Unfortunately, we have limited so c ia l act iv it ies du r i ng t he virus but as soon as we are able, we will resume our newcomers’ event and happy hours. Cong rat u lat ion s to long t ime La ndi ngs resident Bob Fernander, on his 90th birthday. By the time you read this, we will have begun work on Peregrine roads. We apologize for t he i nconve n ie nce for resident s a f fe cted by t h is i mp or t a nt proje c t. We a r e not only resurfacing the roads b ut a r e a l s o d e a l i n g w i t h significant drainage upgrades. The current project turned out to be much more expensive than we originally projected.

We have been building reserves for roads for many years but they are not sufficient to do all of the roads during our original projected timeline. Our finance committee and board will be addressing this challenge over the next few months so that over the next several years we will be able to continue work on other sections of roads in The

Landings. In February, we will have our annual meeting and election of board members and officers. We h ave severa l wonder f u l board members who will be leaving the board due to “term limits”. We are now recruiting ca ndidates to r u n for t he board. If you are interested, please cont act Joa n Kopl i n, Nominating Committee Chair. Over the past several months, our securit y com m it tee has been exploring the need and costs associated with putting in new more secure gates at the North and South entrances. Based on the cost, a nd lack of significant security issues

t h i s p a s t y e a r, t h e y h a v e recommended that we delay going forward with new gates at this time. Our November board meeting will be at 7 PM on November 5th. Contact Dick Bayles for Zoom login information. The 2021 operating budget, that was published in the October Eagle will be presented for a vote at our November meeting. We face challenges with significant increases in our landscaping costs and need for maintenance of ou r l a ke s a nd d ra i n age. T he f i n a nce com m it tee is recommending an increase in the annual assessment to cover those additional costs. So far, we have been very for t u n at e i n T h e L a nd i ng s during the pandemic. We’ve only had a few cases among residents. Given the recent spike in cases in Florida, we e n cou rage you to cont i nue we a r i n g m a s k s a n d s o c i a l distancing.

LMA Meeting Notes By Trebor Britt LMA President Norm Olshansky began Zoom meeting by announcing the following during his president’s report:

companies. Three replies were received and two companies declined to bid. The company currently under contract is in the process of revising their bid based on needs at the Eagles Nest area.

• The board of directors extends their deepest condolences to Landing’s South III resident Sandy Frank and her family after the death of her husband Bert a few weeks ago. • Nearly 200 responses were received regarding the Eagles Ne s t s u r ve y. Re s p o n s e s w i l l be rev iewed a nd feedback solicited before any recommendations are voted on. The Committee hopes to narrow the scope of ideas before the end of the year. The board of directors encourages all residents to visit the beautiful area, which is owned by LMA, for the use and enjoyment of all residents. • Nominations for new talented board members in the coming year are now being solicited by Committee Chair, Joan Koplin. • Board members were encouraged to be cautious in determining LMA verses Association responsibilities and costs for projects so as not to set precedent. Transparency rega rd i ng how a nd why decisions are made was also encouraged. • I n light of the substantial expen ses rega rdi ng road work, committee chairs were encouraged to be fiscally c aut i o u s r e g a r d i n g a ny additional expenses unless they are necessary.

• I n formed the nominating committee of vacancies. • Attended a Safety and Security meeting to discuss address issues connected with speed infraction letters. • Discussed invoice processing delays with Dick Bayles and Mike Knupp.

SAFETY AND SECURITY C h a i r m a n M ic h ael K nupp reported an estimated cost of $25,000 -30,000 each for new, secure gates for the North and South entry points. For now, the committee is looking into a less expensive option of providing motion detectors and cameras tied into the main gate video security system. Motion detectors for both gates may only cost around $1000. Further discussion and more specific details will be reported at a future board meeting. K nupp reported a sheriff’s deputy apprehended a suspect i n the shoppi ng center a fter a newspaper delivery person reported a suspicious person to the main gate. Valuables stolen from an unlocked vehicle in The Landings was found on the suspect. The deputy reported an increase of car break-ins throughout Sarasota Cou nt y a nd recom mended residents remove valuables from

their cars and keep them locked and their garage doors closed. Last month, 41 garage doors were reported left open at night. A motion was made to send a thank you letter to the newspaper carrier’s boss and provide a $100 gift card to the newspaper carrier for alerting the main gate of a suspicious person. The motion passed unanimously. A $500 check was received from Amazon Prime to repair a gate damaged by one of their drivers. The supervisor promised to share gate entry access details and Landing’s speed limits with all their drivers.

LANDSCAPING A motion was made for LMA assume responsibility for grounds maintenance outside the wall along Philippi Shore Drive that includes Landing’s South V, five home owners and Carriage House I. A second motion was made to wait until costs of this landscaping work could be determined. The second motion passed.

2021 BUDGET Tr e a s u r e r, D i c k B ayl e s announced that until a decision was made regarding the landscaping contract, the budget process was at a standstill. Additionally, he related the finance committee is also working on projections for future roads expenses.

GAZEBO LMA Pres. Norm Olshansky reported ongoing concerns about erosion near the gazebo. He noted, during recent high tides, water

covered the Nature Trail from the Gazebo to the bridge. One bid of $13,272 was received to take care of the problem. Additional bids from engineers/contractors will be solicited before a final decision is made.

PEREGRINE ROADS PROJECT Paving Construction work is scheduled to begin October 12 and seventy homeowners will be directly affected by the Peregrine Point repaving and drainage project. Dick Bayles shared a brief presentation of the entire roads project with the board. The presentation included all engineering drawings which included every road beginning with the name Peregrine. The project is to be substantially completed by November 11th and fully completed by November 24th. There will be limited Saturday work involved. Unexpected severe weather will cause delays. A detailed schedule will also be published when it’s available. Door notices will be delivered 48 hours before work begins. Special attention will be given to new drainage along the island and banyan trees. Asphalt will be removed by hand to protect banyan roots. New curbing and additional drainage will be included in the project. Residents are asked to be patient. The work will be noisy, messy and an inconvenient. Once the pavement is laid, it should last 20 years. A zoom presentation will also be made to all directly affected by the project.

NOMINATING COMMITTEE Chair Joan Koplin reported there are five open board positions next year. The majority of the current board members with expiring terms wish to be reconsidered for their positions. Koplin is asking for recommendations from all Association Presidents as well as board members.

COMMUNITY EVENTS Chairman Doug Day announced s eve ra l r e side nt s r e que st e d permission to erect Halloween inflatables used in previous years even though the board was not scheduling a Halloween event for 2020. Day moved for the board to approve use of the inflatables. After some discussion, the motion passed 8-1.

MAINTENANCE Maintenance Committee chair, Ron Pierce, reported the progress of several projects. • The sign repair and replacement program continues. • A new sign was installed at the Main Gate to direct commercial traffic. • T he Sa fe t y a nd S e c u r it y Committee suggested cha ng i ng the lock or the combination securing the Field Road Gate. This task is in progress. • S everal road delineators at Kestral Parkway North are being repaired or replaced.

Happiness is…Thanksgiving

Treasurer, Dick Bayles current end of year forecast calls for a surplus of approximately $11,000. He was pleased to report only one receivable remains uncollected and a lien is being filed. Bayles announced no suggested changes in the 2021 Budget since it was published in the paper. The big unknown regarding the budget is the grounds/maintenance item, as bids for landscaping are still being solicited.

There couldn’t be a truer statement. In this topsy-turvy year, there’s something so special about taking time to give thanks for the good things. The mindset of giving thanks gives us a precious gift of perspective. Jerry Williams, owner of Abel’s Ice Cream agrees. “There’s always something to be thankful for,” he said. “At Abel’s we’re so grateful for our loyal customers and friends.”

Father & Son Clay Championship Editor’s Note: For the first time in the 27-year history of The Landings Racquet Club hosting the Father & Son Clay Championship, the event was canceled due to the COVID-19 pandemic. Nonetheless, The Landings Eagle wanted to continue the tradition of reporting on this great event with some stories about the tournament. Hope you enjoy these stories, and like us, look forward to having the tournament back at the LRC in 2021.

Ambassador Program Plays a Vital Role in the Father & Son Tournament By: Dee Ricapito

Ever y year, Ralph Ricapito gathers and matches tournament ambassadors with the players. Ralph shared the process he goes through in fulfilling this task. “First, I need to compile a list of residents who will want to serve as ambassadors,” he said. It was a big job last year. We hosted over 40 teams and subsequently need that many ambassadors.”

“Then, he added, “if possible, we try to match up common interest among the teams. We review location, job, or other areas of interests” “Next, we explain the duties of the ambassadors which is a simple, yet, joyful job. The ambassadors introduce themselves; welcome their team to the Landings at their team’s first match; attend

their games; and just be there to help with players inquiries about Sarasota and the tournament. If they wish, the ambassadors are invited to attend the dinner hosted by The Racquet Club and join their team. At the end of the tournament, I give Game T-shirts to all the ambassadors as a token of the Racquet Club’s appreciation. “ Spectators watching the finals

Tournament Ambassador Interviews • JIM & SANDY GOLDMAN “We have been involved in the Father and Son Clay Tournament almost since we moved into The Landings. For many years, we adopted a team from Charlotte: Stewart & Scott Fligel. We loved getting to know them, cheering them on year after year, meeting their families, and enjoying their company on and off the courts. T he eve nt i s t he h ig h l ig ht of the fall season and we all love bei ng a pa r t of it. Even o u r k id s wh o we r e c o m i n g i n for T h a n k sg iv i ng , a lways loved coming earlier to see the tournament.

When Scott and Stewart didn’t come one year, we were paired up with the Goldmans. My Jim Gold m a n got to root for t he Goldmam team, the son also being named Jim. D e e a nd R a lph h ave don e a n a m a z i n g j o b e ve r y ye a r organizing all the volunteers and naturally Kevin, Mo, Hans and Edbin do everything they c a n to m a ke t he eve nt eve n more memorable than the year before. We will sorely miss the tournament this year but look for wa rd to pa r t ic ipat i ng for many years to come. “

Our son Jeffrey also went to their matches and cheered them on. Casey said, Jeffrey brought him good luck. When they weren’t playing, they would go and watch Jeffrey play in his clinics, and were impressed with his game. Casey asked Jeffrey to hit with him to warm him up before his match. Don & Casey made it to the finals, but lost. The winners get a gold ball, and the

runners up get a silver ball. Casey called Jeffrey out on the court and gave Jeffrey his silver ball!!! Unfortunately, Don had knee problems and could not play in last year’s tournament. However, we did see Casey again when Jeffrey had a (boys 16) tournament in Delray Beach early this year. Casey took time out from his busy Sunday to come and watch a little of Jeffrey’s match. He is Pastor of The Avenue Church (which he started in 2010). It was our great fortune to meet and make wonderful friends.

Stopped here for lunch and so glad we did. Family run restaurant. The owner only buys whole fish and filets them himself - that is how fresh it is. Fish changes daily depending on what is fresh. The crab cakes were amazing no fillers, one of the best we have had. Had the black grouper platter which can be prepared several ways. It’s a must for fresh fish, not like other places that the fish comes in frozen. Like many commented it’s a true hidden gem.

Juice of 1 Lemon (1/4 cup juice) Mix well and set aside, or refrigerate for another day. Dressing keeps well in the refrigerator for a couple of weeks. Good for picnics and to take to events because there is NO EGG in the dressing. When serving, toss well and grate on top additional cheese, such as Locatelli Romano or another Peccorino cheese, and apply coarse ground black pepper. Enjoy!

INGREDIENTS 1 cup pecans (toasted & finely chopped in food processor) 2 Tbs. Butter

• M elted bitter sweet or semi-sweet chocolate chips (for dipping - after baked) Mix butter and brown sugar until creamy. Add egg, vanilla and bourbon. Then flour, baking powdered salt mixture. Stir in pecans. Bake at 350* for 6 min. Spaced 3 inches apart. (These will spread considerably) Cool for 5 minutes until firm. Remove to cooling rack to cool completely.

Handling Processed Pet Food: It Takes a Little Care By Kyle Baker, Senior Pet Food Nutritionist If you’re a long-time dog parent and have your pup’s diet plan locked in after years of refinement, we’re guessing you might be buying food in bulk. It’s a time and money saving trick that many dog parents use to streamline canine care, but without proper oversight it can be costly in the long run. While commercially processed dog foods tend to have longer shelf lives, they don’t last forever. And without proper storage, that can end even faster—and potentially cause bigger issues. Fortunately, we’ve got a few tips that can help keep your pup happy and healthy, and allow you to maintain the routine that works best for you.

Start with Expiration Dates Whether you’re familiar with your dog’s diet or you’ve just added a new furry family member, you should always check expiration dates when buying dog food. They’re easy to find – just look for the “best by” date, typically located on the bottom of bags or cans. These dates represent the food’s freshness before opening, and can vary depending on food t ype and the manufacturer’s quality and safety standards. Dry pet foods have a shelf life of 12-18 months. Once opened, dry food lasts roughly 2-3 weeks, so make sure you’re buying the appropriate volume. Canned foods are good for two years from the manufacturing date. Once the top is popped, canned food will remain fresh for 3-5 days with the help of an airtight lid and refrigeration.

Keep Your Pup Hydrated

Open that calendar app and set a reminder to serve your dog’s food before expiration. It may seem tedious, but you’ll thank us later.

Store Processed Food Properly Next, it’s imperative to ensure you create t he r ight storage solution for your dog’s food— particularly with dry kibble. If you’re like many dog parents, big bags of dry food get relegated to the garage, but that’s a major no-no as heat, moisture, and even air can spell trouble for kibble. To maintain stability, kibble should be stored in a cool, dry place away from shifts in temperature. Under these conditions, experts recommend keeping kibble in its original bag, which is designed to protect food from the elements. Again, make sure you’re buying the right size bag for a 2-3 week timeline. If you do decide to go bigger, we recommend storing the

bag in a sealed container. Why is proper storage so critical? During processing, kibble is heated and dried to remove moisture and prevent oxidation, which can breed mold and bacteria. Each time a bag or container is opened, food can lose palatability and nutritional value as fats are oxidized and the food is robbed of beneficial vitamins and minerals. With prolonged exposure, healthy fats can spoil and become rancid, creating an unpleasant smell. But even more important than the odor are the possible long-term effects as consumption of rancid fats can contribute to health issues like malnutrition, kidney and liver disease, reproductive problems, and even cancer or death. If you’ve had food awhile and are unsure if it’s gone bad, keep an eye on your pup to see if they turn their nose up to what’s on the menu.

Ever try eating cereal without milk? It’s just not as good, right? At best, the experience isn’t what the manufacturer intended. Somewhat si m ila rly, wh ile heating and drying keeps kibble fresh, it’s best with a little water. When eaten, dry kibble rehydrates in your dog’s stomach with the help of stomach fluid. If your pup is properly hydrated, they’ll comfortably digest the kibble for a nutrient boost. But if your pup isn’t getting enough water, their stomach will source moisture from throughout the body to assist digestion, potentiallyleading to dehydration. Ad e q u a t e h yd r a t i o n i s a crucial part of maintaining your dog’s body temperature, aiding circulation, and promoting proper digestion. If you see signs of dehydration in your dog—like a dry nose or eyes, brittle fur, or heavy panting—you can readily change that by pairing wet food with dry food or adding water or animal broth and toppers to kibble.

Look for Quality Ingredients As we’ve mentioned previously, you can give yourself and your dog a leg up by starting with good ingredients. Aware that oxidation and nutrient loss can be an issue, many pet food manufacturers s u p p l e m e n t p r o du c t s w i t h antioxidants, multi-vitamins and fresh foods to prevent free radicals and maximize health benefits. When i nvest igat i ng labels, keep an eye out for antioxidants like blueberries and cranberries, sources of Omega-3 fatty acids like

marine microalgae, and chelated minerals that help support immune function and nutrient absorption. And remember, if you need a hand, you can always consult your vet or local independent pet retailer. With a little research, proper storage, and a solid plan, you can guarantee your pup’s diet is always on point.

When we recovered from the lightning-caused internet and wi-fi outage of last month, we’ve changed our wi-fi naming. If you connect to LRC-Guest, it will follow you in all the buildings. You should see better outdoor coverage as well; the new routers are more powerful than the ones they replaced. The USTA cancelled all 2020 tournaments, so there will be no Father/Son Clay Championship this year – the first cancellation in our 27-year history of hosting the tournament.

We’ve avoided increases for the past two years; the increases is slightly higher than 1%, well below the inflation over the past two years. The An nual Meeting of the Club is on January 19, 2021 at 7:00 PM. There are three seats up for election. Any member who intends to run for election must submit a written notice and any materials to be mailed in the Annual Meeting package to Kevin by the end of day December 5, 2020. email address and I will be happy to add you. Beginning November 1st, the Peak Time rule goes back into effect. It states that if you have a guest in your group at 9:30 AM you can only reserve the court one day in advance. Also, from November 1st t h rough April 30th, the guest fee for tennis is now $10 all day regardless of what time your match begins. The fee for non-members using the facilities for exercise classes, ca rd ga mes a nd ot her social activities is still $3 per time. Please see me in the Tennis Pro Shop if you have any questions about the Club’s guest policy.

I have been at The Landings for three and a half years and have seen a lot of improvements in the active players games. As you continue to improve and put in more time on the court, make sure to keep your body strong in order to handle all the repetition. For example, I feed thousands of balls everyday on the court. S o, I h ave to m a ke su re my forearm, elbow and wrist are strong enough to handle all of that workload on those specific body parts. Every morning before I come to work, I have a strict routine that includes, using the Theraband F le x-b a r to k e e p my e lb ow, wrist and forearm strong. This takes one minute of my routine in the morning, but the impact

should not be underestimated. I do two drills with the Flex-bar one for pronation, and one for supination. Pros on the tour do exercises like th is with resistance bands and tubes everyday to maintain and increase stamina for repet it ive movement s t h e y u s e for d a i ly t r a i n i ng and competition. It only takes simple consistent efforts to keep your body healthy and ready to play. These are inexpensive tools with a potentially huge impact in how you can keep yourself h e a l t h y a n d c o n t i n u e p l ay for many years to come. “BIRDS IN OUR (PANDEMIC) BACKYARD” Bald Eagles Enjoying Lake 3! Maralyn Kaufman-David LMA Environmental Committee Chairperson (photos by Walter Hamer and Jeff Durante) You have no doubt heard about some of t he n at u ra l aspe ct s of ou r world flourishing during the Covid-19 pandemic; for example, better water clarity and sightings of dolphin fish in the canals of Venice, Italy, due to decreased boating that normally churns up the sediment; Los Angeles in the news for having the best air quality in the world for a couple of days in April due to the decreased industry and automobile traffic; bears and other wildlife roaming the streets because of fewer humans and noise. Birds are also in the limelight since the pandemic shutdowns have slowed the pace of our lives. For example, a New York University study “The Sounds of the City,” which placed microphones around New York City to study urban noise, revealed a drastic decrease in the sounds of people and traffic when Covid-19 set in. A lovely consequence of this has been that humans are better able to hear birds singing…and they are taking notice! Similarly, birds and residents in The Landings have also been con necting

more! Of particular note is another sight i ng of s o m e A m e r i c a n b a ld eagles (you may recall t wo ba ld eag les were sighted in the Eagle’s Nest Area of The Landings in November 2019). T h is year, Landings residents Walter Hamer and Jeff Dura nte (President of t he C a r r iage Hou s e I Association) first noticed an eagle hanging out on a log in the middle of Lake 3 in late September and almost daily visitations of two eagles for several weeks into October. These sight i ngs add to the success story of the bald eagle restoration in Florida since the near extinction in the 1970s. Looks like Lake 3 in The Landings is helping maintain Florida’s distinction of being home to more bald eagles than any other state

Homemade brownie lovers take note Brownie lovers have a new local source for delicious, homemade brownies. Lula’s Brownies, owned and operated by Marilou Berrios, is a business that bakes original brownies with only one flavor deliciousness. The idea to turn her homemade treats into a business was a family affair. “The idea of selling our brownies was first mentioned one night while having dinner,” said Marilou. My three sons (17, 14 and 12) were saying how much all their friends loved my brownies. Every time they had a birthday, I would bake a batch of brownies and their friends would devour them.”

However, by January 2020, Lula’s Brow n ies was the sponsored dessert for 500 women attending the Voice + Visibility Women’s Summit luncheon. “This event was an exciting introduction to our business,” said Marilou. “We created 500 minibrownie bags; one for each guest. The production line became a family affair. The brownies were a big hit and the luncheon was a great success.” Lula’s Brownies is getting rave reviews from customers, too. The Spawning of Mote SEA By Lisa Codianne Fowler The reborn Mote Aquarium will be a traffic stopper. Literally. Due to its carefully considered perch at Sarasota County’s Nathan Benderson Park, just west of Interstate 75 near the Mall at University Town Center in Sarasota, an average of 43 million drivers will have the facility in clear view. To realize their sea-inspired vision, Mote contracted the architectural firm of tvsdesign Architecture & Design, with offices in Tampa, Atlanta and Shanghai. “Drivers will easily spot the iconic building, whose diaphanous skin will form smooth ellipses rising into the sky like ripples on a calm sea,” states the moteoceansforall. org website. Termed “a nexus site” for Sarasota and Manatee counties and the southwest Florida region, three million residents will be able to drive there in less than 60 minutes. For the first year, Mote anticipates 700,000 visitors to its new home, twice the organization’s current annual attendance. Known as Mote Science Education Aquarium (SEA), a facility dedicated to education and outreach, the striking edifice will house an 110,000-square-foot-hub of marine science on 12 sprawling acres. Inside the four-story space, exhibits containing more than one million gallons of water will feature an array of sharks, Atlantic and Pacific coral reef species, manatees, sea turtles, otters, and myriad

other wildlife. Visitors will be treated to glimpses of the deep sea and other remote habitats, including Mote research sites from across the globe. For a special fee, intrepid adults will be able to gear up, dive in, and plunge into an enormous shark tank where they will have the opportunity to safely swim with these enormous fish. The tank will hold a half-million gallons of saltwater that replicates the sharks’ Gulf of Mexico habitat. A state-of-the-art teaching facility, Mote SEA will include hands-on interactive STEM (science, technology, engineering, and math) teaching labs. Educational programming will be available, free-of-charge, to approximately 70,000 students from Sarasota and Manatee County schools. “Mote SEA will expand formal STEM education to each and every K-12 student in Sarasota and Manatee County Public Schools and transform our ability or provide informal science education and enhanced levels of ocean literacy to much larger and more diverse populations in our community,” said Mote Marine President and CEO, Dr. Michael P. Crosby. Crosby also noted that “Mote SEA will generate a significant boost for our regional economy and further support innovative research for the sustainable use and conservation of our oceans.” As of July 2020, according

Arts on the Horizon Hurricane season is over, temperatures are down, and there are more concerts in the air. Literally, in the air - as in outside (is “in outside” an oxymoron?). And the nice thing about “outside” is that it’s just about everywhere. Anyway, let’s start with Selby Gardens, as it’s always nice to start the day, any day, with a meal. But in this case, specifically November 11th, Selby is hosting Lunch in the Garden. Why attend? Well, it’s November and some of your snowbird friends will be returning to Sarasota, so it will be nice to see the top half of their head when you greet them after so many months. And then their entire face when your delicious lunch is served. Plus, remember, you’re in Selby Gardens, one of the “7 Natural Wonders of Sarasota”, so the entire surroundings will be beautiful. In addition, there will be an “internationally renowned speaker” to tell you something you probably don’t know. On the evening of November 13th, the Garden is taking a twopronged approach to another festive occasion. The Westcoast Black Theatre Troupe will be singing to a select group of 150 in person guests at Soul in the Garden. Old favorites like Twistin’ the Night Away, Your Love Keeps Lifting Me (Higher and Higher), and Dancing in the Street will bring back old memories. The second prong of this approach will be that those who can skip a Michael’s On East catered dinner will be able to sit at home eating PBJ sandwiches and watching the festivities streaming into their living room, dining room, or bedroom - or, if their cable is long enough - in their own garden. The Story behind Larissa’s Beautiful Gemstone… Larimar is an extremely rare gemstone found only in the Dominican Republic. It was originally discovered in 1916 then later re-discovered in 1974 by Norman Riling, a member of the U.S. Peace corps and Miguel Mendez. Mendez combined his daughter ’s name Larissa (Lari) with the Spanish word, sea (mar). Often purchased by families for their daughters because of the special symbolism of mother, father, daughter - to represent the union of family. The stone is formed when hot gasses push crystalized minerals up through volcanic “tubes.” Most small blocks of Larimar are in situ, meaning they exist in the very place they were formed. However, through soil erosion, some pieces broke off and were moved by rainfall down the slopes of the hillsides and rivers. The river deposited them in the Caribbean Sea where some pieces washed up on the seashore by the waves. In order to excavate the Larimar gemstone, miners must dig deep into the mouths of the vast volcanos. Larimar ’s exquisite light blue color often seems to capture the beautiful blue colors of the sea and sky found in the Caribbean. For that reason, it is also sometimes known as the Caribbean gem. Larimar is considered a healing stone and the Atlantis stone because it is claimed that some islands in the Caribbean, including the Dominican Republic, where part of the lost continent of Atlantis. Fo r t h e aw a r d winning Sarasota artist Susan McNichol who has worked in art forms as diverse as woodwork, painting, jewelry, hairdressing, and now seashell design, the u n ique shapes a nd colors of shells are her inspiration and joy. “Seashells and mermaids have always been a favorite of mine,� said the Ontario, Canada native who made Sarasota her home nearly 20 years ago.

Together, the couple began to exper i ment wit h desig n a nd function. “We got right on it,� she recalled, noting that “after months of testing and some time spent on trial and error, we came up with the right combination of shells and stone.� They soon went on to patent their breakthrough design called Seashell Oil Lamps. Each lamp features

casing that reflects the flickering light. Each McNichol S ea shel l Oil Lamp is slightly different. The shells that she uses i n her wo rk a r e i mp o r t e d from all over the world and sourced from reputable vendors. The Jade Turbo shell is her favorite. Originating from the Indian Ocean, it reflects the blue-g reen colors of t he o cea n. She a l so favors the Striped Fox conch shell, found in the waters off the coast of S out hea st A f r ic a a n d t h e We s t e r n Pacific Ocean. When c r e at i n g h e r l a r g e r pieces, McNichol often selects the dramatic pink and peach colored Triton shell, imported f rom t he Ca r ibb ea n and named for a my t holog ica l Gre ek god of t he s ea. She finishes her pieces by ador n i ng t he la mps with colored sea glass, smaller shells a nd other natural wonders of nature that frame the larger shell. “I test every shell before incorporating it into a Seashell Oil Lamp design,� she advised. Over the years, word of the uniquely beautiful Seashell Oil Lamps grew as McNichol and Cerniglia sold their creations at coastal shows and fairs all around Florida. “People from all around the world have bought our lamps,� McNichol said with pride. “Recently,� she said, “a couple f rom Irela nd b e ca me customers.� Although Cerniglia passed away in 2018, McNichol is continuing to carry on the couple’s successful business. In early 2020, her design won first place at the Sarasota Seashell Show in the Professional Lamp

Her small Seashell Oil Lamps begin at $39.00. Additional larger S ea shel l La mps a re sold for $59.99, $89.99, and $99.99. Her largest pieces begin at $299.00. McNichol told the Siesta Sand that the lamps can burn paraffin and citronella.

Fretwork Woodworking Designs McNic hol i s a l so a m a ster of f re t work, a n i nt r icate ornamental wood design done with a woodworking fret saw that originated more than 3,000 years ago in ancient Egypt for furniture inlays. Many of her intricate, whimsical fretwork pieces can be found alongside her Seashell Oil Lamps at the

Coastal Flow store. A mermaid wind chime, that retails for $79, is “a customer favorite,� according to Jesse Gill, co-owner of the Coastal Flow shop. McNichol’s ot he r de corat ive f r e t work pieces that include wine glass holders and stand-alone wood sculptures, range in price from $40 - $150. “My grandfather taught me how to use a scroll saw as a teenager in the 60s,� she said. That led her to win the title of Grand Champion at the Indiana State Fair. “Later on, I discovered that fretwork is more intricate than just scroll sawing,� said the artist. To prepare her intricate creations, McNichol sketches many of her designs on paper, often featuring mermaids and seashells in her designs. “They’ve always been a favorite. I give the mermaids different hair styles and really have fun with them,� she said with a laugh.

Use an electric hand mixer here. 3. Add mascarpone cheese and mix gently (folding m o v e m e n t s) w i t h a wooden spoon or spatula until completely smooth. 4. Add the egg whites and mix as in step 3. 5. Put 1 full tablespoon of cream in the bottom of a dessert cup (5 oz.). 6. I n a plate, soa k 2 ladyfingers with coffee and place them on top of the cream (you may have to remove some part to fit). 7. Cover with a full tablespoon of cream. 8. Repeat 6 for the second layer. 9. Cover the ladyfingers with a generous amount of cream. 10. S prinkle with cocoa powder. 11. Keep in the fridge for at least 1-2 hour before serving.
