-old … and I had a very difficult relationship with my first husband, with whom I had three beautiful children. “I ended that relationship some 20 years ago, and a lot of my friends were going through the same issues, and that’s when I decided to step into the counselling role and learn what I could so not only could I help myself and my friends but anybody else to stop them going through the despair and the hurt that I’d experienced. “Since then I’ve learnt how to set criteria and raise expectations and develop self-worth. “I met my current husband, we’ve been together 15 years and I’d have to say every single day of my relationship is euphoric.

“That’s what I want every other human being to be able to find, to be happy and secure and euphoric in their life and you can. “I want people to know enough and learn enough to go in with eyes wide open instead of half-closed so they retain this happy, euphoric loving life and the relationship that they deserve.” Aside from the new book, Dr Phillip has also been at the forefront of an area of clinical hypnotherapy, creating what she believes are the world’s first virtual hypnotherapy sessions. She said replicating her clinical sessions, which combine psychotherapy followed by hypnotherapy, in a video format that people can purchase online is allowing her to help people from further afield – and also reach those who may have been put off by the stigma they felt was attached to counselling. I was having people travel from the Blue Mountains and Tamworth, from all over the place to come and see me at Lake Munmorah and at Wallsend where I have the rooms, so my husband actually suggested why don’t you video your session and put it online,” Dr Phillip said.
“You fall in lust and love, and everything is absolutely wonderful, and then you get engaged, and that’s all exciting, and then you plan the wedding, and it’s a big day, and it’s after that that So you’re in love and getting married. Simon’s voice is quite distinctive, is your voice naturally quite similar or did you have to learn how to imitate it? I found that I have a similar soft tone, and also naturally produce that 'twang' he has, and that has made it easier to get close to the distinctive voice of Paul Simon. There are a few tips and tricks I have picked up along the way to help get me there. What has the response been like from long-time Simon & Garfunkel fans? Well, we are uniquely placed to answer that question actually! Every night without fail we make it part of the evening that immediately after the show ends, Joe (who plays Art) and I head straight to the front of house foyer where we're able to chat with the audience, pose for photos, sign programmes and answer any questions people might have. So it enables us to get direct feedback from an audience of (generally) long-time Simon and Garfunkel fans. Overwhelmingly positive would be the response, and every night we get told wonderful things like 'You really took me back to my teenage years' and 'We saw them back in the day, and it was like seeing them all over again.' It seems to enthuse and excite and stir emotions as well. People are very, very kind.

As pure coincidence would have it, Simon and Garfunkel have been one of my all-time favourite groups since my teens, when I started getting into music properly. As a fan of acoustic stuff and harmonies, it's no surprise I found those guys pretty quickly!
For our readers who haven’t heard of the show, could you give us a brief overview of what we can expect from it? What’s special about it? It is a 2-hour journey through the life of Simon and Garfunkel, from their start as schoolboys trying their hand at rock n roll, all the way through to their split- at the height of their fame. Along the way you get all the hits you want to hear, as well as a couple of lesser known gems. The following year, 'Stories in our Steps' took audiences on a journey down Watt Street going back through history as far as the Dreamtime and stretching forward with dance, theatre and musical performances along the way.

This year, the trilogy is completed with 'Manning the Fort', another site-specific work at Fort Scratchley. This will bring to life the period of World War II when members of the Australian Women's Army Service (AWAS) “manned” Fort Scratchley, looking out for enemy vessels from the observation post and enjoying a short time of relative freedom from the confines of the gender expectations of the time.
ABOUT TANTRUM YOUTH ARTS Now a vibrant space for creative expression and new, exciting work, Tantrum was established in 1976 under the name 2 Til 5 as a Saturday afternoon drama workshop. The company slowly developed from these roots, operating out of the Newcastle Community Arts Centre and providing theatre skills workshops and original productions for young people aged 8-18.
Life begins at 40 for Tantrum Youth Arts On July 9th, 2016, Newcastle's own Tantrum Youth Arts turns 40 and the not-for-profit organisation is celebrating with a daylong festival at their current home, the Newcastle Community Arts Centre. The ‘Trajectory’ ensemble will be performing original short works at the festival along with scenes from Vanessa Bates’ critically acclaimed ‘Trailer,’ as well as Tantrum’s touring theatre-in-education experience by Tamara Gazzard addressing 16 | www.intouchmagazine.com.au
After twenty years of operating under this basis, several of the older members of 2 Til 5 realised a gap in the opportunities for young people over the age of 18 and created Tantrum Theatre, a “gutsy” offshoot group to nurture post-school actors and artists up to the age of 25. The two companies eventually merged to accommodate all young people up to the age of 26. In 2014, Tantrum Theatre relaunched as Tantrum Youth Arts with new staff, a new vision and a mission to develop young people’s creativity, confidence and communication through a range of contemporary art forms including performance, filmmaking, writing and physical theatre.
These days, Tantrum's operating model relies on funding from the State Government’s ArtsNSW funding body (after successfully receiving Multi-year Program Funding for 2016 2018) as well as additional partnerships and funding from local government bodies and businesses. The organisation is thrilled to announce that, this year, they have managed to secure the Australian Arts and Culture Fund ‘Catalyst’ Funding, out of the Federal Government’s new program for the Arts. This funding will support Tantrum’s Emerging Artists Initiative ‘Trajectory’, that will see many emerging artists developing new work over the next three years. ‘Trajectory’ has brought together an ensemble of talented performers and artists aged 18 to 26 years to collaborate with renowned performance artist Lottie Consalvo to present work at Lake Macquarie City Art Gallery and Crack Theatre Festival. “It's amazing to think that young people in Newcastle have been finding a means of expression through our unique organisation for forty years now,” says acting Artistic Director Lucy Shepherd.

Mercedes-Benz Fashion Week Australia (MBFWA) 2016 shone the spotlight on some of our own homegrown talent and Australia’s finest designers, allowing them to uncover their eagerly anticipated Resort 2017 Collections. Despite New York and Paris runways often receiving international acclaim, it is clear that our own designers Down Under are making a significant impact in fashion around the globe. Partly as a result of our easygoing, eccentric nature, Australian fashion has been found to have an edge like no other and is making its mark in a big way. As the dust settles following MBFWA 2016, designers and fashion lovers alike find themselves reflecting on the week passed. The week’s best and worst are dissected, and it's only now that the “it” trends can be seen frolicking across our shores. By the same token, we can ask what are these trends, and how on earth do we incorporate them into our day-to-day wear? We have made this part easy for you. Here’s our style wrap up!

The toggle coat - Many of us would associate the toggle coat, or duffle jacket, with our childhood, but this season the cute outerwear staple is much more grown up. You can

The camel coat - Camel coats have always been popular, but they've had a particular resurgence this year. They are extremely versatile, super stylish and can be worn with anything, plus they look especially great with denim and boots (more wardrobe staples). Pictured: #3 Forcast Vivian Midi Coat. The longline coat - Dramatic, sophisticated and a nostalgic nod to the '80s, the longline coat is the biggest coat trend this season. More length also equals more warmth, so why wouldn't you want to give it a try?
A bit of skin is okay, but leave the rest to the imagination Both on the runway and in the street style, breezy, sheer fabrics were a must. As well as this, clever cut out details gave a more sophisticated air. For top runway designers Karla Špetic, By Johnny and Steven Kahill, showing a bit of skin, without giving everything away, created a magical allure and glamour. Likewise, other designers and fashion aficionados also adopted the “backless is best” mantra. Off the shoulder looks and plunging necklines are a must for all, and it can be expected that we will see more of this style soon! If there was ever a time to invest in that Gucci bag you have been dying for, now is it! Despite the limelight being on the Australian runway, a quick scan of the front-row A-listers reveals the true focus is on Italian luxury brand, Gucci. From Gucci loafer-clad feet to the Marmont leather, top handle bags sitting gently on laps, as well as the horse bit hardware collection scattered throughout the audience, it is evident Gucci holds the hearts of many at the moment. Mellow Yellow From the runways of Rebecca Vallance, Manning Cartell and Bec & Bridge, it is obvious that yellow is the new black! Sweet lemony hues and zesty mandarin colours were reigning the runway. Buttery, golden tones are this season’s must-have, and are here to stay.
Metal works and other embellishments From Toni Maticevski’s metallic fabrications and some crazy hardware in the form of bedazzled gags (courtesy of Ryan Storer), to the incredible metallic capes and breathtaking gowns by Daniel Avakian, it is crystal clear that shiny bling is very much in! This 90’s is back baby! Remember those “mum jeans” you have kept in the back of your wardrobe? How about that silky bomber trend can be easily embedded in your own style by adding a metallic top to your outfit, or picking out some burnished jacket you thought would never see the light again? Well, it’s jewellery. time to dust them off and pop them back on!
High-waisted, 90’s washed denim is the new uniform du jour. However, it should be noted that there are to be no rips. Cleancut, lightly pressed and frayed at the hem is how it’s going down. Add this with a silky bomber jacket, or a suede blazer, and you’re on the money. Alternatively, chokers are back in full force, as was seen in the Misha Collection. Pick up a velvet one today to tie the whole look together.

Lovely, lacy and floral! In terms of structure, it seems there is a massive movement away from clean and simplistic lines. Instead, the adoption of frills, ruffles, pleats, lacing and bold stitching is on the cards. Likewise, romantic and daring floral prints are also making a huge move this season. Although typically a springtime trend, florals can easily make a statement in your wardrobe simply by opting for dark, rich colours (see this

months cover), and miniature floral prints. This is sure to add a wintery, girly flare to your outfit. For inspiration, check out the We Are Kindred range, which highlighted this trend using white lace, pretty florals, and flippy dresses. Keep it flat This season flats are THE shoe (thank goodness for that!). Forget the Avant Garde do paired with painful heels, and go for the flat option. Adidas slides, Stan Smiths, and the previously mentioned Gucci loafers, are all the rage and a necessary addition to your wardrobe. Designers like Kate Sylvester and Jennifer Kate chose the flat option for their models. Alternatively, if you are looking for a heeled option but want to stay on trend, try a printed mule or over the knee boots. If all else fails, monochrome won’t Black and white is never outdated, and always looks sophisticated and classy. Adding a twist, or mixing textures is an excellent way to heighten this match made in heaven. By playing with small details and textures, you are also able to enhance your body shape through contrast. The mix also leaves plenty of room for extra detail, which can be accomplished through a new hairstyle. It is little wonder the global icon has embraced its presence Down Under - Australia is proving a jewel in its crown in terms of profitability. According to reports of its first accounts, H&M Australia posted a net profit of $3,831,000 for the financial year ended November 30, 2015, a turnaround from the loss of $1,475,000 recorded in 2014. This was the first time the Swedish department store had recorded a profit in Australia and came off the back of a strong year in retail sales, which almost tripled in 2015. The plans for expansion here form part of its global target to increase the number of stores by 10–15 percent per year, with 400 new stores expected to open across the world in 2016 alone. The expansion will come across H&M’s various fashion brands - H&M, COS, Monki, Weekday, Cheap Monday, & Other Stories and H&M Home – with most to take place in existing markets such as Australia. The company will also enter a number of new markets in 2016 including New Zealand, Cyprus and Puerto Rico and solidify its online presence by offering e-commerce options in a further four existing markets. Currently, H&M operates 23 H&M online markets, in addition to its 3924 stores, which operate in 61 markets on six continents, employing 148,000 people worldwide. But the company’s journey is not all about the money. H&M is renowned for its focus on quality and sustainability as well as continued high profitability. Its long-term approach is guided by the same shared values that have existed since its first store, simply called Hennes, opened in Västerås, Sweden in 1947 selling women’s clothing: fashion and quality at the best price in a sustainable way. According to its 2015 Annual Report, the company’s values are “based on a fundamental respect for the individual and a belief
in people’s ability to use their initiative.” The values are used to create “an open and dynamic workplace that allows colleagues all over the world to grow and work together to reach our shared goals.” Economic, social and environmental sustainability are at the heart of the business, which says it believes in “a better fashion future” that “makes fair and sustainable fashion affordable and desirable for all.” Its environmental credentials are impressive – 78 percent of the electricity used in its own operations comes from renewable energy sources, with the company cutting its greenhouse gas emissions by 56 per cent since 2014. H&M are determined to source cotton from sustainable sources – increasing this supply from 8 per cent in 2011 to an impressive 31 percent in 2015. Its goal is to source all the cotton used in its range from sustainable sources by 2020. Reuse and recycling are also a key plank of its sustainability process, with 12,341 tonnes of clothes collected in 2015 to be given a new life. “As a company with strong values and a long-term approach, we use our size and influence to bring about better conditions for people and to minimise environmental impact throughout the value chain,” H&M’s 2015 Annual Report said. “Progress is achieved through collaborations, innovation and greater transparency. Along with customers, suppliers, business partners, scientists, interest groups, decision makers and other companies, we work all along the line – from creating the conditions for sustainable cotton production and promoting fair living wages in the textile industry, through using electricity from renewable sources, to encouraging customers to be climate smart when washing clothes and to recycle old clothing. “For us, the goal is to continue to grow and create the best offering for our customers, to be an attractive employer of committed employees, create new jobs and contribute to positive development in society.” It is evident H&M is providing plenty of reasons - outside of its gorgeous clothing lines and in vogue homewares – why today’s socially and environmentally conscious consumer should embrace the retail icon. H&M Charlestown will open its doors at Charlestown Square at 10 am on July 14. The H&M “pre-party” will start at 8 am with giveaways, coffee and live music to entertain those first in line while they wait for the chance to snap up a range of exclusive opening offers, which will be available in-store for a limited time.■
SUSTAINABLE FASHION WORDS: DI VON ESSEN The future success of any company today, including H&M, depends on long-term sustainability work and responsible processes and without a doubt, the focus of all H&M activities is on sustainability. Head of Sustainability, Anna Gedda, is part of the executive management team and reports directly to the H&M CEO. She holds the responsibility for the implementation of sustainability together with the top management team. In total, around 200 employees are working with sustainability as their core task. There’s been talk that the industry will need to rethink its whole business structure to truly be sustainable. When asked about this Anna agree’s whole-heartedly. “I think that’s very much at the core of our sustainability work and we actually just now set a new vision to become 100% circular – so only using recycled and sustainably sourced materials. We definitely agree with that, and we think if we want to exist in the next 30 or 50 years, we need to make sure we use resources responsibly and meet the consumer’s needs that are only increasing. For us, we can’t do more than agree with that notion. “We’ve actually been working towards closing the loop in fashion for quite some time. We have a garment collection scheme – you know you can go to each store and hand in your clothes. We have also made closed loop products for the past couple of years, and we also have the H&M Foundation, which set up one of the world’s largest innovation challenges for closing the loop for fashion. Studies show that roughly one-third of people are not getting enough sleep, and many suffer from insomnia (difficulty getting off to sleep and staying asleep) and other sleep disorders. Yet sleep is crucial to our physical and mental health. Even though the body rests during sleep, the brain is incredibly active. The brain uses the body’s off-peak time to take care of a range of vital functions, including cell repair, brain detox and immune system maintenance.
STRESS, SLEEP AND WELLBEING WORDS ANNE WARD With the arrival of the cold and flu season, many people find themselves in need of more rest. For others, a sense of overload and fatigue from busy work and personal lives marks the halfway point of the year. However, at a time when we need rest, sleep can be elusive, often due to stress. Impact of Stress Prolonged stress can have a negative impact on a person’s physical and mental well-being, affecting the immune system, mental clarity and emotional stability. If left unchecked, the “wear and tear” can lead to more serious effects – including hypertension, metabolic disturbances, anxiety and depression. Stress can cause irritability, impacting relationships at home and at work. In this way, stress can be contagious as others pick up on our negative emotions. Since stress is a fact of life, it is worth paying attention to a few basic principles, to provide a buffer against its potentially harmful effects.
According to the National Sleep Foundation, school-aged children need from 9-11 hours of sleep per night, teenagers need 8-10 hours and adults need an average of 8 hours. Any sleep loss (even up to 1 hour) accumulates into a sleep debt that must be repaid. Insufficient sleep has been linked to obesity and other health issues. Taking a look at some of the functions of sleep can help us to understand why we should pay more attention to it. During sleep, a process called memory consolidation takes place, whereby new information, such as learning, is transferred into long-term memory, to enable it to be recalled as needed. In other words, memories, and therefore new skills, are enhanced during sleep. Being able to recall information is fundamental to performance at school and work. Loss of sleep impairs our ability to focus, to think clearly and to balance our mood. Studies have also shown that when you are sleep-deprived, you form more memories of negative events in your life than positive ones, leaving you with a potentially biased memory for past events. People suffering from depression tend to remember more negative events than positive ones, often leaving them with a sense of failure and regret. There is a strong link between sleep disturbance and mental illness, including anxiety and depression.
Good Sleep Habits Maintaining good sleep hygiene can make a huge difference to the quality of your sleep and overall well-being: •Maintain regular sleep and wake times in line with typical night and daylight hours. This includes rising at the same time each day. •Keep your sleep environment technology-free – no electronic devices. •Keep your bedroom dark, quiet and comfortable. •Avoid mental stimulation (especially from electronic devices) before sleep. •Avoid alcohol and stimulants such as caffeine and nicotine. Although alcohol may induce sleepiness, it causes sleep disruption such as early-morning waking. Managing Worry There are times, even with the best of sleep habits, when sleep can be elusive as we experience challenges and difficulties that play on our mind. Worrying is like being on a mental roundabout where you can’t find the exit. Worrying in bed also creates a negative cue whereby when our head hits the pillow it signals the mind to become active. A strategy to interrupt this cue is to replace worry thoughts with more neutral thoughts, more conducive to sleep. For example, allowing your thoughts to become absorbed in the warmth and comfort of your bed can help your mind to quieten. Relaxing physically can also help your mind orient to sleep. What to do with Apple Cider Vinegar More than just a fancy salad dressing, apple cider vinegar (ACV) is everyone’s favourite health tonic. Made from apple juice, it is fermented twice. The first fermentation produces a hard apple cider and the second creates a cider vinegar. The longer fermentation process creates a rich bioactive vinegar which provides antioxidant and antimicrobial benefits. The thick accumulation of yeasts and acetic acid bacteria form ‘The Mother’. Sounds scary, however, ‘The Mother’ contains proteins, enzymes and friendly bacteria which gives the ACV its murky appearance but which provides the most benefits.
What can you do with ACV? •Add a dessert spoon of ACV to filtered water for a prebreakfast health tonic •Add ½ tsp of ACV to 1 cup of cold water and use after shampooing to give you lustrous hair. Can be used several times a week. •Dilute 1 part ACV with 2 parts filtered water. Dab over the face with an organic cotton ball or pad for a natural skin toner. Use after cleansing and before applying your moisturiser. •Add 1 cup to a bath and soak for 10 mins to soothe sunburnt skin. •Add equal parts ACV to filtered water in a bottle. Shake. BRIAN’S STORY My name is Brian Randall and 16 months ago I weighed 188kgs. Fast forward to now and I am proud to say that I weigh in at 99kgs. On August 11 2014, I signed up with Planet Fitness with the goal to change myself for the better. I was in a rut and was eating myself to death. I was depressed and felt alone even though I constantly had people around me. I walked into the gym for the first of what turned out to be 108 continuous days of exercise. An incredibly big influence in my journey was Ben Larner (Planet’s in-club Exercise Physiologist). I partnered with him by chance and I have never been so lucky. I am blessed to have picked this gym to walk into, because the payoff is incredible. They are supportive, kind, caring and interested in your goals. They are there to offer advice and provide you with some alternatives to your workouts. On December 6, 2015, I stood on the scales and for the first time in 13 years I weighed in under 100kgs. Almost 16 months since I started my journey into fitness and selfrepair I had achieved my goal!

Nowadays chefs have become increasingly popular, and being a successful chef no longer means just spending endless hours in the kitchen, staying at the hot stove and commanding an army of attentive staff. The birth of reality TV and modern cooking programs has elevated our profession in the eyes of the general public. Experience, drive and a great sense of flavour balance are also necessary. What makes a good chef the best in the world? There’s a lot of speculation around this topic. June saw the World Top 50 Restaurants announced with an establishment in Italy taking out the number one spot for resident chef and owner Massimo Bottura.

As a chef, I’ve been cooking in the kitchens of the world, both here and overseas, for more than 40 years and as I’ve grown up in this heated environment, the questions I am continually asked about my profession are these: What is a good chef? Well, it’s not always the best cook who makes the best chef. Everyone can cook, but not everyone can become a chef. A chef is a highly trained and skilled professional cook, proficient in all aspects of food preparation in a particular cuisine style. The word "chef" is derived (and shortened from) the term “chef de cuisine”, the director or head of a kitchen. Chefs may receive both formal training from an institution, as well as apprenticeships with an experienced chef and kitchen brigade. In English, the title "chef" in the culinary profession, originated in the haute cuisine of the 19th century. The culinary arts are a great profession and very popular today. There are different terms of use for the word “chef” in their title that deal with specific areas of food preparation in a modern kitchen. The word sous-chef, for example, is the second-in-command in a kitchen. Or, the chef de partie, who handles a specific section of production.. sauces, vegetables, fish or cold kitchen. The brigade system, used in many larger international kitchens around the world, is a system of hierarchy found in restaurants and hotels employing extensive staff numbers, many of which use the word chef in their titles. Underneath the chefs are the kitchen assistants.

What is so appealing about Indian cuisine is that each region of India has its own style of cooking and distinct flavours. The North is known for its tandoori and korma dishes; the South is famous for hot and spicy foods; the East for its chilli curries and the West for its use of coconut and seafood, whereas the Central part of India is a blend of all Indian cuisine types.
Greatness is, therefore, elusive, and it has blessed those chefs that had more than whimsy and skills. It blessed those chefs that were able to make food “entertainment” and passion, beyond the ephemeral experience of food, gaining industry and customer recognition. Newcastle and the Hunter region have a great variety of cuisine, competent chefs and restaurants at all levels.

THE PERSIAN PLACE! A Dining Review
The Persian Place is everything you can expect from a Middle Eastern restaurant as you are warmly greeted and shown to your table. Located on the corner of Bolton and King streets and owned by Babak Abbaszadeh and his wife, The Persian Place sits proudly as the only Persian or Middle Eastern cafe or restaurant in Newcastle. The space is warm and loaded with atmosphere, gold-stitched tablecloths, intricate paintings, cushions galore and Persian rugs covering every inch of floor-space and of course pleasant sweet aromas of Persian cuisine.

Diners can choose from the Sharing Mazzeh menu with a choice of large and small dishes or the Sharing Banquet menu, which is perfect for larger groups and very reasonable at $38 per person. As with all Mazzeh style dining, the dishes are designed to be shared and eaten slowly to stimulate conversation. This is true Middle Eastern style dining!
The Meygoo was equally as impressive and consisted of fried prawns in tamarind – chilli sauce with saffron cauliflower and a presence of garlic. These were big generously sized prawns and just delicious with a hint of smokiness that was perfectly offset by the tangy tamarind sauce. There's a hint of chilli, plenty of onion and the parsley added a lovely freshness to the meal.
The menu is full of delicious earthy and classic Iranian flavours, with herbs, rich meats and sauces, vegetables such as eggplant and potatoes and a definite presence of saffron throughout. There is something for everyone and ideal for people who have dietary requirements with the menu being almost entirely gluten free.
As Babak will explain, Persian food is all about the spice – not necessarily the hot variety, but instead the aromatic type with a long list subtly flavouring each dish.
Being a group of seven, we chose from the banquet menu which allowed us to mix and match our dishes to form our own banquet.
Of course, no Persian meal would be complete without a Persian tea or coffee, and here the authentic Persian coffee has a flavour not to be missed.
There is plenty to like about The Persian Place. The dishes are sizeable and well matched for those with relatively healthy appetites. This was a truly delicious dish that left us all licking our fingers and wanting more. For our next two courses, we decide on the menu favourites Goat Kofteh and Meygoo. Both dishes arrive at the same time and are wonderfully presented. The Goat Kofteh or goat meatballs are served with baby carrot ragout and saffron rice. Unlike many other meat dishes, this dish has a truly distinct flavour – which is not as strong as lamb, but still juicy and succulent with a delicious sauce and served in a big earthenware bowl. This dish got a big thumbs up from us all.

The menu at Oishii is a combination of two Asian cultures Thai and Japanese and includes traditional Thai favourites such as Thai fish cakes, stir-fried vegetables, chicken cashew nuts, green curry chicken and other fragrant Thai curries right through to Japanese dishes that include assorted sushi and sashimi selections, teppanyaki and teriyaki. There are also a variety of vegetarian dishes. We decided on the chicken satay and assorted sushi and nori rolls for the entree as well as the miso soup, which proved to be a perfect accompaniment to the Japanese dishes.
A Taste of Japan and Thailand Amongst the Vines Oishii Restaurant is one of few Hunter Valley restaurants that are open 7 days a week, so we decided to take up the opportunity to have dinner at this popular restaurant in the middle of the week and were surprised to see just how busy this charming family owned and operated restaurant was. Dining at Oishii is like few other restaurant experiences and it is easy to understand why Oishii has become a highly recommended and favourite dining destination amongst locals and visitors. Located within the Roche Estate Complex in Pokolbin and overlooking the architecturally designed amphitheatre and vines, Oishii provides a conveniently located, relaxed and affordable dining alternative with dishes designed to please every palate.
We then made a selection of three Thai dishes all served with steamed rice for main courses. The first included the yellow lamb curry which was selected from the specials board. This dish was superbly presented, and the lamb deliciously tender with just a hint of ginger and crushed garlic. We followed this with the sweet and sour chicken - looking colourful and healthy, was served with cucumber, tomatoes and shiitake mushrooms and with a tangy and incredibly delicious sweet and sour sauce. Our last dish was our favourite and a very traditional Thai meal - the Panang duck curry and as I later discovered a very popular dish amongst Oishii's patrons. It came served with juicy and generous slices of skinless duck sitting within a deep-flavoured Panang curry sauce and after the first taste, it was easy to see why this dish was such a favourite... Absolutely delicious and left us wanting more. The dishes are perfect for sharing and ideal for families or groups of friends. The setting is minimalist and with a Thai-themed dining room. Diners also have the option of dining outside on the terrace overlooking the vines - a perfect setting for those warmer days and evenings. Oishii offers a real alternative for dining in the Hunter Valley and is a “must” dining experience.

It is one of the most loved food products in the world and most of us probably feel we know chocolate pretty well since it is such a regular part of our lives. However, there are many fascinating facts about the world of chocolate that most do not know. The earliest record of chocolate was over fifteen hundred years ago in the Central
The first chocolate factories opened in Spain, where the dried fermented beans brought back by the Spanish fleets were roasted and ground. By the 17th century chocolate was a fashionable drink throughout Europe and chocolate powder from which the drink was made, was being exported to other parts of Europe. By this time chocolate was also believed to have nutritious, medicinal and even aphrodisiac properties, but it remained a privilege of the wealthy until it was mass produced in the late 1700s. The creation of the first modern chocolate bar is credited to Joseph Fry, who in 1847 discovered that he could make a mouldable chocolate paste by adding melted cacao butter back into Dutch cocoa. By 1868, a small company called Cadbury was marketing boxes of chocolate candies in England. Milk chocolate hit the market a few years later, pioneered by Nestle. Today, chocolate is an $83 billion a year business with Europeans accounting for nearly half of all the chocolate consumed in the world. Design Centre Hunter Graduate Exhibition Showcases Creative Talents The graphic and interior design students studying at Hunter TAFE’s Design Centre recently curated a stunning set of works for their graduating exhibition in June. The joint exhibitions entitled Crystallize (Graphic Design) and On the Wall – Voyeur (Interior Design) highlighted the varied and unique suite of skills developed by the graduates. Opening on Wednesday 8 June, it was the first exhibition to activate the new Design Centre gallery space at Hunter TAFE’s Newcastle Campus in Tighes Hill. Hunter TAFE Design Head Teacher, Anna Bleakley said the exhibition was the culmination of up to 18 months of study and offers an opportunity for students to showcase their designs as they embark on their careers in the design industry. “Hunter TAFE’s Design Centre offers a collaborative design program that brings together 14 different disciplines. Voyeur explores the various modes of viewing, and dissemination of interior design both past and present. The viewer is subtly manipulated to engage with the exhibition and become part of the seeing and the seen. Located at Hunter TAFE’s Newcastle Campus, Design Centre Hunter is a connected, collaborative hub that inspires and supports students, teachers and industry in design related disciplines to work together in new and innovative ways. INTOUCH FAMILY AND COMMUNITY The following year I saw my first televised concert. Curled up on the lounge, in my flannel PJs, I was glued to the screen as Culture Club performed live from Sydney. I know that happens all the time now but in 1984 it was a rare occurrence. It's not something I could articulate at the time, but Boy George was special. He was outspoken, smart, funny and “himself” in a time when that wasn't always applauded. While other people saw stage make-up, I saw warrior paint. I adored him. I vividly remember saying to my mum that I would still love Boy George 20 years from now and that no one would even remember who the Beatles were. I have always had what could be considered an eclectic taste in music. Thanks to my mum's extensive vinyl collection, most of my favourite songs while I was growing up were released before I was born but, like my peers, my formative music years feel firmly anchored in the late 70s and 80s. Bouncing from disco to pop and the occasional slide into… well, Guns and Roses.
Less than 24 hours later I was downloading the photo we had taken together and the news broke about Orlando. As the horror unfolded, the tributes poured in, including the LGBT rainbow colours lighting up the Sydney Harbour Bridge. I wondered how even the most conservative side of our political scale could be so forward thinking when it comes to our guns laws and so far behind public opinion when it comes to gay rights.
