ROGER THAT Racing mogul Roger Penske has one more thing to add to his near-endless list of achievements: opening the largest Porsche dealership in the country, and it’s right here in Davie. By Linda Marx

WHAT’S GOING ON IN TOWN & ITS SURROUNDS…
Roger Penske loves cars, boats and hard work. He talks about his new Porsche dealership in Davie—the largest in the country— his yacht based in West Palm Beach, and a strong love for his family. By the time Penske was 14, his father had encouraged him to work at a gas station in his hometown of Cleveland, Ohio. Two years later, the auto racing entrepreneur, now worth $1.52 billion according to Forbes, was employed by the city’s Jaguar dealership. On his own, he bought and sold older cars, repairing and then selling them. In a few short years, he had found his calling. “Cars were fast, and I always loved working with them,” says Penske, during the recent grand opening of his Broward West Porsche dealership in Davie, where members of his Team Penske IndyCars racers joined him to celebrate. “I got into racing and loved it.” During his 20s, Penske, now 79, took up professional racing, winning four consecutive Sports Car Club of America National Championships (from 1960-1963), and was named Sports Illustrated’s Driver of the Year in 1961. “To me, racing is so exciting,” he says. “I raced in a Corvette in a hill climb and was ready. I had success from then on.” Has he ever. The tireless racer retired as a top driver at age 28 and launched Team Penske, which has won 16 first-place
finishes at the Indianapolis 500 from 1972-2015. In its 50-year history, Team Penske has won more than 170 races and 13 national championships. In his rare moments away from the track, Penske, who is based in the Detroit area and keeps his 197-foot yacht (The Podium) in a West Palm Beach marina, runs the Penske Auto Group, one of the largest car dealership companies in the world. “We represent 41 brands, including seven other Porsche dealerships in the U.S.,” he says, while enjoying the beauty and grandeur of his new, 61,000-square-foot Davie store, the largest in the U.S. “About 60 percent of all of my brands are in the U.S. and 40 percent are international. We have 342 franchises worldwide, and I travel to 75-80 percent of them constantly.” His Penske Auto Group is part of the entrepreneur’s Penske Corp., with subsidiaries that operate in a variety of industry segments, including retail auto, truck leasing, transportation and professional motorsports. Revenues exceed $26 billion, operating in more than 3,300 locations and employing more than 50,000 people around the world. Penske has also collected about 75 rare and exotic cars, some of which are on display in the new Porsche dealership, a short pedal-to-the-metal ride from Weston. “We picked this area to open Porsche because of the density of the population and the need for Porsche,” says Penske. “We’re excited and happy to be here.”

• Organizations closest to their heart: Charity for Champions. It is our vision that by playing sports and understanding the importance of education, young student-athletes, regardless of any limitation (adversity), can learn the value of team leadership, academics, sportsmanship and community service. To achieve these ends, Charity for Champions provides scholarships to young individuals based on an application and interview process that considers several criteria, such as academic accomplishments, athletic achievements, team fellowship, artistry and community involvement. Our mission is to support student athletes with scholarship programs.
• Why they’re so invested: We wanted to recognize young individuals who strive academically and in sports, kids who usually don’t have the opportunity to apply for a scholarship that is targeted directly to their achievements as scholar-athletes. These students have to work extremely hard to keep up with their grades as well as demanding schedules with their sport of choice.
• The extent of their involvement: My wife and I set up the entire application process from beginning to end. She coordinates the online aspect of this process and once we receive the applications, we read every single one, including the essays, in order to decide who will get a one-on-one interview. During the interview process we have the opportunity to meet the students and get to know more about their stories. The selection process is the most difficult part, because they all deserve an award. The online application is open to any scholar-athlete who meets the criteria and wants to participate. This year we were able to grant over 65 scholarships and over 250 awards since 2008.
• Why everyone needs to give back: There are so many different causes that you can get involved with. Many organizations rely on volunteers to fulfill their goals. In our case, we thought we were giving back, but every year we realize how much we learn and gain from working with all the students that apply for our scholarship program. This has given us the chance to do something as a family, something so much more valuable than we ever thought. It is truly a privilege to meet these young adults with promising futures and show them that there is someone in the community that recognizes their efforts. inWESTON MAGAZINE

• Organization closest to their hearts: Randy: The 3G Project. We provide a lifeline to teenagers in the foster care system through various programs and mentorships. I joined the board in 2015 after a conversation with one of my coworkers, Tim Bourne. Tim was adopted as an infant and started the organization with his wife, Nissa, four years ago. Tim understands what foster kids are going through and has a genuine desire to help them stay on track and become successful adults.
• Why he’s so invested: The statistics alarmed me. Foster kids are 10 times more likely to commit a crime, 25 percent of foster kids experience homelessness after they age out of the system and only 3 percent of foster kids earn a college degree. I can go on and on. These kids do not choose to be in the foster care system and the odds are stacked against them. We are working to reverse these statistics one kid at a time.
• The extent of their involvement: I am the fundraising chairman and sit on the board of directors. I work throughout the year planning fundraising events and coordinating programs for the kids. I use my professional network to find resources and fund the organization. I also make sure we find ways to reward the kids that are doing well in school and staying out of trouble. We took a group deep-sea fishing for the first time this year.
• What they are most proud of: We started with a group of ten kids four years ago and almost zero funding. We now have over 30 kids (including the first 10) in our program and raised over $20,000 last year. My wife and I hosted the first annual Cheers for Charity event at our home last December and had over 150 friends and family attend. My involvement with the The 3G Project has helped our three children understand the importance of giving back and helping others. This year my oldest son, Jaden, decided to host a threeon-three basketball tournament with his best friend, Jared Brody, to raise money for our organization. inWESTON MAGAZINE

• The extent of her involvement:
Fundraising for research for cures and programs/services to support those served by the Organizations; chairing, sponsoring, hosting and participating in special awareness events throughout the local community and coordination of statewide campus events; production of awareness videos to promote greater exposure and support for the organizations’ causes; and mobilizing teams and contributors who can engage others to support the mission of the cause.
• Why she’s so invested: I was raised in a family where both my parents were college professors. Education and being of service went hand-in-hand as a responsibility and a privilege. My involvement, and Keiser University’s involvement, with the Cystic Fibrosis Foundation began with a story I learned about a father who traveled to Tallahassee to meet with then Governor Jeb Bush. He bravely shared the story of his beautiful daughter’s plight with CF. I was moved by this father’s tireless mission to help his daughter, to raise awareness of CF, and also Governor Bush’s commitment to lead a series of annual events in Broward County to raise funds for CF awareness, research and a cure. We have been supporting CFF for greater than 10 years, raising nearly $400,000. Regarding the American Diabetes Association, it is personal to my family. My husband lives with the disease and is currently serving as Chair of the 2016 ADA campaign. Some of our team members at Keiser University—who have been with us for many years—are also personally impacted, whether they or their family members are living with diabetes. One of my first jobs after college was as the pro-bono Coordinator for Broward Lawyers’ Care, where I had the opportunity to appreciate how important fair access to legal service is for our most vulnerable citizens, such as the financially disadvantaged, single moms, elderly and children, crime victims, the disabled, and returning veterans. Through the LASBC’s annual “For the Public Good” campaign, I have had the privilege of continuing my passion for this cause.
• Why it’s important for everyone to give back: For myself and my family, being of service is truly a family value. It is also a responsibility that we instill in our students because we believe it contributes to a well-rounded, compassionate leader in our community and in one’s profession; one’s most valuable resources are often their time and compassion for others, not necessarily their financial means. inWESTON MAGAZINE

I’m also proud to be a member of Goodman JFS, which is a jewel in Broward County. We help Holocaust survivors, provide multifaceted counseling services, and so much more. LINGUINE ALLE VONGOLE
“Everyone in my family knows that I love pasta and seafood. My Italian mother would often cook linguine and clams during the holidays, which is why it always reminds me of home. With the freshest clams and good Italian olive oil, this dish offers great warmth for the entire table to share. I hope my guests love it as much as I do for the holidays.” THE RECIPE: • 12 sliced fresh garlic cloves • 3/8 cup of extra-virgin olive oil • 6 dozen middleneck clams (12 clams for each person) • 1 ½ cups of white cooking wine • 6 cups of salted water from the linguine • 1 ½ tbsp. of chopped Italian parsley • 1 ½ tsp. of kosher salt • 1 ½ tsp. of black pepper • 15 oz. linguine al dente • Grape tomatoes at your discretion
INSTRUCTIONS: Cook the linguine in salted, boiling water using the instructed cooking time from the package. While the linguine is boiling, pour the olive oil into a 10-inch frying pan with the garlic, cooking until golden brown. Add the middleneck clams, white wine, water and the remaining ingredients, and then bring them to a boil, cooking for 4 to 6 minutes or until the clams open. (If using a gas stove, remove the pan from the flame before adding the clams and the white wine, so the clams do not burn.) Strain the pasta and add it to the clams. Top the dish with a drizzle of extra-virgin olive oil and roughly chopped Italian parsley. Cooked or cold grape tomatoes can be added if desired.

“Pumpkin cheesecake has always been my favorite dessert for the holidays—there’s nothing like nutmeg, cinnamon and the soft, creamy texture of the pumpkin cheesecake filled into a graham cracker crust, finished with subtly sweet toasted meringue. I suggest ending your party with mini pumpkin cheesecake bites paired with a nice espresso from Coffee Hub, a coffee tricycle that uses pedal power to make coffee. The owner, Edilson Cremonese, will bring the coffee bike to your party and take over all the planning for you. For more information, check out Coffeehub.us.” THE RECIPE: PUMPKIN CHEESECAKE FILLING 16 oz. cream cheese 8 oz. pumpkin 3 eggs and 1 egg yolk 1/4 cup sour cream 1/2 tsp. cinnamon 1/8 tsp. nutmeg 1/8 tsp. cloves 1 tsp. vanilla 1 cup sugar GRAHAM CRACKER CRUST 4 cups graham crackers 1 cup granulated sugar 2 sticks of butter MERINGUE 6 egg whites 1 cup sugar
INSTRUCTIONS: Create the crust by mixing together the melted butter, sugar and crushed graham crackers. Line a mini-cupcake pan with cupcake wrappers and spoon in the crust mixture, firmly pressing the mixture into the bottom of the pan. Bake for 15 minutes at 350 degrees. Remove and let cool. For the pumpkin cheesecake filling, beat the cream cheese and sugar, then add the spices and eggs one at a time until combined, followed by the pumpkin and sour cream. Scoop the filling on top of the baked graham crust and bake for 15 minutes at 325 degrees. Let cool and start the meringue. To make the meringue, beat the egg whites and sugar for 10 minutes on medium speed until soft peaks form. Pipe onto the cheesecake and torch. If you don’t own a torch, place in the oven for 2-5 minutes at 350 degrees until meringue is golden brown.

“This is my great-grandmother’s recipe and it’s a traditional dish that is prepared in my home every holiday. It is comforting, warm and decadent— with each bite, it brings me back to holiday memories of growing up as a child and enjoying this savory dish.” THE RECIPE: • 2 cups instant polenta • 4 cups milk • 4 cups heavy cream • Salt to taste • 3 tbsp. mascarpone • 1 cup Parmesan cheese • 1 pint oyster mushrooms • 1 pint shiitake mushrooms • 1 pint chanterelle mushrooms • 1 shallot (minced) • Fresh thyme
INSTRUCTIONS FOR WILD MUSHROOM RAGOUT: In a hot sauté pan, add 2 tablespoons of butter. Once melted, add one finely minced shallot. Sauté 1-2 minutes then add your mix of mushrooms and cook 5 -7 minutes. Add salt and pepper and some fresh thyme.
INSTRUCTIONS FOR POLENTA: Bring milk, cream and salt to a simmer. Then add your instant polenta, stirring continuously till thickened. Remove from heat and add the mascarpone and Parmesan cheese. Garnish with the wild mixed mushrooms ragout and a drizzle of truffle oil.

“Squash soup reminds me of autumn in New York, where I grew up, and going to the different farms where you would see all the brightly colored squash growing. I’ve made this soup for many years, and each year, I change it up by garnishing it differently, creating a rustic or elegant presentation. Since it’s made with two different types of squash, you get a combination of both a starchy and a sweet taste.” THE RECIPE: SOUP • 4 tbsp. butter • 4 cups butternut squash peeled and diced (no seeds) • 4 cups kabocha squash peeled and diced (no seeds) • 1 medium onion, diced • 2 stalks celery, diced • 4 cups milk • 1 cup heavy cream • 3 cups water • Salt to taste • Maple syrup (if desired) SACHET • 4 cloves • 1 cinnamon stick • 6 star anise • 2 tbsp. allspice berries
INSTRUCTIONS: Heat the butter in a large saucepot until melted. Add all of the squash, celery and onion. Sauté on low to medium heat until the squash begins to fall apart, but do not get any color on any of the vegetables. When the squash is soft, add the milk and water to cover the vegetables. Add the spices wrapped in cheesecloth (spice sachet). Simmer on low to medium heat for 30 minutes or until the all of the vegetables are falling apart. Remove the sachet and blend the soup in a high-powered blender until very smooth. Adjust seasoning with salt. If you like the soup a bit sweeter, you can always add just a touch of maple syrup. Serve in small espresso cups garnished with small diced sautéed apples or whipped cream flavored with ground allspice or both.

“I’m from a Greek family and the Shrimp Saganaki is prepared on Christmas Eve as an accompaniment to other dishes on the table. It’s certainly one of our family favorites! It’s easy to make and can be served as an appetizer or side dish at your holiday feast.” THE RECIPE: • ¼ tsp. dry mustard • ¼ tsp. of sugar • 2 tsp. minced garlic • 1 tbsp. minced dill • 3 tbsp. olive oil • ½ cup tomato sauce • 2 cups fresh chopped heirloom tomatoes • 2 cups minced onions • ¼ cup finely chopped parsley • 1 lb. of medium peeled shrimp • 1 cup of feta cheese, crumbled
INSTRUCTIONS: In a saucepan, heat the oil and add onions. Stir and cook onions until brown. Add garlic, dill, parsley, mustard, sugar, heirloom tomatoes and tomato sauce, simmering for approximately 30 minutes. Add shrimp to the sauce and cook an additional 3 minutes. Pour entire contents of saucepan into a 1 ½ quart casserole dish. Sprinkle crumbled feta cheese on top. Bake for 5 minutes at 425 degrees in the oven or until the cheese melts. embroke Pines is undergoing a renaissance of culture and lifestyle. Terra, an integrated residential and commercial development firm based in Coconut Grove, is about to change the lives of the Broward city’s residents and visitors. The company’s announced Pembroke Pines City Center, a 47-acre urban destination, will bring retail, residential and varied entertainment offerings to the city. The project will be up and running by mid 2017, according to Terra President and Co-founder David Martin. “I am 100 percent excited about Pembroke Pines,” says Martin, an original thinker and busy developer who, among other projects, is also creating the 121-acre master-planned community Botaniko Weston. “We found a hole in the density, and we are serving a need.” Pembroke Pines City Center is situated at the southwest corner of Pines Blvd. and Palm Ave., the last large piece of undeveloped property on Pines Blvd., east of Interstate 75. The project will include 300,000 square feet of lifestyle-oriented retail, enter-

tainment and restaurant space alongside of 450 multifamily apartments. The project, part of Terra’ s nearly $4 billion development portfolio, will be created in two phases. Phase One will offer 200,000 square feet of supermarket-anchored retail space currently under construction. Phase Two, with 450 multi-family apartments and another 100,000 square feet of retail/commercial space, will be coming later. (Timing for this has not been finalized.) “We are creating unique developments,” explains Martin of his vision. “Our mission is to improve communities through developments that fill a void in the marketplace.” Martin, an advisory board member for the
University of Miami School of Architecture and Real Estate Development+Urbanism Program, is an unusual developer who creates exceptional developments in unexpected places which help redefine the way people live. He delves into neighborhoods, learns everything he can about them and their population, then hires the most brilliant minds in the areas of architecture, engineering and design to work their magic. His choice of Pembroke Pines offers an excellent opportunity to show his stuff; his vision of a City Center is an idea many others have championed and desired for at least a decade. But for a variety of reasons, no one acted on it. Pembroke Pines is the second-most populated city in Broward County, and home to a growing base of large corporate users. With so much activity and more people moving to Broward County every day, there is a continued need for housing and unique recreation and entertainment options. According to the 2014 U.S. Census Bureau estimates, there are just under 170,000 Pembroke Pines residents, but that number is growing quickly in the way of families, couples and singles. With population increases, the need for goods and services is even more important. “We are seeing a surge in demand for new retail and lifestyle offerings,” says Martin, who holds a master’s degree in business administra-
tion and a law degree with a concentration in land use and planning from the University of Florida. “City Center will feature a mix of commercial and residential uses in a walkable setting that draws visitors from the immediate neighborhood as well as from across South Florida.” With nearly 400,000 people living within a five-mile radius of the City Center and 1,500 residential units in walking distance, the project is generating interest among national and regional retailers. Since retail in general has been stagnating due to competition from the Internet, especially from behemoths like Amazon, creating a hub with many diversions is a smart way to forge toward the future. It not only brings people into the stores, but the entertainment surrounding the retail will keep them lingering longer. “We are finding that once retailers learn about the activity that will be generated at the site and the household and daytime demographics in place—plus the strength of the developer—their interest in the project and in Pembroke Pines only intensifies,” says Rod Castan, president of leasing and management for The Courtelis Co. overseeing retail leasing for City Center. Agrees Martin: “This area has great income demographics with every neighborhood being different—all good for retail.” City Center’s master plan calls for a
lifestyle center, including supermarkets and a movie theater, alongside smaller anchors, a fitness center and freestanding restaurants, as many as a dozen. There should be 30 to 40 tenants when all is in place, and options for two hotels offering about 350 rooms. The architect for the project is Beame Architectural Partnership of Miami; the look will be coastal vernacular with metal roofs. Next door, the city of Pembroke Pines is completing a $60 million civic and cultural center with a showpiece, 3,500-seat performing arts center and conference hall. There will also be an outdoor plaza, a 10,000-square-foot art gallery and a new city hall. The combination of the two components—City Center and the civic and cultural center—should attract people from around the world. With so much international unrest and domestic tension, young families are looking for safety and a sense of community. Taking ideas from the New Urbanism movement, Pembroke Pines City Center uses the best principles of traditional town planning. When everything is finished, the City Center area will offer life’s daily needs via short walk, bike ride or car drive. After securing the land, a variety of developers have hopped aboard, building homes as a complement to City Center. One project is completed, another is nearly finished, and
a third is in the early planning stage. Savvy developers who have done their homework understand that Pembroke Pines is an area targeted for tremendous growth attracting people of all ages and stages in life. New housing is a natural and will enhance all commercial ventures. Montage Pembroke Pines has 700 rental units, a clubhouse, fitness studio and more, spread over 27 acres. The project was developed in two phases by Mill Creek Residential Trust. Town Pembroke Pines, 365 luxury rental units on 11 acres, is being developed by The Related Group. The project broke ground in late 2014 and is nearly finished. Terra has plans for another mixed-use project in Pembroke Pines which will have a residential component of single-family homes with a state-of-the art clubhouse, plus more desirable retail. “We have done our research, and we know this area will attract young families,” says Martin who can’t give specifics because the project is still in the planning and development stage, but adds, “People today want new construction, and there is very little single-family home space remaining.” People also want a safe and easy lifestyle in which to raise their children, care for aging parents and make their own lives as fulfilling as possible. They like amenities on the premises as well as culture and entertainment to be no more than a few minutes away. “Boutique living is a new trend,” says Martin. “No congestion and no huge homeowners’ association.”

There is no better way than during takeoff and landing at the Cancun airport to be awestruck by the impenetrable jungle of Quintana Roo, the state that has grown exponentially over the last 50 years beyond the party Mecca of Cancun to quieter destinations like Akumal, just an hour south of the bustling airport. One contemplates how ancient Mayans hacked their way through the jungles to carve impressive sites, several of which (Tulum, Cobá and Chichen Itzá) are near Akumal, an area that means “Place of the Turtle” in the ancient Mayan language. The sleepy village first became popular in the 1950s by divers and snorkelers wishing to become one with the largest turtle habitat in the western Caribbean, thanks to the Mesoamerican Barrier Reef that is a natural and abundant turtle feeding ground. Today, the sleepy town remains, is home to ONDARTE International Artist Residency, and is joined by luxury oceanfront resorts that cater to travelers who want to snorkel, dive, climb and explore, or simply relax and do nothing at all. For even the most spirited traveler, the siren song of the area’s newest resort, Secrets Akumal Riviera Maya, makes it all too tempting to wind down, relax at the resort and paddle out from the beach rated “Top 10 in Mexico” to explore an area teeming with fish, coral and majestic turtles.
HISTORY
With its mantra of “Unlimited Luxury,” the adults-only Secrets Akumal Riviera Maya opened in November 2015, with its last luxury element, Spa by Pevonia, finished in February 2016. It is a self-contained cocoon with a thoughtfully designed layout, from the 50-foot-high open-air lobby below a natural thatched roof that overlooks infinity pools and lush gardens to 434 rooms spread among 11 buildings in a large U shape to offer guests space and privacy. The resort sparkles in its newness, designed with lagoons and natural springs to flow within the 14-acre compound toward the ocean, always surrounding guests with water and lush botanical gardens alive with exotic birds and their joyful songs. Secrets Akumal (and its sister property,

Secrets Maroma down the road) are owned by the same group of Mexican businessmen who have infused this oceanfront palace with modern style and colorful touches of tradition, especially in the Oaxacan art and natural textures found throughout the resort and its guestrooms. As with all Secrets, Akumal is adults-only, creating a relaxed, laid-back ambience with not a child in sight. This particular resort is popular with honeymooners, but we found many guests celebrating anniversaries, birthdays and friends’ getaways, for a diverse mix of mostly upscale clientele from the US, C anada, England and France. And as with the world’s most successful resorts, the owners tapped a passionate, lifelong, secondgeneration hotelier to launch and create four-star luxury (the resort is aiming at five stars), hand-select more than 500 staff and be an active director of this multifaceted retreat. His standards are high, his eye is keen, and guests will see the difference between this and perhaps larger or less-expensive all-inclusive Riviera Maya resorts.
WHAT WE LOVED
The general guest consensus, and our own experience, came down to luxury, romance, quality, variety, service and cuisine, though not necessarily in that order. Though all-inclusive, no tacky wristbands exist here, allowing you the freedom to move about without being “tagged” like a dolphin. After an hour drive south from Cancun, you’re greeted with cool oshibori towels, champagne, water, cookies, apples and a team of employees dedicated to your arrival. Nine restaurants feature Italian, Pan-Asian, Mexican and French cuisine, with others that serve steak, seafood and continental, plus a 24-hour café and 24-hour room service with an in-room “butler box,” a two-way cupboard to receive room service undisturbed. All (top shelf) alcoholic and non-alcoholic beverages are included. Except for the lively Japanese teppanyaki show at the Pan Asian restaurant, no reservations are required, meaning guests can conceivably restaurant hop for starters, main courses and desserts. An all-suite resort, the smallest guestrooms were as large as my first post-college apartment, about 800 square feet. The resort fronts the world’s second-largest barrier reef and turtle habitat, and provides complimentary snorkel equipment. Because it’s a popular pastime, they request a 30-minute equipment limit so others can partake. While you could hop in a taxi for a night out and skip up to Playa del Carmen in about 30 minutes, Secrets Akumal has a large and surprisingly sophisticated theater (modern seats under a natural tiki roof), which presents shows every night, ranging from a Beatles tribute to fire and acrobatic Cirque du Soleil-type shows. There is live music every

night in the open-air lounge, and a discotheque opens late-night for those who want to continue the party. ď ś The service. Truly, there is nothing like Mexican service, which is warm, friendly and naturally embedded in the culture. Speak a few words of Spanish to elicit a smile, but it’s not necessary as everyone speaks English and is eager to practice it.

Secrets Akumal has 11 different suite types, ranging from Junior Suite Tropical View (about 800 square feet) to two oceanfront Presidential Suites (1,200+ square feet). Each guestroom is well thought out and expansive with a spacious bathroom that has his-and-hers sinks, mosquito repellant, generous four-ounce bottles of body lotion and sunscreen, toothbrush and toothpaste, hair dryer and vanity mirror, a walk-in natural stone rainforest shower with built-in marble bench and four-ounce bottles of shampoo and conditioner, a separate toilet cabin, full-length mirror, round hydro-massage tub for two, incense to set the mood, king or double beds, living room area with sofa and coffee table, well-stocked mini-bar refreshed daily, large desk with multiple outlets, electronic safe large enough for a laptop, flat-screen TV, radio and iPod docking station, free WiFi, free telephone calls to the U.S. and Canada, spacious closet that holds two pairs of robes and slippers, a safe and iron, coffee and tea maker, and an outdoor balcony terrace with table, two chairs and inlaid stone bathtub. and cool marble floors. Artistic touches include hanging wrought-iron lamps made by local artisans, colorful pillows, framed traditional Oaxacan dress, and Parota wood benches and tables made by local craftsmen from reclaimed jungle wood gathered after hurricanes.

Here is why the intrepid traveler finds it hard to extricate him/herself from the resort: Snorkel, paddle board or kayak with complimentary equipment and tours, relax oceanfront on cushioned chaise lounges under thatched-roof huts, lounge in Bali Beds, swim in three pools ranging from active to relaxed. Organized activities include yoga, Zumba, snorkel lessons, kayak, bike and paddle board tours, pool biking, pool basketball, beach volleyball, water aerobics, Spanish lessons, darts, ping pong and a life-sized chess board. The resort offers complimentary greens fees at Riviera Maya Golf Club, one round per person per day. Designed by Robert Trent Jones II, the course spans more than 12,000 yards and offers a 36-hole course development, including a 7,843-yard, 18-hole championship course, a 1,356-yard, 9-hole par 3 golf course, a driving range and practice green. A resort highlight is the 13,000-square-foot Secrets Akumal Spa by Pevonia, with 17 well appointed treatment rooms and design that reflects nearby cenotes, or ancient underwater rivers. The spa recommends guests arrive one hour before their appointment to enjoy the outdoor, co-ed hydrotherapy circuit, herbal steam, sauna, plunge pools and day beds. Facials exclusively utilize Pevonia products with natural ingredients, many designed for anti-aging, radiance and repair. Massage and body treatments range from soothing wraps for anyone who has overdone time in the sun (easy to do so close to the equator), to a familiar range of deep tissue, Swedish and hot stone massage, the difference being in the quality of massage therapists, products used (wine extracts, natural oils from scented candles) and sheer beauty of this spa with its indoor/outdoor showers, multiple relaxation lounges and three “master” couples suites with outdoor terrace, private pool and amenities. For Weston residents looking to add a waterfront residence to their portfolio, this Hendricks Isle condominium in Fort Lauderdale is spacious enough to ease the transition from a home to an apartment. “The large open floor plan is appealing to those who are accustomed to living in big homes,” says Jean Francois Roy, president of Ocean Land Investments, the company that owns AquaVita. This 2,625-square-foot, 3-bedroom, 3 ½-bath residence with a 607-squarefoot wraparound balcony is a brand-new corner unit that faces the water. When designer Vivian Mata was commissioned to design the interior of this space, she worked with the apartment’s owner to create a modern and sophisticated look. “The wife wanted very contemporary and elegant interiors, so I worked with her to execute her vision,” says Mata, owner of Designs by Vivian in Miami. “It was a project that I finished “The family smoothly and quickly earlier this year.” AquaVita is the first development members use of the company’s Aqua-branded projthe furnished ects to be completed. The building offers boat slips and outdoor storage space for other watersports equipment. This makes it a comfortable transition for residents who enjoy larger spaces while gaining access to the ocean, Intracoastal and various canals. Inside, Mata matched the exterior with a clean slate. She created an open, contemporary look for the couple and their son. “The wife really wanted clean, white and simple throughout the home,” says Meta. “We worked together to design each room to reflect this feeling.” To start, the designer converted one of the guest bedrooms to a den. She opened up the room and installed a glass barn door with motorized shades for privacy so it could be a convertible space when the couple’s daughter comes home to visit. With a white leather sofa bed, chest of drawers, side table, lamps and art, the room works as a den or bedroom. Plus, its design keeps the contemporary theme. Similarly, in the master bathroom, Mata made a calculated change. She opened up the door to make the spa-like room even larger. She also

tiled the back of the vanity and added light sconces. As an L-shape, the sweeping interior with frameless glass-enclosed shower and theatrical lighting is long, lean and clean, a perfect place to lounge and relax. “This bath is all white and now huge,” says Mata. “It is simply beautiful.” While designing the public areas, Mata wanted the balcony, living room, dining room and kitchen to flow as one continuous space. So each area had to present its own version of elegance yet come together as a whole. So she designed with this vision in mind. The large living room is used a great deal and offers a variety of sitting vignettes with custom-created couches and a media center that Mata designed. “The family members use the furnished open balcony, watch television inside, or just enjoy being in the areas together,” says Mata. “I love how the living room flows into the others as a grand living space.” Since the owners enjoy entertaining friends and family, the dining room was a special area for Mata to design. Keeping it glamorous, light and contemporary while aiming to establish an aura of sophistication, she commissioned a rectangular glass Artefacto dining table and cool, white leather chairs from Scan Design. A drop crystal chandelier adds another touch of elegance. Throughout the private areas of the residence are the master bedroom and the son’s bedroom, which follow the same clean theme with contemporary furnishings. The master is finished in all white, yet still embodies the —Designer Vivian Mata warmth desired in a slumber space. Illuminated by a crystal chandelier and surrounded by beautiful water views through floor-to-ceiling glass windows with motorized drapes, the master was designed for uninterrupted rest. The bed is made of a tufted silk material with the headboard done in light taupe-gray and appointed with lush white linens. An ostrich leather bench with chrome legs placed at the foot of the bed adds texture and direction to the room. The boy’s bedroom is done in white and gray and follows the modern and clean motif of the rest of the condo. A dark gray comforter on the bed adds a needed layer of masculine design so he can relax and not worry about keeping the white linens pristine. The large windows surrounding the bed with mesh drapery give him great water views from practically every direction. As they head outdoors for sports and recreation, the family walks through the lobby of the building which Mata also designed in a simple and elegant style to emulate the interior. They swim in a 65-foot heated saltwater pool, enjoy private cabanas, a barbecue area and a 24-hour, top-of-the-line gym for exercise. The family is also pleased with the ecofriendly offerings like an additional garage space equipped for electric cars and water-efficient plumbing. Everything in the unit and around the building seems to work in unison. And Mata could not have been happier at the end of her interior design job. “It was wonderful working with this couple because everything went so smoothly,” she says. “They are happy with the finished product because it looks simple, clean and elegant. Their happiness makes me feel very good, like a job well done.”

Early Detection and Innovative Technology: Improving Lung Cancer Outcomes Lung cancer is the second most common form of cancer in the United States, and the leading cause of cancer deaths. There will be well over 200,000 people Sajive Aleyas, MD diagnosed with lung cancer in the country this year, according to the American Cancer Society. Warning Signs Symptoms of lung cancer vary, but may include persistent cough, shortness of breath, wheezing, chest pain, and coughing up blood. Most lung cancers cause no symptoms until they are fairly large or are already at an advanced stage. And many patients may have lung nodules, or spots on the lung that are non-cancerous. However, in certain circumstances a biopsy should be done to properly diagnose. Early Diagnosis is Key The earlier lung cancer is diagnosed, the better the rate of survival. Today, there is a spectrum of minimally invasive diagnostic tools used to detect lung cancer. “One of the newer minimally invasive options for early diagnoses of lung cancer is called Electromagnetic Navigation Bronchoscopy™
(ENB), which allows physicians to more accurately identify a lesion deep in the lung, without surgery,” according to Cleveland Clinic Florida pulmonologist, Sajive Aleyas, MD. ENB utilizes highly advanced equipment, including CT imaging, to find nodules or tissue that might be cancer within the lung. Once detected, ENB can be safely used to reach the tissue for biopsy and staging. This enables the diagnosis of lung cancer at the earliest stages ever possible, without the need for surgery. Advanced Technology is Saving Lives “We’re using computer-guided technology to reach even tiny areas deep inside the lungs, to get samples of small areas that might be early cancer. And it’s a 45-minute outpatient procedure, instead of surgery,” says Dr. Aleyas, who specializes in interventional pulmonary medicine, or the diagnosis and treatment of lung conditions. “This is a game-changer, because it’s much easier to cure lung cancer when we catch it early.” Much like a GPS system in a car, ENB utilizes computer navigation to guide a tiny bronchoscope, cameras and other tools through the lung’s natural pathways to get a tissue sample. ENB requires advanced training and experience, and Dr. Aleyas is one of the few physicians in Florida who is fellowship trained as an interventional pulmonologist.
“ENB allows us to reach up to 85 percent of nodules under two centimeters (or about 8/10ths of an inch), compared to 20 percent before,” Dr. Aleyas says. “And for patients who are not healthy enough to undergo surgery, it can be their only option to confirm they have lung cancer so we can begin treatment.” Innovative Treatment Options Once diagnosed, there are a number of options to treat lung cancer, such as; surgery, radiation therapy, and chemotherapy. Surgery involves removal of cancerous tissue, whereas radiation therapy involves destruction of cancer cells. In chemotherapy, a patient takes oral or intravenous drugs that target rapidly dividing or multiplying cancer cells throughout the body. Treating lung cancer can involve one or all of these interventions. If the cancer can be completely removed, surgery provides the best chance for cure, and there are a number of minimally invasive techniques used to remove the tumor through very small incisions. hef Joshua Wahler glides through his new Greek restaurant, Nisi, circulating among diners, welcoming newly arrived guests, talking animatedly with his hands and smiling the smile of someone who loves where he is and what he is doing. With nearly 200 seats, nearly all tables are taken on a typical Saturday night, with a buzz of conversation punctuated by plates of flaming cheese that whiz by in a flurry of activity that includes tableside presentations of fresh saltencrusted seabass from the ice-packed raw bar on which they are displayed. Together with partner Andreas Tsavos, Chef Wahler has transformed the former Thasos restaurant into a culinary paradise, with a mixture of Greek influences and global flavors he knows from childhood. “Chinese, Japanese and Italian are my comfort foods,” says the New Jersey-born chef, who’s retained a hint of an accent with all the exuberance one would expect from a Jersey boy. “My grandmother Gloria had me eating sushi and sashimi at age 8, and continuously expanded my palate throughout childhood. In high school, I was her dinner date to experience some of the best restaurants Manhattan had to offer.” His face lights up when he talks about Grandma Gloria, who lives in the area and will no doubt become a Nisi regular.

One of America’s star chefs opens a new restaurant in Fort Lauderdale. By Michelle Payer “She always had a love for good food and taught me at a young age that excellent food was worth the experience,” he says. Nisi is Chef Wahler’s first foray into restaurant ownership and has the former Hell’s Kitchen contestant and veteran of celebrated Gramercy Tavern, Spice Market and Nobu restaurants channeling years of culinary passion to create dishes that burst with flavor. A common Greek salad becomes an uncommon highlight, with fans commenting they would come back for that dish alone. Flavorful appetizers include The Nisi Grilled Octopus, tender Mediterranean octopus in a gigante bean purée; Shrimp Saganaki, wild American shrimp, grated tomato sauce and melted feta served in a cast-iron pan; lightly fried Zucchini Chips accompanied by tzatziki; Marinated Anchovies with crostini, grated tomato, lime essence, micro cilantro, fresh ground pepper

and garlic oil, Faroe Island salmon tartar with cucumber ginger salsa and wasabi aioli, and the clearly popular flaming Kefalograviera cheese that seemed to fly by the table every few minutes. Appetizers are varied and abundant, making them perfect for those with lighter appetites or for a night of sharing à la Greek family dinner. The kitchen is a flurry of activity, with Chef Wahler accompanied by a team that includes Greek natives who have shared their family recipes, as well as Chef de Cuisine Tiffany Yuken, who makes the most mouthwatering olive Ciabatta bread that’s brought to the table with olive oil at the start of every meal.

wine-producing regions. Cocktails use ingredients such as lavender, thyme and chamomile for a burst of refreshing and natural flavor. A favorite, the Mediterranean Tea, is an elixir of Absolut Wild Tea vodka, lavender, simple syrup, lemon juice and fresh ginger. Stepping into Nisi is like stepping into a stylish Greek villa, complete with amber lights seen from exterior cut-out window squares. Created by famed Greek designer Angelos Angelopoulos, the interior is a mixture of polished concrete floors, white-washed wood planked walls and woven chairs, punctuated by dramatic design elements including a seashell chandelier, a driftwood sculpture and a massive cluster of
35 inverted baskets lighting the 25-seat bar, behind which old black and white Greek movies captivate with silent yet dramatic conversations. The welcome is warm and inviting, setting the tone for evenings of Greek cuisine that is light, fresh, healthy and filled with variety to tempt many return visits. Nisi is located at 3330 East Oakland Park Boulevard, just one block west of A1A, and serves dinner Tuesday through Sunday. ight years ago, a new era dawned for British luxury carmaker Jaguar. After decades of building sleepy, nostalgic sedans and coupes for the pipe-and-slippers set, a range of fresh, modern and athletic Jaguars began to emerge. First came the XF mid-sized sedan, soon followed by a new flagship XJ, and now we have a compact XE sedan and Jaguar’s first-ever SUV, the F-Pace. These light, fast and chic new Jags instantly made Jaguar’s past models appear as old as a vintage E-Type. This issue, we’re profiling the two very different and quite wonderful ways that a car can make a cat person out of you.
2017 JAGUAR XF
After introducing Jaguar’s new style to the world in 2008, the 2016 XF has just undergone a full redesign, and its uncanny resemblance to its predecessor indicates that Jaguar clearly likes what it sees in the mirror. It went on an aluminum-intensive diet and shed up to 250 pounds while gaining rear-seat space. Headlamps and taillamps are now dressy all-LED units, but the 2016 model appears so close to its predecessor that few common folks will know you’re driving the new one. Different story inside, where the XF’s redesigned trappings are legitimately cushy, yet elegantly austere. A quick-reacting, intuitive touchscreen interface, electronic gauges and clean climate-control graphics shining through a darkened panel are new, and other than the

flimsy rotary transmission switch that rises up from the console upon startup, materials are otherwise consistently upscale. If you don’t like cold spaces, we suggest warm colors; if you believe luxury cars should look formal, go all black. No matter the hue, the XF has the dynamic acuity that would make the porky BMW 5-Series cry. Its light weight is evident in its laser-like steering and eagerness to change direction without listing like a cruise ship on the high seas. The sporty XF-S version suffers from an uncouth ride at times, but otherwise, it and the other two XF trims cover ground brilliantly. What trims are those? Base XF models are powered by a 2.0-liter diesel engine, while the mid-grade R-Sport model brings a supercharged V-6 with 340 hp and the top-dog XF-S is powered by a more powerful 380-hp version of that same V-6. Each uses an 8-speed paddle-shifted automatic capable of prioritizing efficiency, sportiness or striking a happy balance of both. And while all-wheel drive isn’t particularly popular in these parts, it is available for $3,000 with any motor. Speaking of prices, while the 2016 XF’s comfort, quality and performance characteristics have all risen, its prices have dropped by as much as nearly $5,000 on certain models. With base XFs starting at $48,445, the R-Sport at $51,485 and the XF-S starting at $63,695, prices are quite aggressive compared to its more established European competitors. With Jaguar’s renaissance still quite new, the Jaguar XF remains a rare, exclusive car, but once word gets out about its sharper claws and aggressive pricing, it may not stay rare for long.

2017 JAGUAR F-PACE
With Porsche, Maserati and, soon, even Lamborghini and Rolls-Royce building crossovers—yes, Rolls is building an ute—it seems like every automotive brand on the planet is doing a crossover. So how does a fledgling luxury brand like Jaguar make its new crossover stand out? Make it look like the F-Pace, that’s how. Indeed, Jaguar’s first-ever SUV is a stunner, translating Jaguar’s bold new form vocabulary brilliantly into SUV proportions. It’s not a big beast—closer to the BMW X3 in size than the X5—but it looks like it could claw either of those trucklets to pieces in a street fight. Its long, contoured hood, cat-eye headlamps, deep-set grille, and even the taillamps are all familiar Jaguarisms, at least since its rebirth began in 2008. And with its sloping rear window capped by an aggressive spoiler, the rear end is resolved not with domestic, utilitarian boxiness but with a saucy, aero-honed edge. While the XF’s crossover stance places its occupants higher than conventional sedans, affording that excellent view ahead that so many SUV drivers can’t live without, the seating position itself feels decidedly car-like. One doesn’t sit on the supportive sport seats as much as one relaxes back into them, feet positioned well in front rather than below your knees. The high window sills and steep windshield are also more sports car than sport-utility. Yet there’s enough room for four adults and a load of gear in the cargo space. Like the XF, the décor is minimalist, which means that it can take on many looks, depending on how the customer has kitted it out.

Like many SUVs, the F-Pace looks aggressive, but whereas most don’t back up those looks with real performance, the F-Pace covers ground less like a pampered housecat on a stroll through the yard than, well, an actual jaguar chasing its dinner. To characterize its handling as having “cat-like reflexes” borders on the cliché, I know, but there is no better way to describe it. Base models get along well enough with a 2.0-liter diesel four-cylinder, but if you like your cats on the frisky side, the “35t” or “S” models, with their 340-hp or 380-hp supercharged V-6s, are the ones to get. Even with the sweet V-6 engine and a load of options, the F-Pace price can remain well below $60K. In fact, with prices starting at $41,985 for the diesel model, the 35t starting at just $43,385 and the S starting a bit higher at $57,685, the F-Pace is a screaming bargain, especially when compared to the only crossover that can outperform it: the pricey Porsche Macan. As with the XF, the F-Pace is priced to get noticed, only this one is styled to get noticed, too.
