Lessini: these are just a few of the over 120 portioned cheese which FP027 flow pack is able to wrap. FP027 is one of the four machines proposed by Tecno Pack for the dairy sector. It is suitable to pack cheese in bulk, which are transferred directly on the film, avoiding the problems of conveyer transport, thanks to the bottommounted reel. FP200 EVO has top-mounted reel instead and it is suitable for cheese portions packaged in tray. FP025EVO and FP025EVOBB complete the range. Cheese portioning, loading, collection of packs, palletizing: the horizontal packaging machines are placed at the centre of these passages. For this reason they have been designed to be combined with robotic systems, such as automatic product feeding, with the purpose of minimizing human work.

Tecno Pack team always pays great attention to each customer needs and went to Qualità Leone to check the daily activity of this machine. In the FP027 any kind of cheese, after being aligned on the conveyer, is first detected by a barrier-photocell. This unit sends a signal to the front camera, verifying that every cheese is in phase. In the rare case of a cheese being out of phase, the machine either stops or sets off an alarm or simply skips a package. This control system is possible thanks to seven independent brush-

less engines and it is capable of closing the packages, using different materials: from film to paper it can create several wraps, suitable for many markets. Modularity is the key-word: rather than having one big conveyer, it is possible to include two, four or six timing devices combined with an automated-cut line. In this way, more pieces of cheese can be loaded at the same time, remarkably speeding up the process. This technology suits very well the trader’s needs who usually deals with small quantities and many formats.

Von den ausländischen über die italienischen bis zu den für die Gegend von Villafranca und der Monti Lessini typischen Käsesorten: das sind nur einige der mehr als 120 portionierten Käse, die mit der FlowPack FP027 konfektioniert werden können. Die FP027 ist eine von vier speziellen Modellen von Tecno Pack, die für den Milchsektor angeboten werden. Diese Maschine eignet sich zum Verpacken von Schmelzkäse, der direkt auf die Folie kommt, um so, dank der unteren Rolle, Transportprobleme auf dem Förderband zu vermeiden.

Bei der FP200 EVO ist die Rolle hingegen oben angebracht und sie eignet sich deshalb zum Portionieren und Verpacken von Käse in Schalen. Die FP025EVO und FP025EVOBB runden das Angebot ab. Portionieren des Käses, Beschickung, Sammeln der Verpackungen, Palettieren: Die horizontalen Verpackungsmaschinen sind in der Mitte angeordnet und wurden entwickelt, um mit Robotersystemen, wie zum Beispiel der automatischen Zufuhr des Produkts kombiniert zu werden, mit dem Ziel, menschliche Eingriffe zu minimieren. Fp027 im Einsatz Die FP027 wird im Firmensitz von Tecno Pack S.p.A., der sich in Schio, in der Provinz Vicenza befindet, hergestellt.

Das Team von Tecno Pack, ständig aufmerksam auf die spezifischen Bedürfnisse jedes einzelnen Kunden, besuchte eines Tages Qualità Leone, um sich die Arbeit dieser Maschine anzusehen. Bei der FP027 werden die verschiedensten Formen von Käse, die alle perfekt auf dem Band der Maschine ausgerichtet sind, zunächst durch einen photoelektrischen Sensor erfasst, der die Signale an die Frontkamera sendet und so feststellt, welche in Form sind und welche, was sehr selten vorkommt, nicht. Im letzteren Fall stoppt die Maschine oder löst einen Alarm aus, der dann eine Packung überspringt. Dieses Steuersystem und das «Ausschneiden und Einfügen», möglich durch sieben unabhängige Brushless-Motoren, ist auch für die Sorgfalt mit der die Pa-

Hence it is understandable why the FP027 is capable of satisfying also the needs of medium and large companies which, on the contrary, has fewer formats and big quantities. When building the FP027, Tecno Pack prioritized the possibility for the machine to close any type of film: from paper film, which allows seeing the inside of the package through a

transparent window, giving a sense of “home-made”, to the simpler films. Nevertheless, using the same film for cheese wheels of several radial sections is a common mistake. This, beside worsening the look of the product, could lead to the deposition of an excessive amount of film over the package, which could in turn

cause the gases to escape, reducing the product’s shelf life. FP027 is capable of solving this problem thanks to its double reel case, which can move quickly from one reel to the other in case of necessity. The swarf-cut system also helps reducing the excessive amount of film over the product, by working with a reel up to 100 mm wider then the one suited for the product. Multifunctionality and versatility: Beside being a multifunctional machine, its amazing feature is the possibility to wrap fresh, undivided products, which encounter a foreseeable physiological reduction during the first ten days. Using the correct mixture of FP027 flow pack closure and the inclusion in the refrigeration circuits the reduction was 70% less. One of the first cheese to undergo this innovation was the Rigatel del Castel, which was produced using

Hier wird deutlich, wie die FP027 in der Lage ist, die Bedürfnisse von mittleren und großen Industrien mit, nun umgekehrt, weniger Formaten und großen Menge zu erfüllen.

Tecno Pack hat die FP027 mit Hauptgewicht auf der Fähigkeit der Maschine, all die verschiedenen Arten von Folien zu schließen, gebaut: Von der Papierfolie mit einem transparenten zentralen Fenster, durch das das Innere zu sehen ist und der Verpackung einen Eindruck von Handwerklichkeit vermittelt bis zu den einfachsten Folien. Ein sehr häufiger Fehler im Verpackungsprozess ist jedoch die Verwendung einer einzigen Folie für mehrere radiale Abschnitte der Käsestücke: Das Risiko in diesem Fall ist ein Überschuss an Folie an der Oberseite der Verpackung, unästhetisch und gefährlich, da ein fehlerhafter Verschluss Gas entweichen lässt und folglich die Haltbarkeitsdauer des Produkts verringert. FP027 beseitigt dieses Problem dank des zweifachen Rollenhalter, der sich,

falls erforderlich, schnell von einem zum anderen und zum Schnittabfallsystem bewegt, und eine Rolle bis ca. 100 mm breiter als die, die für das Produkt im Prozess geeignet ist, steuern lässt. Multifunktionalität und Vielseitigkeit: Es überrascht nicht nur die Multifunktionalität der Maschine, sondern auch die Möglichkeit frische Produkt, die nicht portioniert sind, zu verpacken, die in den ersten zehn Tagen ihres Lebens, einen vorhersagbaren Rückgang der physiologischen Eigenschaften erfahren. Mit Hilfe der richtigen Mischung, dem Verschließen Flow-Pack der FP027 und der Aufnahme in die Kühlkette, wurde dem Rückgang um 70% entgegengewirkt. Eine der ersten Käsesorten, an der diese Innovation erprobt wurde war der Rigatel del Castel, hergestellt mit Milch aus zwei Ställen in Valeggio

Any variety of cheese, gas mixtures concentrations and film can be processed effortlessly by FP027, even when they are different from those commonly used in Italy. Tecno Pack main challenge regards foreign countries borders. shelf-life increase FP027 guarantees sealed joints, contributing this way to increase the product’s shelf life. This parameter is defined by the initial cheese microbial load, the film characteristics, the sanitization operations and by the gas mixtures and temperatures used in the modified atmosphere (MAP). Taking into account these variables, many tests carried out by Qualità Leone revealed how cheese shelf life increased from 90 days up to 120 days when using FP027. A concrete example of this result is the sardinian Pecorino seasoning, carried out by Qualità Leone. Leone carried out the seasoning of over 7000 cheese wheels. The trick that allowed the product preservation for months was the FP027’s flow pack. 2.5 kg cheese wheels appeared fresh as if they were just wrapped – no weight decrease, after 3 months.

treatments and storage. The product reaches the homogenizing valve at a low speed and at high pressure. As it passes through the valve, it is subject to various forces that cause the micronization of the particles: violent acceleration followed by immediate deceleration causes cavitation with explosion of the globules, intense turbulence together with high-frequency vibrations, impact deriving from the laminar passage between the homogenizing valve surfaces and consequent collision with impact ring. Homogenization can occur with the use of a single stage homogenizing valve (suitable for dispersion treatment), or double stage homogenizing valve (recommended for use with emulsions and for viscosity control when requested). INSTANT COFFEE, A THRIVING MARKET

W

orld coffee market has huge dimensions, second only to oil, and is growing constantly. Besides the traditional roast & ground coffee, soluble and instant product ready to dissolve in water accounts for a big part of this market. I.C.F. & Welko, next to its classic production of dryers and agglomerators for the food industry, can supply complete turnkey lines for the production of soluble and instant coffee. The first step of the process is the cleaning of green coffee that usually comes in bags that contain, besides the raw coffee, also foreign materials like stones, ropes, nails, etc. The beans can then be separated according to the dimensions and stored. The second step of the process is the roasting. During this phase, there is the development of the flavours that will give the characteristic drink taste. According to preferences and final market, it is possible to have a light or dark roast to get the desired taste. Next step, the liquor extraction, is crucial to get a good quality and yield of

the final product. In this phase, the coffee is suitably ground and loaded into special percolators. Water at high pressure and temperature flows through these cells, which are connected in a raw producing the coffee liquor. Coffee aroma is made of delicate and volatile components which, if not preserved, are easily lost during the process, so the next phase is called aroma recovery and includes equipment to save the gentle distinguishing notes of a good cup of coffee. The fifth step of the process involves the concentration of the coffee liquor. The aim of this phase is to decrease the amount of water in the most economical way while at the same time obtaining a solid content suitable to have a good drying operation. The transformation of concentrated coffee liquor into powder happens during the next spray-drying phase. At the end of this step, the soluble coffee powder is formed. Even if it is quite common to call soluble coffee powder with the term “instant coffee�, this product tends to float on the surface of water forming lumps that need vigorous mix-

ing to be completely dissolved. To obtain a really instant product, the coffee powder has to go through the last phase of the process: the agglomeration. In this step, the powder particles are bound to form porous granules that are instantly soluble in liquids. Always aimed at studying new technologies, I.C.F. & Welko has recently developed and applied the freeze-drying process to coffee. This technology allows to obtain an instant product of exceptional quality, since coffee liqueur dehydration takes place under vacuum at very low temperature, and this makes sure that all the aromatic substances can be preserved. he standards for quality for tropical fruits are becoming more and more stringent. It is therefore mandatory that the equipment used for their processing be continuously updated in order to maximize the yield and quality of the juice / puree extracted. ALTECH solutions for LAbELLing bEEr boTTLEs

S

elf-adhesive labelling lends itself to the primary decoration of beer bottles, but also to the addition of supplementary information to already-labelled bottles exported to countries which require this. A system based on an ALline C inline labeller, for example (first figure), is designed for the application of the body label (with lot and expiry date printing) and neck label to around 3,000 bottles/hour. The system is fitted with two ALstep labelling heads. The labels are initially applied overhanging, first to the body then the neck. A counterbelt synchronised with the conveyor keeps the bottles stabilised during this stage, in order to guarantee maximum application precision. Following this, a rolling device which is also fitted with brushes completes the application by adapting the labels onto the body and the conical neck of the bottle, with the end result that they are correctly aligned with one another. A SATO thermal transfer printer is installed in the applicator head.

In another solution (second figure) created for a major Northern European company, the machine applies labels to beer bottles which require the addition of further information. The machine was positioned directly onto an existing packaging line, fed by rotating tables.

The labelling system spaces and orients the bottles, as well as applying the labels in step with the existing labels so as not to cover them, all at speeds of over 50 bottles per minute. The labeller is an ALline C linear system, equipped with a dual-belt product spacer and a three-roller product timing system. The sensor which identifies the position of the other labels is a high-speed scanner, which reads the barcode already present on the bottle and sends a signal to the ALritma label applicator head. The solid mechanism and optimised logic of the three-roller device have allowed us to obtain impressive performance, while maintaining excellent positioning precision and operational reliability. Laitierie Soummam wants to install, at their dairy production lines in Algeria, easy to use labelling machines for the application of sleeve labels on cylindrical PET and HDPE formats. P.E. LABELLERS presented Soummam with the Adhesleeve labelling machine, which is able to apply OPP or ROSO labels with the possibility of heat shrinkage of up to 16-18%. The same machine is also suitable for treating containers with and without shrinkage, by simply changing the type of film. The main outcome is over 5 years, P.E. LABELLERS has supplied the customer with 3 Adhesleeve labelling machines which have made it possible to reduce maintenance costs and times by 50% in comparison to traditional roll-fed machines. These have offered the advantage of being able to apply normal

SANItIZING AND PRESERVING WITH OZONE

A

full range of well-tested ozone-based application solutions, that De Nora, a company that has been operating in the electrochemical field for over 90 years, can offer, due to its cooperation with important partners and its commitment in research projects. “Ozone has numerous applications due to its oxidizing and anti-microbial properties”, explains Cristian Carboni, Ozone Application Specialist at De Nora, “it oxidizes not only bacteria, yeasts and moulds but also other organic and residual compounds that may be present in water or on surfaces, without leaving any traces! Ozone is also effective against biofilm, a problem that many food companies have only discovered over the past few years. In fact, the bacteria present in biofilm may be viable but nonculturable, which makes them difficult to detect using traditional methods of analysis such as cultivation on Petri dishes”. “Companies often ask me if the use of ozone affects the quality of the product. Chemical and sensory analysis have shown that, when used correctly, ozone does not affect the taste even of delicate products such as culatello, stracchino, taleggio, gorgonzola, salami, speck, raw ham and ricotta and does not produce peroxides or oxidation byproducts”. The Dairy Industry Many studies have shown that ozone is effective in the treatment of water for cooling mozzarella cheese, which may contain bacteria such as Pseudomonas aeruginosa or Pseudomonas

Taleggio ripened in air and rooms sanitized with ozone; fluorescens (cause of the blue streaks in mozzarella and other products); in the treatment of rinsing water used, for example, in CIP (Cleaning In Place) cycles to avoid transferring any contaminants that have survived the sanitization process from one tank to another; and process water that may be contaminated by the biofilm present in pipes and brine regeneration. Ozone improves the quality and safety of the products with no risks for staff. The research conducted by the University of Udine, Department of Food Science and CNR ISPA, Institute of sciences of food production, entitled ‘Use of ozone in the production chain of high moisture mozzarella cheese’, published in 2013, shows how ozone is effective in reducing the contamination caused by the use of water, in the production processes of the Dairy industry. It has also been demonstrated by many studies that gaseous ozone is also effective in sanitizing the rooms used for cheese maturation and ripening in that it prevents the development of undesired moulds (image 1) and mites, during the ripening stage,

and the presence of insects such as Piophila casei. In addition ozone has proven efficacy against Listeria Monocytogenes on savoury ricotta, P.D.O. gorgonzola, P.D.O. taleggio and other kinds of cheeses. Meat and cold cut industry In the meat and cold cut industry, the use of ozone has been widely studied in ripening rooms for its effects against mites and to prevent the development of unwanted mould, in all production, cutting and packaging environments to reduce the risk of contamination by microorganisms, in particular Listeria. Gaseous ozone enables to sanitize both air and surfaces (particularly points that are difficult to reach such as cooling systems and the inside of machines and conveyor belts). Sanitizing production environments and cleanrooms, especially those in which the products are cut and packaged, ensures a significant increase in the safety and shelf life of products. Also in the meat industry ozone can be used to treat process water that may be contaminated by the biofilm present in pipes.

Taleggio ripened in air and rooms not sanitized with ozone. Fish industry The use of ozone in the treatment of process and washing water and the sanitization of production environments ensures control against cross contamination and the increase in bacterial load that normally takes place during the working day. It also prevents the formation of biofilm in pipes and helps to oxidize it if it is already present. Ozone water is widely used in mollusc farming and the preservation of crustaceans, in fattening or prefattening tanks, in recirculating water on fry farms and process water in general, with considerable advantages in terms of the size and growth of the fish. Other uses are the production of ozone ice and use of the gaseous phase for treating air in the production environments. Fresh pasta industry In the pasta, sweet and savoury pastry industry, following their removal from

the ovens or pasteurizers, products are exposed to a high risk of contamination from the air, conveyor belts or other machinery; the cooling tunnels and packaging rooms in particular may become critical points of the process with a negative effect on the product’s shelf life and process water contributing to an increase in the microbial load of the products of up to 4 logarithms (1000 times) in a few metres. Ozone is effective in clearing these environments from bacteria, viruses, fungi and moulds without raising the humidity level and thus the water present on surfaces and in the air. Water purifiers and wastewater The ozone systems in the NEXT technologies series can also be used in the treatment of wastewater to reduce the COD and BOD levels, remove a wide range of microorganisms and reduce the quantity of sludge produced, thus cutting disposal costs.

If excellent Italian produce is to take on the world’s markets, closing in on Germany and France (whose respective 2015 agri-food exports amount to 71.1 and 60.5 euro), it will need the support of technologies to preserve its flavour, freshness and identity: like those that will be exhibited at Cibus Tec from the 25-28 October 2016. Flat tubular Heaters boost eFFiciency for fryer Technology By Roly Juliano Watlow

F

rom fryers to griddles to ovens, heat is an important component in most foodservice applications. When it comes to the heat source for frying, not all heating elements are created equal. Electric fryer heaters can be segmented into two broad categories - round tubular heaters, and flat tubular heaters. When first introduced, fryer heaters were round tubular. But engineers found that a flat tubular design offered many benefits - the most important being that the shape lifts the oil into the cook zone

far better than round heaters. An innovation was born. Flat Surface Geometry Because of its design and geometry, flat tubular heaters will heat viscous fluids from ambient temperature faster than round tubular elements with the same wattage and at a lower sheath temperature. The benefit of this shape is the enhanced flow of liquid past the surface of the heating element. The round tubular has a much more erratic flow pattern (see graphic). Note the currents swirl around and trap

heat next to the sheath. This is due to the tubular’s round shape, which causes a wider and less efficient flow of liquid around the heater surface. The flow pattern around the flat tubular heater is streamlined; the flat surface has less restriction on the liquid as it moves up and past the heater sides. This efficient and faster flow pattern permits the liquid to move heat away from the sheath very quickly, resulting in the flat tubular heater’s lower operating sheath temperature (see graphic).

faster than the round heater. The end result – the flat tubular gets the heated liquid into the work zone faster than when using a round tubular. The flat tubular heater has about a 50 percent greater surface area than a round tubular. This surface area design improvement is the key to lowering watt density for the same length heater or reducing the heater size while maintaining the same watt density.

Flat tubular heaters are ideal for fryer applications because their shape lifts the oil into the work zone better than round heaters.

Greater Buoyancy Force This natural convection phenomenon partially depends on the ratio of a buoyancy force to the viscous force of the fluid being heated. The buoyancy force or the flow of liquid up and across the heater surface is mainly determined by the length of the heater sides. The side of a flat tubular heater is typically 1 in. (25 mm), compared to the 0.43 in. (10.9 mm) or less dimension of a round tubular element. The flat tubular heater’s smaller edge and longer side creates a buoyancy force up to ten times greater than a round tubular heater depending on the material being heated.

Faster Heat Up Flat surface technology provides faster heat up and recovery times than round tubular heaters. Their unique shape minimizes coking and oil degradation, and enhances the flow of the oil past the element’s surface, helping to pull heat away from the heater sheath. Compacted magnesium oxide (MgO) insulation transfers heat away from resistance wire to sheath material and media more efficiently, shortening heat-up time. In addition, the heater lasts longer because it runs at a significantly lower sheath temperature than an equal watt density round tubular. This also prolongs the life of the oil which shortens and reduces costs from frequent changing.

Smaller Dimension Normal to Flow This feature refers to the width dimension of the heater that the liquid flows around. Typically, a narrower dimension will give a smoother and faster liquid flow. For example, the round tubular’s wide dimension, nearly a half-inch, inhibits the flow of liquid. It causes currents which disrupt the flow and the flow rate is somewhat slower.

If coking is a problem, it is an indication that the sheath temperature is too hot and is burning the oil. A flat tubular heater will provide a lower sheath temperature than a round tubular element, without reducing wattage or watt density. Coking is also reduced by the wiping action that occurs as the heated liquid flows past the heaters surface. The result is less liquid degradation and longer liquid life.

The flat tubular heater, on the other hand, has a much thinner dimension 0.235 in. (5.97 mm), which reduces the drag forces on the liquid flowing past the heater. This allows the liquid to move past the flat heater

“Prototype Element Performance Test,” revealed that the FIREBAR flat heating element was the first to consistently return the oil to the 171°C (340°F) reload temperature. FIREBAR also maintained the highest average cook zone temperature of the heating elements tested, recorded the fastest pre-heat time and offered one of the lowest pre-heat energy consumption levels ever tested. During the performance comparison test of the FIREBAR heater versus an equivalent kW round tubular heater, per ASTMs test method F1361-7, the FIREBAR heater’s fast recovery allowed cooking of six heavy loads of french fries versus five heavy loads of an equivalent tubular or a 20 percent capacity improvement (see below). Reduced Watt Density Flat tubular heaters can be operated at a higher watt density than a round tubular heating element

without increasing the sheath temperature. Flat tubular heaters also allow more wattage into the application at the same watt density with a shorter heating element. Both types of heaters can have the same wattage, but the flat tubular will operate at a lower sheath temperature than the round tubular. In tests conducted to demonstrate this phenomenon, both heater types had a watt density of 30 and were immersed in a light liquid shortening. The flat tubular element heated the oil faster from ambient temperature than the round tubular. At 149°C (300°F), the flat tubular element heated the oil to temperature in 11 minutes where as the round tubular took 18 minutes. Plus, the flat tubular heater’s average sheath temperature was

THE SWEETEST WORLDWIDE HUB At rimini fiera, from 21st to 25th january 2017, the world’s artisan confectionery show.Coffee, an increasingly important player, officially becomes part of the expo’s name. Ab tech expo, the biennial exhibition for bakery, will be back.

T

he traditional five days of the world exhibition of artisan confectionery will be held at Rimini Fiera from 21st to 25th January 2017. Increasingly ‘HoReCa oriented’, from the its edition SIGEP officially adds coffee to its key players, assuming the new denomination of International Exhibition dedicated to Artisan Gelato, Pastry and Bakery Production, and the Coffee Sector. Following the exceptional success of the last edition (201,000 trade visitors, 41,000 from abroad, a total of 720 journalists and bloggers, 500 events at the expo), SIGEP continues to follow its growth process, which aims at increasing the international profile of every single activity. SIGEP WORLDWIDE Asia, USA and the Middle East, with a focus on Germany: these are the key targets of SIGEP 2017, which will also include the last dates in London and Berlin of the three-year program of the Gelato World Tour organized by SIGEP and Carpigiani, before the finals in Rimini in September 2017. On the pastry front, even closer attention is being paid to the markets and demand in the Balkans, Central and South America, as well as India. This attention results in the participation of buyers, trade members and business delegations, also in collaboration with ICE, the Agency for the foreign promotion and internationalization of Italian enterprises - as part of the program for strength-

ening Italy’s large trade fair events, foreseen by the Italian government’s special plan for the promotion of Italian-made products - which involves 18 ICE offices worldwide. AB TECH EXPO In 2017, AB TECH EXPO (the biennial international exhibition of technologies and products for bakery, pastry and confectionery) will be back. The baker’s art comes together at the event dedicated to bakery, a unique expo for the variety of technology, combined with products, ingredients and venue concepts. The key player will be the entire product chain with its semi-industrial technology, from product stockage to the preparation of recipes, from dough to processing (dividing, shaping, cutting), through to rising, baking, cooling, final cutting and packaging, obviously including all the services that follow the

quality of the process. The “bakery hall” will also host an event with a world profile: the finals of Bread in the City, in which the four 2015 finalist nations and the four 2016 finalists will compete for the title. GELATO The spotlight’s on the German Challenge (21 and 22 January), an initiative with the patronage of Uniteis and dedicated to the Italian-made artisan gelato chain, which is going through a period of great expansion in Germany and, the country that now hosts 10% of Europe’s artisan gelato parlours. A hundred German gelato artisans will compete for eight places in the Berlin date of the Gelato World Tour in June 2017. The initiative is connected with the process of certification of Italian gelato parlours abroad, prepared by SIGEP in collaboration with the Ministry of

PASTRY In the Pastry Arena, the key event of SIGEP 2017 will be the Junior World Pastry Championship, being held on 21st and 22nd January. Ten teams have already entered (France, Japan, India, the Balkans, the Philippines, Singapore, Mexico, Poland, Russia, Italy), who will compete on the theme Planet Fantasy. The power of fantasy. The Italian Senior and Junior pastry Championships have also been confirmed on 23rd and 24th January, as well as The Star of Sugar, international sugar art contest (2125 January) and Coppa Italia della Pasticceria Artistica (Italian Artistic Pastry Cup, which will be dedicated to the world of cartoons. The training area has been given a great boost, particularly that addressing the new generations. As is the tradition, SIGEP Young will bring together Italian Schools, with students and teachers who, at the next SIGEP, will be involved in courses on exhibitors’ stands and in the expo’s various sectors. COFFEE Expo & Show. At SIGEP, the area dedicated to the coffee production chain has reached important dimensions,

combining the participation of companies with great events. La peculiarity is the starting point, i.e. the attention paid to highlighting the crops, to favour knowledge and awareness. Only SIGEP manages to propose such a complete range of contests, with all seven championships dedicated to coffee valid for the international circuit of World Coffee Events. Following the experience in Brazil, at SIGEP 2017 the new edition will be launched of Barista & Farmer, the first talent show dedicated to the promotion of the culture of excellent coffee. Food technology Finds a home at host 2017

hirteen months out from the next edition, more than 1000 companies (40% from abroad) have confirmed they will be present, with 6 pavilions dedicated to Food Service Equipment in synergy with Bread/Pizza/Pasta. The appointment with the hospitality business, training and trends is for 20 October 2017. Silent, eco-compatible, designfocused, efficient, user-friendly, interactive and programmable: these are the new high-tech machines that cover all of the daily needs in a professional kitchen. These are the things that can make a difference today in a highly competitive environment in order to save on, for example, costs and labour. This world has a home, which will open its doors on 20 October 2017, kicking off the 40th edition of Host in Fiera Milano Rho. The leading show in Ho.Re.Ca, food service, retail, the mass-distribution channel and the hotel business is a place where one can find all of the latest innovations – from blenders to grill plates, from slicers to meat grinders to ovens – all in one place. the 150,968 professional visitors from 172 countries who came to Milan for the 2015 edition. In addition to focusing on historic markets, Host 2017 is especially interested in three areas: the United States, Canada and the Middle East, which are getting ever more attention from exhibiting companies and visitors. These are three markets that are especially focused on “Made in Italy” exports, so much so that they are showing a growing interest in the show. The United States, for example, saw double-digit growth in terms of exhibitors during the last editions: +26% in 2015 as compared to 2013 and +51% on 2011, while visitors increased by 35% on 2013 during this last edition and saw 46% growth on Host 2011. rganic produce is enjoying a boom, and this is also evident at the International Green Week Berlin 2017 (2029 Jan.). The majority of exhibitors from the food industry are presenting items that have been ecologically produced. he beverage market remains exciting, there are now clearly not enough classic beverage variations for the consumer. so-called craft drinks are now already part of every segment. as a result, in addition to major groups, numerous medium-sized, small and the smallest companies are establishing themselves on the market, their declared objective is to offer quality instead of quantity – less is simply often more. But not for long, because then the european beverage trade world will once again be the guest in nuremberg and enter into an exchange on trends, new products and innovations. from 8 to 10 november, the experts will come together at this year’s most important equipment show for the beverage industry. The following still applies: worldwide drinks consumption is continuing to rise. According to Canadean, in 2015 global beverage consumption reached approx. 280 litres per capita, that is around 13 litres more than the previous year. For 2016 the market research institute is predicting a further slight increase to 284 litres. The most drinks are consumed in Latin America (587 litres per capita) and North America (579), followed by Western Europe (542). Bottom of the international rankings is Africa with around 70 litres per capita. Regardless of which beverage

The developing countries continue to offer great growth potential for bottled water. In 2015, at around eleven percent, the Asian region once again registered the highest increase, followed by the Middle East/North Africa with a rise of around eight percent. In the more or less saturated markets consumption is already at a high level. Good news for Western Europe: following a declining trend in 2014, an in-

mineral and medicinal water, which corresponds to an increase of around three percent. Particularly popular is low-carbonated mineral water (share of 43 percent) and even the non-carbonated variety is also becoming increasingly popular (increase of around 15 percent). In total, every German citizen drank around 147 litres of mineral and curative water in 2015 (Verband Deutscher Mineralbrunnen / Association of German Mineral Water Producers). According to Zenith International, premium water variations are also making increasing inroads: the institute is predicting an increase to over 12.5 billion litres worldwide by 2020 (2015: around 10 billion litres). natural and regional: mineral and curative (medicinal) water in germany In 2015, Germans drank around 11 billion litres of domestically-produced

Juices and nectars enjoying varying degrees of popularity worldwide On a worldwide scale the consumption of juices and nectars is declining somewhat, this is confirmed by a drop of around one percent in 2015. In North America (26 litres per capita) and Western Europe (21), consumers purchased fewer of these products. In Africa and Asia in contrast, there is still great potential. In this connection, the Asian market registered an increase of five percent, the driving force here was particularly China. There, in 2015, sales of juices and nectars rose by a total of eleven percent. In Asia, there is a particular preference for vegetable juices (Canadean). In Germany, in particular high-quality NFC (not from concentrate) juices were successful. Here, with a total of 33 litres last year, for the first time there was again a slight increase in fruit juices and nectars consumption (1 litre per capita) (Verband der deutschen Fruchtsaftindustrie, VdF, Association of the German Fruit Juice Industry). Smoothies are being increasingly regarded as a “light snack between meals”, the recipes are diverse. One solution for stressed people with a lack of time is now also available: frozen juice pads deliver fresh vitamins at any time.

Beverage packaging – it is all about the container A question, which is repeatedly raised across all the beverage sectors, is that of the container used. Traditionally it is: cans, glass or PET? But recently there have also been increasingly frequent discussions in the beverage sector on the theme of pouch packaging. It is light, easy to transport and promises convenient enjoyment. For water, the bottle – especially PET – continues to be the container of choice. Juices and nectars are most frequently available in carton packaging, followed by the PET bottle. Particularly as far as craft products are concerned, drinks cans and glass bottles are currently experiencing a comeback. IFFA 2016 sets new records

FFA – The No. 1 for the meat industry – closed its doors today after six successful days. Over 63,000 trade visitors from 143 countries attended the world’s leading trade fair for the sector in Frankfurt am Main from 7 to 12 May, an increase of around five percent over the previous event in 2013 (60,509 visitors from 144 countries) whereby special mention must be made of the increased degree of internationality, which rose to a new record level of around 66 percent. Particularly well represented on the visitor side were the Russian Federation, Spain, Poland and Italy. IFFA 2016 also set a new record on the exhibitor side with a total of 1,027 companies taking part (2013: 966). The exhibitors, who came from 51 different countries, presented innovations for the entire meat- processing chain. On 110,000 square metres of exhibition space (gross), as in 2013, they presented new products and technologies for slaughtering, dismembering, processing, packaging and sales. “Under the motto ‘Meet the Best!’, the entire sector came together here in Frankfurt to discover the latest innovations and tomorrow’s trends. IFFA is and will remain the world’s leading trade fair for the meat industry. This year, it was distinguished by growth in all respects. An extraordinarily high level of internationality, the presence of all market leaders and highly innovative products and technologies speak for themselves”, said Wolfgang Marzin, President and Chief Executive Officer (CEO) of Messe Frankfurt. Klaus Schröter, Chairman of the Meat Processing Machines Group of the Federation of German Machine and Plant Manufacturers (Verband Deutscher Maschinen und Anlagenbau – VDMA), summarised the situation for his membership saying, “The German Machine Manufacturing Industry is very pleased with the results of this year’s IFFA. Numerous new contacts were made and many contracts concluded, several of them for large-scale projects. Increasing meat

consumption worldwide is the driving force behind this. And this was also reflected by the high standard of visitors, most of them top international decision makers. Our foreign customers are enthusiastic about the new technologies and the broad product portfolio, which is more diverse than at any other event in the world and makes IFFA unparalleled.” IFFA is also a must for the butchers’ trade, one of the biggest groups of visitors. Heinz-Werner Suess, President of the German Butchers’ Association (Deutscher Fleischer-Verband – DFV) was delighted with the results of the fair: “Overall, IFFA was an excellent opportunity for us and our partners to show our strengths. tion for both visitors and representatives of the German butchers’ trade at this, the world’s leading trade fair for the meat-processing business.” Great internationality: visitors from 143 countries at IFFA 2016 With around 66 percent, IFFA set a new visitor record. The top ten foreign visitor nations were the Russian Federation, Spain, Poland, Italy, the Netherlands, China, the USA, Austria, Australia and the Ukraine. High rates of growth within Europe were noted from Spain, Poland, the United Kingdom, Ireland, Romania and Greece. From outside Europe, there were significantly more visitors from the Ukraine, China, the USA, Japan and South Africa. Successful première for IFFA Forum and IFFA Talk Quality competitions set new records In addition to the product innovations being shown by the exhibitors, IFFA was characterised by a multi-faceted complementary programme of events that illuminated current developments in the sector. Highly successful was the debut of IFFA Forum, which attracted over 750 participants from 8 to 11 May whereby particular interest was shown in the subject of ‘Automation and performance optimisation’. Also well attended were the forums on the top themes of ‘Ingredients’, ‘Food safety & traceability’ and ‘Resource efficiency and sustainability’. Also new and an immediate success was the IFFA Talk on the evening of the first day. The panellists were Michael Boddenberg, Chairman of the CDU faction in the Hessian ‘Landtag’ (parliament) and Chairman of the Supervisory Board of the Central Cooperative of the German Butchers’ Trade (Zentralgenossenschaft des deutschen Fleischergewerbes – ZENTRAG), Wolfgang Hammer, Target Group Manager of Metro Cash & Carry, Frank Kimmer, Spokesman of the Board of Management of Mül-

KG. Chaired by Renate Kühlcke (Editor-in-Chief, ‘FleischWirtschaft’ magazine), the discussion covered a thematic spectrum from initial personal impressions of the fair, via the current ‘veggie trend’ and the shortage of skilled personnel, to the question of how long IFFA continues to impact on the order books after it closes. With a total entry of around 3,000 products, the international quality competitions of the German Butchers’ Association (DFV) broke all records at IFFA. Over 2,300 products were judged during the fair itself while over 300 products were entered for each of the two IFFA international DFV competitions in the USA and Russia. The participants of these two competitions, which were held during the run-up to IFFA, were presented with their certificates, medals and trophies at the fair. Visitors and exhibitors highly satisfied A Messe Frankfurt poll showed that both exhibitors and visitors gave the fair an extremely positive rating. 97 percent of visitors said they had achieved their goals for the fair. At the same time, 91 percent said the economic climate in the sector is good. The biggest groups of visitors came from the food retail trade, the meatprocessing industry and the butchers’ trade. On the exhibitor side, 87 percent of companies said they had achieved their targets for the fair; 81 percent said they had reached their visitor target groups. Almost 60 percent of exhibitors were pleased with the number of German visitors. At the same time, their satisfaction with the standard of visitors rose three per-

centage points to 77 percent. 89 percent of exhibitors rated the current economic situation in the sector positively. The top meat-industry subjects at IFFA What makes IFFA unrivalled as the world’s leading trade fair for the sector is its clear focus: everything revolves around meat. The emphasis is on innovations and trends that cater for market demand and generate decisive impulses for shaping the future. The current trends were reflected by the extensive range of products and services offered by the exhibitors. Important subjects in the case of machines and plant for processing and packing meat and meat products are quality and the increasing demands on product safety and traceability. Additionally, there is a clear focus on improving productivity through greater energy efficiency, higher output, simple cleaning processing, increasing automation and environmentally-friendly solutions. In the butchers’ trade, the aim is to tap into new developments in consumer eating habits, i.e., convenience, ‘snacks to go’ and meatsubstitute products. Investments in energy efficiency and the simplification of working processes are other top issues in the trade. In the case of companies from the ingredients and additives segment, the spotlight is on food trends and the nutritional ‘zeitgeist’. ‘Clean labelling’ has been a leading trend in the meat industry for many years and reflects the demands of consumers and the trade for products with as few additives as possible.
