Health and fitness are a priority of this community, which is why we have devoted much of this second “Best Self” edition to just that. Inside, you’ll find all the resources you need to keep you and your family in excellent shape, feeling well and at the top of your game, and leading a wellbalanced life. Speaking of balance, Katina Taylor knows all about it. Calling herself a “balance mom,” the ultra-fit camp director of ProCamps and founder of Camp Katina for girls is educating others—including her three children—about staying healthy while still being realistic and understanding how to maintain that balance. She was the ideal choice for our cover story, “Taylor Made,” on page 86, in which she shares her philosophy on diet and exercise—one that clearly works wonders for her. The stories of inspiration don’t stop there: after a health scare earlier this year that took him off the court and landed him in

the hospital, Miami Heat superstar Chris Bosh has worked his way back to health and the NBA; he shared his stories with writer Linda Marx in “Bosh is Back,” on page 92. RIGHT: the iconic neptune trident reminds the driver of the beauty in hand.

Maserati’s swagger starts with its very name. Go ahead, say it aloud: Maserahhhti. Yeah, you can’t even say it without sounding fabulous. Add the word “Quattroporte” and you’re speaking pure poetry—trochaic tetrameter, to be precise. Italian poetry, no less. Never mind that “Quattroporte” simply means “fourdoor.” It sounds marvelous rolling off the tongue. Turns out, that’s not the only fabulous thing about this issue’s featured automobile, the 2015 Maserati Quattroporte, which we recently sampled in its swiftest form, the GTS. First, it is quite the looker, with its bulging hood and confident, voluptuous body contours. Neptune’s trident is nestled within the protuberant, low-set grille that, combined with determined headlamps, evoke the sultry, open-mouth come-hither expression mastered by so many supermodels on the pages of this magazine. If Sofia Vergara were a car, she’d look like this.

The Quattroporte GTS’ plus-sized dimensions and $144K price—no one said Sofia Vergara was a cheap date—place it in the same category as the Mercedes-Benz S63 AMG and Audi S8, yet from behind the wheel, the GTS feels rather less like a Teutonic limousine than an Italian sport sedan. It is luxurious enough to hold its head high in that heady company, but that’s not its primary mission. No, the Maser’s reason for existing is to be the sportiest luxury car on the market. And that it is. Put the pedal down, and the the 523-hp turbocharged V-8 turns it into a snarling, four-door Ferrari. Razor-sharp steering always zeroes in on the apex of a corner, and the body stays pan-flat when clipping it. Ride quality is always taut and never, ever floaty. The brakes on our tester proved a bit grabby, but when summoned to do so, they would stop the car with brain-jarring force. More than any of its competitors, the Quattroporte GTS is a car that gets more engaging and interesting the harder one drives it. Think of it as an instant mood adjustment machine, capable of widening your smile in direct proportion to the pressure you apply to the go pedal. 46

It’s painful to point out the flaws in a car as emotional as this, but alas, even a beauty like this can have some, and we’d be remiss not to ding the car for the occasional moments of cheapness, which come primarily in the form of prosaic window switches and climate controls sourced from the Fiat/ Chrysler parts bin. The leather is, well, as fabulous as any Italian car in the world, but the front seats it covers are wide and hard. While the aluminum trim piece surrounding the center screen is as premium as anything you’ll find in a Bentley, the screen graphics themselves are the same as the ones in your housekeeper’s Chrysler. A car this great (and this pricey) deserves its own trimmings. As with many Italian cars, the Quattroporte GTS is not perfect, but is an undeniably emotional creature, closer to feeling truly alive than anything in its segment of the market. And it has the capacity to make its driver feel alive, too. 48

For 30 years, we have provided the best instruction by leading coaches in the premier playing environment in the area. We are now beginning a complete, $2 million renovation of all of our courts that will be finished in the next few months. the new courts will use the HydroCourt irrigation system. that means they will be in perfect shape 24 hours a day. We are also adding a video monitoring system to several of the courts, which will improve our training capabilities. We are also adding five new smaller courts that are specially designed for kids. And we are expanding our High Performance academy program for young players from 12 to 18 who want to pursue professional tennis careers.”

What makes Sole-lutions unique? “We’re a full-service fitting store. We sit you down and measure your feet and match your foot type up with the proper shoes. And that includes matching you up with the right kind of insole, support—whatever you need. We make sure you get the right kind of shoe for you, whether that is a sneaker, a running shoe or a sandal. We do it in a way that corrects all your foot, leg and back problems. We design and produce our own arch supports and other products on site. And no one else in the area does that. We have a large orthotic laboratory on site. Customers can watch us make their orthotics. We also carry a tremendous selection of overthe-counter foot-care products.”

What are the most common foot conditions that you treat? “There are three conditions I see most often. One is plantar fasciitis, also known as heel spurs. We see that in a lot of runners, and it is very painful. But I cure that. Another is peroneal tendonitis. The third is posttib tendonitis. We also see customers with neutral arches or high arches. All of those can be corrected by fitting customers with the right shoes and custom orthotics. Other things that people ask about all the time are flat feet or wide feet. At least half the people who walk into the store have flat feet.” What’s the difference between types of footwear that most new customers don’t understand? “The basic types of footwear like shoes, sneakers and sandals are all different in terms of how they affect your feet. And most people buy shoes, whatever type they are, by just going into a self-help store. So what happens is that most people are picking out the wrong kind of shoes for themselves all the time. They don’t know what to get or why one type of shoe is right for them and another is wrong. For example, one of the things I see most is people just wearing shoes that are the wrong size. Most people also don’t realize that not all shoes made around the world in what they think is their size are actually exactly that size. So we show people how to buy shoes that are right for them and that are going to help their feet rather than hurt their feet.”

A new chapter in cancer care is here.

Advances in Mammography: Fighting Cancer in 3D Breast Tomosynthesis Regular screening mammograms, which create two-dimensional views of the breast, can reduce cancer death by 30 percent. But newer technology that creates three-dimensional (3D) mammograms offers important advantages, including greater detection of breast cancers that cannot be seen using those traditional mammograms. In one study of almost 13,000 women, use of 3D mammograms resulted in a 40 percent increase in detection of invasive breast cancer. This new technology is available at both Cleveland Clinic Florida’s academic medical center in Weston, as well as the West Palm Beach location. “Tomosynthesis gathers images of the breast from several different angles, to create a series that forms the 3D image,” says Maria Artze, MD, a Cleveland Clinic Florida radiologist who specializes in breast imaging. “Having these various images reduces the challenge of seeing areas where tissues overlap, and so improves the radiologist’s ability to detect breast cancer.” The technology makes it possible for the first time for radiologists to see a 3D image of the breast. Because of the high level of detail it provides, the images also highlight masses and abnormalities that conventional mammograms might miss. “In images of the breast, dense tissue appears white, and cancer appears white,” says Cassann Blake, MD, Cleveland Clinic Florida breast surgeon. “Tomography gives us much more detail compared to other types of mammograms. Especially for women with dense breast tissue, this detail is important.”

For the patient during the screening, the procedure will be familiar to other mammograms they’ve had. The only difference is that part of the equipment moves in an arc around the breast, instead of staying stationary. Studies also show that with tomosynthesis, fewer patients need to return for additional mammograms, visits that can cause stress and expense, plus exposure to additional radiation. Research further shows this procedure provides a 15 percent decrease in the number of “false positives,” where tissue looks cancerous but through biopsy (tissue sample) or another exam is later found to be normal. So 3D mammograms can also help women avoid unnecessary biopsies. “Early detection of breast cancer is a key area that we want to highlight,” Dr. Blake says. “Offering the advantages of the 3D mammogram is part of our goal to provide our patients with the best quality of care. What is most important for people to know about the YMCA? “What is most important for people to understand is that the YMCA is a not-for-profit organization that is community-based. and the way we live that every day is that we never turn anyone away for an inability to pay. We also raise funds locally to give back to families in need or those that are going through a crisis. Those are the most important things to understand about what the YMCa does. and i don’t think a lot of people do understand that. Most people just think we run a nice gym. But it’s been true for 160 years.”

What is YMCA’s history in Weston? “We are relatively new to Weston. We’ve only been here 10 years. our facility is actually a partnership with the town of Weston. the town owns the land and provides it to us on a $1 a year lease. We built the $10 million building with funding from our donors. We are here for the long term, and we very much look forward to building a rich history and tradition in Weston. And we’re proud of the fact that Weston just got some awesome recognition from Neighborhood Scout as one of the 10 best towns in Florida to raise a family. that’s important to us because we’re a familyfocused organization. We offer programs that bring families together.”

What facilities and programs do you offer? “We operate a 42,500-squarefoot complex that includes an aquatics center with an Olympic-sized swimming pool. We have a swim team. “Balance mom,” indeed: Taylor takes on the Pilates reformer.

TaylorMade Fitness advocate Katina Taylor believes in a well-balanced life that advocates moderation, not deprivation—and she’s living proof that it works wonders.

s a young girl growing up in the country near Pampa, Texas, Katina Taylor was always in to physical fitness. With parents who played sports, and a pair of high school and Texas Tech university football star brothers (former Miami Dolphins linebacker Zach Thomas and former coach and teacher Bart Thomas), she was constantly outdoors and active. Her goal was to keep up with the rest of the athletic family, look good, feel great and have fun in the process. “our parents instilled sports, getting outside and being active into all of us,” says Taylor, who now lives in Plantation. “They didn’t put pressure on us; rather, they taught us to be busy, positive and active. our parents were never negative, and they are the reason i love physical activity, dancing and fitness. i became a go-getter.” Taylor, 39, who also believes a healthy and well-balanced life begins in childhood, is busy raising her three children, isaiah, 12, Mason, 11, and Zoey, 9, to be upbeat, active and relish the outdoors. she calls herself a balance mom.“My boys eat healthy foods like sushi and vegetables while my daughter loves chicken nuggets,” laughs Taylor. “i make her eat veggies, and she is learning. i do it as fun so all three develop good habits. They drink water and milk most days, but get sodas on special occasions, like birthday parties. i make them earn sugar treats. Everything in moderation.” Taylor also likes to teach good habits to other kids. she recently completed the ninth year of her popular Camp Katina, an annual two-day romp at the West Broward gymnastics academy in Davie.

She describes it as “Cartwheels to Character, a gymnastics, cheerleading and life skills camp for at-risk girls.” Here she helps boost the confidence levels of kids at an early age so they can go on to school with “pep in their step.” Taylor started the camp because of her 15 years of work with the Jason Taylor Foundation. While engaged in that philanthropy, she helped thousands of children improve their education, health care and quality of life. During that period, she was offered the West Broward gym for workouts. It didn’t take long for a light bulb to go off in her head: Why not start her own camp and get sponsors to help? With benefactors like Office Depot (they donate backpacks), Publix (snacks), Nova Southeastern University (trainers) and the Miami Dolphins (cheerleaders), she brings kids from the local Boys & Girls Club and other centers to Camp Katina, where they do handsprings, back flips, cartwheels and tumble. “Some kids do these activities for the first time in their lives,” says Taylor, who is in the process of taking the camp across the US. “It is such a wonderful experience to see a light coming from their hearts and souls when they work on themselves. Sometimes I think I get more out of it than they do. I like to help others. It makes me feel good.” Taylor is expanding her Camp Katina concept by partnering with ProCamps Worldwide, directing cheerleading and dance camps with NBA and NFL stars, including Miami Heat’s Dwyane Wade and NFL All-Pros Jason Witten (Dallas Cowboys), Dwight Feeney (Indianapolis Colts) and Chris Cooley (Washington Redskins). Her passion to instill character, confidence and self-empowerment in young girls has also taken her to Florida schools, where she emphasizes the importance of a drug-free life. She has also launched the “Get Active” fitness video series for kids, which has been utilized in more than 100 elementary schools across the country. Taylor’s interests have indeed kept her busy over the years. And she has led an impressive and diversified life. Yet she always returns to her core interests of fitness and physical activity, with an emphasis on family. After playing sports (basketball, track, cheerleading), juggling, doing cartwheels and the hoola hoop in high school, she attended Texas Tech in Lubbock, where her brothers played football. But after one semester, she got the itch to go to Los Angeles and follow her dream to become an actress. “Mom came with me for two weeks,” she said. “Then, through my agent, I went to jobs, did regional commercials and got small parts in TV shows like Murder She Wrote, Baywatch and Beverly Hills 90210.” But after a year—during which she experienced an earthquake—Taylor decided the Hollywood lifestyle wasn’t for her. She wanted to go home. “I was spiritual and felt like I wanted a different life, so I decided to go back to school,” she says. She returned to Texas Tech to study broadcasting and marketing, graduating in 1999 with a degree in both. Since her family had moved to South Florida because her brother Zach was playing football with the Dolphins, she followed suit and got a job with the Dan Marino Foundation working on galas

and auctions. She also hosted Katina’s Corner, a weekly CBS-4 television feature highlighting the lives of Dolphins players off the field. And more recently, she has appeared on the CBS Early Show as a fitness expert. Her reason is to get people to work out for the right reasons. Not just to look good, but because they love who they are and want to feel healthy and happy. She continuously advocates a focus on health, even if it requires a lifestyle change. “I feel people must change, but go at their own pace,” she says. “My workouts are too hard for some. I like to do it all in 20 to 30 minutes when I can. I don’t like to be bored, so I change it up. Others should do what is comfortable for them. They don’t always need a gym at first, either.” She suggests that beginners use a trainer, even if only for two or three sessions, to start off with the right exercises. Taylor goes to the gym and works out five to seven days a week, using light weights and doing cardio drills. She adds plyometrics (jump training), squats, sprints, lunges and cartwheels, anything to keep moving and “tighten my legs and butt.” Early some mornings, she either plays tennis or goes to the beach. The fun-loving mom even plays basketball with the kids and walks at night with her girlfriends. She knows exercise is a stress buster because it boosts the good endorphins. And she recharges with meditation and jamming out to music. Her advice to others is to do something to “make your life better.” “I am right down the middle with eating and exercise,” says Taylor, who is trying to add more organic foods into her family’s diet and leave out processed sugar and white flour. “I want to refocus on the ‘why’. I think eating well and exercise are good for confidence gaining and how it makes you feel—not worrying about what you look like. I stay away from people who gossip negatively about someone else’s body.” After her early morning physical activity, Taylor, who says she loves to eat, drinks plenty of water, then comes home for breakfast. She scrambles three eggs and eats them in a tortilla or with an English muffin. Occasionally, she’ll add bacon or tomatoes. Some days she opts for just yogurt or granola. But she never skips meals. “I listen to my body before deciding what to eat,” she says. “I have good genetics and muscle memory from doing sports all my life. I don’t want to look too skinny.” Her goal is not to be pencil-thin, but fit, so she doesn’t beat herself up. ”I have Oreo cookies, ice cream, or pizza if I want,” she admits. “I eat those foods because I know I will work out.” For lunch, she usually has a salad with grilled chicken or salmon and vegetables. At 3 pm, her snack can be fruit, hummus, broccoli, carrot sticks or nuts. Dinner with the kids is often tacos, chicken, fish, sweet potatoes, roast beef or steak. And they all have dessert when they feel like it. Taylor takes bites or even a whole portion if she desires. “But it’s all in moderation,” she insists. “I try to maintain my weight while telling others who want to lose that carbs should be cut out, or the intake should be lowered.” In coming months, Taylor will concentrate on her children, possibly become a fitness trainer and hopefully getting back into acting and doing commercials. “To help others and be productive in life, we also need to love ourselves and feel fulfilled,” she says. “We should never worry about our dress size. “

fter missing the remainder of the NBA season due to blood clots found on his lung in February, Christopher Wesson Bosh is excited to be back on the basketball court. Although he gained back his strength slowly after laying low for a couple of months, these days he’s feeling fine. “I had never before done nothing, so I came back slowly after I recovered,” says Bosh, 31. “When I first started walking again, I used a cane. I would go 100 feet. Then I gradually gained more and more strength.” The announcement that Bosh was out for the rest of the season, which included the playoffs, was a crushing

blow to the Miami Heat and to all of the player’s fans last season. But foremost on everyone’s mind was his safe recovery from a serious condition with basketball playing second string. “That’s the most important thing, the health of your players,” Heat coach Erik Spoelstra told reporters at the time. Bosh found that he had trouble breathing during a few games in February and also complained of pain. Diagnosed with blood clots, specifically pulmonary embolism, he suffered a condition that occurs when a clot breaks off in another part of the body and travels through the heart, enters the lungs and lodges in one of the smaller blood vessels. “When I

was sick, I had pain and had to deal with getting better after surgery and being in the hospital,” says Bosh. Since his condition was treated with blood thinners, which increase the risk of internal bleeding, sports such as basketball had to be tabled until his body was completely void of blood clots. He was glad when that time came last spring and he could go back to work. “I got back in the swing, and I am now feeling great and confident,” says Bosh, who spent the summer traveling and enjoying time in Los Angeles with his family. (He is married to Adrienne Bosh and has three children, aged 6, 3 and 1.) Standing 6 feet 11 inches tall and


weighing 235 pounds, Bosh, now playing center, is in his 12th year as a pro. Fast, athletic and a master ball handler, his on-court reputation is quiet and humble, eager to pass the ball to a teammate who might be in a better position to score. He is lauded for his proficiency of driving to the basket and scoring at the free-throw line, and his mid-range jump shot—one of his best maneuvers—has helped his career soar over the past few years. Smart, articulate, alert, perceptive and giving, Bosh is an invaluable asset for the Heat. He is a polished ambassador for the brand and a man who truly cares about others. “Chris is an extraordinary gentleman,” Pat Riley, president of the Heat organization, said shortly after Bosh joined the team in 2010. “He has been with the Heat for only a few months but has already hit the ground running as a great player and good citizen.” Bosh quickly and easily proved his worth from the beginning. As a 10-time All-Star and two-time NBA Champ (2012, 2013) with the Heat, Riley and other team honchos

didn’t want to lose him when his contract was up. So they signed him to a whopping five-year, $118,705,300 deal last July. For the upcoming 2015-16 season, Bosh will earn a base salary of $22,192,730. Bosh has loved it here from the start of his career here, and settled in quickly. “Miami is such a great and welcoming city,” he said at the time. “I like Miami’s architecture with its artsy appeal, and I am amazed at the food and weather. Plus, the scene as an international cultural melting pot is awesome. Everything is here.” Despite his busy schedule of games, events, appearances, and now, designing ties, his workouts have always taken up a great deal of his day. In fact, his exercise regimen then was much the same as it is now, post illness. Bosh rises at 8:30 am, has breakfast at 9 am, then arrives at the court between 10 and 10:30 am. He lifts weights to prevent injury and has increased the strength by about 50-70 pounds from earlier years. And he is really into core training. “I do core training for my lower body,” he says,

“especially the hips and abdomen.” Weighted core training is important for Bosh on many levels. According to Todd Bumgardner, co-founder of Beyond Strength Performance, there is an inner core of muscles that engage first during movement or breathing to protect the spine, and an outer core that is responsible for stabilizing and protecting the spine but have more defined movement functions. There are five different components of core training that Bosh is after to protect himself from injury and to stay in great shape: flexibility, motor control, endurance, stability and strength. In addition, he hits the track once or twice a week running to continuously build up his lungs. He also runs on the beach, and, of course, shoots hoops. His diet is well balanced, and he is back to eating more since his release from the hospital and subsequent recovery. He favors chicken, fish and steak, stays hydrated by drinking plenty of water, and consumes vegetables as often as possible. He spends family time with the children around his house, playing with them in their bedrooms or on the couch. When he and Adrienne go out on the town, they enjoy exploring new places. “Miami has so many pockets; we like to find new things, new places to go where we haven’t been,” says Bosh. “And we both believe in giving back to the community.” For Thanksgiving, there are plans to send care packages to America’s soldiers as he has done in the past. The charity he founded, Team Tomorrow, Inc., is dedicated to supporting organizations that promote the uplifting of children, families and the community. For the past few years, it has sponsored projects and community-based events by partnering with donors, business leaders, outreach programs, athletes, celebrities and other non-profits. But this season, Bosh is the one who is thankful. My routine changed dramatically the day i walked into ellen’s Ultimate Workout. it was in this small studio that i was introduced to two philosophies that i still live by today: heart rate-based training and Pilates. SpringS EtErnal For kids having difficulties handling the challenges that come with being a teenager, there’s now a place to go for comfort and collaboration. Adolescence may well be the most challenging and unique stage of a person’s life. Hormonal, intellectual, psychological and emotional changes must all be dealt with simultaneously. While some teens take it in stride and enjoy the experience of not having many responsibilities, others have a hard time finding a way to cope with the feelings of distress brought about by those tumultuous years. Sometimes, the difference between an emotionally healthy adolescence and one that is filled with isolation and helplessness lies in having someone to turn to while trying to get through academic and social problems, and peer and family issues. “It’s critical for teens to have resources and a support network out there to help them resolve conflicts and challenges in a more effective and healthy way,” says Dr. Michelle Channing, a psychologist who serves on the advisory board of the Florida Initiative for Suicide Prevention (FISP) in Weston. “Isolation can exacerbate depression, so having an outlet to be able to talk and work things through helps teens feel like they’re not alone.” That is exactly what FISP founder Jackie Rosen had in mind when she created the HOPE (Helping Overcome Problems Effectively) Clubs in Broward County. The after-school clubs are designed to educate, support and develop problem-solving and coping skills, while fostering the prevention of suicide, bullying and substance abuse, as well as other difficult issues teens encounter on a daily basis. The purpose of the clubs is for students to

Now in its third year, the program is in place in 11 Broward County middle and high schools, including Imagine Middle School West and Cypress Bay High School, both in Weston. Club members meet every week during the school year for one hour. “The first thing they learn is how to solve a problem with several steps: realizing they have a problem, defining what the problem is, giving the problem to the group and having the group members take it on as if it were their own. The group then brainstorms all the possible solutions or coping methods for that problem,” says Rosen. “They help the person with the problem form and implement a plan to either cope or solve it. The person then goes and tries the plan out, comes back, brings it to the group and tells them if it did or didn’t work, and if it didn’t, they know there are always other options.” As executive director of FISP, Rosen deals daily with families who have lost a child to suicide. Often, she says, parents are oblivious to the fact that their child is even contemplating suicide, the third-leading cause of death in youth between the ages of 10 and 24, resulting in approximately 4,600 lives lost each year, according to the Centers for Disease Control and Prevention (CDC). “Kids today are so used to instant gratification. They feel that if their problem’s not solved immediately, the world is going to end. Many times they think they can’t live through what’s happening now,” says Rosen. “It’s very important for parents to realize that the earlier they become aware that something is wrong and the faster they get help for their child, the higher the chances that child will lead a normal, healthy life.” FISP encourages students to start clubs at different schools throughout South Florida. While the organization provides

members with the necessary curriculum and information needed to function and monitors their progress, the clubs are run entirely by students. The point is to have a peer group function in which kids are comfortable opening up to each other and supporting each other. After losing his best friend to suicide three years ago, Renzo Barredo wanted to give back to the community by raising awareness on the subject. He became involved with FISP and is about to become the organization’s newest board member. His future plans include working closely with members of the HOPE Clubs and engaging young professionals by creating a subcommittee to connect the teens with successful young men and women who may become role models to them. “I’ve realized that, being a young professional, you’re able to connect with the kids a little easier than if an older person were to speak with them. We’re not far removed from our days in high school, so we’re able to relate and understand some of the struggles they’re going through,” says Barredo, a 29-year-old financial advisor. Lyndsay Brunstetter, a 12th-grader who co-founded the HOPE Club at Western High School in Davie last school year, is thankful to the club for boosting her self-confidence and helping put her worries into perspective. Today, the 17-year-old is able to better appreciate the value of life. “I’ve been able to relax more in the smaller moments that sometimes teens can get stressed about. I’ve learned to value the little things, even if they are negative, and learn from them,” she says. “I feel like there is more hope in me. INGREDIENTS: ½ oz. pineapple–infused Macchu Pisco 1½ oz. Blackwell rum ½ oz. Luxardo Maraschino Liqueur 1¾ oz. fresh grapefruit juice ½ oz. fresh lime juice DIRECTIONS: Shake everything together in a cocktail shaker, then double strain into a coupe glass. Garnish with a grapefruit peel.

2) Illegalito Created by Tanzy’s master mixologist and advanced sommelier, Adam Seger, this twist on their (practically) official libation is so good, it oughta be against the law. INGREDIENTS: ½ lime, quartered 12 mint leaves 3 2-inch-square chunks of pineapple 1 oz. each coconut milk and passion fruit purée 1¾ oz. Cachaça Brazilian rum DIRECTIONS: Muddle above (smash with a muddler or blunt end of a rolling pin) until juicy and aromatic. Fill glass with ice, top with sparkling water and pour back and forth into an empty pint glass or tumbler to mix. Garnish with a skin-on pineapple wedge and fresh mint.

3) Guarapo, Orange & Honey Sferifications Bubble, bubble, toil and trouble—this one is almost like a science project, but definitely worth the time and effort. INGREDIENTS: 1 part Caine of sugar 1 part orange liqueur ½ part lemon juice 1 part Colombian rum

FOR ThE SphERES: Honey Colombian rum agar-agar Vegetable oil

DIRECTIONS: Grind the caine of sugar and mix it with the rest of the drink ingredients. To make the spheres, mix the honey with rum and agar-agar. Heat it to boiling point and leave it simmering for 3 minutes. Cool it down to 37°C. Extract the liquid with an injector and push it down slowly, drop by drop, to a bath of very cold oil.

THE CONTINENTAL

Stephen Starr’s latest Miami eatery, The Continental—an evolution of sorts of the much-loved Philadelphia staple, which is celebrating its 20th anniversary this month—is Starr’s fourth restaurant in South Florida, following the success of Steak 954, Makoto, and Verde. Menu highlights here include the Build Your Own Sushi, where tuna, salmon, sushi rice, toasted nori, vegetables and garnishes are presented in a bento box with instructions on how to be your own sushi master; Vegetables on Ice, with ranch, hummus, ssamjang, and crisp crudité veggies; the Backyard Burger, with aged cheddar, Nueske’s bacon, onion, pickles, ketchup, mustard served on a Kaiser roll with French fries; Charred Broccoli served with romesco, pickled chilies, Marcona almonds, lime; and Whole Globe Artichoke with dijonnaise.
