Choose the perfect vintage to complement classic Greek cuisine. reece’s sunny skies and crystal seas make this Mediterranean country a great place to be during the chill of winter. If a trip to Greece isn’t in the cards for you, the Maniotis family has brought a taste of Greece to Hilton Head Island with their popular restaurant, It’s Greek To Me. Greek food and wine, the harvest of this beautiful land, brings us muchneeded warmth on a cool winter day. Greek food and wine really connect with Dolmathes Avgolemono: grape leaves wrapped around herb-spiced beef and rice, topped with a lemon sauce. With grape leaves in the recipe, the perfect wine marries the taste of the grape leaves with the fruit of the wine. That choice is a white wine from the Halkidiki region of Greece, which is a blend of Sauvignon Blanc and the Greek grape Assyrtiko. Picking up on flavors of the grape leaves, this white wine grown in volcanic soils has flint and lemon flavors. Its bright lemon flavors also make it the perfect match for signature dishes like fried calamari. One of the most well-known Greek-American foods is the Gyro. It’s Greek To Me’s Gyro is a rotisserie-cooked combination of herbed lamb and beef, served as a full meal or as a wrap. The Gyro is typically accompanied by Tzatziki, a garlic, lemon and yogurt sauce. The right wine pairing boosts the classic Greek flavors of herbed meats, lemon and garlic, while not fighting with these bold flavors. The wine needs to have some body, but still be light and fruity. Greek comfort foods include moussaka and pastitsio, two meaty, layered dishes topped with a thick layer of creamy bechamel sauce and a dash of cinnamon or nutmeg. Pastitsio is layered with ziti noodles, while moussaka is layered with eggplant and potatoes. A mediumbodied red wine with slight acidity cuts through the creamy bechamel, while enhancing the comfort flavors of these dishes with rich, smooth fruit. The Kouros Nemea wine stands out. The mountains and valleys surrounding the small village of Nemea have been producing high-quality wine for centuries. This wine showcases the native Agiorgitiko grape, known for its cherry flavors and hints of nutmeg on the finish. It’s Greek To Me also offers classic Retsina wine, which dates back to ancient times, when pine resin was added to create an oily top coat to prevent the aging wine from spoiling in the hot, sunny climate. While this process is no longer necessary to prevent spoilage, modern Retsina is infused with pine resin during the fermentation process, giving it a unique pine taste. Retsina wine was heartily consumed alongside indigenous Greek food for centuries. So, depending on your taste, it could be the perfect match. Try a glass for yourself and see! T

here is something both familiar and exotic about the Lowcountry. For those looking to unlock its mysteries, understanding the Gullah culture in South Carolina may just be the key. In the late 1600s, rice was desired all over the world. Enslaved Africans from West Africa’s "Rice Coast" were brought to the Lowcountry to work in the rice and cotton fields. The landscape was hot, remote and teeming with mosquitos. Physically and culturally isolated, the workers were left to live, worship, speak and cook as they wished. They became known as the Gullah, and they created their own cuisine and language, holding tight to treasured West African skills and traditions. Gullah cuisine grew out of the resourcefulness of enslaved African women, who applied European and African cooking methods and flavors to locally available foods, including fish, shrimp, oysters, crabs and foods native to the Americas such as tomatoes, corn and squash. Peanuts, watermelon, yams, okra and collard greens were imported from Africa. Quintessential Gullah dishes include fried fish, stewed shrimp and hoppin' john. In fact, many classic "Southern" dishes came straight from Gullah kitchens. An English-based hybrid, the Gullah language includes nearly 4,000 African words. Gullah is still in use today, especially in storytelling. Spoken, chanted or sung, Gullah stories are proudly passed from one generation to the next. The Gullah also craft beautiful, coiled baskets handwoven from sweetgrass and palmetto fronds. Other Gullah traditions include the making of cast nets and the singing of lively spirituals, music that influenced American jazz, blues and gospel traditions. Today, America’s Gullah population is estimated at approximately 300,000. However, because up to 70 percent of enslaved Africans landed in the Lowcountry, many more African Americans have Gullah roots. The history of the Gullah people is one of adaptation, survival and community – and the story of the Lowcountry is incomplete without the Gullah experience. 18 Island Events January-February 2020

RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public path­ways and nature trails for the enjoy­ment of pedes­trians and cyclists.

RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedes­­­trians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. When resting or stopped, please move off the pathway.

• Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash­light. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

SHEEPSHEAD These black-and-white striped battlers are challenging and delicious. By Miles Altman, Bayrunner Fishing Charters Blessed as we are here in the Lowcountry to have 80-degree days in the winter, I always try to load up on fiddler crabs on warm days, to keep an ample supply of bait in anticipation of one of my favorite targets: the sheepshead. While fiddler crabs can be purchased at local tackle stores, half the fun of sheepshead fishing is catching the fiddlers. I’ve always admired these small creatures, who are so defiant that when escape is not an option, they boldly raise their large claw and dare you to pick them up. Not picking them up properly will result in a painful pinch, albeit normally not bloody. One must be equally careful when putting the crab on the hook, as it will exact justice to the bitter end, if given the chance. I grab them by the big claw and thread them onto a 2x strong live bait hook, with the tip of the hook protruding just out the top of the back shell. The back leg is usually the easiest point of entry. The crab can be lowered with an egg sinker or knocker rig to the bottom or, if fishing a dock or bridge, beside the piling. This is when the challenge really begins. Armed with a mouth full of human-like (or sheep-like) teeth — hence the name — the sheepshead will suck the crab in and crush it, spitting shell and hook out after it has the goodies. More often than not, you will never know you’ve been had.

probably too late. I was always told you had to set the hook before the bite! If you have the good fortune to set the hook in that bony mouth, the fight is on. These black-and-white striped battlers are stout and full of vigor and are guaranteed to give you plenty of sport on light tackle. Fish in the five-to-eight-pound range are not uncommon, and will strip drag easily, providing a good seesaw battle. And, last but not least, sheepshead are delicious! Here are a few ideas to help to make the most of your yard. It’s cold. Yep, for a couple months now on Hilton Head Island, it will be chilly and gray. It’s the perfect weather for dreaming about transforming your yard into an amazing place to get outside, once spring arrives. Creating an environmentally friendly landscape here on the Island can take a significant amount of thought and planning, but the rewards are well worth it. With some savvy advice, wintertime forethought and a willingness to get a little dirty, you can cut down on yard maintenance, save money and create a place where both nature and you like to hang out. Here are a few tips to make the most of your Lowcountry yard: Choose native plants. Native plants attract a variety of birds and butterflies by promoting diverse habitats and food sources. They also promote biodiversity and require significantly less water, fertilizer and pesticides. In fact, native plants can prevent water runoff, improve air quality and decrease air and noise pollution by eliminating the need for mowers and other equipment. Need some guidance as to what’s native to the Lowcountry? Visit naturescapesofbeaufort.com or attend one of Spring Island’s

native plant sales, which are generally held twice a year. Use mulch. Mulch reduces water loss from soil, meaning you will have to water less frequently. Mulch minimizes the germination of weeds, so there will be fewer weeds to compete for water and nutrients. And, yes, fewer weeds for you to pull. Hallelujah. Mulch also improves soil aeration and drainage and reduces soil erosion. South Carolinians can be little obsessed with having a beautifully groomed grassy lawn, but planting ground cover instead of grass can save you tons of money on maintenance. Ground cover sprawls across the ground, but doesn’t grow tall, eliminating the need to mow. Plus, ground covers are usually low-maintenance plants that spread quickly and smother weeds. Compost. Start composting now, and by spring you will have an excellent soil supplement at the ready. Composting is fantastic for several reasons. First, it saves water by helping the soil hold moisture. It also recycles organic resources while conserving landfill space. In addition, composting reduces the

Harvest rainwater. Rainwater harvesting involves collecting the runoff from a structure or other impervious surface in order to store it for later use. Traditionally, this involves harvesting the rain from a roof by collecting it in gutters that channel the water into downspouts and then into a storage vessel. Rainwater harvesting uses simple technologies that are inexpensive and easy to maintain. Best of all, this process puts you in total control of your water supply. You can use what you harvest to water all your plants and your lawn, significantly reducing your water bill. Rainwater is actually better for your plants since it isn’t chlorinated. A harvesting system can be easily retrofitted to an existing structure or built during new home construction. A rainwater harvesting system can also provide an excellent backup source of water for emergencies. None of these ideas are complicated, but they do require planning. So, take advantage of these chilly days to mastermind a plan that will bloom into a setting that beckons you to get #Outside. By Doug Weaver, Director of Instruction, Palmetto Dunes Golf Academy What are your resolutions for the New Year? Step up your game in 2020, and take a fresh approach to golf. Golf provides opportunities for grandparents to play with grandchildren and for spouses to play together. Teenagers who lack natural athletic ability can gain confidence in a game that provides outdoor as well as social experiences. If you’re a frustrated golfer, golf can be made new and better. It’s exhilarating to learn how to improve your game from skilled, professional coaches. Many golfers practice and get tired and frustrated, leaving the course with blisters, inflamed arthritis or back problems. If this is you, allow me to teach you the true golf game. Correctly played, golf is similar to a walk or a hike. Tiger Woods has discussed the fact that golf is a game of opposites, which is why it’s so hard to teach yourself. When you swing slow, the ball goes fast. When you swing down, the ball goes up. When you look up, the ball goes down. When you feel out of control, you learn to be in control. If you’re a novice golfer and you want to accelerate your development in the game, approach golf correctly with efficient, proven techniques and hands-on instruction. Jack Nicklaus encourages others to learn golf by building their game from the hole to the tee to find victory. So, where do you begin? Start by putting correctly. Learn the fundamentals of putting and you’ll experience success quickly. The feeling of the club effortlessly dropping in the downswing is easiest to learn in putting. oped, we can eventually apply it to chipping, pitching and driving. Golfers from other states are sometimes frustrated playing golf in the South because the grass is different. When I introduce them to the proper techniques to play on our grass, they fall in love with golf again. I’m fortunate to have played and practiced with some of the world’s best male and female players. My two college teammates, Beth Daniels and Sherri Turner, went on to become the #1 women golfers in the world. My men’s college teammate, Brad Faxon, has won eight times on the PGA Tour. I’ve played or practiced with Nick Faldo, Nick Price, Payne Stewart, Vijay Singh and many more legendary players. I enjoy sharing the most recent, advanced teaching techniques that helped me receive recognition as the 2017 PGA Teacher of the Year for North and South Carolina. Golf Digest has recognized me as a Top Teacher in South Carolina in 2018 and 2019. A beginner can find instant joy when nurtured and developed by our caring professionals. Recently, a husband called me and asked me to give his wife beginner lessons. She had instant success and wanted more. She was a teachable player and followed my instructions regarding how to practice and play. Ultimately, she developed into a confident, competent golfer who now understands how to play with golfers that are much better than her. She recently joined a ladies group that includes social as well as golf activities. Although she was once intimidated by golf, she now embraces this relaxing, social game that offers her so much in the Lowcountry area and as she travels. I’ve heard countless players say: “I did not know that,” “No one has ever said that to me” and “Why didn’t I do this 20 years ago?” Start the New Year off on the right foot, and challenge yourself to a new beginning in golf. Island Beaches Public Beach Access: The Town of Hilton Head Island provides nine, public beach accesses: • Alder Lane Beach Access, off South Forest Beach Dr. • Coligny Beach Park, off Coligny Circle • Driessen Beach Park, end of Bradley Beach Rd. • Chaplin Community Park, off Wm. Hilton Pkwy. • Fish Haul Park & Mitchelville Beach Park, end of Beach City Rd. • Burkes Beach Access, end of Burkes Beach Rd. • Folly Field Beach Park and Islanders Beach Park, both off Folly Field Rd.

Parking & Facilities:

There are 23 metered spaces at Alder Lane; 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 30 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Beach Park and Coligny Beach Park. Handicap parking is available at no fee at all parks. Restrooms, changing areas, sand showers and vending machines are available.

Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsuper­vised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble.

Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsu­pervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swim­ming ability. Stay in chest deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.
