Perfection Choosing a Wine for the Foods that Heal You By Georgene Mortimer, Island Winery
N
othing beats the simple indulgence of comfort foods. They can take many forms, from the quick-fix bowl of ice cream to the complex dishes rooted in our cultural heritage that anchored our childhoods. These hot off the stove, multiple-ingredient dishes with their distinct aromas have the power to spirit us away to a different — perhaps simpler — place and time. So what could be better? I would argue that the addition of the right wine can only add to the sense of warmth and contentment that comfort food can bring, and will help take the experience of your favorite dish over the top!
Pot Roast, Beef Stew or Meatloaf and Mashed Potatoes
It’s ironic that “meat and potatoes” has come to mean basic and unpretentious, because this classic duo is actually the most versatile when it comes to pairing options. To simply enhance the rustic earthiness of beef stew or a pot roast with roasted vegetables, choose a Merlot or a Chardonnay aged in oak. If your dish is well peppered or you’re looking for a little kick, select a Cabernet Sauvignon, Syrah, Rioja or Malbec. And if you’re into bold flavors that will warm you up with the first sip (especially if you like your meatloaf spicy or doused in ketchup!), a high alcohol Red Zinfandel is just the ticket.
Roasted Chicken or Chicken Pot Pie
Few meals are more satisfying than a simple roasted chicken or a classic chicken pot pie. Whether you’re craving red or white, your selection should be light and fruity. Beaujolais, Pinot Noir and Grenache are great red wine options, while whites include French Rhone blends, dry Rieslings or Viognier. If you can’t decide between a red

and a white, select a dry Rosé — my personal favorite for the delectable flavors in roasted chicken.
Mac and Cheese or Grilled Cheese
For the cheese lovers out there, nothing melts the heart quite like warm cheese. And for wine lovers, there is no better companion! Together, they equal 100% comfort and joy. A simple grilled (American) cheese sandwich calls for a Chardonnay. If you’re dunking in tomato soup, try a low tannin red wine such as a Gamay or Grenache. If it’s Mac and Cheese you’ve been dreaming of, a high acid wine will cut through the richness, with Pinot Grigio, Pinot Blanc or a Spanish Albarino all great options. Finally, let’s discuss the bacon factor, which changes the entire equation! If bacon finds its way into one of the above dishes (no judgment here), then sweetness and/or bubbles are in order. In that case, an off-dry Riesling or a slightly sweet sparkling wine, such as Italian Prosecco, will hit all the right notes. Here’s hoping that this winter will provide some wonderful opportunities to gather around your favorite dishes and enjoy them with the perfect wines! Island Beaches Public Beach Access: The Town of Hilton Head Island provides nine public beach accesses: • Alder Lane Beach Access, off South Forest Beach Dr. • Coligny Beach Park, off Coligny Circle • Driessen Beach Park, end of Bradley Beach Rd. • Chaplin Community Park, off Wm. Hilton Pkwy. • Fish Haul Park & Mitchelville Beach Park, end of Beach City Rd. • Burkes Beach Access, end of Burkes Beach Rd. • Folly Field Beach Park and Islanders Beach Park, both off Folly Field Rd.
Parking & Facilities:
There are 23 metered spaces at Alder Lane, 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 30 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Beach Park and Coligny Beach Park. nated for the Alder Lane, Coligny, Driessen, Folly Field and Islanders Beach Parks. The boundaries will be clearly marked on the beach and in the water. Lifeguards are stationed at these designated areas for assistance and beach information.
Beach Marker Signs:
Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.
Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsupervised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble. hiltonhead.com
Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsupervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swimming ability. Stay in chest-deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.

RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public pathways and nature trails for the enjoyment of pedestrians and cyclists.
RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedestrians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. When resting or stopped, please move off the pathway.
• Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flashlight. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

Lawton Stables Hilton Head’s Wild Places on Horseback By Dani Ray

ucked away deep in the interior of Hilton Head Island, the 605-acre Sea Pines Forest Preserve is an oasis of natural habitats and one of the best ways to experience the native vegetation of the Sea Islands: Pine Woods, Live Oak Forest, Fresh Water Marshes and a wide variety of grasses. Here you might spot one of the 200+ species of birds that live in what the National Audubon Society has designated an “Important Bird Area,” observe an Island alligator or catch a glimpse of one of the Island’s prolific but elusive white-tailed deer population. Other landmarks include a shell ring listed on the National Register of Historic Places and created around the same time as the Pyramids at Giza (4,000 years ago!) and the beautiful Mary, Thomas and Joe Lakes.
“Hilton Head on horseback is the way to go, because there’s no better way to fully connect with nature than on the back of a horse!” says Haley Zimmerman, General Manager of Lawton Stables. On these one-hour, guided western-style rides, visitors travel at a leisurely pace and get to know their well-trained companions, while listening to some of the Island’s earliest stories. Alcohol:
Drinking/possession of alcohol on Hilton Head's public beaches is illegal and could result in a fine of up to $500. Liquor stores are not open on Sundays in South Carolina, though you can buy wine and beer in some gas stations and supermarkets.
Roundabouts:
You might as well learn to love South Carolina’s roundabouts. They’re everywhere! There are just a few rules to follow in the two-lane roundabout: • The drivers already in the roundabout have the right of way. • Always yield to them before entering the roundabout. • A roundabout is like any other flowing traffic — don’t stop in the middle. • As annoying as it can be to get behind a big slow vehicle, it’s even worse to be stuck beside it in a roundabout. Just wait. • Like with intersections, don’t change lanes while in the roundabout.
Beaches:
There are a few rules we all need to keep in mind to ensure a safe experience for everyone who comes to Hilton Head. It is therefore very important to remember that there is: • No sleeping on the beach between midnight and 6 a.m. • No driving on the beach • No horses on the beach • No fires on the beach • No fireworks on the beach (you need a permit to set off fireworks anywhere on Hilton Head, and an offense will result in a misdemeanor and a $500 fine) • No pets on the beach between 10 a.m.5 p.m. the Friday before Memorial Day through Labor Day

here is something both familiar and exotic about the Lowcountry. For those looking to unlock its mysteries, understanding the Gullah culture in South Carolina may just be the key. In the late 1600s, rice was desired all over the world. Enslaved Africans from West Africa’s “Rice Coast” were brought to the Lowcountry to work in the rice and cotton fields. The landscape was hot, remote and teeming with mosquitos. Physically and culturally isolated, the workers were left to live, worship, speak and cook as they wished. They became known as the Gullah, and they created their own cuisine and language, holding tight to treasured West African skills and traditions.

Did You Know? Dr. Martin Luther King Jr. wrote his “I Have a Dream” speech among the Gullah on St. Helena Island, SC. The 1991 film Daughters of the Dust, about three generations of Gullah women, was the first feature directed by an AfricanAmerican woman to have a general U.S. theatrical release. Hilton Head Island’s Gullah community in Mitchelville passed the country’s first law requiring universal schooling. Pat Conroy’s novel, The Water is Wide, fictionalized the Gullah community on Daufuskie Island, SC. 38 Island Events January-February 2021
Gullah cuisine grew out of the resourcefulness of enslaved African women, who applied European and African cooking methods and flavors to locally available foods, including fish, shrimp, oysters, crabs and foods native to the Americas such as tomatoes, corn and squash. Peanuts, watermelon, yams, okra and collard greens were imported from Africa. Quintessential Gullah dishes include fried fish, stewed shrimp and hoppin’ john. In fact, many classic “Southern” dishes came straight from Gullah kitchens. An English-based hybrid, the Gullah language includes nearly 4,000 African words. Gullah is still in use today, especially in storytelling. Spoken, chanted or sung, Gullah stories are proudly passed from one generation to the next. The Gullah also craft beautiful coiled baskets handwoven from sweetgrass and palmetto fronds. Other Gullah traditions include the making of cast nets and the singing of lively spirituals, music that influenced American jazz, blues and gospel traditions. Today, America’s Gullah population is estimated at approximately 300,000. However, because up to 70 percent of enslaved Africans landed in the Lowcountry, many more African Americans have Gullah roots. Believe it or not, at one time it was rare to see an alligator. They were an endan gered species, hunt ed almost to the point of extinction. Many were killed for their leather to make shoes and purses, or for their meat, or just because people were afraid of them. Today we can see alligators pretty easily, since they are now protected by the Endangered Species Act. If you ever see an alligator, leave it alone. Don’t try to make it move by throwing sticks or other things at it.
Alligators can move really fast. In fact, they can outrun any human over a short distance. There is a myth that if an alli gator chases you, run in zig-zags. This isn’t true. They can turn in different direc tions just fine, so you won’t lose them. Another VERY important rule to remem ber about alligators is don’t feed them. This is so important that it’s against the law to feed alligators. Normally alligators don’t want to be around people. But, when someone feeds them, the ‘gators learn that where there are people, there is food. So, when you see alligators around the Lowcountry, admire them from a distance.

BIG POND Why Fishing Continues to Surprise Me Article and photo by Captain Miles Altman, Bay Runner Fishing Charters One would assume that thousands of hours of anything would get boring, but I’ve not found this to be true with the ocean. Part of why I love my job so much is that I never know on any given day what I might see. The first whale I ever saw off Hilton Head was at the Beaufort 45 Reef about ten years ago, and nothing quite prepares you for it. Earlier this year, I saw a mother whale with her calf off Tybee Island, and then just recently I saw another a few miles off Coligny Beach. This year alone has witnessed quite a few surprising sightings: the thresher shark with a six-foot tail my crew reported swimming alongside the boat, the huge makos that have been seen and now, a local fisherman regularly sporting and catching great whites — until a few years ago no one had ever seen one here! Some forty miles off the coast in ninety feet of water, a series of live bottom habitats, consisting of corals, rocky ledges and outcrops holds some of the best fishing available. Huge American red snapper, grouper, amberjack, triggerfish and a myriad of other smaller snapper and grunts await the fisherman with the means to make the journey. “Chicken” rigs, two-hook bottom rigs, baited with cut squid, entice the vermillion snapper, porgies, grunts and triggers to bite, all excellent table fare. Larger live baits like pinfish, menhaden or scad usually produce the 46 Island Events January-February 2021
big American reds, grouper or amberjack. Stout rods and reels with heavy drag settings are needed for these larger fish. The water is much clearer out there, a transparent green with a hint of blue, unlike our nearshore waters. This middle zone that lies between the beach and the Gulf Stream often holds many surprises for the angler. Here I’ve caught redfish (normally an inshore denizen) and sailfish (typically a blue water fish). Cobia and flying fish are often seen, along with huge sharks, and on one of my more memorable trips, I even saw an oceanic sunfish! I’ve spent the majority of my last fifty years fishing the Big Pond. Forty plus years ago when I started fishing these waters, it was rare to see a few boats. Now there are hundreds out there on any given day. Probably the best thing of all about offshore fishing is a chance to escape the crowds. Enjoy the winter, get offshore and do some bottom fishing…the solitude is worth it and you never know what you might find! Capt. Mentally, there is a quietness in the mind that precedes the carefully orchestrated symphony of movements in the golf swing, just as before the archer’s shot or breaking the board in karate. Brain mapping has even shown that during the one minute of a successful golf shot, the brain lights up like a Christmas tree! Physically, golf is similar to Pilates and Yoga in that it encourages graceful and elastic motions that create effortless power. Playing golf correctly is a relaxing walk in the park that leads to a tranquil body and a more peaceful state of mind.
O is for the Outdoors:
Nature truly does have the power to heal. Sunshine, fresh air, flowers and wide green fairways can go a long way toward making you feel better. As 19th century inventor Luther Burbank put it: “Flowers always make people better, happier and more helpful; they are sunshine, food and medicine to the mind.” Increasingly, studies are showing that spending time outdoors can help to lower blood pressure, improve immune system function and work against cardiovascular problems and even diabetes! In fact, “nature prescriptions” are going through the roof as doctors are finding that they can help treat everything from high cholesterol to insomnia to PTSD.
L is for Love:

of the best bonding rituals out there, and golf has a way of breaking down barriers and healing relationships. This is a game that grandparents can play with their grandchildren or newly retired couples can take up together. It’s also endlessly fascinating to study, discuss and improve — why not do this with someone you love?

British romantic poet Lord Byron urged humanity to “Always laugh when you can. It is cheap medicine.” Golf is good oldfashioned fun. Perhaps, surprisingly, it can be even more fun for nonathletes, because they come into the game with lower expectations. And just as with cards and dominoes, there are many, many fun twists on the traditional game of golf. You can play Team Scrambles, Best Ball, One Club, Wolf, Up and Down, Ping Pong, Bingo Bango Bongo, Stableford and many more. These inclusive, faster and less serious games can be played at any skill level. If you don’t know them, be sure to have your coach teach them to you! Hilton Head Island has a long and rich history of visitors. 1520s
Thousands of Years Ago Native Americans came to hunt and fish.
1663 Captain William Hilton sailed the British ship Adventure north from Barbados, scouting lands to grow sugar cane for the crown. Approaching the Island by way of Port Royal Sound, he encountered a sliver of land and called it “Hilton's Headland.”
1861-1865 The Civil War brought big changes to Hilton Head Island. At the onset of the conflict, the South erected Fort Walker to protect the port. When the fort fell, tens of thousands of Union troops, prisoners, missionaries, shopkeepers and enslaved men and women seeking asylum flooded the Island. Suddenly humming with activity, Hilton Head became instrumental in the North's blockade of nearby Southern ports. In 1863, the town of Mitchelville became the first self-governed town for freed men and women.
Late 1950s
Developer and environmentalist Charles E. Fraser began work on the Island’s first resort, which he called Sea Pines. Fraser is sometimes called the father of the modern resort, and his vision for the Island was progressive, even by modern standards. His determination that no building be “higher than the tallest tree,” as well as his rejection of flashy neon signs, became central to the Island's distinctive character. 50 Island Events January-February 2021

17th, 18th & 19th Centuries For many years, few permanent residents made their home on Hilton Head Island. Though the humid, subtropical climate was ideal for growing agricultural crops like cotton and rice, fear of disease and isolation kept antebellum plantation owners on the mainland. Africans worked the plantations, and their unique blend of African and European traditions gave birth to the Gullah culture, which survives even today.
Post Civil War - 1956 After the Civil War, the Island's population dropped to around 3,000, and by 1940, it had fallen to just over 1,000. Electricity finally came to the Island in 1950 and, six years later, Hilton Head’s very first bridge to the mainland made the area significantly more accessible.
Today Fraser's legacy lives on in Hilton Head Island’s balance of commerce with green spaces, golf courses with wild places and thoroughfares with biking trails. Community Parks Barker Field
Located next to Mitchelville Beach, this recreational park is complete with open multipurpose fields, as well as three baseball fields. There is a small playground and a walking path with beach access. 708 Baygall Rd.
Bristol Sports Arena
For those looking for something other than golf and tennis, head on over to the Bristol Sports Arena next to Crossings Park. This sports complex offers a multipurpose rink and skate park. 4 Helmsman Way.
Chaplin Community Park
This park has all the makings for a great afternoon with beach access, basketball and tennis courts, a playground and even a dog park! This large park is all connected by pathways, so it’s easy to get from one place to another, whether that be on foot or bike. 11 Castnet Dr.
Compass Rose Park
One of Hilton Head’s newest parks offers guests a serene space amid the bustling activity on the Island. Its reflecting pool creates a calming oasis, even though it’s right off popular Pope Ave. 4 St. Augustine Pl.
Crossings Park
Be sure to check out one of the very first recreational parks on Hilton Head – Crossings Park. Rowing and Sailing Center

Home to the first self-governed settlement for freed slaves in the United States after the Civil War, this park has great views in a quiet setting. Greens Shell Park
Greens Shell is the site of a historic graveyard. It may be one of the smaller parks, but it still has two sets of playground equipment, a basketball court, an observation deck, picnic pavilion and restrooms. 99 Squire Pope Rd.
Hilton Head Park
If you’re looking for a park that’s away from the crowds, then Hilton Head Park just might be for you. This solitary stretch of land has two tennis courts and a basketball court, as well as a large grassy field for other games or maybe even a nice picnic. 152 William Hilton Pkwy.
Jarvis Creek Park
There’s a lot to do at Jarvis Creek Park, especially if you’re in the mood to move! This 53-acre park boasts all kinds of amenities and promotes activity for everyone – from toddlers to grandparents. Shelter Cove Community Park Right behind the Shelter Cove Towne Centre is a beautiful outdoor retreat complete with a performance pavilion, peaceful picnic spots and a water promenade with breathtaking views of Broad Creek.
