any people think of football as the South’s defining sport, but as Midwestern transplants, we were pleased to find out that’s not the whole truth. We’re longtime friends from Missouri, and when our Kansas City Royals made it to the World Series in October, we were excited. Watching game one at Lamar Lounge last fall, we hatched a plan to take a road trip home – not to attend the games (the teams were playing in San Francisco that weekend) but just to be in Kansas City to soak up Royals mania. Our friend Josh Turner was also at the bar and told us if the series went to game six (which would be played in KC), we needed to be there. The series went to game six, and Josh surprised us with tickets. We were beyond thrilled. The Royals won, 10-0. They ultimately lost to the Giants in game seven, but it didn’t matter. Game six was a perfect night, one we’ll never forget. That same feeling is shared by Ole Miss baseball fans who made the trip to Omaha in June to cheer on Ole Miss in the College World Series. Now they’re counting down the days until Feb. 13, this year’s home opener. That’s why this month we’re happy to bring you our first baseball issue. Meet Camie Bianco, the first lady of Ole Miss baseball, who not only supports the team but also gives back to the community (page 40). Read why Swayze Field/Oxford-University Stadium is one of the best atmospheres in college baseball (page 31). It doesn’t matter where you grew up, baseball really is America’s national pastime.

r. and Mrs. Joseph Walker Blackston wed at 6 p.m. on June 20, 2014, at their home in Madison County, Miss. Lance Wesley Martin performed the doublering ceremony. Under the guise of a celebration prior to the couple’s intended elopement, the couple’s family was invited to a cocktail hour before the reception. Upon arriving at the couple’s home, guests enjoyed Champagne, cocktails and French macarons topped with edible gold leaf and shimmer. Once the groom and members of the wedding party had greeted guests, they were asked to take their seats for the surprise ceremony. As guests were seated on a mixture of antique and contemporary furniture on the back lawn, they were treated to musical selections provided by

the Magnolia String Quartet. Handel’s Arrival of the Queen of Sheba announced the arrival of the bride, who proceeded to her groom on a custom aisle runner adorned with a hand-painted gold leaf crest. The bride wore an ivory silk-faced satin Alvina Valenta gown featuring a deep sweetheart neckline with a draped, natural-waist bodice and sheer cap sleeves of hand-sewn lace, crystals and pearls, which continued around to show a stunning open, low back. During the ceremony, the bride wore a hairpiece and an illusion birdcage veil by MollyGee Designs of Madison. The bride carried a traditional hand-tied bouquet. Held within the bouquet’s satin ribbon was a white gold and diamond fleur de lis pendant, which was presented to the bride on
the day of the wedding by Mrs. Mary Martin Guerieri to serve as her something borrowed. On her right hand the bride wore a yellow gold diamond eternity band, a gift from the groom while they were dating, and a yellow gold diamond-and-sapphire eternity band given as a part of her engagement set. These rings served as the bride’s something old and something blue, respectively. Mr. James Walker Blackston, son of the groom, was the best man. Both men wore white dinner jackets paired with custom rough, black silk cummerbunds and bow ties by MollyGee Designs. On the lapels were boutonnieres of garden roses and greenery. Following the ceremony, the couple hosted a reception to announce their union to friends and family.

The Manship provided hors d’oeuvres and transformed the couple’s farmhouse table into a celebration-sized charcuterie board. Guests dined using vintage china and silver from the bride’s collection. Hops and Habanas provided a wide variety of beer, wine, Champagne and other spirits, including several selections from Mississippi microbreweries. Guests also enjoyed a plethora of sweets, which included custom macarons by Lauren Bowie of Meringue Macaron Kitchen. After spending the night surrounded by family and friends, the bride and groom were whisked away under a canopy of sparklers before departing in the bride’s 1984 Mercedes 380SL, a gift from the groom the previous Christmas. Pat Ward officiated the 6 p.m. candlelight service in the Plein Air neighborhood of Taylor, Miss. The bride arrived to the ceremony by horse-drawn carriage wearing a full-length Casablanca gown adorned with feathers and sequins. She also wore a white fur jacket. The bride was accompanied by her maid of honor, Avery Larson of Water Valley, Miss., and bridesmaids Steffi River of Water Valley; Ansley Waller and Sarah McLellan of Atlanta, Ga.; and April Atwood of Madison, Miss. The bride was given away by her grandfather, coach Tony Misita of Amite, La. Parents of the bride are Mr. and Mrs. Spurgeon William Petty of Oxford and the late Andy Shaw and Nancy Shaw of Water Valley. Also attending was grandmother of the bride Sylvia Misita. The groom was joined by his best man and twin brother, Taylor Garner Dillon, and groomsmen Danny Furniss, Alfred Cowles, Josh House, Brooks Swanquist and Jackson Sims. The bride’s family friends Barrett Larson, Hunter Edwards and Taylor Edwards were ushers. Parents of the groom are Mr. and Mrs. James Dillon of Germantown, Tenn. Also attending was grandmother of the groom Mae Rae Garner. Flowers adorned the staircase and upstairs foyer, while the farmhouse chapel altar was decorated with an array of winter white roses and lilies by Oxford Floral Company. Crab cakes, shrimp and grits, and pasta dishes were catered by Tallahatchie Gourmet of New Albany. The bride’s cake was a four-tiered Italian cream cake made by Cory Lewis of Oxford. The groom’s cake was a shaped like a duck and designed by Sweet T’s Bakery of Oxford. Dr. Robert Riggs String Quartet played during ceremony. The Joe Fonte’ Band played during the reception, which was held in the upstairs ballroom of Plein Air. Wedding photography was done by Ann-Marie Wyatt of Taylor Square Photography, and the videographer was Flynt Videography of Batesville, Miss. The wedding was planned and coordinated by Anna Purvis of Treasured Memories of Oxford. The couple honeymooned in Cozumel, Mexico, and now reside in Oxford. February 2015 | INVITATION OXFORD

T
hough holding a cold beverage is the main purpose of a Solo Cup at Ole Miss baseball games, it’s not its only role. Between innings, the Red, Blue and Yellow Solo Cups scramble around the bases, racing against each other in a comical display of clumsy athleticism, as fans place bets on the winning cup. The Solo Cups have become the unofficial mascot of Ole Miss baseball and even have their own Facebook and Twitter accounts.

With its predominant losing streak, Yellow Cup was even the star of the ESPN 30 for 30 documentary spoof Running Solo: The Story of the Yellow Cup. “I don’t even know why we have a Yellow Cup; he’s never going to win a race as far as I can see,” senior outfielder Austin Bousfield said in the film. So place bets on Red or maybe Blue, but never Yellow, who comes up short every time.
M
ost college stadiums strictly prohibit alcohol consumption. However, the outfield of Swayze Field is technically zoned to be off-campus grounds, which means fans can bring in coolers of canned beer. Some fans know to pack a few extra cold ones for what has become an Ole Miss baseball tradition – the beer shower.
When the Rebels hit a home run or a walk-off hit, the student section erupts into a rainstorm of beer. No matter how full or empty their plastic cups, fans toss their contents straight up, and they rain right back down, soaking everyone within range. For a few seconds, right field looks like Times Square on New Year’s Eve, everyone jumping around and cheering as the Rebels put points on the scoreboard.

aseball games can sometimes get a little long for children, but at Swayze Field, parents can sit back and enjoy the game while their children take advantage of the play area. Located in the left field area known as Oakes Pavilion, the playgroud has climbing equipment and open space where children can play. Jason Ross and his wife, Tara, are longtime season ticket holders.

When Tara went into labor during a 2009 Super Regional game, the couple decided to name their daughter Swayze. Now Swayze and her sister Gigi, 4, love going to the ballpark. “Swayze Field is a very kid-friendly place,” Jason said. “They can watch the game when they want, run around with friends, play. My girls get so excited when baseball season rolls around.”
T
he food at Swayze Field isn’t just peanuts and pretzels. The spread is always fun, from crawfish boils with pounds of Cajun-seasoned shellfish to grilled venison sausage and juicy bratwursts. Fans bring in coolers with enough grub to feed the masses and, as true Southern hosts, often invite neighboring spectators for a bite. To some fans, locking down a grill spot in left field is one
of the most important components to an Ole Miss baseball game. “My husband, Locke, and I have had our same spot for six years, and it’s by a grill and picnic table,” fan Rebecca Phillips said. “We have a fun group of about 16 friends and family members who sit together and always have more crawfish, sausage and oysters than you can imagine. Baseball means good times, friends and food!”

The First Lady

Bianco doesn’t like to sit still. An average week for her could look like this: Run the St. Jude half marathon; attend her son’s Oxford High School football championship game in Starkville, Miss.; host a party for the University of Mississippi baseball coaching staff of more than a dozen people at her house; and volunteer with the youth group at St. John’s Catholic Church. Flipping through her 2015 planner, black with shiny gold dots and lettering, she laughs. “I’ve tried a gazillion different types and styles, but it always ends up looking crazy,” she said of her calendar. “I’ve got the notes on my phone, just everywhere. If you don’t write it down, forget it, it’s gone.” That’s understandable. Bianco is married to University of Mississippi head baseball coach Mike Bianco and is mom to their five children, Michael (19), Ben (16), Drew (15), Sam (13) and Catherine (11). She taught middle school for eight years when the family lived in Louisiana, but now that her children are older, she devotes her time to being more involved in their activities, from baseball, football, and basketball to tennis and cheerleading. But stay-at-home mom is not an accurate description of Bianco, as she is rarely at home. She is the Oxford School District Foundation president, is involved with Oxford’s Reading Is Fundamental program and the Junior Auxil iary’s Art Prints program, and teaches Sunday school at St. John’s. She has served as PTO president of Oxford, Della Davidson and Bramlett elementary schools and was named Oxford School District Parent of the Year in 2008. This month, she is in charge of helping pre-sell specialty Oxford School District car tags to benefit the Oxford School District Foundation (see more at right). “My husband would probably tell you that I’m a little hyper,” she said, laughing. “But I like being involved. I like being a part of it.” Being involved with the community is what drove her to help launch the nonprofit organization Lovepacks in 2010, which sends supplemental food packs home with Oxford and Lafayette students in need on weekends and holidays. Bianco, along with Mary Leary,
Helen Phillips and Alyce Krouse, are the four founding board members. “Mary Leary and Helen Phillips actually started Lovepacks out of the back of their cars,” Bianco said. “When they realized how big of an issue it was, they asked me to help. We’ve grown from there. Now we’re at 150 packs a week. The community has been tremendous in their support.” With volunteer activities and shuttling children around, the beginning of baseball season for Ole Miss, Oxford High School and Delgado Community College in New Orleans (where her eldest son Michael plays baseball) adds even more to her schedule. “We will be shifting into baseball mode very quickly,” Bianco said. “It’s kind of crazy and a little overwhelming. But it’s fun. It’s what we know and are comfortable with as far as sports.” Baseball’s long innings might not sound appealing to someone who likes to be on the go the way Bianco does, but she said the slow pace of the sport is actually what she likes best. “You can kind of go, ‘Aaahh, okay,’” she said. “You can sit down with a friend, watch a game, have a conversation, and you probably didn’t miss anything. You just kind of feel like you can breathe.” One of her favorite baseball memories in her husband’s 15 seasons as head Ole Miss coach was the Rebels’ appearance in the College World Series last summer. Most of the Bianco family traveled to Omaha, Neb., to cheer on not only the Rebs but also Mike. “We had a big crew,” she said. “Mike’s dad came. It’s kind of one of those where you still go, ‘Wow, we really did that. That really happened.’ It was so awesome. We’re kind of still caught in the moment. It was so wonderful to be there and be a part of that.” That sense of belonging, whether to a team or a community, is what Bianco appreciates most about Oxford and Ole Miss. “We were flying with all these Ole Miss people and Ole Miss fans and athletic department people, and it was just so great that we were all kind of part of the same thing,” she said. “And that’s what I think I will remember, even on into old age, is that feeling of family.”
Bianco helped start Lovepacks, which provides nonperishable, child-friendly food items to Oxford and Lafayette students in need. Lovepacks volunteers assemble food packs each week. Then they work with school counselors, who discreetly slip the packs into children’s backpacks on Fridays. Lovepacks appreciates easy-to-open, single-serve food donations. Last June, the University of Mississippi baseball team advanced to the College World Series in Omaha, Neb., for just the fifth time in school history and the first time since 1972. Ole Miss was eliminated with a 4-1 loss to the University of Virginia, two wins shy of reaching the National Championship Series. The memories of an exciting postseason are still fresh.

“It was a great run,” designated hitter Will Allen said after the team was eliminated from the series. “We played really well throughout the season just to get to Omaha. Not many people do that. It’s a once-in-a-lifetime opportunity. I’m glad that I got to play here and had the opportunity to play with this team. We had a great team this year. I’m proud of the way we finished.”

A one-day camp for second, third and fourth graders puts the fun in learning baseball fundamentals. PHOTOGRAPHED BY Leslie Brooks
he 13th annual Camp Bats and Balls, a partnership program between the Junior Auxiliary of Oxford and the University of Mississippi baseball team, was held Nov. 15 at the Ole Miss Manning Center. The free, daylong camp is held for area second, third and fourth graders and led by Ole Miss baseball coach Mike Bianco and the Rebels baseball team. The baseball players spent the morning with more than 120 young participants, teaching them fundamentals like hitting, throwing and catching. Since the camp is open to children of all skill levels, it’s a learning curve for everyone. “Some are advanced at a young age, and some have never played before,” Bianco said. “It’s neat to see the interaction between the kids and the players.” There was also time for the children to request autographs from their favorite players and hang out with the team. If the players are nervous about leading the camp, then their fears dissipate by the end of the day. “In the beginning, they’re not really sure. They’re required to do it,” Bianco said. “But my players really understand about giving back. It’s our guys giving back to the community that’s been so good to us. We have success here because of how much the community has embraced our program.”

Pam Swain, whose son John Pitner Swain, 8, has participated the last two years, said he was excited when he got home from the camp because he got to work with the Ole Miss players. “He really loves to watch these guys play,” she said. “Being able to learn from them makes it his favorite opportunity to learn about the sport. He said he’d learned how to catch ground balls better and sharpen his hitting skills.” Junior Auxiliary member Moni Simpson, chair of the 2014 event, described the experience as rewarding. “The biggest thing was just seeing some of these kids get to have this one-on-one time with the baseball players,” she said. “One of my favorite moments was at the beginning when we were getting the kids registered. The baseball players took it upon themselves to entertain the kids. Errol Robinson led the kids in a game of duck-duck-goose. I think the baseball players had just as much fun as the kids.” Bianco added that the Junior Auxiliary members’ commitment to the program is the reason the camp is successful. “The organization has done a wonderful job over the last 13 years. They’re the ones who make it happen,” he said. “We’re just involved on the day. Baseball is easy for us. That’s what we do. But it’s really the ladies who make it happen, and the credit should go to them.”

alentine’s Day and dessert go together like peanut butter and jelly. Or as Dwayne Ingraham, pastry chef for the City Grocery Restaurant Group, believes, like chocolate and more chocolate. One of Ingraham’s favorite desserts to make is his molten lava chocolate cake. He describes it as simple but decadent, perfect for a celebration at a fancy restaurant or a more low-key evening at home. “I enjoy making this cake because it’s such a great way to satisfy a chocolate craving,” he said. “I like that it is really simple to make, so it’s a perfect recipe to impress guests for a dinner party without having to have a professional skill set.” He suggests pairing the cake with ice cream or whipped cream and serving it with raspberry sauce for a pop of color on the plate. He also advises paying special attention to the presentation, his favorite part. “I enjoy plating a dessert more than anything,” he said. “That’s where my true passion is. I love coming up with the components and concepts and putting it all together so it doesn’t just taste good but looks good.” That attention to detail is what makes him one of the best pastry chefs in the South. He was nominated as Food and Wine’s The People’s Best
New Pastry Chef in 2012 and competes on the Food Network’s Cutthroat Kitchen Feb. 8 (read more on page 88). It’s a role he’s been preparing for his entire life. He learned to bake with his mother and grandmother in the kitchen of their Boothville, La., home. Together, they made candied yams and sweet potato pies, and he made his first pound cake from scratch at age 8. Now, desserts are all he thinks about. “I literally dream about desserts,” he said, laughing. “Random flavors, different ways to put them together. I really should put a notebook by my bed.”
Ingraham’s Molten Lava Cake 16 tablespoons butter (2 sticks) 2 cups semisweet chocolate chips 5 whole eggs 5 egg yolks 2 teaspoons vanilla extract 1/2 cup sugar 1/3 cup all-purpose flour 1/3 cup cocoa powder 1 teaspoon salt Preheat oven to 400°F. Place butter and chocolate in a microwave-safe bowl, and heat
for 30-second intervals until melted into a smooth mixture. Next, add the five whole eggs, plus five more egg yolks. Add vanilla extract to the chocolate mixture. Whisk until smooth. In a separate bowl, sift together the remaining dry ingredients, and whisk into the chocolate mixture until fully blended and smooth. Generously coat 9 (4-ounce) aluminum ramekins with cooking spray. Pour batter evenly into each ramekin. Bake for 12 minutes* in the preheated oven. Remove and allow to cool for 1 minute; then invert and gently empty the ramekins onto serving plates. *The cake will not be fully cooked, which allows the middle to retain a gooey texture, giving it the molten lava element.
Raspberry Sauce 16 ounces raspberries 1 cup sugar 1 lemon, zested and juiced Combine the raspberries, sugar, and lemon zest and juice in a saucepan; bring to a boil. Cook until the berries break down and release their juices. Strain and cool. Drizzle over the top of the lava cake, and serve.

I
t’s important to get a good night’s sleep, but that can be a challenge for firefighters working an overnight shift at the fire station. With cramped quarters, loud sirens and uncomfortable beds, it can be difficult to achieve the rest needed in between calls. Those are the things that kept local firefighter Michael Milam up at night – literally. Milam, who has worked as a firefighter since 1997 in Oxford, as well as on military bases in Iraq and Afghanistan, said he remembers the exact moment 12 years ago that he was inspired to do something about it. “I was at Fire Station 2, just trying to go to bed that night. I had my sleeping bag laid on the bed, and I just wasn’t comfortable and
couldn’t sleep,” Milam said. “I just thought, ‘There’s got to be something better than this.’” That was the beginning of Milam’s invention – Knight Sleeping Bags, a sleeping bag designed specifically with firefighters in mind. Milam said the main difference between his bags and other brands is the detachable pillow pad, which helps keep the sleeping bag and pillow from sliding apart. “I started thinking there needs to be something else up here at the top where you can put your pillow,” he said. “That way you’re not laying on the bed with half of you in the bag and half of you on the bed.” Additionally, a quick-release zipper allows
firefighters to hop out of bed more quickly when called to a fire in the middle of the night, and a Velcro foot closure at the bottom means the bag can be fully zipped shut, but feet can still stick out the bottom if desired. The bags are slightly wider than standard sleeping bags, and they are lined with soft fleece. “They’re quality materials, so they’re made to last,” he said. “With those cheaper sleeping bags, if you wash them one time, they’re trash. Mine don’t separate and bunch up when you wash them. It comes out of the dryer just like it went in.” He added that he attempted not only to design a bag that he would sleep better in but February 2015 | INVITATION OXFORD

also that could be easily transported to and from the fire station. “It’s lightweight, very functional,” Keith Edwards, an Oxford firefighter, said. “Especially when you’re moving from station to station a lot, you’ve got to pack your stuff up. When I first started at the station, I was making my bed up every night like you would at home. This makes it easier to roll up your bedding and go. It’s a nice piece of equipment.” Milam didn’t think of all those special features overnight, and it’s taken years of tweaking and perfecting to get the bags just right. “It’s been a process, taking something from a little grain of thought to actually selling and shipping them,” he said. The suggestions of others have helped Milam improve the bags, and some of his clients have come up with uses he had not considered. “One of the firefighters’ wives bought one just to take to softball games,” Milam said. “She sits in the stands and puts her feet through the bottom, and she doesn’t have to unzip the whole thing. She said it works great.” Milam’s manufacturer recently went out of business, but he’s currently in talks with Avon Manufacturing in South Dakota, which is dedicated to producing products that increase the effectiveness and safety of firefighters. “Everything that they have is either designed by firefighters or for firefighters,” Milam said. He also has a licensing deal with Mossy Oak so he can use the company’s camouflage patterns to offer more options for hunters. “I contacted Mossy Oak because they’re a Mississippi company, and I’m a Mississippi boy,” he said. But whether his clients are sleeping at a hunting camp, at a fire station or just on a family camping trip, Milam said his goal is to make them feel as if it’s not a punishment to have to sleep in a sleeping bag. “I tried to make it as comfortable as I could so you don’t even notice it,” he said. IT’S NOT UNCOMMON FOR MUSICIANS TO HAVE DAY JOBS, AND FRED MCDOWELL WAS NO EXCEPTION. McDowell (who lived circa 1906-1972) was considered to be one of the first North Mississippi hill country blues musicians and is in the Blues Hall of Fame, but for much of his life, music was not his main source of income. As a laborer and sharecropper who played local house parties, he was relatively unknown in the blues world for most of his life, until Alan Lomax, a folklorist who documented folk music traditions, and his assistant Shirley Collins recorded McDowell in 1959. Shortly after those recordings were released, McDowell hit the festival and coffeehouse circuit. Later he traveled to Europe and was a major inspiration for artists such as Bonnie Raitt and the Rolling Stones, who covered his song You Gotta Move on their 1971 Sticky Fingers album.
His life and career are the subject of Shake ’Em on Down: The World According to Fred McDowell, a documentary film by Scott Barretta and Joe York, who work at the University of Mississippi. The idea for the film came about when the two discovered that the university owned a rare short film about McDowell called Bluesmaker, made in 1969 by Christian Garrison, a former filmmaker for the university. Garrison filmed McDowell in his longtime home of Como, Miss. Barretta and York were intrigued by the Como community, especially Hunter’s Chapel, where McDowell was a member, because of its connectedness to blues musicians. “McDowell made recordings with other [chapel] members, including his wife,” said Barretta, a sociology and anthropology professor. “Otha Turner, the patriarch of the fife and drum tradition in the hill country, was also a member, and the current preacher is the Rev. John Wilkins, a

gospel bluesman whose father was pioneering bluesman Robert Wilkins.” In addition to being influenced by the gospel music he heard at Hunter’s Chapel, McDowell’s music blended the sounds he heard from guitarists in Tennessee with the pulsating juke joint grooves of the North Mississippi hills and the hard-edged blues he picked up during several years spent in the Delta. Despite his musical inclinations, he kept a job pumping gas at a Stuckey’s service station on I-55, even toward the end of his life, when he was gaining success and was in demand at folk and blues clubs and festivals. “That’s the general arc of our story, from obscurity to international influence, and we’re trying to capture as many parts of it as possible,” Barretta said. “In 2014 we traveled to England, where our interviewees included Shirley Collins, now 79, who had wonderful recollections of McDowell’s ‘discovery.’” Other interview subjects so far include music photographer Dick Waterman, who lives in Oxford and managed McDowell, and Gerald “Wolf ” Stephenson, who booked McDowell to play at Ole Miss tea dances when he was the social chairman of Pi Kappa Alpha fraternity in the 1960s. Stephenson, who later worked at Malaco studios in Jackson, recorded McDowell’s classic album I Do Not Play No Rock ’n’ Roll. Most recently, the duo interviewed Bonnie Raitt, blues musician Taj Mahal and Como area residents who remember McDowell in his prime. York, senior producer at the Southern Documentary Project, an

institute of UM’s Center for the Study of Southern Culture, has served as the producer of Barretta’s radio program Highway 61, which airs on Mississippi Public Broadcasting, for almost a decade. They worked together on another film in 2009, Smoke and Ears, about the Big Apple Inn on Jackson’s Farish Street. Given the SouthDoc’s commitment to tell stories about the region through food, literature, and, in this case, music, it was finally the right time to make the film, York said. “We’ve both always been drawn to Fred’s music and his remarkable story, from his chance encounter with Alan Lomax that launched his recording career through his influence on the Rolling Stones and Bonnie Raitt and his lasting impact on the culture and music of Mississippi,” York said. “We’ve traveled as far as San Francisco and London and parts in between recording interviews for the film, and we couldn’t be happier with how well it’s coming along.” York and Barretta said they hope to be finished with the documentary this spring, plan to enter it in film festivals across the U.S. and are hoping for a fall 2015 PBS debut.

his control booth, flanked by towers of speakers and surrounded by sound-dampening devices of his own design and construction. The board in front of him contains hundreds of levers, knobs and switches. He also has a laptop and an iPad, the screens showing the various sound levels of the piece he’s editing.
He flips a switch, and the music explodes, filling the room with sound. It’s Verdi’s Requiem, performed by the Mississippi Symphony Orchestra and the University of Mississippi choral department. Reed is mastering the recording for a CD release. This is not unusual. For the past 12 years, as owner and operator of Taproot Audio Design, he has recorded scores of albums, managed sound for hundreds of concerts and made dozens of field recordings. Before that, he worked at Ardent Studios in Memphis, managed the Black Dog record label and worked his way up at Malaco Records in Jackson, Miss., as a teenager. Now he’s taking on a new challenge, and the equipment he’s toying with is part of it. Reed has retooled both his soundboard and his skill set in order to garner film work. His first reason is a personal one: his passion for movies. “I’m not a movie buff, but I love the sound of movies,” he said. “When I go I’m listening to the audio.” The other reason for his expansion is more practical. Mississippi’s film industry is growing, with independent films and major studio productions alike. The Mississippi Film Office reported that producers spent about $80 million in the state last year. “I planned to upgrade my studio anyway,” Reed said. “But I said, ‘What if I take it further?’ I got to thinking about the growing film industry here, and the fact that there are no dedicated audio post-production houses anywhere near here. And there’s no reason people couldn’t come here to do it.” Part of that upgrade has been learning to mix in surround sound, the standard in the film industry. To expand his knowledge, he’s been traveling to Los Angeles, training under the tutelage of Eric Fisher, a friend and former classmate at Orlando’s Full Sail University, where the two
studied sound design together. Fisher has been working in Los Angeles for 20 years on film post-production, most recently handling the postproduction sound editing on the Pearl Jam documentary, 20, directed by Cameron Crowe. Taproot is now equipped to handle surround-sound mastering of DVD audio, Super Audio CDs and Blu-Ray releases. That will allow Reed to work with colleagues on the West Coast. “A lot of this stuff is back and forth, listening,” he said. “I could be mixing a film for somebody in L.A. and send them digital clips as I go. That’s yet another thing I’ll be learning.” For Reed, the expansion into films has been a goal from the beginning of his career. “My original intent was I wanted to go to Century III at Universal Studios to be a post guy,” Reed said. “Part of our music business class was on a sound stage at Universal. When we had breaks we had free rein to just walk around. Even then I thought how you could just dive off into this.” But despite a desire to go into the film industry, Reed still felt drawn to music. After graduating from Full Sail, he sent resumes to his favorite music recording studios, including the famed Ardent Studios in Memphis, home to classic recordings by Sam & Dave, Isaac Hayes, Led Zeppelin and scores of others. He got the job. The first record he worked on was by The Reverend Horton Heat. He also engineered records by Primal Scream and the Afghan Whigs and later worked with legendary producer Tom Dowd on a record by Sam Moore of Sam & Dave. “Working with Tom Dowd on three records was a highlight,” Reed said. He worked at Ardent for six years and then became a partner in February 2015 | INVITATION OXFORD

I think this is a ‘if you build it, they will come’ situation.” the now-defunct record label Black Dog Records, which was located in Monticello, Miss. “I hate that thing folded,” he said. “But it was right when things were going downhill with the music industry.” At that time (in 2002), the recently married Reed was faced with a decision. He could move to Memphis and take back his job at Ardent or start his own business. He chose the latter, and it didn’t take him long to get Taproot off the ground. “I just started talking to people, handing out brochures,” he said. “I just wanted to let them know I was here and capable. When I built this [studio] I got about halfway done and my phone was ringing off the hook, so I just stopped building.” The work is still rolling in, but finally, 12 years later, he’s almost finished with the studio he envisioned.

“My goal here is to be a re-recording mixer, which is the final mix of the film, after dialogue has been put in, [sound] effects have been embedded,” he said. “Just tweaking everything out. I’ve got more capabilities here than, say, a video editor would have in their editing programs.” He already has film jobs lined up. He’s working with local filmmaker Joe York and blues historian Scott Barretta on an upcoming documentary about Mississippi blues musician Fred McDowell (see story on page 74), and he hopes to land a couple of big-budget gigs while also cultivating connections in Los Angeles. “It’s unreal the things you can do with modern technology,” he said. “The main thing is getting your room right. Ingraham has been pastry chef for the City Grocery Restaurant Group since 2010. On Feb. 8, he appears on the Food Network’s reality cooking show Cutthroat Kitchen.
Q: Did you always want to be a pastry chef? A: I never thought it would be a career. It was just a hobby. I was going to go to law school and get into politics. But then I spent some time with an actual lawyer and realized it’s not at all like Perry Mason. So I was like, let’s be real about it! I always enjoyed cooking, especially baking, and a friend was talking about how much he loved culinary school. One night I just woke up and decided to apply.
Q: Where did you go after culinary school? A: After graduating from the New England Culinary Institute in Vermont, I worked in the pastry department of the Wynn in Las Vegas. I also worked at Switch Steak, in the Encore, and at Seablue in the MGM Grand. Two years later, I applied for a job with City Grocery and was working for John Currence. I wanted to get back to the South.
Q: How do you plan your dessert menus? A: City Grocery and Snackbar change their menus every six weeks, and it’s a process to come up with five to six new desserts each time. But I’m always planning, thinking about what’s in season, what flavors and textures I want to experiment with.
Q: What do you like best about your job? A: The amount of freedom that John gives me is great. We review [my recipes] together, tweak if necessary. But when you see the dessert menus, they’re mine. He gives me the chance to grow. I’ve come so far since I started working here.
Q: What was Cutthroat Kitchen like? A: The premise is so random, you could end up cooking with a lawn mower or something crazy. I really embraced it for what it was.
