Cork Poppin’ Good: A guide to pairing wine with barbecue By Georgene Mortimer, Island Winery

sauce, garlic and cayenne pepper. This unique blend of sweetness and spice requires a wine that is intense, slightly sweet and acidic. A big Zin or Shiraz is the perfect red wine companion and a spicy, floral Gewürztraminer is the perfect white wine. Are you going out for barbecue tonight and thinking about washing it down with an icecold beer? Well think again, because wine is also fantastic with barbecue. Depending on which famous barbecue region you’re from, you may argue that your hometown barbecue style is the only real style. But on Hilton Head Island, we serve all regional styles, so check out this guide to see which wine will go best with the different sauces.

Memphis Style ribs are heavily seasoned with a dry rub made of brown sugar, pepper, chili powder and cumin. Sauce is served on the side, used as an accent and not slathered over the ribs, so a wine that will compliment the heavy spice in the rub is ideal. A cool climate Merlot or a Pinot Noir will achieve this with their light body and powerful fruity flavors.

Eastern North Carolina Style sauce has a

familiar to most of us. It is thick, fruity and applied generously to smoky pork. The heavy sweetness of the sauce needs a big, assertive red wine. A California Cabernet or a Spanish Tempranillo has the ripe fruit, boldness and spice to contrast with the heavy sweetness of the ribs.

The site contains the remains of a coastal defense battery erected in 1862 to protect the Port Royal Sound from incursions by Confederate gunboats based in the Savannah River. Costumed characters will demonstrate the Fort’s historic importance and the role its namesake, General Mitchel, played in shaping Hilton Head history. Fort Mitchel is located inside Hilton Head Plantation at 65 Skull Creek Dr. When entering the plantation, ask guard for a pass to Fort Mitchel. Bring a valid ID. Island Beaches Public Beach Access: The Town of Hilton Head Island provides nine, public beach accesses: • Alder Lane Beach Access, off South Forest Beach Dr. • Coligny Beach Park, off Coligny Circle • Driessen Beach Park, end of Bradley Beach Rd. • Chaplin Community Park, off Wm. Parking & Facilities:

There are 23 metered spaces at Alder Lane; 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 30 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Beach Park and Coligny Beach Park. nated for the Alder Lane, Coligny, Driessen, Folly Field and Islanders Beach Parks. The boundaries will be clearly marked on the beach and in the water. Lifeguards are stationed at these designated areas for assistance and beach information.

Beach Marker Signs:

Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Beach Safety Tips: • Apply and reapply plenty of sunscreen even on cloudy days. • Wear sunglasses to prevent damage from the sun. • Stay hydrated and drink plenty of water. • Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses. • Don’t leave your kids unsuper­vised even in guarded areas. • Note the location of the nearest lifeguard and report any hazardous conditions to him or her. • Know the name of the beach or hotel/ condo and the beach marker number where you are staying if you should need assistance. • There are often jellyfish and stingrays, as well as other sea life in and out of the water, which may sting or cut a person. In any situation where first aid is needed, find a lifeguard or seek further medical attention. • Call or wave for help if you are in trouble.

Water Safety Tips: • Don’t enter the water if you can’t swim. • Swim near a lifeguard. • Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. • Be aware of direction and strength of longshore currents. These currents can take you up and down the beach quickly and cause you or your kids to get lost. • Don’t let your kids swim unsu­pervised even in guarded areas. • Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. • Don’t overestimate your swim­ming ability. Stay in chest deep or less water to insure you don’t get stuck in water over your head. • Don’t rely on flotation devices. • Swim parallel to shore if you want to swim long distances. • Don’t swim against the current. Swim across the current to escape the pull. • Always swim sober. • Don’t dive into unknown water or shallow breaking waves. Always go feet first.

Pickleball Happenings By Mark Anders, Head Pickleball Pro at Palmetto Dunes Oceanfront Resort

For those who have not been to Hilton Head Island since last summer, you will notice some big changes at the Palmetto Dunes Tennis and Pickleball Center. We have expanded our facility to include eight additional fully dedicated pickleball courts, bringing our total number of pickleball courts to 16 — all of which are lighted for night play. The highlight of our programming remains the pro-supervised morning pickleball round robin, where all 16 courts are utilized. These popular events challenge players at every skill level with competitive play. Players are grouped by skill level, and the pro rotates players to ensure that everyone is competing at their skill level. The round robin is a great way to meet other pickleball players who are visiting the Island in a fun, social environment. Pickleball round robins are held every morning, seven days a week, from 10 a.m. to noon. Beginner clinics are offered for anyone looking for an introduction to pickhiltonhead.com

This month, reel in one of these tackle-busting brutes. Spring’s warmer waters have populated quickly with a diverse and bountiful population of sharks. These tackle-busting brutes offer great sport — and plenty of it. Long known as a primary breeding ground for many species, the local waters near Hilton Head Island host many types of sharks, including hammerheads, tigers, blacktip, spinners, sharpnose and bonnetheads, just to name a few. In the last few years, even great whites have been captured here. As with many fish, the decline of stocks, coupled with an exploding population of fishermen, has brought about numerous regulations, making it necessary to release most species, except for two in particular: the sharpnose and the bonnethead. may keep one of any size of these two shark species. Both are considered good eating, especially the bonnethead, whose diet consists primarily of shrimp and crab. Both shark species can be caught in local sounds and creeks with a variety of cut or live bait.

Other popular targets for shark seekers are the blacktip and spinner sharks. Nicknamed “poor man’s tarpon” for their aerial antics — which can be spectacular — these sharks require a 54-inch minimum length to keep. Both the blacktip and the spinner shark are excellent table fare. The bigger versions of these species are often found behind working shrimp boats, as they love to scavenge tidbits and, much to the chagrin of shrimpers, frequently bite holes in the nets to help themselves to a feast! Offshore, many anglers target the big tiger sharks, which average 8 to 10 feet and weigh up to a thousand pounds. Heavy tackle is required, along with stamina. These battles can go on for hours. Tiger sharks are tough customers, to say the least. The opportunity for hours of angling enjoyment with a wide variety of sharks is available here all summer long. And for those who may raise an eyebrow about safety, just remember that you are far better off swimming in the ocean than driving along Hwy. 278! Capt. Sea Turtle Season

Meet a few of the fascinating turtles that frequent Lowcountry waters. By Anneliza Itkor, Outside Hilton Head Here in our Hilton Head Island waters, we are fortunate to host four of the seven majestic sea turtle species. Loggerheads are the most common in this area, but Leatherbacks, Kemp’s Ridleys and Green sea turtles also call our Lowcountry waters home. Loggerhead turtles are the most common in this area and were named the official reptile of South Carolina in 1988. They earned their name for their massive head and powerful jaws, which enables them to feed on hard-shelled critters like whelks and conch. Loggerheads can weigh as much as 300 pounds and measure up to four feet in shell length. Green sea turtles are named for the green fat in their body, due to their vegetarian diet, which consists largely of sea grass. The largest hard-shelled turtle species, Green turtles can grow to an average shell length of five feet and weigh approximately 350 pounds. Green turtles don’t typically nest on our shores, but the juveniles regularly forage our waters from April through November. Leatherbacks are unique because they don’t have a hard shell. Instead, they sport a leathery shell with longitudinal ridges. Leatherbacks claim the title of “largest sea turtle,” typically weighing in between 800 and 1,300 pounds. In fact, the largest sea turtle on record was a Leatherback found stranded on the coast of Wales, weighing roughly 2,020 pounds. Leatherbacks migrate through our near-shore waters in the spring and fall, feasting on jellyfish as they commute back and forth between their feeding grounds in Nova Scotia and their tropical nesting beaches. The Kemp’s Ridley turtles are the smallest and rarest, weighing about 100 pounds and measuring only two feet in length. Like the

Leatherback and Green sea turtles, these reptiles don’t typically nest in South Carolina, but they come into our inshore and nearshore waters in warmer months to snack on our delicious blue crab population. Sadly, all of the sea turtle species in our area are listed as an endangered species. They are protected by both federal and state law, but their numbers are still being dramatically impacted by both natural and human-caused threats. Sharks are the turtles' primary natural predator, but humans contribute to sea turtle mortality through destruction of natural habitat, boat propeller damage, pollution, commercial fishing and climate change. As individuals, we can help protect sea turtles in any number of ways. If you must use a plastic bag or spot one in the environment, knot it up before throwing it away. This prevents them from blowing out of landfills or trash cans. Most importantly, if you rent or own a property that is visible from the beach, turn your exterior lights off after 10 p.m. from the beginning of May through the end of October.
