inter weather means curling up with a cup of hot cocoa, enjoying a good book and a toasty fire. It also means bundling up before going outside. The task isn’t my favorite, but it is easier with items like the arm warmers (1) shown on our cover this month and modeled by Hollie Hilliard, our Invitation Oxford office manager. They were handmade with fibers shorn from the llamas living at Magnolia Knoll Llama Farm in New Albany. Learn more about the farm, the animals and the couple raising them on page 48. This season is also about traditions, which is the reason Kimme Hargrove, our food blogger, started hosting an annual holiday party for her two young children and their friends. She loves watching the small guests indulge on sweets before Santa Claus drops by for a visit (3). Read more about her party on page 32. Another heartwarming tradition is the handmade Christmas cards that Oxford resident Carol Livingston makes for everyone on her mailing list. It’s something she’s been doing for 27 years, and it’s what marks the beginning of the holiday season for her. And what would the holidays be without food? In the South, we look forward to pecan season, an important time for Justin Whitaker and his family. They are the owners of an orchard near Batesville, and they devote many days to the upkeep and harvesting of their pecan crop (2). He shares their easy recipe for roasted pecans on page 57. K
imme Hargrove has a strict dietary restriction at her annual Santa party – only sweets are served. Her dessert-only menu is a big hit with her small guests, 25 children who can’t wait to get their hands sticky from marshmallow lollipops and frosted strawberries made to look like Santa hats. But the fun doesn’t stop there. When the sugar buzz kicks in, Santa Claus stops by for a visit.

“The kids go wild when that doorbell rings,” said Hargrove, who lives in Greenwood, Miss., and is the Invitation Oxford food blogger. “They can’t wait to tell Santa what they want for Christmas.” Another favorite activity for the children is assem bling treats for Santa’s reindeer. Nutter Butter cookies Almond bark Mini pretzel twists Plain M&Ms Melt almond bark in the microwave in 1-minute increments, stirring in between, until fully melted. Spoon melted bark onto the top of the cookie, and gently press a pretzel in place for the antlers. Do the same for the eyes and nose using M&Ms. Dry on wax paper before serving.

LLAMAS aren’t usually the first animals that come to mind when thinking about lovable family pets, but Nathan and Sandy Shaddinger are trying to change that. The Shaddingers (left) are the owners of Magnolia Knoll Llama Farm in New Albany, Miss., where their 19 gentle giants are as much a part of their family as a dog or cat might be. The couple opened Magnolia Knoll seven years ago when they moved their herd from Washington state to be near family, but their love for llamas began in 1990 on 10 acres of land. It was Sandy who was first drawn to the animal. It took her a year to convince her husband to agree to buy their first two llamas. “There was a llama farm near our house [in Washington] that she used to get me to slow down every time we drove past so she could look at them,” Nathan said. “One day, I stopped. I think we both fell in love again that day.” The pair spent much of the next decade acquiring new llamas to breed and show, helping make the South American species more plentiful and revered along the West Coast. The new livestock owners admired the breed’s unexpected and catlike qualities: curious, aloof and full of individual quirks that give each animal personality. Sandy took great care with their coats, using the same creme-rinse on the llamas that she uses on her own hair, and coiffing them into prize winners. Her animals became regulars at competitions (similar to horse shows) and on parade routes. Nathan discovered the animals’ functional abilities for carrying large amounts of gear while hiking on Mount Rainier and Mount Saint Helens with his pack llama, Soldier. was surprised no one would come close to his llamas for fear of being spit on. Knowing llamas only spit when they feel threatened, he aimed to disprove the misconception by offering $100 to anyone who actually got spit on. It also bothered Sandy that people were afraid of her beloved llamas. “It’s funny looking back, but when we got here that’s what had to be done to not have a 5-foot ring surrounding us that no one would step into,” Sandy said. “People really believed if they got near, these animals would do something to hurt them. What’s sad is these are some of the gentlest creatures I’ve seen.” The Shaddingers don’t participate in competitive shows anymore, but that doesn’t mean their llamas aren’t earning their keep. The herd trims the grass on all 22 acres of Magnolia Knoll, to the point that Nathan has to mow only once a season. Even their 12-year-old

blind llama, Lilly, takes care of weeding along the fence lines. Sandy, a certified master gardener, fertilizes her flower beds with llama waste. She also sells the wool from the llamas’ annual shearing to nearby arts-and-crafts stores. “My customers love getting llama fiber from them because they take such meticulous care of their animals,” said Lynne Tubb, owner of Yarns and More in West Point, Miss. “I call Sandy the Llama’s Mama. The fibers she sends me are named the same name as her animals.” The couple’s love of llamas even extends into their social life. Every year they participate in group camping events with other llama enthusiasts. When they’re not working in the barn, Nathan and Sandy visit area events with their woolly friends, showing members of the community what llamas are

really like. Their educational travels take them to local schools and festivals such as the annual Fiber Arts Festival in Oxford, Miss., taking place this coming year from Jan. 30Feb. 1. The Shaddingers and one member of their herd even ventured inside a public library for a children’s program last summer. “We’ll go anywhere they invite us. That’s our job,” Nathan said. “Llamas are such a rarity here, and the best way for people to realize their assumptions about them might be wrong is to be around them. Therapy llamas visit people in schools, nursing homes, rehab centers and other facilities to encourage well-being through their calming presence. C.M. (short for Critical Mass), the Shaddingers’ 13-year-old appaloosa, has been an unofficial therapy llama since he was 2. The couple hopes to have him certified as an assisted therapy pet through the national organization Pet Partners. “It’s a time-consuming process, but it’s a real possibility now,” Sandy Shaddinger said. “C.M. has such an effect on people, and he’s always been the one we can take anywhere and count on to be cool, calm and collected.”

JUSTIN WHITAKER NEVER INTENDED TO GO INTO THE PECAN BUSINESS. But after eyeing an overgrown pecan orchard near Batesville, Miss., the Mississippi native felt compelled to save the crop. “I found this orchard that had been let go, like many I’ve seen in the Delta,” Whitaker (left) said. “I figured I’ve got all the equipment and manpower to clean them up, so I took the orchard over with a three-year plan for longterm production.” The equipment came from Whitaker’s business, Whitaker Services and Construction, which he launched in September 2013.
Since then, he has provided a wide range of services in land and forestry management across north Mississippi. He started his own company after receiving a business degree from Delta State University and a mechanical engineering degree from the University of Mississippi, opting for a career that wouldn’t get him stuck in an office every day. “I wanted to be outdoors,” Whitaker said. “My parents let me use some heavy equipment from their company, Whitaker Energy, until I was able to branch out on my own.” Whitaker now manages the 50-acre orchard, a year-round commitment involving

his entire family. “The kids love being out here,” Whitaker said. “Harvest season runs October through November, but it’s year-round work. The trees are always dropping limbs, so we have to maintain the acreage and keep it clean until harvest.” Whitaker credits his wife, Jennifer, with improving his pecans. “She makes the best roasted pecans I’ve ever tasted,” he said. “I could eat a 5-gallon bucket of those things.” Jennifer said the recipe has been in her family for many years. “My aunt put together a recipe book for my wedding gift,” she said. “She had members from our families submit favorite recipes, and the roasted pecan recipe was from my grandmother.” Now, thanks to Jennifer’s willingness to share, others across Mississippi can enjoy the Whitaker family’s roasted pecans.
Whitaker Roasted Pecans 1 egg white 1 Tablespoon water 1 cup white sugar 3/4 teaspoon salt 1/2 teaspoon ground cinnamon 1 pound Whitaker pecans Preheat oven to 250°F. Grease a baking sheet or use a silicone baking mat. In a mixing bowl, whip together the egg white and water until frothy. In separate bowl, mix together sugar, salt and cinnamon. Add pecans to egg white mixture; stir to coat the nuts evenly. Remove the nuts and toss them in the sugar mixture until coated. Spread the nuts on the prepared baking sheet. Bake for 1 hour, stirring every 15 minutes. Store in an airtight container. Individuals can order 5-pound or 10-pound sacks of Whitaker Pecans. Livingston walks past the Hallmark aisle when it’s time to select her Christmas cards. The preprinted variety doesn’t interest her – she has something else in mind. She heads toward the arts-and-crafts section and selects the watercolor paper, ribbon, glitter and paint that will become her annual holiday art project. For the past 27 years, Livingston has handcrafted and sent Christmas cards to her friends and family. An education professor at the University of Mississippi, she spends the week of her Thanksgiving break assembling more than 100 cards, transforming her Oxford home into Santa’s workshop. “Some folks decorate their house during that time, but I set it aside to paint my Christmas cards,” Livingston said. “It’s a fun undertaking, and it’s almost like being back in grammar school. Glitter, paint, scissors and glue are all spread out all over the place. It’s fun!”
The tradition began in 1988, when Livingston’s first daughter, who wasn’t due until February, arrived early on Christmas Day. The lastminute changes to Leah’s birth – Carol announcements included a holiday theme, and Livingston enjoyed the artistic process. The following year, she decided to handmake all of her cards again, and she hasn’t missed a year since. “I do this because it’s more than just sending out a card. It’s like sending everyone a little gift,” Livingston said. “I can’t not do it now. People really enjoy them.” Such a commitment is not the work of a procrastinator. Livingston keeps a running list, jotting down holiday inspiration all year long. It can be difficult to come up with fresh concepts, so she keeps a keen eye out long before the holiday season arrives. When Thanksgiving comes, she’s ready. Once she has decided on a design, collected the materials and created a template, she sets up her assembly line. The open concept of her house helps make the process a little easier. Flowing through her living room, kitchen and dining room are different stations: pa-
per cutter, hole punch, sponge paint, and so on for efficiency. While the paint dries on some cards, Livingston ties ribbons on the others. Her loved ones say they Livingston appreciate her dedication and attention to detail. Her mailing list rarely changes, and most people who receive her cards have been getting them from the very beginning, including her friend Debbie Leach of Gadsden, Ala. “We began sending Christmas cards to each other about the time our first children were born,” Leach said. “Mine ‘starred’ my kids, but Carol’s were really unique. Even though her sweet girls were often featured, the real star was Carol’s artwork. Every year was different; some simple and others more elaborate, but all imaginative and creative.” Leach eagerly awaits receiving Livingston’s card each year. “It always sits at the top of the card wreath I hang on the wall as part of our Christmas decorations and is carefully saved when it’s time for them to come down,” Leach said. “I can’t wait to see the masterpiece she makes this year.”

Putting Down Roots The Carrothers family received the ultimate Christmas gift when they moved into their first home with assistance from Oxford-Lafayette Habitat for Humanity. by Melanie Crownover

WHEN NAKIA CARROTHERS and her family moved into their new house in November 2013, there were boxes to unpack and memories to make. She and her children found the perfect place for their stockings, and they hung garlands and decorations they’d picked out together. They had fun making homemade Christmas candy in the kitchen, and they finally felt at home. But perhaps the best new tradition was inviting their extended family over for Christmas dinner. “My mom is still the queen of Thanksgiving, until I can get making cornbread dressing down to a science, but Christmas at the house is ours now,” Carrothers said. “There are no words to express how that feels.” Carrothers’ new house, located in the Brittany Woods subdivision, was built by Oxford-Lafayette Habitat for Humanity volunteers. It was the new start that Carrothers, a hospital admissions representative, had hoped for since moving from a Memphis, Tenn., apartment to her mother’s Oxford home eight years ago. “I know we could have stayed there forever, no problem,” she said. “But there was just something in me that needed a space of our own for the children to grow up in. I just didn’t know how I would make it happen.” Getting to that long-awaited goal took patience, determination and a lot of hard work. Despite popular beliefs, a Habitat for Humanity house is not free. “That is a major misconception about what we do,” Don Cole, the Oxford-Lafayette Habitat for Humanity chapter president, said. “We help people who might not ordinarily be able to jump into home ownership alone by using volunteer power to build the house and getting them a 30-year mortgage with no interest to help on their costs. It is not a free ride.” Recipients are likewise responsible for finding their own plot of land for their house or choosing a Habitat parcel. Whichever method they choose, the cost of the land becomes part of the mortgage. It’s not easy to qualify for a Habitat house, either. Carrothers applied for Habitat assistance almost three years before she moved into her home. Potential homeowners must prove not only that they have the need for Habitat’s services but also that they’re financially able to handle payments after the build is done. Those who pass the test are put on the waiting list for a home. “I’ve worked all my life to make sure I had good credit, but this was a smarter investment for me as a single mother,” Carrothers said. “Now 100 percent of my payment goes toward the principal on my loan, and I can use what would have been paid on interest to save for my kids to go to college.” In addition to the organization’s strict candidate qualifications and the mortgage payments, there is a requisite amount of sweat equity. Like all Habitat house recipients, Carrothers put in 500 hours of labor to help build her house. She and her children visited the site every weekend to do their part, and family, friends and other volunteers helped, too. “I got to know their family pretty well because I was out there almost every Saturday,” Sharon Schreiber, a longtime Habitat volunteer, said. “I love doing construction with the organization anyway, but one of the most rewarding things about it is getting to work with the people you’re actually out there building for. When it’s all done, there’s this even bigger sense of pride that such a wonderful family is getting to live there.” The Carrothers home was the 13th house the local Habitat for Humanity chapter has built. The day after Carrothers’ house was finished, members of the organization began planning for the next house on their list. The 14th Oxford Habitat house is currently under construction, also in Brittany Woods. “I can tell you, you appreciate so much more in life when you see how some people will help you with no agenda of their own,” Carrothers said. “It magnifies the gratitude you normally have at the holidays like you wouldn’t believe.”

n Natchitoches, La. (pronounced “Nack-a-tish”), the Bayou State’s oldest city lights up the banks of Cane River Lake like a Christmas tree. From Nov. 22 to Jan. 6, the Festival of Lights is in full swing. “This is one of the oldest holiday festivals in the nation. It’s as old as the Macy’s Thanksgiving Day Parade,” Arlene Gould, Convention and Visitors’ Bureau executive director, said. “When you see 300,000 twinkling lights and 100 set pieces lighting up that water, you can’t help but be in the spirit.” The 2014 Festival of Lights features the 88th-annual Christmas Festival and includes a fireworks display on Saturday nights, a Christmas parade, the crowning of Miss Merry Christmas, a Santa Claus house for children, musical entertainment, a tour of homes and family activities every weekend. The city even hosts a family-friendly New Year’s Eve celebration at 7 p.m. to cater to those too young to watch the ball drop at midnight. In addition to the festival, travelers can find many reasons to visit Natchitoches year-round. The city, the oldest town in the Louisiana Pur-

chase, celebrates its tricentennial this year, and it is in prime form. Children will enjoy the alligator park and nature preserve (open in the spring), as well as Kisatchie National Forest. f you can’t afford a winter trip to Europe to explore the Alps this year, try booking an escape to nearby Helen, Ga., instead. This area, steeped in the history of the Cherokee and the gold rush, got a makeover in the 1960s, when the townspeople transformed their home into an Alpine village complete with cobblestone sidewalks and storefronts decorated as period German cottages. The quaint town is now one of the top tourist destinations in the state. “The hiking trails, waterfalls and wineries are a few of the main reasons people come back here, besides Oktoberfest,” said Tracie Howell, media relations representative from the Helen-White County Convention and Visitors Bureau. “That 2-mile-long village makes it easy to walk anywhere, and people love the historic mountain feel. Take the children for a ride through Helen with the Alpine Carriage Company, and stop off at the Black Forest Bear Park and Reptile Exhibit – home to several bear species, including the Syrian brown, Himalayan and grizzly. Visit the Babyland General Hospital to watch a Cabbage Patch Kid being “born,” or examine the 400 feet of track that make up the lifelike Alpine model railroad at Charlemagne’s Kingdom. Visitors who long for a taste of the authentic Rhineland can find schnitzel, bratwurst and beer at the six German restaurants in town, including Bodensee and Hofbrauhaus Restaurant and G.I. Germany Pub. There is also a variety of non-German fare in the area. When it comes to staying in Helen, securing a cabin with one of the dozens of rental companies in the area is the most popular choice. TAKE A TRAIN TO THE NORTH POLE
hat child doesn’t dream of seeing Santa Claus at the North Pole? It’s an easy trip aboard the Tennessee Valley Railroad Museum’s North Pole Limited in Chattanooga, Tenn., which has been bringing passengers to see Santa for the past 15 years. During the hourlong train ride, full of singing and storytelling, the cars pass through a tunnel to the North Pole, where Santa climbs aboard to spend time with the riders. Passengers with standard $24 tickets, who fill the majority of the train cars, spend a few minutes talking with Santa and posing for a

picture before settling in for chocolate milk and packaged cookies. Those who opt for the $48 ticket for Santa’s private car get a more intimate setting and leisurely visit with him, as well as hot chocolate and freshly baked cookies. Families can pair a train trip with a stay at the historic Chattanooga Choo Choo hotel, built as a railroad terminal in 1908. In addition to the North Pole Limited package, other holiday deals include an elf workshop, elf tuck-in service or story time with the elves. Packages can also include tickets to local attractions such as Rock City’s seasonal Enchanted Garden of
Lights and the Model Railroad Museum. In addition to the Chattanooga Choo Choo’s many restaurants, such as Station House or Dinner in the Diner, other hometown favorites are Sticky Fingers Barbecue, Riverside Catfish House, local dive Nikki’s Drive Inn restaurant and the community table service at Bea’s Restaurant. The train station is not far from Hamilton Place Mall, the largest in Tennessee. Children love the nationally recognized Creative Discovery Museum, the Coolidge Park Antique Carousel, the Tennessee Aquarium and the Chattanooga Zoo. There are also several family-
friendly natural excursions nearby, from Ruby Falls, a waterfall inside Lookout Mountain, to Cumberland Caverns and the country’s largest underground lake at The Lost Sea. The North Pole Limited runs from late November to Dec. 22, with two or three departures at 3:45 p.m., 5:45 p.m. and 7:30 p.m. Private car seats and earlier departures sell out quickly, but tickets are still available. Cloudmont Ski and Golf Resort in Mentone, Ala., a family-run resort with two ski slopes, is perfect for beginner to intermediate skiers. The owners wait for temperatures to dip below 28 degrees to blast the 1,000-foot-long descents with man-made snow. “It takes us 15 hours of making snow to be ready to open,” Cloudmont manager Janis Jones Carrier said. “The conditions have to be just right for us to get a good base layered, so it’s best to call a couple of weeks ahead when booking to make sure the slopes should be ready. We

can’t guarantee the weather will cooperate.” The resort offers lodging, from intimate chalets to cabins that sleep up to 24 people. Patrons get free skiing lessons from instructors who learned on Cloudmont snow, and Jones Carrier recommends visitors bring a toboggan, sunglasses or goggles, waterproof gloves and warm clothes, including a waterproof outer layer. Martin Luther King weekend is the busiest time at the resort, she said. Cloudmont also has a golf course and offers horseback riding at its own dude ranch. Nearby Little River Canyon National Preserve and Desoto Falls are ideal for winter hikes, and the Log Cabin Craft Village offers shopping.

VISIT A WINTER WONDERLAND IN FLORIDA
lorida may not be the first place that comes to mind when thinking about winter fun, but Pensacola Winterfest proves that snow isn’t necessary to celebrate the season. Just a stone’s throw from the waves and sand, downtown Pensacola is transformed into a winter wonderland from Nov. 28 to Dec. 24. The festival began as a neighborhood Christmas party a decade ago, and now thousands of people flock to Florida each year to participate. An hourlong trolley ride takes visitors on a scenic tour of live, pop-culture Christmas performances featuring scenes from the big screen and the pages of bestselling books. Journey with Scrooge to pick up his ghostly friends, let Cajun Santa and his alligator team recite poems from Cajun Night Before Christmas, and travel to the Island of Misfit Toys with Rudolph and Clarice. Even Elvis and his poodle skirtwearing skaters make an appearance. Each trolley stop offers a different performance. “The results are magical. It’s like stepping into another world for a night and being part of a full-scale production on the street,” Winterfest board President Denise Daughtry said. The ride culminates with Mrs. Claus leading passengers to visit with Santa and participate in the Reindeer Games – a place where it’s not naughty to throw snowballs at the Grinch and play in the (machine-made) snowdrifts. Children can sing Frozen’s Let It Go with Elsa, dance with reindeer and visit the Snow Queen Café for a cup of cocoa. Half-hour tours on Santa’s Holiday Express, featuring a visit with the big man in red, are also available weeknights and deemed more appropriate for children ages 5 and younger. The live performances occur on weekends only. Tickets for the trolleys sell out quickly, but visitors can still enjoy the Reindeer Games if no seats are available. And, of course, there is always the beach and other Pensacola sites, such as the local lighthouse, the National Naval Aviation Museum and historic Fort Barrancas, to add to the itinerary if you need a break from the holiday cheer. After the barrel has been hand-cut and laser-etched with the customer’s specified logo, it’s shipped to Ford, who takes special care in assembling the calls, fitting the insert inside the barrel and positioning two reeds for optimal tone and pitch. Ford takes his time getting the lengths of the reeds just right and individually tests each call before shipping it to the customer. This process is important to him. “The most fun and interesting part about duck hunting to me is all about the duck call,” he said. “There’s something very satisfying to have ducks staked high in the sky and after you start talking to them, they’re suddenly 15-20 yards in front of you.” Y’all Duck Calls offers several options of calls. Customers can select a wood or plastic

barrel and choose their preferred collegiate or professional sports team logo, which comes with a color-coordinating insert, and they have the option of purchasing a durable four-strand braided lanyard that holds up to four calls at one time. Keeping their business local is also important to Ford and Wade. The calls are manufactured in Mississippi. Ford grew up in Amory, Miss., and lives in Jackson, Miss., and Wade lives in Oxford. They are both graduates of the University of Mississippi and met when Wade began to date Ford’s sister. Besides being made of native woods, including bodock, ash and maple, the inserts are produced in Jackson and the lanyards in Byhalia, Miss. With business booming in the region,

the pair says the next step is to sell Y’all Duck Calls nationwide. The goal is to have their calls available at Walmart, Cabela’s and Dick’s Sporting Goods stores around the country. As of now, their calls work at all ranges, but with this expansion, they hope to produce a wider selection of more specialized calls, specific for different duck breeds and varying distances. “The entrepreneurial spirit is really spreading in Mississippi,” Wade said. “To build local companies with a national presence is important. Y’all Duck Calls have the ability to give hunters what they want and need, and we’re excited about that.” Y’all Duck Calls are sold at Hunters’ Hollow in Oxford and on yallduckcalls.com. D
avid McDowell, a University of Mississippi alumnus, created and curates the Twitter account @BeingOxford. Each week it features a new guest user, who is given the account password and tweets about what it’s like to be an Oxford resident from his or her perspective. Invitation Oxford staff members will tweet as @BeingOxford Dec. 1-7.
Q: How did you get the idea for @BeingOxford? A: The country of Sweden actually started the idea with @Sweden. It’s now become a trend known as location curation. A lot of places do it now, but I created @BeingOxford in June or July 2013. I think mine was one of the earliest ones.
Q: What was your goal in creating the account? A: I wanted this to truly be a new look at Oxford every week. There are so many new ways to interact with one another and make valuable connections. That’s what I wanted to do. I wanted to connect Oxford.
Q: What are the rules for tweeting as @BeingOxford? A: Every person who curates has to say who they are. You have to be here and generally live here. And you have to give it up on Sunday night. You can’t keep it.
Q: How do you decide who tweets? A: In the beginning it was a lot of people I knew, but it was never my goal to make it “people who know David.” Now people follow the account and they ask me if they can do it. I lock you in the first date available. I try my best to plan one month ahead. Whenever it’s controversial, I always get more requests.
Q: Who have been some of your favorite tweeters? A: We’ve had everyone from a James Beard Awardwinning chef to a gas station attendant. They don’t have to talk about Oxford at all or they can talk about it a lot. It’s just what it means to live here.
Q: Do you ever disagree with the things people tweet? A: I disagree vehemently with some of the things people say, but I don’t want to edit. We all make up what we are as a town, and a lot of times that comes with controversial opinions.
Q: Do you have a number of followers in mind that you want it to reach? A: We just hit 2,000, so that’s pretty cool. I personally have 1,300 followers, so it was big deal when @BeingOxford passed me, because it was bigger than me literally and figuratively.
