Spectroscopy for Liquid Milk Analysis The seasonal and regional variation in the composition of raw milk makes a standardisation of raw milk necessary for all subsequent processing steps. FT-NIR spectroscopy analyses the key parameters, fat, protein, dry matter and lactose, with comparable accuracy to conventional mid-infrared systems (FT-IR). Any kind of milk, e.g. raw milk, skimmed milk or UHT milk, can be analysed, as well as other liquid dairy products including cream, condensed milk, liquid ice cream, flavoured milk preparations and concentrates, even viscous products that conventional milk analysis instruments struggle to measure.

The new range of electropolished stainless steel cable carriers grants smooth and easily cleanable surfaces, as it is requested in the food industry

L

ittle attention is often paid to surfaces in any metal material, provided that we need to solve cleaning and hygiene problems related to good aesthetics. Yet, the importance that surface finish may have, especially if in stainless steel, is as different as the variety of applications that these materials may have in various industrial environments, and in this case, in the agri-food plants sector. For these kinds of plants, you need to enhance the peculiar features of stainless steel, such as corrosion resistance, hygiene, surface smoothness, etc, for which

superficial treatments, non mechanic but chemical, are often carried out. Electropolishing is a surface finish chemical technique through which metal is removed electrolytically, ion by ion, from the surface of an object. The main goal is minimizing the micro roughness by dramatically reducing dirt or product residues that stick to the surface and therefore improving cleanness of the surfaces. Electro-polishing grants smooth, easily cleanable and aesthetically nice surfaces, as it is requested in the food industry, combining with unrivalled hygiene and non-contaminants. This process reduces oxidation

and contamination of the components of the stainless steel used in the dairy sector, and equipment used in food automatic processes. For instance, the material used to seal the capsule top can now guarantee a paper scrap reduction from 50% to 80%,

according to the capsule diameter, with respect to traditional machines. The machine is also equipped with a patented system for vacuum generation that guarantees that the residual oxygen content inside the capsule be kept below 1%, in order to maintain the product fragrance. Qi is also preset for the use of various capsule closure systems, based not only on thermoforming but also on pulses: a solution that requires less energy but also provides more precise and clean seals. Great attention has also been devoted to ergonomy, trying to facilitate machine conduction and cleaning, at the same time developing a shape to permit the perfect machine integration into different production situations. By using the complete machine perimeter the floor space occupied is reduced to a minimum and the production flow is developed clockwise or counter-clockwise according to the layout requirements of

the production area. This also permits assigning less personnel to more machines, so that a lower number of operators can supervise one or more lines at the same time. It should also be mentioned that the machine is equipped with systems for the cantilevered extraction of the various groups, so that cleaning operations become faster and more accurate. Qi is also equipped with a system for the automatic reel re-winding on the scrap belt, which also helps maintaining cleanliness and order within the production environment. Typically, softcheese curd is made in large stainless-steel vats, where milk is mixed with a curdling agent and heated gently, resulting in the separation of curd from the whey. Carefully controlled tipping is essential to prevent damage to the curd. The vat rotates slowly about a horizontally oriented support shaft. The Dragon® high speed is able to handle cans of size between 0.25 and 0,568 liters, without the need for any mechanical change when switching

from the clusters of six cans to the trays 24. It is also possible to insert new types of packs, if necessary, with minimal or no interruption to production. CHILLED NFC JUICES: THE BERTUZZI APPROACH

T

he market of fruit juice is developing quite rapidly and the share of NFC juices is considerably increasing because of their high quality. In Europe and the US (but also in whole world) 100% juice (not from concentrate) category is showing a strong growth potential. Of particular importance, in this sector, are the chilled juice, fruit juices that are prepared directly from the fresh fruit and then are just chilled and filled or slightly pasteurized and chilled in order to retain all organolectic characteristics. The majority of the chilled juice found in the shops shelfs is based on orange but other varieties like pineapple, grapefruit, carrots as well as blends (orange-carrot, orange-pineapple, carrot-lemonpineapple etc.) are becoming more and more popular. The main hints for the design of a plant processing fresh fruit into chilled juices are: • Optimization of flow of fruit/juice • Optimization of characteristics of process equipment • Optimization of processing

cycles in order: 1. Decrease processing times 2. Minimize oxidation of the juice 3. Keep high organolectic characteristics • Optimize CIP system to control the microbiology of the juice. Some of the machines used for the application are dedicated for a certain type of fruit, for istance: • Dedicated citrus juice extractors (orange, lemons, grapefruit), on order to minimize the essential oil content in the juice and assure a good control of the pulp. • Deshellers and dedicated presses for pomegranate to produce cloudy or clear juice which importance is considerably increasing for the beneficial health characteristics.

• Dedicated pineapple juicing in order to obtain high quality juice only from the edible part of the fruit without contamination with the peel. These are some examples but few. Extractors for juice/puree can be provided for apples, carrots, pears, passion fruit, banana, beets, mango, spinach, asparagus, berries, hawthorns guava. The obtained juice is immediately (blended or not) slightly pasteurized (65-70°C) and chilled before filling. P.E. LABELLERS’ SUCCESS AT SIMEI AND BRAU BEVIALE

A

t the end of 2015 P.E. LABELLERS took part at SIMEI and Brau Beviale. During these shows the enterprise has exhibited different MODULAR models one of these was suitable to process glass or plastic bottles on which self-adhesive or cold glue labels are applied thanks to flexible rotation control of the plates fitted with a servomotor that also ensures the optical orientation of the containers. The general idea used to choose the models was the popularity of the model in the market sector target. The staff explained the project, set up in 2015 in collaboration with KHS, to anyone interested. The aim of this project is to launch on the market a unique solution for bottling soft drinks, beer and alcohol-based products. Thanks to this partnership, we have been able to achieve maximum flexibility of the Triblocco, with lower costs for labels and lower plastic consump-

tion. The flexibility lies in the blowing process of the preform with the machines manufactured by KHS, which creates bottles with various designs (i.e. they can be shaped, have an irregular design or a traditional cylindrical shape with parallel walls). The bottles are then labelled with traditional rollfeed or shrink-wrap labels from a P.E. LABELLERS labelling machine. Our sales team had shown how the experience the company acquired helped it expand its portfolio in all market sectors, from wine to distillates, food and beverage

up to personal care and home care. Infact, our staff explained the great achievement made thanks to Cognac Larsen, renowned for making the “Cognac of the Vikings”. Cognac Larsen has purchased its first labelling machine by P.E. LABELLERS: a MODULAR PLUS 540 labelling machine with 3 self-adhesive stations and plate rotation with electronic cam, designed for the installation of a fourth labelling station, mechanical bottom centring and optical fibre. There was also the chance to discover what has been achieved in the wine sector, for example the solutions adopted by Kessler Sekt, a long-standing and the oldest sparkling wine company in Germany. This is now part of the Cavit group, with whom P.E. LABELLERS worked to provide the packaging of sparkling wine with the Charmat Method at a speed of 6000 BPH thanks to a MODULAR PLUS 770 with a run-up orienting system, therefore limited to just 2 photocells. The machine is also fitted with a system to apply front, back and large neck labels, combined with the ink marker. Finally, to en-

sure maximum accuracy when the step is carried out on the product, before the final distribution stage we also installed the tools required to inspect and check quality in terms of how the labels are applied. SUCCULENT AND NATURAL PRODUCTS FOR P.E.T. ENGINEERING’S FIRST PROJECT IN ISRAEL

P

rigat, leading brand in Israel in the category of fruit juice, with 30% of market share, appreciated and loved by consumers of all ages for over 70 years. The company uses only quality fruit and, after being the first to bring to the market local products without additives and preservatives, decided to strengthen, in 2014, its position through a rebranding that could emphasize the strong bond that unifies its products and colored fruits generously offered by nature. P.E.T. Engineering was asked to align the renewed image and packaging that, with its square and lack of distinctive visual elements, appeared old fashioned, , unattractive to the eye and not very easy to handle when pouring. By redesigning the shape, the designers of P.E.T. Engineering wanted

to emphasize the size of the naturalness inspired by the soft lines and the roundness of the fruit with which the juices are made. The bottle, tall and slender, is pulpy and rich to the touch thanks to the decorations with rounded edges that run along the body and leaving in the middle a straight surface that makes the bottle

easy to grip and allowing plenty of room for the brand label. The bottle, developed in sizes 0.5 and 1.5le filled aseptically, presents the patented solution Sunbase which avoids any extroversion of the base caused by the use of nitrogen in the filling stage, and ensures stability both on the production line and on the consumer’s table.
