POTS, PANS AND DELICIOUS FLAVOURS

TUSCAN PANZANELLA WITH TYRRHENIAN ROCK OCTUPUS Gianluca Braglia is Grotta Giusti’s executive chef. He was born in Piombino in Tuscany and honed his skills with mentors such as Alain Ducasse, Ferran Adrià and Gualtiero Marchesi. For his recipes he chooses locally sourced, seasonal ingredients, using modern cooking techniques to preserve their flavours, aromas and health properties. Here he presents his own take on a Tuscan culinary classic, panzanella. As is traditional, the humblest of foods is turned into a delicacy, in a dish that contains stale bread softened in water and served with vegetables. In Gianluca’s version, it is finished off with steamed octopus. It’s a light, very cool dish that’s perfect for a summer lunch, with the flavours of the sea and the freshest vegetables combined with the softness of the bread.

INGREDIENTS FOR 4 PEOPLE 4 slices of stale Tuscan bread, 200 g of the freshest Tyrrhenian octopus, 1 ripe tomato, 1 spring onion, 1 celery stalk, 1 cucumber, 1 spoonful of wine vinegar, extra virgin olive oil, salt and pepper.

HOW TO MAKE THE OCTOPUS Wash the octopus well and steam it until it is very tender. Then cut it into medium-sized pieces, dress with extra virgin olive oil and salt and pepper to taste. FOR THE PANZANELLA Slice the bread and sprinkle over water and a spoonful of vinegar. When the bread is soft, break it up using your hands and put it in a bowl. Slice the spring onion into thin rounds. Peel the cucumber and cut into rounds, chop the tomato and celery into small pieces. Mix the spring onion in the bowl with the bread, then add the cucumber, tomato and celery. Mix it all together well, adding extra virgin olive oil, salt and pepper. Leave it in the fridge for about twenty minutes so that the flavours all blend, then divide into portions, topping them off with the steamed octopus and mullet roe shavings.

THE QUINTESSENTIAL SUMMER Andrea Francardi is Fonteverde’s bartender. Young, inventive and overflowing with enthusiasm, his choice of job is one driven by passion. He discovered the world of cocktails when he had a job as a student, and he knew there and then that he wanted to make it his profession. It proved to be a very shrewd move that has taken him to the top with his cocktail "La Tonichina" which won first prize in the bartender and head bartender category from AIBES, the Italian Barman and Supporters Association. In 2016 he represented Italy in the IBA world championships in Tokyo. This summer he’ll be refreshing us with his Cherry Quintessentia Collins: cool, delicious and colourful, the perfect cocktail for Tuscany’s warm summer evenings.

RECIPE 4.5 cl of Quintessentia Nonino Amaro, 3 cl of lime juice, 1 cl of Mixybar Fabbri Amarena. Mix the ingredients in a shaker and pour into a Collins glass filled with ice. Top up with 4 cl of Ginger Beer. Finish off with a layer of 2 cl of Monin Pink Grapefruit Syrup on top. Decorate with a sprig of mint, two slices of strawberry, and a slice of lime.

EVENTS IN OUR HOTELS Here in Tuscany the spring and summer evenings are always wonderful. And our celebrations and events for guests make them even more delightful.

At Fonteverde we call summer evenings “Sparty Nights”: our thermal pool is open every Saturday evening between 7pm and midnight. Swim in the thermal pool, and revel in the Bioaquam and Etruscan circuits with sauna, stove and Turkish bath.

At Bagni di Pisa you can savour starry summer evenings at one of our “Spa Night” parties on Thursdays and Saturdays. Between 8pm and midnight, take a dip in our thermal pools and whirlpools and experience the Grand Dukes’ grotto, sauna and Turkish bath. As you relax, enjoy the perfect accompaniment: our aperitifs with music, drinks, canapés and fresh fruit. From 9th June to 3rd September you can dine under the stars in the magic corner of the Byron Court Restaurant. All nights à la carte dinner and on Saturdays special grill parties with aperitif and buffet dinner. Don’t miss our Mid Summer Grand Gala Event at the Byron Court on 15th August with grand buffet and live music.

At Grotta Giusti all the warmth of summer awaits you at our AperiSpa evenings. Every Friday (23rd June-8th September) between 8pm and midnight, enjoy a swim beneath the stars in our large thermal pool, experience the thermal Bioaquam circuit with underwater whirlpool massage and enjoy a buffet and drinks with lounge music. Or simply relax and delight in a pool-side massage or one of our Open Grotta evenings in the thermal cave. Fonteverde The Palio di Siena. 2 July and 16 August The horse race in one of the most beautiful squares in the world, where the rivalry is merciless and the passion searing. A centuries-old race that the whole city takes part in, with Medieval costumes and hallowed rituals. A step back in time into the very heart of Siena. Cortona on the move. 13 July - 1 October The international photography festival, now in its seventh edition. The photographers’ works find a unique setting in this Tuscan town’s historic locations. The festival also features dozens of exhibitions, events and workshops. Orcia Wine Festival. 22 – 26 April At San Quirico d’Orcia, the Orcia Wine Festival pays tribute to Vino Orcia DOC and its eternal association with the local area. On 23 April, the Nature Train takes guests on a journey through the valley, with its exhibitions, tastings and historic palazzos. Perugia Umbria Jazz. 7 – 16 July The most important jazz festival in Italy that has been bringing the world’s greatest jazz musicians to Perugia since 1973. Concerts and performances take place all over, from historic theatres to churches, as well as the stadium and outdoor arena.
