WHAT’S GOING ON IN TOWN & ITS SURROUNDS…

WINTER WONDERLAND

Brrrrr! About 75 tons of snow will be delivered to the Pines Recreation Center in Pembroke Pines on Dec. 3 for four hours of pure white fun. From 2 p.m.-6 p.m., families and friends can enjoy the beautiful snow that they rarely see in South Florida. They can build snowmen, create snowballs and and enjoy the frigid fun. The event will also feature visits with Santa Claus, face painting, rides, games, arts and crafts, holiday performances, musical entertainment, a food truck and loads of other holiday activity. The snow area admission fee is $2. For more information, call 954-392-2116. He will be working at the North Pole, but he’s taking time off to make dreams come true for each interested child in the Pembroke Pines area. Download the Holiday Hotline for at www.ppines. com and return the completed form by Dec. 3 to Santa’s Holiday Hotline, C/O City of Pembroke Pines, 10100 Pines Blvd. (2nd Floor Building B), Pembroke Pines.

MY

SITTERS APP

Arrives in Time for the Holiday Season

The My Sitters™ App matches families with qualified, reliable sitters. College Nannies+ Sitters+ Tutors of Weston is a full-service childcare and customized tutoring solutions resource, a new tool to help parents deal with one of the most stressful and time-consuming parts of raising kids. The app allows parents access to highly trained sitters who are specifically aligned with each family’s individual needs and contains all of the information needed: names and ages of the children, their likes and dislikes, allergies, and whether pets are in the equation. It also stores information about the sitters, so families are matched with those that best fit their needs and safety concerns. “We don’t have a bunch of independent contractors who are randomly linked to families,” says Joe Keeley, founder and CEO of College Nannies + Sitters + Tutors. “Our sitters are employees, and every employee goes through a rigorous background screening and interview process. They also have orientation and ongoing training to learn creative play, crafts, games, meal ideas and even jokes! My wife and I use the app to book sitters for our young kids.” Download the My Sitters app or go to www.collegesitters.com or www.collegenanniesandtutors.com/WestonFL.

We’ve got tips on how to get the best of both worlds this festive season.

STYLISH SUN PROTECTION We all look forward to South Florida’s “winter” months when we can comfortably spend more time outdoors, but we can’t forget to protect our skin. “The sunburn ray called UVB is less intense, but the UVA rays are out in full intensity. This means that whether it’s January or July, you’re still getting the same shot of UVA, which can cause significant and irreversible skin damage,” says Corina Biton, the Miami resident and fitness advocate who came up with BloqUV, a sun-protective lifestyle apparel brand that blocks 98 percent of the sun’s rays. An avid runner, Biton created the UV-blocking clothes when she couldn’t find workout gear that was both functional and fashionable. Her line offers 25 different styles for men and women in a variety of gorgeous colors, which can be worn while running, golfing, hiking, swimming, skiing and more, and the UV protection does not wash away with launderings. Get BloqUV at Midtown Athletic Club, 2300 Royal Palm Boulevard, Weston and at www.bloquv.com.

Subscription of the Month Tampon: It’s a word that women often whisper, and, for some reason, we never seem to have one when we need one. To avoid emergency tampon runs, two South Florida women have created Kali Boxes, a box of organic feminine care products that is conveniently delivered to your door by the first of every month. “We loved the idea of a monthly box service that took an annoying task like running to the drugstore for tampons or pads off our “to-do” list,” says Sara Shake, a Fort Lauderdale native who recently co-founded Kali with business partner Jonna Piira. Each monthly box (which is beautifully packaged) comes with 14 tampons or pads, wipettes, panty liners, all of which are 100 percent organic cotton and biodegradable, along with a rotating pampering product. “Many women have never questioned the ingredients in their tampons. Recent research has shown that there are trace amounts of dioxin, a known carcinogen, and other ingredients like chlorine bleach, phthalates and plasticizing chemicals in traditional tampons and pads,” says Shake of the importance of using organic feminine care products. Kali Boxes are packaged every month at a factory in Weston, where new products are also tested. Whole Foods Market is launching a New Year’s campaign called “Feed Your Resolution,” with a list of innovative products for a healthier 2017. • Fired up! Esselstyn devised a plant-based meal plan and developed his own products called Engine 2 Plant-Strong, which contain zero animal products, no added oils and minimal added sugar. Some of the newest products for the “winter months” are E2 Firehouse Chili, E2 Moroccan Stew, E2 Low Sodium Veggie Broth and E2 100% Whole Wheat Pizza Crust.

NEW YEAR’S EVE KISS Just in time for holiday parties and that special New Year’s Eve smacker, there’s a new injectable filler called Volbella for plumper, smoother lips. “Volbella is the longest lasting of the lip fillers and causes less swelling and bruising,” says Dr. Leslie Baumann, founder of Baumann Cosmetic & Research Center, about the filler that lasts around a year. She also says patients are happy with its more natural look and feel. “No one will know you did it because it does not feel rubbery, firm or bumpy in the lips. It’s very soft.” Volbella costs around $450 a syringe and will be available at most dermatologists’ offices by the end of the year.

• Say cheese. Giving up dairy for the New Year? You don’t necessarily have to give up the great taste of cheese. Try Kite Hill Ricotta, a plantbased product made of creamy almond milk that can be used as a filling for pastas and lasagna, or as a substitute for mascarpone. • Creative cauliflower. For those counting carbs, cauliflower has become the new substitute for rice. Swap out traditional rice for the new 365 Everyday Value Organic Riced Cauliflower, which can be found in the frozen foods section. The riced cauliflower is easy to cook and can be used in any dish in which you would normally use rice, from stir-fry and risotto to pizza crust. Get it at Whole Foods Market, 14956 Pines Blvd., Pembroke Pines, or visit www.wholefoodsmarket.com.

Orchard Supply Hardware’s entrance into the South Florida market is underway. And the home and garden retailer, a subsidiary of Lowe’s Co., has decided to make its local debut with three stores in Broward County, including one at 15900 W. SR 84 in Weston. “The entire Orchard team is excited to get to know our neighbors in South Florida,” says Bob Tellier, president of Orchard Supply Hardware. We asked David Rosa, Orchard Supply Hardware district manager South Florida, for details about the company’s foray into Weston. What inspired Orchard Supply Hardware to choose Broward County as the place to make its entrance into South Florida? Orchard Supply Hardware believes that every neighborhood deserves a great hardware and garden store. We selected Broward County because people here enjoy an open, easy, sunny lifestyle, and right now, there is no home/hardware store in the area that reflects that outlook. This is our kind of neighborhood, and one we know we can fit into. Why Weston in particular? Weston is a family-friendly, culturally diverse city where busy residents want to enjoy the Florida lifestyle. We are in the home enjoyment business. We help people accomplish small, easy projects so they can

For example,

our Work Bench was created to deliver on the company’s home enjoyment philosophy to make small-scale home projects easy by providing services such as knife sharpening, pipe cutting, screen repair and key making. In addition, customers may visit our Potting Bench when they purchase a plant and pot to have it potted free of charge. This

Tracey Geffin Dikes

President & Co-owner, Weston Jewelers WESTON

After graduating law school from the University of Miami in 1996, I accepted a job in the Dade County State Attorney’s Office. I was a Division Chief handling homicide cases and supervising other attorneys when I took a leave of absence due to pregnancy complications. The Weston Town Center was being built and my husband Ed decided to leave his family business and pursue his dream of opening a high-end jewelry store. I decided to join him and leave law behind. My new career would give me the flexibility to be there for my kids and support Ed in his new endeavor. I went back to school to get my GIA certification and together we started Weston Jewelers in 2001. It’s been 15 wonderful years since I made the transition and we are still going strong. It was the right decision because now when a client says, “I’ll be back for you”, it’s because they were happy with their experience and trust me to guide them with all their future needs.

Biggest hurdle: My most difficult hurdle is probably trying to separate my home life from work and trying to always be in the moment.

Biggest rewards: Some of the biggest rewards are an engagement—being there from the beginning and helping to plan the proposal and then being sent pictures and texts from the ecstatic bride; guiding someone to choose the perfect piece which I know will make the recipient so happy, and attending an event and having people say, “I love your store, I got this piece there. Your staff is amazing.”

Nicole White Quinn Interior Designer/Blogger SUNRISE

I’ve been designing spaces in my mind since I was a little girl growing up in Jamaica, so becoming a designer was simply in my soul. But my journey was very unconventional. I’m a journalist by training, but secretly started designing homes for friends and family on the weekends, and eventually my business blossomed. I took my first leap in 2008 and I remember driving away from my corporate job that last day and feeling sick to my stomach. What the hell had I done? And guess what? I’d unknowingly leaped right into the recession. Clients disappeared as the economy took a nosedive. I was broke, devastated but undeterred even as I went back to corporate America in 2010 to write for a medical school. Clients slowly started calling again and soon enough, I was back to juggling a full-time job, my design business and, by 2011, becoming a mom. My life was insane, but in a good way. Once again I realized I couldn’t continue at this pace, but this time around it was my clients who said hey, you need to stop playing around and go back to designing full-time. So in 2013 I decided to take one final leap and haven’t looked back since. I haven’t had a slow season since. I honestly think it’s because I was finally ready to embrace this as my true calling and understand that this was my one and only source of income and I had it to give it my all.

The biggest rewards: My clients’ loyalty. I have a serious client cheerleading squad, who I swear show my website, Instagram and Facebook feeds to everyone they meet.

The biggest hurdle: Not taking out a line of credit when I was offered one in 2008, pre-recession. I underestimated the value of having cash flow for your business to cushion you during the lean times.

Richard Kiibler Partner of 305 Design Center DAVIE

In early 2016, I was ready to take make a career change. For the previous 10 years, I had worked as the Director of Development for two different real estate and hospitality development companies in the Republic of Panama. Over that span of time, I worked on projects where Balinese architecture and design were the themes. I made many trips back and forth and truly came to love and appreciate Bali, its people, culture and artisans. When I decided to step away from the corporate development world, it was a no-brainer that I wanted to maintain the connection I had made with Bali. I felt the best way to do that would be to open a showroom in South Florida to showcase the best Bali has to offer in oneof-a-kind artisan furnishings, housewares, art and decor. That inspiration, along with months of research and business planning, led myself and my business partner to open 305 Design Center, which we hope will be the first of many showrooms.

The biggest rewards: It hasn’t been all rainbows and sunshine, but I’d have to say the interaction with our clientele, their appreciation for our products and service is what is most rewarding. We are doing buying trips for clients where we are now doing complete fit-outs for entire new homes under construction, from indoor to outdoor furnishings and all of the art, sculptures, fountains and even synthetic furniture and pool tiles for all of the outdoor spaces. Many more doors keep opening, and that’s truly what makes it exciting to get up and drive to work every day.

The biggest hurdle: Without a doubt the biggest hurdle was getting the showroom set up and to the point it’s at today. We started out with our showroom half-filled and a moderate selection of goods in June; since June, we’ve brought in an additional five containers of merchandise and both the showroom and our warehouse are now well stocked with our merchandise.

Emilio Benitez President & CEO of ChildNet HOLLYWOOD

I made the leap because of my maternal grandmother and because of my father. My maternal grandmother was born an illegitimate child in 1898 Spain. The moral taboo of illegitimacy, however, forced her mother to give her up and she went into an orphanage. In 1899, she was adopted by a loving couple who were unable to have children of their own. They immigrated to Cuba, where years later, my grandmother married and had eight children of her own. By the time she died, she had six grandchildren and two great grandchildren. What started as a life in turmoil ended as life surrounded by joy. My father’s life, too, was tumultuous. He was raised in an orphanage in 1920s Cuba. His father had died in a worldwide influenza epidemic. My father was separated from his mother, who in the span of one week went from a a well-to-do housewife one day to a widow the next. A woman, a widow, a foreigner, with three small children and with all her family back in Spain, and with no money, she did the only thing she knew how to do, and she became a live-in servant, but was unable to keep her children with her. She did the best she could do and placed them in an orphanage. Sadly, my father, at 5 years old, was an orphan, separated from his mother and now, too, from his two older sisters. He lived in his orphanage until he was 14, when he ran away to be reunited with his mother and two older sisters. I promised my father, many years later, before he died and as I started my career as a young lawyer, that I would fight for children like him who found themselves in an unimaginable situation. Because of these two different yet oddly similar experiences, I became very involved in child welfare, especially through pro bono legal work. Also, I became involved in child welfare-related state and local boards, which eventually led me to this position. I keep a photo of my father in his orphanage on my desk as a reminder to me, each day, of the responsibility I have, not only to him and to my grandmother, but to every child who finds himself or herself in this system, through no fault of his or her own.

58

DECEMBER 2016 / JANUARY 2017

The biggest rewards: I see children who enter foster care after being abused, abandoned and neglected, and they are at their lowest point. I see them struggling with their emotions and their behaviors. I see, however, through ChildNet’s involvement in their lives, a transformation. It’s the transformation of the child who came into care because his parents didn’t accept his sexual orientation, and who with the help of another of ChildNet’s many wonderful community partners (The Heart Gallery) exhibited his portrait as part of a traveling photographic art exhibit of children in foster care. A retired art teacher, who had grown children and grandchildren of her own, saw the portrait and felt pulled to the picture. When she approached the portrait and read the attached bio, which mentioned that this young man, 16 at the time, hoped to be an artist, the woman called the number; she began to mentor, then foster him, and finally, two weeks before his 18th birthday, adopted him. Today, he is a successful graphic artist and she feels she responded to a calling from God. These are just two of hundreds of transformations. Transformations from hopelessness to success. Transformations from sadness to happiness.

The biggest hurdle: In my law practice—27 years as a criminal defense attorney—I was responsible for, at times, the life or death of some my clients. In becoming the CEO of ChildNet, I’m still involved in life-or-death issues and, more importantly, the responsibility for the wellbeing of thousands of children in every aspect of their lives. This required me to change my perspective, a perspective I had developed over decades as an attorney. I was able to successfully overcome this initial hurdle of the enormity of the responsibility by realizing that even though I was in a new role, the skills I had honed as an attorney were still extremely beneficial, and in fact, made it possible for me to have success in this role. But more importantly, I overcame the hurdle of allowing myself to feel empathy.

Dr. Dan Barnard, DMA, ASCAP

Associate Dean of Cultural Affairs, Broward College & Director, Bailey Hall CORAL SPRINGS

I always wanted to be a music professor. So when I got my first teaching job at a community college in western Nebraska, I thought I was on the road to a long teaching career. After seven years there, I left to complete my doctorate at the University of Kansas and then was immediately hired as a faculty member at Penn State Erie. As part of my duties there, I was asked to direct a high-profile chamber music series. This opened up a world of possibilities for me and quickly became my primary focus, as I found that I had a natural affinity for it. For me, the process of choosing artists for a concert series utilizes the same skills I employ as a composer—in both cases I am thinking about how an audience will respond to my choices. This is a connection I would never have considered if I had not gotten that job. I knew immediately that I wanted to shift my career into full-time arts presenting.

The biggest rewards: The opportunity to make a meaningful difference in the artistic life of a community is immensely satisfying. My favorite thing in the world is to watch people whose lives have been a changed by that evening’s performance at Bailey Hall.

The biggest hurdle: The most challenging part of the transition was that search committees always prefer experience over education. I had to work doubly hard to prove that my education would be an asset and that my experience was valid even though it was different than their other candidates. Now, seven years later, I am so happy I fought for what I wanted out of my career because my position at Bailey Hall allows me to do what I truly love.

In addition to her own collections, Zack carries unique pieces that she discovers during her international travels. “I like to design an eclectic assemblage of exceptional contemporary furniture incorporating crisp yet classic minimalism,” she says. “I get inspired by what I see during my world travels and add pieces regularly.” For 2017, the interior designer has launched a line of accessories that she has personally created consisting of candles, floral accents like her felt orchid cover, and minimalist wood pillars. The Toby Candle is the organic extension to her designer brand. Always searching for the perfect home product and fragrance, Zack discovered designer Denise Roussakis and asked her to collaborate on her candle and accessories line. The result makes Zack very happy. The rich and soft fragrance evokes a warm and fuzzy feeling

by delicately weaving the herbaceous layers of crisp bergamot with the earthy and woody notes of cedar bark, embracing the senses with a soft and pleasant aroma. The combination of these traditional elements into an accessory easily transitions a space from the ordinary to the extraordinary. The simple and timeless signature of Zack’s designs are again translated into a classic yet striking cube accessory collection to complement her work. The candle line is called Toby Zack Chrome Cubes, and the playfulness of the metallic dots and squares against the formal background portrays the contemporary look in an understated and stylish piece. The elegance of this accessory was created by Zack’s talented designer, Jose Arango, who captured and reflected the essence of her signature look. They’re available in single options or in sets, in packaging that continues the theme of the dots and squares. Minimal and understated, Zack’s e-pay Wood pillars transform an ordinary material into an accessory that brings warmth and form to any surface. fter growing up in New York and working for retail gift and jewelry stores owned by his parents, Michael Solney realized that he had an abundance of design talent. “I was good at balance, symmetry, organizing and displaying merchandise as well as selling and communicating with customers,” says Solney, a creative floral designer and owner of Interior Concepts in Fort Lauderdale. After moving to South Florida in the 1990s, he worked at the DCOTA, merchandising for designers and showrooms. After creating some showroom setups in High Point, NC, with designers Larry Laslo and Julio Jimenez, he grew fascinated with orchids and flowers. “I introduced them to some clients and got involved in DCOTA sample sales with some artificial orchids that sold out quickly,”

says Solney. “I saw what was being delivered by other companies and didn’t think much of the quality or design, so I started to offer and produce artificial arrangements.” His big break came from designer Steven G. (Interiors by Steven G.) of Pompano Beach. “Steven G. started me on some of his jobs, and with teamwork, we created beautiful florals tailored to the jobs,” says Solney. “With help from talented designers like Andres Aguilar and others, I started producing and designing florals and different plants and greenery.” Since then, Solney has grown his business and created many categories and styles of high quality product for residential clients. Today, he specializes

in unique high-end artificial greenery and florals. He works for Steven G., MarcMichaels, Browns Interior Design in Boca Raton and others. His designs can also be found at E.G. Cody and Romo Fabrics in DCOTA and Clima Outdoor in the Miami Design District. “We deliver a quality product that is crafted well and lives up to expectations, always staying one step ahead of the latest trends,” he says. “We can recreate anything desired live or artificial.” Interior Concepts, which is so exclusive that Solney eschews a web site, has a motto for its output of fine floral design: “We say what we do and do what we say.”

A PERSON WANTS TO Google the name of a contemporary superwoman, no doubt Belinda Stronach, a Sunny Isles snowbird and Toronto resident, would appear in bright lights. The Canadian politician, power player and heiress to an estimated $1.4 billion family fortune—her father is an auto parts mogul who came to Canada as an Austrian immigrant with $200 in his pocket—is bringing the $12 million Pegasus World Cup Invitational to Gulfstream Park in Hallandale Beach, a race track that her Stronach Group owns along with others in North America. On January 28th, the race, which attracts celebrities, horse racing followers, gamblers, socialites and other big shots from around the world, will be broadcast live on NBC-TV from 4:30 p.m. to 6:30 p.m. and simulcast worldwide in partnership with Henry Birtles Associates. The contest is expected to surpass the Dubai World Cup as the newest, wealthiest thoroughbred race in the world: The Pegasus World

Cup Invitational winner will take home a cool $7 million. It also supports and promotes organizations geared to the well-being of its industry athletes, both human and equine, including the Thoroughbred Aftercare Alliance and the Permanently Disabled Jockeys Fund. “Although it is the world’s richest thoroughbred horse race, we see it as much more than that,” says Stronach, 50, the divorced mother of Frank, 24, a well known DJ, and Nicole, 23, an accomplished equestrian. “It is an entertainment experience. We will also integrate mobile technology through our wagering platforms in new ways. People can expect a party!” Stronach is a Renaissance woman who also happens to be beautiful and bubbly. She is a businesswoman, philanthropist, activist, heiress, socialite and politician who served two terms in Canada’s House of Commons, where she pushed for more women in Canada’s Parliament, advocated for equal rights and fought to cast a light on the experience of women in politics. “Hard work and giving back are two values instilled in me from childhood,” says Stronach, who also has homes in Aurora, Canada, and Venice Beach, California.“My father worked very hard for his success and always ensured that both my brother and I understood that much was expected of us.” This smart woman listened to her dad. Stronach is now chairman and president of the Stronach Group, a privately held, Canadianbased company that owns, operates and manages leading businesses in industries like horse-racing, entertainment and pari-mutuel wagering technology. The company is the leading owner of horse tracks in America: Santa Anita Park, Pimlico Race Course (home of the Preakness Stakes), Gulfstream Park, Laurel Park, Golden Gate Fields and Portland Meadows, plus leading pari-mutuel technology subsidiaries AmTote and Xpressbet. Stronach has always worked hard, but for years was also known as a party girl. She has been photographed on the arms of famous men, like her pal, President Bill Clinton; HRH Prince Andrew; the late John F. Kennedy, Jr.; Norwegian Olympian speed-skating star Johann Olav Koss (her second husband—Don Walker was her first), former Toronto Maple Leafs enforcer Tie Domi, and Canadian lawyer/politician Peter MacKay. During the past couple of decades, Stronach has been named the most powerful businesswoman in Canada by the National Post, designated as Global Leader of Tomorrow by The World Economic Forum, ranked by Time magazine as one of the world’s most influential people and number 2 by Fortune magazine on its annual list of the world’s most powerful women in business. And while Stronach lives a fascinating life, which includes constant world travel, she is laser-focused on her work. “My Stronach Group responsibilities are diverse and cross all of the verticals of our company,” she says. “But one of my key LEFT: Stronach in May announcing the new, $12 million Pegasus World Cup Invitational with Stronach Racing Group COO Tim Ritvo (left) and Pegasus World Cup CEO Jack Wolf (right).

Your Private Luxury Igloo Awaits

W

E KNOW WE ARE BLESSED WITH THE MOST delicious winter weather in the northern hemisphere this time of year. Combined with white sands, palm trees and balmy ocean breezes, it’s the reason why many of us live here; these five months somehow make up for sweltering summers. Still, the idea of sitting by a fire sipping hot cocoa (or hot toddies) in a winter wonderland is a tableau that beckons. Here we give you some of our favorite spots to get your chill on.

Hey, Ho, Off to the Mines I Go

Perched on the shores of Lake Geneva, with its breathtaking views of the Swiss Alps and renowned Cinq Mondes Spa, the ultra-luxurious Beau-Rivage Palace offers another reason to visit this winter: Two transparent Lakeside Holiday Igloos have just opened for private têteà-têtes or larger gathering for up to six people. Nestled in the hotel’s 10-acre garden, the chalet-chic Nordic retreats have two conceptually different design concepts, the first in modern elegance with frosted silvers and gold and the other in classic alpine ski-lodge style with wooden elements and traditional red and green accents. Both resemble a cozy living room with couches, coffee tables and 360-degree views of a storybook Swiss winter scene from which to tuck into legendary Swiss fondue, dried meat from Valais, pumpkin soup, hot mulled wine or a traditional afternoon tea with a chestnut-morellos Mont-Blanc log. The temporary winter igloos are by reservation only and open until 10 p.m. weeknights and until midnight Friday and Saturday through January 31, 2017. A minimum spend of $495 per hour is required for private reservations. The convivial winter wonderland atmosphere extends throughout the Palace grounds with the addition of the annual ice skat-

Step back nearly 200 years into the town of Dunton, a former mining town in the Colorado Rockies that became a deserted ghost town before being brought back to life as Dunton Hot Springs, a luxury resort complete with restored miner’s cabins (one was the former General Store) and natural hot springs. Choose from 12 individually designed cabins, among them Potter House, the owner’s original abode and a private retreat that sleeps up to 10, or the romantic Dolores, an original cabin perched beside the West Dolores River, complete with fireplace, gas stove and Rajasthan wedding bed. When it’s time to head outside, explore groomed cross-country ski trails or snowshoe through silent meadows. And then there’s ice skating, snowmobiling, skiing, heliskiing, hiking, winter horseback riding in the canyon and, of course, the world-famous hot springs to keep one entertained. Favored by miners, and before them the Ute Indians while roaming their summer hunting grounds, the natural hot springs are dotted throughout the resort, giving guests the options of locations in which to soak, from inside inWESTON MAGAZINE

Canadian Castle

One of North America’s most commanding castles (and UNESCO World Heritage Site), the luxury Fairmont Chateau Frontenac is the stuff of storybook and royal legend. Inaugurated in 1893 with in-room bathrooms and fireplaces—unheard-of amenities in the day—it now has 611 luxuriously appointed guestrooms, nearly eight miles of corridors and 2,000 windows overlooking the St. Lawrence River and parts of the city’s original walled fortifications. The grand hotel is in Old Quebec (where you want to be) in the center of this historic walking city, a short three-minute stroll to the Cathedral-Basilica of NotreDame de Quebec and eight minutes from Quartier Petit Champlain boutiques. The fashionable address has hosted its share of royalty, including King George V and Queen Elizabeth in 1939, Queen Elizabeth II and the Duke of Edinburgh, Princess Grace and Prince Rainier, among other global glitterati attracted to the palace’s opulence and personalized service. With a multimillion-dollar renaissance just completed in 2014, the Chateau’s guestrooms are fit for a queen (or king), and the new urban spa beckons with a host of stress-relieving therapies. If outdoor activities are calling, ski slopes are just 20 and 35 minutes away and day trips can be arranged. A favorite spot for guests and locals is the Chateau’s 1608 Wine & Cheese bar, where the passion of local cheese is matched with wines from around the globe. For history buffs, the hotel offers guided tours daily or self-guided tours via downloadable apps (worthwhile and a step back in time). Ask to see the Chateau’s roof, where four hidden beehives maintained by the hotel’s executive chef produce some of the most delicious honey in the region. Try it for breakfast or on afternoon scones. of its newly completed, $90 million Spruce Peak Village Center, making this the newest and most luxurious alpine village to rival its Aspen cousins. The Lodge is a melding of modern design concepts with a new “Vermont-Alpine” aesthetic, constructed with woven Western Red Cedar timber and stone veneer created from the Champlain Quarries in the Adirondacks. Floor-to-ceiling glass brings the beauty of nature indoors and spotlights abundant work by Vermont’s leading artists (glassblower Simon Pearce, furniture maker Charles Shackleton, potter Miranda Thomas) as well as local painters and blacksmiths to give the lodge a distinctive sense of place. With new luxury residences (winter home, anyone?) as its centerpiece, Spruce Peak Village amenities extend to Lodge guests and include a 10,000-square-foot ice skating rink with performances by former Olympians, the Stowe Adventure Center with its children’s Ski and Ride school, a climbing gym that replicates some of the local rock formations, a movie screening area, a dozen shops, boutiques, restaurants and skier service facilities. This is in addition to the existing performing arts center and lavish 21,000-square-foot spa, ski-in/ski-out access to more than 100 legendary trails, snowboarding and a heated, outdoor four-season pool. In other words, the phrase “I’m bored” shouldn’t cross anyone’s lips. Rates begin at $319 per night, with discounted ski lift tickets available with weekday reservations. rises anew from the snow with a team of “ice artists” descending from every point on the globe to harvest 1,000 tons of ice from the Torne River and hand-craft this seasonal masterpiece. More than 50,000 people annually come to experience a night or two in a space that’s never the same place twice. Although it varies year to year, the hotel generally has about 65 rooms, divided into deluxe suites, art suites, ice rooms, snow rooms and group rooms. Guests can choose between heated accommodations or spend the night (usually only one because of its extreme conditions) in a guestroom that’s about 23 degrees Fahrenheit. Granted, this may be the only hotel you’ve ever heard of that gives guests a “survival course,” warm outer clothing and Arctic sleeping bags to prepare for a night in the snow-and-ice rooms, but these are bragging rights you’re talking about. Drink it in; wander the ice palace, head out on a reindeer sled excursion, snowmobile to an Arctic wildlife safari or catch the Northern Lights before hitting the ice block in your custom-room. If you’re wondering how the doors don’t stick (it’s ice, after all), it’s because there aren’t any. In the morning, a staff member draws the doorway curtain and presents hot lingonberry juice in bed. The night’s sleep is surprisingly good in the crisp air, but just in case you need some reviving, the hotel’s adjacent reception area has a sauna and roaring fire to de-thaw. Prepare to tell the world about your adventure, for upon checking out of the ICEHOTEL, you’re presented a personalized diploma with the date and temperature inside and outside on the night you stayed. For this once-in-a-lifetime experience, fly into Stockholm, Sweden, then take another plane to Kiruna airport. From there, it’s just 20 minutes to ICEHOTEL by car, taxi…or dogsled. Rates begin at $259 a night; for more information, visit www. icehotel.com. inWESTON MAGAZINE

ometimes the universe has its own plan. When Chef Alex Becker was ready to move to Rome for a culinary opportunity in one of the Eternal City’s finest restaurants, a visa snafu brought him to Miami to seek help from the Italian consulate. While visiting South Beach, he discovered Nobu, which led him on an odyssey that included nearly a decade with the restaurant empire (including executive chef positions at Nobu New York, Honolulu and Los Angeles), then on to Katsuya as corporate executive chef opening restaurants around the globe. That’s when Cupid put his future wife in the seat next to him on a flight to Japan (12 hours to chat with a potential beloved provides a charming chef enough

time to seal a dinner date in row 63!), and finally, in 2014, South Florida beckoned once more with an offer he couldn’t refuse: a chance to open and mastermind the menu at Kuro Japanese Craft Kitchen inside the Seminole Hard Rock Hotel and Casino. The critics have spoken, with an avalanche of honors that includes Zagat’s “Top 10 Restaurants to Try Now,” as well as “Best New Restaurant” and “Best New Chef ” by New Times Broward-Palm Beach. Strolling across polished marble floors through the Hard Rock Casino’s grand salon and up the steps into Kuro transports guests into a glamorous Las Vegas restaurant, with opulent beaded chandeliers dripping from an undulating wood-beamed ceiling, flanked

by a 400-bottle wine vault, shimmering garden pool and vibrant sushi bar. The “deep house and new disco” background music creates a mod-ish vibe (the house DJ comes in three times a week to design new mixes) that’s subtle enough not to be overpowering. The sophisticated crowd is a combination of visitors and locals who return for Becker’s varied menu and often a culinary tour designed by knowledgeable servers, who are themselves ardent fans of Becker’s cuisine. Gabe, one such tour guide, a selfdescribed foodie who has been with Kuro nearly a year, says the “desserts are from another planet” (thanks to Pastry Chef Ross Evans), and is most excited when he gets to design a menu for his guests. “I want

table hopping addition), featuring tuna, yellowtail and salmon with dollops of four sauces: jalapeño ponsu, shoyen, creamy avocado and spicy miso. Nightly specials vary based on the fresh fish Chef Becker sources from Japan. He’s currently designing an Omikase menu “to present super-seasonal ingredients,” he enthuses. Don’t miss the innovative cocktail menu that is divided into five flavor profiles—sweet, savory, bitter, salty and umami (“San” is a refreshing vodka-based cocktail with absinthe and grapefruit and topped with shiso, a Japanese herb from the mint family), or the aforementioned dessert menu, especially the Chocolate Hazelnut Bar with three types of chocolate and a touch of fresh raspberry, topped with a dark chocolate ganache. A glamorous date-night outing, Kuro is located at Seminole Hard Rock Hotel and Casino at One Seminole Way in Hollywood. to earn guests’ trust with a menu I create for them,” he explains. “Let me bring out two dishes. If you like those, we’ll go from there.” As such, he’s created a fan following of Chef Becker’s cuisine by designing tastings for regulars each time they visit. It’s a novel approach and decidedly fun culinary adventure, as you don’t know what’s coming next, though you can always ask and make alternative choices. Chef Becker spent six months creating the expansive menu, which is separated by sections, starting with the lightest (chilled) and progressing to the heaviest (land and sea) with sushi as the final dish (before galaxyshifting dessert, of course). As part of Kuro’s signature style, he highlights classic Japanese ingredients and techniques to create contemporary dishes that are entirely new, yet approachable. The flavorful Hokkaido Scallop Sashimi is from Japan and served with yuzu gel, young ginger and sea salt, while

the Seared Salmon Sashimi features Scottish salmon with apple chutney, Japanese 12-spice and creamy sesame. The Wagyu Tacos are a must-try, served with spicy cilantro, soy shallots and aji Amarillo aioli. New to the menu is the Snapper Nitsuke, featuring Florida snapper, Okinawan Japanese potatoes and simmered vegetables in a broth that’s so flavorful, the waiter will bring a side of rice to soak up the remaining elixir. 911Boxster V. 718 & Cayman

Porsche’s iconic sports cars become more distinct, and each is better for it.

By Steve Siler

P

orsche has a problem. It’s a problem pretty much any other carmaker would dream of: it has two brilliant sports cars, the mid-engine Boxster/Cayman and the iconic, rear-engined 911 Carrera, both of which are quite close to perfection, but both of which, alas, are quite close to each other in terms of appearance and performance. For 2017, Porsche has addressed these fast facsimiles with refreshed versions of both that make them each a bit more distinct, yet markedly improved.

2017 PORSCHE 718 BOXSTER AND 718 CAYMAN

One could say that the Porsche Boxster was crafted from the proverbial rib of the vaunted 911 Carrera when it appeared back in 1998, but to be more accurate, it was crafted not just from the Carrera’s rib but also its engine, chassis, interior, and more. Even its distinct peanut-shaped headlamps were common to both. The biggest differences were the locations of their flat-six-cylinder engines (just in front of the rear wheels on the Boxster versus behind the rear wheels for Carrera) and the amount of power each produced. The Boxster was slower, of course, but as a mid-engine car, was a brilliant handler. For a car ostensibly positioned as Porsche’s junior sports car, it wasn’t all that junior. The line became even blurrier when the Boxster’s slightly pricier hardtop counterpart, the Cayman, arrived. As the cars matured and grew more powerful, the differences between the Boxster/Cayman and the flagship 911 narrowed, and when Porsche finally dropped the actual Carrera engine into the Cayman GT4 last year, it was so good it

126

DECEMBER 2016 / JANUARY 2017

almost embarrassed the Carrera. And no one embarrasses the Carrera, least of all another Porsche. And so for the Boxster/Cayman line for 2017, Porsche has installed turbocharged flat-four-cylinder engines in place of last year’s flat-sixes. Punishment? Hardly. Both are more powerful than their predecessor, with standard models producing 300 horsepower and “S” models producing 350, with more torque available than any of their respective predecessors. While some will miss that trademark flat-6 sound (which now belongs exclusively to the Carrera, thank you), these flat fours sound very, very alive, especially with the optional active exhaust. Every body panel from the ground to the windows have been replaced, too: fenders are more creased, headlamps are more triangular, and new clear lenses taillamps are conjoined by a rear lip spoiler with chrome “PORSCHE” lettering poking out from below. The new models also ride on an even more focused chassis, and upgraded interiors feature

new vent designs and the newest Porsche Communication Management software with optional real-time traffic information, Google Street View and Apple CarPlay. The cherry on top is the christening of the two models with their very own model number—718—though don’t think for a minute that these cars are merely 718/911ths as good as the Carrera. When the next all-new model arrives in about three years, expect the Boxster and Cayman names to be dropped altogether, leaving only 718 coupe and 718 spyder as their monikers. Oh, yeah—and like most ragtop models, the convertible 718 Boxster is now priced higher than the coupe, with a starting price of $57,050 versus $54,950 for the 718 Cayman. Despite losing two cylinders, the 718 Boxster and Cayman are faster and sexier than ever. And now, they’re not following in the Carrera’s tire tracks—they’re making their own.

2017 PORSCHE 911 CARRERA

The Porsche 911 Carrera is a car that needs no introduction—except when introduced next to the new and improved 718 models. Like its younger siblings, the 911s get a nip and tuck, yielding cool, threedimensional taillamps, new front and rear fascia, and a revised rear grille with longitudinal vanes versus the lateral slats of yore. Coupe, Cabriolet and nifty Targa models remain available, each adding new infotainment systems to their luxurious interiors. A new steering wheel (also shared with the 718s, incidentally) features a dial-type drive mode controller that rachets up its powertrain, steering, and suspension settings along normal, Sport, or Sport+ programs; mixing the attributes is possible through the Individual setting. The track-focused Sport Chrono option adds a new “Sport Response” button that places the

2017 Porsche 911 Carrera (Base price: coupe, $90,450; Cabriolet, $102,750; Targa, $109,650)

• Convertible (Boxster) now pricier than coupe (Cayman)

• Updated styling, still timeless

• Turbocharged flat fourcylinder motors are stronger than old flat-sixes

• Spectacular turbocharged flat-six engines

• Featherweight, fast and fuel efficient

• Available in three body styles

• Commonplace, but eminently respected

entire drivetrain on high alert, making a veritable explosion of power and responsiveness available for a short time, usually about 20 seconds. Speaking of power, the 911 Carreras and Carrera S models now feature turbocharged 3.0-liter flat-six engines, with base models producing a more-than-robust 370 hp and S models churning out 420 hp. As with the 718s, copious turbocharged torque allows accelerative force to be summoned with an immediacy that no standard Carrera model has delivered before. Unlike the 718s, however, the 911 is offered with all-wheel drive, further helping get that power to the ground. And even though Carrera’s rear-heavy layout is a physics challenge from a handling standpoint, new torque vectoring and active suspension systems have effectively tamed the beast. In other words, if you thought the Carrera was the perfect sports car before, wait until you drive the new one. If there are any flies in the ointment, the Carrera’s rear seats remain a joke, and prices have climbed even higher, from $90,450 for the base coupe to $123,650 for the Carrera 4S Cabriolet, with many items like navigation and communication services offered at extra cost when one would expect them to be included gratis at this level. Also, with so many 911 models built since the 1960s, the Carrera doesn’t turn heads like most six-figure sports cars. But none of that matters when you are alone on an open road, where it will only take a few miles for anyone to realize why this car is such a legend.
