SHRIMP & Grits & Wine

I

t took thousands of years for the Lowcountry’s distinctive cuisine to evolve out of ancient Native American and West African foodways. Shrimp and Grits is a great example of that culinary crossroads.

Grits are coarsely ground corn boiled into porridge. Unlike sweet corn, native U.S. corn needed to be pulverized and soaked in an alkaline solution in order to extract critical nutrients. Enslaved West Africans arrived in the Lowcountry beginning in the late 1600s and brought their culinary traditions with them. Working on coastal plantations, they combined locally caught shrimp with Native American corn. Shrimp and Grits is one of many unique culinary traditions that evolved through the generations in the GullahGeechee communities of our Sea Isles. Over the last two decades, chefs throughout the South have creatively reimagined this timeless dish, showcasing local ingredients and flavors. With the seemingly infinite varieties of this timeless dish come new opportunities for wonderful wine pairings. To enhance the natural balance between the shrimp and the grits, it is important that the wine does not interfere. A light-bodied wine with only a slight zest is a perfect choice. A young, unoaked Chenin Blanc from any region would pair well. Also, an Italian 14 Island Events April 2022

Prosecco, a dry sparkling wine, is a good choice, especially if you are enjoying your Shrimp and Grits at brunch. Some variations of Shrimp and Grits use tomatoes, a perfectly acceptable choice by Southern standards. Typically, the shrimp is sautéed with fresh tomatoes, garlic and optional amounts of spicy heat. The saucy shrimp mixture is served over cheesy grits. The addition of tomatoes calls for a wine with more body and earthy qualities. A slightly oaked Chardonnay from Argentina or Chile is an excellent choice: or a Pinot Blanc from California, France or Italy. The use of strong seasonings, peppers, tomatoes and spiced sausages suggests a Creole touch. Since Creole foods have strong Spanish and French influences, wines from these regions would be great companions. White wines from France’s Southern Rhône valley are excellent choices. Young Spanish red wines like Tempranillo or Garnacha would also be perfect. Shrimp and Grits is on the menu in many of our Hilton Head Island eateries, and I guarantee that no two recipes will be the same. Fortunately, many of the wine suggestions mentioned in this column can also be found on wine lists across the Lowcountry. HILTON HEAD HISTORY Hilton Head Island has a long and rich history of visitors. Captain William Hilton sailed the British ship Adventure north from Barbados, scouting lands to grow sugar cane for the crown. Approaching the Island by way of Port Royal Sound, he encountered a sliver of land and called it “Hilton’s Headland.” Native Americans came to hunt and fish.

For many years, few permanent residents made their home on Hilton Head Island. Though the humid, subtropical climate was ideal for growing agricultural crops like cotton and rice, fear of disease and isolation kept antebellum plantation owners on the mainland. The Civil War brought big changes to Hilton Head Island. At the onset of the conflict, the South erected Fort Walker to protect the port. When the fort fell, tens of thousands of Union troops, prisoners, missionaries, shopkeepers and enslaved men and women seeking asylum flooded the Island. Suddenly humming with activity, Hilton Head became instrumental in the North’s blockade of nearby Southern ports. In 1863, the town of Mitchelville became the first self-governed town for freed men and women.

Developer and environmentalist Charles E. Fraser began work on the Island’s first resort, which he called Sea Pines. Fraser is sometimes called the father of the modern resort, and his vision for the Island was progressive, even by modern standards. His determination that no building be “higher than the tallest tree,” as well as his rejection of flashy neon signs, became central to the Island’s distinctive character.

After the Civil War, the Island’s population dropped to around 3,000, and by 1940, it had fallen to just over 1,000. Electricity finally came to the Island in 1950 and, six years later, Hilton Head’s very first bridge to the mainland made the area significantly more accessible. Fraser’s legacy lives on in Hilton Head Island’s balance of commerce with green spaces, golf courses with wild places and thoroughfares with biking trails. Get Outside for Your Mind! Enjoying the outdoors reduces stress, increases self-esteem and boosts creativity.

O

ver the course of my career as a kayak guide and instructor, I have taken tens of thousands of people out on the water. Some are outdoor enthusiasts comfortable with the environment, while many others are enjoying an outdoor sport for the first time. Through my experiences with these folks, I have observed the immense positive effects of simply being outdoors. Kayaking has the added benefit of exercise, which is great for your body. However, the simple act of not being inside is a scientifically proven way to improve your mood and psychological health as well. Stress is arguably the greatest threat to our mental state. It is shown to weaken the immune system and cause high blood pressure, fatigue, depression, anxiety and even heart attack. Time and again, outdoor activity has been proven to lower heart rate and reduce stress. While the exact mechanics of how this occurs are not well-known, the act of seeing wide open spaces tends to make us feel small, and our problems even smaller! In my career, I have often encountered stressed-out families on vacation, trying to make it work with the competing demands of the different members. After just a few minutes on the water, their shoulders relax, they breathe more deeply and slowly, they start smiling and having fun together again. 34 Island Events April 2022

There are a number of programs around the world that use outdoor experiences as a form of therapy for children from complicated backgrounds. At these schools, studies have been conducted on the healing effects of outdoor recreation. This research has shown that such experiences increase one’s overall self-concept, feelings of competency, selfimage and independence. I have had the privilege of conducting programs for the local Kids in Kayaks program, where I’ve seen firsthand the transformational effect that having fun outside can have on children. These middle schoolers are apprehensive at first, trying to act cool in their cliques. Once in kayaks, they see their own ability move the vessel around independently, steering and powering it where they want to go. It gives them a boost, and suddenly they are engaged in their surroundings and interested in talking to one another and to me about the experience. Another way that the outdoors has a positive effect on the mind is through the stimulation of creativity. From the paintings of animals and trees in the caves of Lascaux, France, to the swirling wheat fields of Van Gogh, all of the greatest artists in history have been inspired by nature. When I’m not a kayak instructor, I’m an artist, and in my personal experience, there is no better way to muster creative energy than by observing and experiencing the variations of color, texture and movement in the natural world. RECREATIONAL PATHWAYS GUIDE

The Town of Hilton Head Island provides nearly 60 miles of public pathways and nature trails for the enjoyment of pedestrians and cyclists.

WHAT YOU NEED TO KNOW ON THE PATHS: • Obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedestrians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Do not ride on roads when a pathway is available. • Ride single file and keep a safe distance from other bicyclists.

• Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safety on the paths.

I

t has been sad to watch the decline of this magnificent fish in coastal South Carolina. The Broad River was once touted as the “Cobia Capital of the World” by fishing magazines. It used to be easy to catch multiple monsters in a single trip. Those were the days when a handful of boats were fishing. Before the decline, it was nothing to see 300 to 400 boats fishing the Broad River. As with most natural resources, when the population of people exceeds the supply, we lose access to the resource and are forced to rethink our resource management strategy. I talked to several anglers who specialize in sight fishing. On calm days, they reported seeing more cobia in the river last year than in previous years. Often confused for sharks (which they love to follow, along with rays, buoys, etc.), the average cobia usually weighs around 35 to 40 pounds and can reach 60 pounds for the grownups. Most of the time, they put up a tackle-busting battle, but are curious and will often swim right up to the boat, with or without a hook in them. 60 Island Events April 2022

Once they know the hook is there, watch out! You’re in for a battle. Many times, you will have them swimming around the boat and they will not touch a bait, making you want to pull your hair out. One thing everyone agrees on — they're delicious. Cobia is a very firm fish that lends itself well to the grill. It’s also delicious prepared in any way that you prefer. So, all in all, cobia offers excellent game fishing and even better eating. I can’t wait to catch my first one this year. TRUSTING THE PROCESS There is “Fun” in the Fundamentals!

I

n golf, as in life, the fundamentals are key. You can stumble your way through without them, but true mastery will elevate your game and invigorate your experience. And as boring as mastering the basics sounds, I find it super fun to see the light bulbs go off when things fall into place and everything starts clicking. My students love it too!

Grip.

This is a fundamental you just can’t skip. For your top hand grip, lay the handle in your fingers so that you would be able to see a wedding band. Then, allow the back of the hand to wrap over the club handle so that you can still see the logo on your glove or at least two knuckles. For your bottom hand grip, imagine you are shaking someone’s hand, then relax or soften for more speed and tighten for less speed.

Stance and posture.

As a new golfer, keep your stance shoulder width or less until you develop your swing. Players with ten handicaps and lower can widen their stance for more power. Like playing second base or being ready to receive a tennis serve, the right 62 Island Events April 2022

athletic position keeps you mobile and well balanced through the swing. Stance and posture along with alignment are things you must “feel” rather than think about doing. Really, there’s no better way to figure these out than with a PGA coach during a hands-on lesson.

What is it supposed to feel like? When students make it into the zone with their swing, I always ask them how it felt on an effort scale of 1-10. I hear the number four a lot. Also, “effortless,” and “wow, look how far the ball went!” I ask where past efforts fell on the scale. Eight is a common response. “I would tighten my grip or push/pull with my arms.” Setting up and executing over and over in just the right way leads my students—young, old and everything in between— to the

same conclusion: “I let the club do the work and it just happened.” This realization isn’t intellectual, it’s bone deep: something you will begin to feel as soon as you’ve got your fundamentals right on the nose. Island Trails and Walking Paths Take the time to enjoy these trails GREEN’S SHELL ENCLOSURE The 3-acre Green’s Shell Enclosure Heritage Preserve is an archaeological site dating back to 1335 A.D. This trail is located near the top of Hilton Head Island, just off of Squire Pope Rd. From the parking area, you will walk on a road to this short, easy trail, which will take you into the past. You will pass a cemetery and cross over a ramp to an overlook at the end of the trail. Green’s Shell Enclosure is a low earthen embankment, two- to six-feet high, that dates back to the Irene Period of 1300 to 1450 A.D. Covering two acres, this embankment was once a fortified village built by farmers who used shells for everything from tools to objects used for religious rituals. Stay on the trail and do not remove anything from this preserve. Bring insect repellent during the warm months. Hours: Dawn to dusk Directions on Hilton Head Island: From the intersection of US 278 and Squire Pope Rd., turn left into Greens Park. Entrance to the preserve is on the left at the gate. Jarvis Creek Loop

JARVIS CREEK LEISURE LOOP The Leisure Loop at Jarvis Creek Park is an easy .85 mile paved loop. The loop starts behind the restrooms. There’s a small pier at the start of the trail with access to a dock. If you start off counterclockwise, you’ll pass a fitness station to your left. Pathways extend all over the park and around the lake creating a 1.1 mile loop. Runners, joggers and walkers are all welcome to explore the lakeside paths that extend out into wooded areas. This paved trail is equipped with wooden bridges over marshy areas, so no one has to get their feet too dirty. There are nine pieces of outdoor training equipment in a peaceful area behind a live oak, and the park was designed with exercising in mind! Each station has a set of instructions that explains how to use the equipment and perform the exercise. You even get a beautiful view of the lake while you’re strengthening your core. Hours: Dawn to dusk. Directions: Located off of William Hilton Pkwy.

AUDUBON NEWHALL PRESERVE The Hilton Head Island Audubon Society owns and operates the Audubon Newhall Preserve, located on Palmetto Bay Rd. It is open to the public at no charge. The Audubon Newhall Preserve is a series of short, easy walking, interconnected trails through a fifty-acre nature preserve. A trail guide is available at the entrance. You will see a wide variety of trees and plants, from Florida scrub to native hardwoods. A feature of the preserve is a rare pocosin (the Indian word for bog), which was once a characteristic feature of barrier islands. Hours: Dawn to dusk Directions: From US 278 near the entrance to Hilton Head Island: Turn right onto the Cross Island Parkway. When you reach Palmetto Bay Rd., watch for the Audubon Newhall Preserve sign on the right. From US 278 on the south part of the Island: Drive west to the traffic circle and turn right onto Palmetto Bay Rd. Look for the sign on the left.

SEA PINES FOREST PRESERVE An easy walk or ride through a maritime forest and marshland in this well-protected preserve. The preserve has a 4,000-year-old Indian shell ring, a wild flower meadow with dozens of flower varieties, fresh water lakes suitable for fishing and a bountiful bird habitat. Sea Pines Forest Preserve

Island Beaches Public Beach Access: The Town of Hilton Head Island provides nine public beach accesses: • Alder Lane Beach Access, off South Forest Beach Dr. • Coligny Beach Park, off Coligny Circle • Driessen Beach Park, end of Bradley Beach Rd. • Chaplin Community Park, off Wm. Hilton Pkwy. • Fish Haul Park & Mitchelville Freedom Park, end of Beach City Rd. • Burkes Beach Access, end of Burkes Beach Rd. • Folly Field Beach Park and Islanders Beach Park, both off Folly Field Rd.

Parking & Facilities:

There are 23 metered spaces at Alder Lane, 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 15 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Freedom Park and Coligny Beach Park. Handicap parking is available at no fee at all parks. Restrooms, changing areas, sand showers and vending machines are available.

nated for the Alder Lane, Coligny, Driessen, Folly Field and Islanders Beach Parks. The boundaries will be clearly marked on the beach and in the water. Lifeguards are stationed at these designated areas for assistance and beach information.

Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsupervised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble. hiltonhead.com


Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsupervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swimming ability. Stay in chest-deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.
