Complete the Culinary Operations Apprenticeship program to advance your culinary knowledge, skills and abilities at the IRSC Culinary Institute through a partnership with the American Culinary Federation (ACF). You can get paid to work and learn on the job! The program only accepts—and is tuition free to—those who are currently employed in the culinary industry and paid members of the ACF. Those who successfully complete the one-year IRSC program receive a certificate of completion from the State of Florida and IRSC. All apprentices are trained to be certified as ServSafe® Managers. Certified culinarians typically receive increased pay and are more in demand.
Through a combination of classroom instruction and hands-on cooking, you will learn about the proper use, safety and maintenance of industry equipment. You’ll gather experience in all aspects of meal preparation as you develop understanding of the basic principles of nutrition, dietetics, and food and beverage composition while gaining a personal sense of pride and professionalism necessary for success in the hospitality industry. Applicants must • Be at least 17 years of age; • Have a high school diploma or GED®; • Be employed by a qualified food-service establishment willing to sponsor the student;
• Be a member of the American Culinary Federation; • Complete the IRSC Application for Admission; and • Ensure all official transcripts are on file at IRSC Student Records.
