Choosing the Perfect
Cabernet Sauvignon From price to pairing, here’s what you need to know to make the ideal selection. Cabernet Sauvignon is one of the most widely available wines on the market. It’s produced in almost every wine region, and the price ranges from $5 to over $5,000 per bottle. So, how do you choose the perfect bottle at the right price for the right occasion? Here are a few handy tips to keep in mind to select the ideal Cabernet Sauvignon. How much should you pay? A high-quality Cabernet Sauvignon is expensive to make. It needs good land, expert vineyard management and strong winemaking skills. It also requires lengthy production time and highquality oak barrels for aging. Therefore, it can be challenging to find a high-quality Cabernet Sauvignon under $25. This is not to say that all $25 bottles are good or that all $75 bottles are better. Some wines can fetch high prices just because the grapes come from a renowned wine region, with little attention paid toward the care of the grapes and the crafting of the wine. If you aren’t willing to pay that much, but still want to enjoy a quality wine, I would recommend purchasing a Cabernet Sauvignon blended with a Merlot, Cabernet Franc or Zinfandel, priced just under $20. What about age? Most bottles of wine selling for under $40 are ready to drink when they’re released, usually within a few years after they are made. So, there is rarely a need to cellar age the wine, once you bring it home. 14 Island Events December 2021

Ironically, the bitter taste of a young Cabernet is the attribute that allows it to blossom into a high-quality wine. The thick skin of Cabernet Sauvignon grapes contains high levels of bitter tannins. Carefully aging the wine in an oak barrel transforms these tannins into compounds that create the “secondary flavors” typically associated with a good Cabernet Sauvignon, such as chocolate, vanilla, leather and tobacco. Most Cabernets are oak-aged for at least 18 months and can be bottle-aged for several years before they are released. What to drink it with? Cabernet Sauvignon is a high-alcohol, full-bodied, dark red wine. Even in its meekest expression, it is bold and assertive. It can overwhelm delicate dishes like chicken and fish, and tends to clash with spice and acid. That’s why Italian red sauce dishes and spicy Asian and Mexican dishes can spar with its flavors. Cabernet finds its perfect mate in seared red meat that is lightly spiced. Just check out the wine list at any steakhouse to see that Cabernet Sauvignon is the most represented wine on the list. The “secondary flavors” in Cabernet match well with the flavors that come off the outside of well-seared meat. That salty, peppery and caramelized crusty outside of seared meat has many of the same deep flavors Cabernet offers on the nose and palate. HILTON HEAD HISTORY Hilton Head Island has a long and rich history of visitors. Captain William Hilton sailed the British ship Adventure north from Barbados, scouting lands to grow sugar cane for the crown. Approaching the Island by way of Port Royal Sound, he encountered a sliver of land and called it “Hilton’s Headland.” Native Americans came to hunt and fish.

For many years, few permanent residents made their home on Hilton Head Island. Though the humid, subtropical climate was ideal for growing agricultural crops like cotton and rice, fear of disease and isolation kept antebellum plantation owners on the mainland. Africans worked the plantations, and their unique blend of African and European traditions gave birth to the Gullah culture, which survives even today. hiltonhead.com

The Civil War brought big changes to Hilton Head Island. At the onset of the conflict, the South erected Fort Walker to protect the port. When the fort fell, tens of thousands of Union troops, prisoners, missionaries, shopkeepers and enslaved men and women seeking asylum flooded the Island. Suddenly humming with activity, Hilton Head became instrumental in the North’s blockade of nearby Southern ports. In 1863, the town of Mitchelville became the first self-governed town for freed men and women.

Developer and environmentalist Charles E. Fraser began work on the Island’s first resort, which he called Sea Pines. Fraser is sometimes called the father of the modern resort, and his vision for the Island was progressive, even by modern standards. His determination that no building be “higher than the tallest tree,” as well as his rejection of flashy neon signs, became central to the Island’s distinctive character.

Today
After the Civil War, the Island’s population dropped to around 3,000, and by 1940, it had fallen to just over 1,000. Electricity finally came to the Island in 1950 and, six years later, Hilton Head’s very first bridge to the mainland made the area significantly more accessible. Fraser’s legacy lives on in Hilton Head Island’s balance of commerce with green spaces, golf courses with wild places and thoroughfares with biking trails. Bubba’s Cabin
Fishing supplies, mullets and more By Dani Ray Can you remember a time on Hilton Head before that rustic little log cabin right off of 278, just inland of Burke’s Beach? If you can’t, you’re not alone. It’s an Island landmark, and it has captured the imagination of generations of visitors. Jason Bullock, owner of Bubba’s Cabin Lowcountry Outfitters, recalled being in awe of it, too, so he did a little digging. “It was built in the early 70s as a model for a log cabin kit,” he says. “And it’s been a lot of things since then: a general store, a gas station, a coffee shop.” But nothing ever stuck, and Jason couldn’t help wondering: how might the cozy cabin be woven into the fabric of today’s Island life? Jason and his wife Cindy decided to set up a store carrying tourist provisions in the modest 1,100 sq. ft. of space. And then, what Jason calls a “happy accident” occurred. Two of Bubba’s employees were avid fishermen, and they started lobbying to get more high-end fishing equipment on the shelves to rent and sell. “It became clear very quickly that there was a need for it,” says Jason. “Customers really responded to being able to fish with what they’re used to or better.” Now, Bubba’s carries the very best inshore and offshore reels, tackle, live and frozen bait, and provides unspooling and respooling services. It’s one of two fishing 28 Island Events December 2021
and hunting license providers (direct through the DNR), and serves as a repository of local fishing knowledge: where to go and what bait and tackle to use based on the season, because the same advice won’t always hold true. It has everything else you need for a day out on the water: from quality hats to performance shirts with built-in sun protection to nifty drinking accessories. “Visitors dream of their stay on Hilton Head for 51 weeks of the year, and we take our role in that seriously,” Jason says. But Bubba’s isn’t just for those visiting the Island. “We also serve as a year-round source of quality fishing equipment to our local fishing community,” he says. “We’re really proud of that.” Right now, Jason and Cindy are gearing up to make the cabin festive for Christmas, an activity they enjoy immensely. “This may be a difficult season to buy online,” says Jason, “so we’ve made sure to be a great local source for fun, unique gifting items.” Bubba’s Cabin, it seems, was always destined to be a fishing supply and outfitting store, and now it’s hard to imagine it as anything else. Really only one question remains, and it relates to the logo: why the mullet fish? The Town of Hilton Head Island provides nearly 60 miles of public pathways and nature trails for the enjoyment of pedestrians and cyclists.
WHAT YOU NEED TO KNOW ON THE PATHS: • Obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedestrians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Do not ride on roads when a pathway is available. • Ride single file and keep a safe distance from other bicyclists.

“Yes!” they replied in unison, as they shivered.
he cold north breeze caressed the tips of the spartina marsh grass as the glow that was the promise of sunrise appeared on the horizon.
Again, his mind took him to cold memories, this time to southern Florida when a blustery northeast wind clashed with the northbound Gulfstream waters, creating six-foot waves complete with whitecaps. The hull of the boat bashed against the waves as strong gusts of Arctic air turned his face, only to see orde o n r n do n e .

“It’s too cold,” complained the two shivering youth, a son and nephew. The night before, they had been excited about the promise of an early Christmas morning present: a n r . The tide nipped at the bottom of the spartina and covered the oyster bed as the man cast a soft plastic lure across the creek. Slowly retrieving the lure with an occasional twitch of the rod, he had barely hit the midpoint of the creek when a jarring strike produced a spirited battle on the light spinning rod. e ed e ro n e o e looked at the pair, with their hands under their arms. “Too cold?” he asked. He laughed as they complained about how they could see their breath. e oo ed no er e n o e co d ooded m nd memor e . Memories of hundreds of sunrises in the duck blind, all glorious and spectacular in their own way, painted with a master’s brush. American Alligator
Habitat: Freshwater Size: Can grow up to 15 feet long and weigh up to 1,000 pounds. Lifespan: Up to 50 years. Diet: An apex predator that will eat anything, alive or dead, it can get its jaws around. Fast Fact: To determine the length of an alligator, count the inches between the nose bump and eye bump: that number translates into feet.
Southern Stingray
Habitat: Tropical and subtropical waters. Size: Up to 6 ½ feet wide and more than 200 pounds. The tail can be twice as long as the body. Lifespan: Up to 13 years. Diet: Forage for crustaceans, fish, shellfish and oceanic worms in saltwater shallows. Fast Fact: Give live birth. American Green Tree Frog
Habitat: Coastal plains, especially under porch lights on summer nights. Size: 1-2 inches long. Diet: Insects. Breeding Habits: Males belt out songs to attract females and establish their territory. Fast Fact: Sensitive to pollution, they serve as important indicators of environmental conditions.
Yellow Crowned Night Heron
Habitat: Marshes and man-
grove swamps to wooded forests, lakes and rivers. Size: Up to 2 feet tall. Diet: Crustaceans, insects, small fish and reptiles. Breeding Habits: Monogamous and nest in the same area every year. Fast Fact: Small prey is swallowed whole, while larger prey may be shaken until it breaks apart or is crushed or speared by the beak.
Roseate Spoonbill
Habitat: Nest in Lowcountry marshes during the summer months. Color: White head and neck, light pink wings with bright pink borders and pink legs. Size: Up to 2 ½ feet tall with a 5-foot wingspan. Knobbed Whelks
At times, finding shells on the beaches of Hilton Head can be a bit difficult. One of the most coveted shells to find is that of a whelk. By Kathleen McMenamin Vicars, Master Naturalist
T
hey are the beautiful cone shaped shell that we hold to our ears to hear the ocean. While there are four varietal species that can be found in our waters, the knobbed whelk is the most abundant. Knobbed whelks, Busycon carica, are large predatory gastropods. They are large sea snails that can vary in color, size and features depending on their distribution along the coast. They have been found in both tidal estuaries and deeper waters of the Atlantic coast. They prefer to live in sandy or muddy bottoms and can be found congregated on oyster and clam beds. During winter storms they are known to bury themselves and go dormant.

right side. They can range in color from light orange or yellow all the way to brick red. Knob length, color and size can all be determined by the whelk’s specific coastal habitat. Diet and natural camouflage are both factors that cause differences in shells. All whelks have a hard horny plate known as an operculum. This acts as a protective cover for the snail when it retreats into its shell and protects it from predators. This plate is also referred to as the shoe. The operculum is attached to the whelk’s foot, which is its appendage that protrudes from the aperture and is used for transportation. Whelks are carnivorous. They use both their shell, as well as an appendage known as a radula, to eat other hard shell creatures. Whelks will use the lip of their shell to chip at and pry open hard clams and oysters. Once a whelk is able to pry open another bivalve, they use their strong radula to tear away strips of tissue for consumption. Using the lip of their aperture causes chipping and damage, which they must take time to repair.
Knobbed whelks can reach up to nine inches in length. When looking at a whelk, the very top peak of the shell is where the creature began. From the top, whelks create turns (known as whorls) as they evolve. The final whorl becomes the largest and is known as the body whorl. This is the area that creates the opening that the snail withdraws into. Knobbed whelks are identified by low knobs found on the shoulders of the whorl. Their withdrawing aperture is on its
Knobbed whelks are protandric hermaphrodites, which means that they start their life as males and turn into females as they get older. Female whelks will lay eggs twice a year, usually when the water temperatures are around 68 Fahrenheit. September to October is their most productive time. They create egg strings that have a series of coin-shaped capsules attached at one end by a rough cord or string-like structure. They can reach lengths of up to one foot. The eggs will hatch within their capsules anywhere between three to 13 months.

However, the holidays have a, shall we say, less-than-dazzling side: the trash. From Thanksgiving to New Year’s Day, U.S. households generate 25 percent more waste. That equates to 25 million tons of garbage. This is a distressing fact for anyone who is trying to be more eco-friendly. The good news? Just a few minor tweaks can make some major changes to reduce unnecessary waste.
Thoughtful Gifting
Waste-F ree W rapping Beaufort County successfully banned the use of plastic bags in retail stores. Rather than using wrapping paper and ribbon or paper gift bags, how about stowing your gift in a cute re-usable shopping bag so your giftee can use it (and think of you) again and again? If every household wrapped just three presents in reusable materials, the paper saved could cover 45,000 football fields!
Discriminating Decorating
Instead of falling prey to whatever gimmicky gift is all the rage this year, take a moment and think about how that product may impact our planet. Landfills are stuffed full of mood rings and Cabbage Patch dolls.
Nothing says the holidays like a beautifully decorated tree and sparkling lights galore. However, cut trees take up a tremendous amount of space in landfills, and those strings of lights can use a lot of watts.
Instead, look for durable and re-usable items. Think about giving gifts that have an eco-friendly message, like a refillable water bottle or re-usable straw. Choose products that are solar-powered, or even better, use no power at all. You might consider giving gifts that can be consumed (no fruitcake, please) or planted.
Instead, consider decorating a live tree that can be planted in the ground when the holiday season is over. Carolina Sapphire, Eastern Red Cedar, Fraser Fir, White Pine and Virginia Pine are just some of the varieties that can flourish in South Carolina. Or an artificial tree can be used season after season.
Or best of all, give the gift of a wonderful memory. Plan an outing for friends or family that introduces them to something exciting and new. A trip to a museum, a cooking class or getting outside for a kayak or a hike are fantastic “gifts” that not only create memories to treasure, but generate little or no waste.
If you just can’t live without a fresh-cut tree, make sure you compost it. Both Hilton Head and Bluffton offer multiple sites for free tree recycling. Also, remember to turn off your holiday lights before bed and close your chimney flue after enjoying a hot chocolate snuggled up in front of the fire.

Island Trails and Walking Paths Take the time to enjoy these trails GREEN’S SHELL ENCLOSURE The 3-acre Green’s Shell Enclosure Heritage Preserve is an archaeological site dating back to 1335 A.D. This trail is located near the top of Hilton Head Island, just off of Squire Pope Rd. From the parking area, you will walk on a road to this short, easy trail, which will take you into the past. You will pass a cemetery and cross over a ramp to an overlook at the end of the trail. Green’s Shell Enclosure is a low earthen embankment, two- to six-feet high, that dates back to the Irene Period of 1300 to 1450 A.D. Covering two acres, this embankment was once or ed e rmer who used shells for everything from tools to objects used for religious rituals. Stay on the trail and do not remove anything from this preserve. Bring insect repellent during the warm months. Hours: Dawn to dusk Directions on Hilton Head Island: From the intersection of US 278 and Squire Pope Rd., turn left into Greens Park. Entrance to the preserve is on the left at the gate. Jarvis Creek Loop
JARVIS CREEK LEISURE LOOP The Leisure Loop at Jarvis Creek Park is an easy .85 mile paved loop. The loop starts behind the restrooms. There’s a small pier at the start of the trail with access to a dock. If you start off counterc oc e o ne on o o r e . Pathways extend all over the park and around the lake creating a 1.1 mile loop. Runners, joggers and walkers are all welcome to explore the lakeside paths that extend out into wooded areas. This paved trail is equipped with wooden bridges over marshy areas, so no one has to get their feet too dirty. There are nine pieces of outdoor training equipment in a peaceful area behind a live oak, and the park was designed with exercising in mind! Each station has a set of instructions that explains how to use the equipment and perform the exercise. You even get a beautiful view of the lake while you’re strengthening your core. Hours: Dawn to dusk. Directions: Located off of William Hilton Pkwy.

AUDUBON NEWHALL PRESERVE The Hilton Head Island Audubon Society owns and operates the Audubon Newhall Preserve, located on Palmetto Bay Rd. It is open to the public at no charge. The Audubon Newhall Preserve is a series of short, easy walking, interconnected r ro - cre nature preserve. A trail guide is available at the entrance. You will see a wide variety of trees and plants, from Florida scrub to native hardwoods. A feature of the preserve is a rare pocosin (the Indian word for bog), which was once a characteristic feature of barrier islands. Hours: Dawn to dusk Directions: From US 278 near the entrance to Hilton Head Island: Turn right onto the Cross Island Parkway. When you reach Palmetto Bay Rd., watch for the Audubon Newhall Preserve sign on the right. From US 278 on the south part of the Island: Drive west to the r c c rc e nd rn r onto Palmetto Bay Rd. Look for the sign on the left.
SEA PINES FOREST PRESERVE An easy walk or ride through a maritime forest and marshland in this well-protected preserve. The preserve has a 4,000-year-old Indian shell rn d o er me do do en o o er r e ies, fresh water lakes suitable or n nd o n bird habitat. Shade is plentiful during the summer months. Sea Pines Forest Preserve

Island Beaches Public Beach Access: The Town of Hilton Head Island provides nine public beach accesses: • Alder Lane Beach Access, off South Forest Beach Dr. • Coligny Beach Park, off Coligny Circle • Driessen Beach Park, end of Bradley Beach Rd. • Chaplin Community Park, off Wm. Hilton Pkwy. • Fish Haul Park & Mitchelville Freedom Park, end of Beach City Rd. • Burkes Beach Access, end of Burkes Beach Rd. • Folly Field Beach Park and Islanders Beach Park, both off Folly Field Rd.
Parking & Facilities:
There are 23 metered spaces at Alder Lane, 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 15 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Freedom Park and Coligny Beach Park. Handicap parking is available at no fee at all parks. Restrooms, changing areas, sand showers and vending machines are available.

nated for the Alder Lane, Coligny, Driessen, Folly Field and Islanders Beach Parks. The boundaries will be clearly marked on the beach and in the water. Lifeguards are stationed at these designated areas for assistance and beach information.
Beach Marker Signs:
Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.
Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsupervised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble. hiltonhead.com
Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsupervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swimming ability. Stay in chest-deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.

ANIMALS are NOT permitted between 10 a.m. and 5 p.m. from the Friday before Memorial Day through Labor Day. Animals MUST be on a leash between 10 a.m. and 5 p.m., April 1 through the Thursday before Memorial Day and the Tuesday after Labor Day through September 30. Animals must be on leash or under positive voice control at all other times. Persons in control of animals on the beach are required to remove and properly dispose of excrement.
