he annual Cortaca Jug game will take place at another storied venue next fall as the Ithaca College Bombers and SUNY Cortland Red Dragons play out the next chapter of their rivalry at Yankee Stadium.

The announcement of the venue for the 2022 game was made at a press conference at the Peggy Ryan Williams Center at Ithaca College on Sept.

21. Coaches and administrators from both colleges, as well as executives from the New York Yankees, were present to share the news.

Mark Holtzman, vice president of non-baseball sports events for the New York Yankees, recalled some of the iconic sporting events that occurred at the stadium, such as football games between Army and Notre Dame during the 1930s and ‘40s, the 1958 NFL championship game played between the then-Baltimore Colts and the New York Giants, or boxing bouts like Joe Louis versus Max Schmeling in 1938 and Muhammad Ali vs Ken Norton in 1976.

“While Yankee Stadium is best known as the home of the record 27-time world champion New York Yankees, it’s also seen its fair share of memorable sporting events dating back to 1923 when the first Yankee Stadium opened,” Holtzman said at the press conference. “Just think, in a little over 14 months, the young men from both of your schools will be gracing the same field that these men of history have graced in the last hundred years.”

This year’s Cortaca Jug game will be held at the SUNY Cortland Stadium Complex at noon on Nov. 13. The last game took place in 2019 when both squads played at Metlife Stadium in East Rutherford, NJ,

where Ithaca defeated Cortland 32–20 and a new Division III record was set for attendance at a football game (45,161).

“It was the stunning success of the 2019 Cortaca Jug game at the Meadowlands that inspired not only our organization, but me personally to officially extend today an invitation to Ithaca College and SUNY Cortland to play the 2022 rivalry match in our home in none other than then Bronx, NY,” Holtzman said.

“We truly believe that the game will sell out and set yet another Division III attendance record,” he said. “We’re intent on creating an epic experience for the team and for their passionate fans, students, families and alumni alike.”

According to Susan Bassett, director of intercollegiate athletics and recreational sports at Ithaca College, both schools

will receive 5,000 tickets to set aside for sale next fall for students, faculty and staff, and will be priced at $24.50 each.

Another 32,000 tickets will go on sale for the general public at noon on Nov. 16, and will be priced between $24.50 to $69.50 SUNY Cortland head football coach Curt Fitzpatrick said he is looking forward to the opportunity to play at Yankee Stadium.

“This is such an unreal [opportunity] for me as the relatively new head football coach at Cortland,” Fitzpatrick said. “To think about taking my football team to play in an iconic venue, in a rivalry game on this stage, is just an awesome thought.”

he Right to Renew legislation was back in front of the Planning and Economic Development Committee on Sept. 15 after the group decided it needed more work at last month’s meeting. Taylor Moon and Genevieve Rand from the Ithaca Tenants Union were also on hand to give data and anecdotal evidence from their experience working with the city’s most vulnerable tenants. Right to Renew legislation aims to protect tenants from losing their homes by guaranteeing them the option to renew their lease except under specific circumstances such as non-payment of rent. It also protects tenants from retaliation by landlords due to things like demanding repairs or organizing with other tenants.

According to Moon, displacement is the most common reason tenants reach out to the Tenants Union for help. He said that 72% of displacement cases are explicitly related to non-renewal in one form or another.

“It’s very much a real threat for people in Ithaca right now,” Moon said. “I think it’s easy to get caught up in hypotheticals of whether legislation like this would create some potential for abuse, but I would challenge everyone to focus on what is being supported by the data, which is that it’s a prevalent problem happening

to people in Ithaca.”

Rand added that this fear of non-renewal causes tenants to forgo asserting their rights to things like repairs because they’re afraid they’ll be labeled as a problem tenant. She added that while there is theoretically defense for retaliation by landlords, the burden of proof falls on the tenant and requires legal representation, something that is often outside of people’s financial means.

Moon said he had recently spoken to one tenant at Chestnut Hill who received a non-renewal notice due to upcoming renovations.

“Because of a disability he can’t drive and is dependent on public transportation,” he said.

“He cannot afford anything more than Chestnut Hill.

He’s never done anything to provoke eviction — he’s paid rent on time, been respectful of his neighbors and never done damage to the unit.”

There is some discussion about prohibiting non-renewal or eviction for redevelopment.

A concern, particularly in Ithaca, is the housing market is so tight and so expensive, there often aren’t any other options for a lot of tenants. Rand said she worked with an elderly woman with a disability whose landlord decided they weren’t going to renew her lease. Rand said the landlord shut off her water and electricity, stole her

t’s official — the Planning Board has approved the apartment building at 401 E State St. after calling a special meeting to vote on it on Sept.

14. The project received preliminary site plan approval at the July 27 meeting, but it stalled at the Aug. 24 meeting. Developer Jeff Githens had been anticipating final site plan approval last month, but the board was oper-

ating at a bare quorum of four, which meant the project would need unanimous approval to move forward. However, board member Elisabete Godden was clear that she didn’t think the concerns she had voiced from the beginning of the project a year ago had been properly addressed and that she would not be able to vote in favor of it.

The group decided not

Moon added that many of the tenants he’s spoken to are elderly people and disabled people.

“A lot of these people are incredibly vulnerable and at high risk of becoming homeless,” he said.

Rand explained the Right to Renew legislation as a redistribution of power from landlords to tenants.

“While there can be ruffled feathers whenever tenants get more power, it’s ultimately better for us as a class of people,” she said. “We should never give up the opportunity for more power over our circumstances.

Our lives will never be worse off for it.”

The legislation in front of the PEDC removes sale of property and improvement of property as “good causes” for eviction, it establishes protection against eviction through dramatic rent increases and requires landlords to provide tenants with a renewal lease at least two times.

Committee member Donna Fleming said she can’t support the bill for “theoretical reasons.”

“We can’t force people to renew a contract that has come to its legally and mutually agreed upon termination date,” she said.

However, committee member Laura Lewis said the goal of the bill is to protect people with the least amount of resources from unscrupulous landlords.

Committee chair Seph Murtagh said he doesn’t see it as stepping in about a contract, he views it as the state laying out the ways that a landlord can revoke tenancy, and saying that as long as those things aren’t happening the tenant has the right to renew.

“It’s getting after [the scenarios] where you have a tenant in a home for 20 years and out of the blue they have to uproot their entire lives because the landlord decided to sell or renovate and rent for a much higher cost,” Murtagh said. “It happens all the time.

I do think if we pass this not everyone will understand it, but at the very least it will give tenants the knowledge of their rights and give them the ability to pursue them in court.”

Committee member Cynthia Brock agreed with Murtagh and said it’s about providing housing stability and stability for families.

“The anxiety that goes through an individual when they’re uncertain if they can stay in their home is destabilizing,” she said. “75% of our population faces that uncertainty every single year […] So this is extending to individuals and ensuring them if you do things right and abide by lease terms, you can be assured you will be offered a lease renewal [and] the rent will increase at an affordable rate.”

The legislation was approved for circulation and public input and will be back in front of the committee next month.

to take a formal vote that evening and instead push the approval to the next meeting when there could be more, or different, board members in attendance. However, Githens wasn’t happy as he said losing a month meant having to push the project back an entire year because construction wouldn’t be able to start until November, which would undoubtedly be hindered by the weather.

The project, originally a 340,000 square-foot apartment building with 267 parking spaces and 353 residential units, has had a slow-moving summer. The developers presented that project to the Board of Zoning Appeals seek-

ing a height variance in June, as the building was proposed at 71 feet, nine feet higher than the 62 allowed by zoning laws.

However, between vacancies on the Board of Zoning Appeals, the inability to attain a quorum for meetings and staunch disapproval from at least two of the board members, developers decided to forego the height variance.

Without the variance, developers presented a smaller building to the Planning Board at the Aug. 24 meeting. The building will now be 62 feet, which reduces it by a story, and will house 321 units and 235 continued on page 7

County Admin. presents $194M budget: 2.7% tax levy increase

nterim Tompkins County Administrator Lisa Holmes presented her recommended 2022 Tompkins County budget on Sept. 14, totaling $194 million. The budget is recommended with a proposed 2.7% tax levy increase that would increase the property taxes for the owner of a median-priced home ($205,000) by $42. The Tompkins County budget covers the work of the county’s government, including 27 departmental operating budgets and funding for several supported agencies; $53.8 million is the local dollar budget, not reimbursed by the state or federal governments, nor offset by earned program income, which increased by $4.23 million over 2021.

The legislature previously passed a target tax levy amounting to 1.89% in April of this year which would reflect a maintenance of the county’s current efforts. Subsequent approvals of critical staffing prior to the budget process increased the target needed for maintenance of effort to 2.7%.

Holmes presented on several local and national fiscal indicators impacting the recommended budget.

Indicators included local data such as the local unemployment rate which is at 4.6% as of July 21 (compared to 5.4% in the Southern Tier Region and 7.4% across New York State) and local assistance programs such as the Supplemental Nutrition Assistance Program (SNAP), Temporary Assistance for Needy Families (TANF), and Safety Net data, showing caseloads generally declining over the past year. These indicators inform the county’s anticipation of program needs and the health of the local economy. Holmes’ sales tax projections continue a conservative approach for the remainder of 2021 and through 2022, anticipating a continued slow economic recovery from the COVID-19 pandemic.

The presentation showed 1.8% of growth in the local property tax base leading into 2022, which can be attributed

to changes in assessment rolls.

Holmes reported that the assessment department anticipates this changing significantly next year as the real estate market has shifted dramatically during the pandemic.

The total recommended over target request amount is $7.7 million. The over-target requests would be funded by rollover, fund balance, and American Rescue Plan Act funds. Of the nearly $20 million in federal American Rescue Plan Act funding, $3.875 million is to be directed at one-time requests from departments and agencies.

Several over target requests related to the Reimagining Public Safety plans are included in the recommended budget, totaling $605,000. The numbers presented in the recommended budget represent the county’s share, with the City of Ithaca anticipated to contribute funding as well.

Significant one-time requests from agencies included $655,000 of support for the Tompkins County Tourism Program to support organizations reliant on room tax revenue, $250,000 to support the Alcohol and Drug Council’s open access detox and stabilization center (which would continue with a declining amount in 2023 and 2024), and $220,000 for services rendered during COVID-19 by REACH Medical.

Risks presented included the ongoing COVID-19 pandemic and its ramifications, unknown outcomes of inflation, and recycling and materials management industry concerns and anticipated operating losses that draw from the solid waste fund balance.

Holmes shared that her approach to the recommended budget included meeting the financial goal set by the legislature, restoring and supporting current county operations and sponsored agencies, supporting the capital program, and preserving fund balance for anticipated community pandemic recovery uses being discussed by the legislature.

Presentation of 2022-2026 Tompkins County Capital Plan Holmes also presented the proposed 2022-26 capital plan, reflecting an investment in capital projects including a strategy to achieve net-zero carbon emissions by 2027.

Holmes proposed that .5% of the new property tax levy ($6.37m) be allocated to support capital investment.

The legislature had previously determined that 75% of funds received through the federal American Rescue Plan Act, totaling $14.89 million, will go toward projects. The projects slated for use of the American Rescue Plan Act funds, which were selected via an analysis of the Act’s framework and reporting guidelines, include: PROJECT​ FUNDING​ Bridge NY 6 Culvert Projects​ $1,723,175​ Facility Restoration Projects 2022 & 2024​ $2,800,000​ Public Safety Building Improvements​ $3,750,000​ Road Maintenance Program 2022-2024​ $5,000,000​ Recycling Center Upgrades 2021-2025​ $1,618,866​​ Total​ $14,892,041​ Holmes outlined the green facilities plans designed to achieve net-zero carbon emissions by 2027. The new goal of achieving this feat over six years reflects a significant shift from the previous goal of 2035. The project’s first phase includes changes and improvements to LED lighting, building envelope weatherization, water conservation, pipe and valve insulation, computer power management, controls optimization, window replacement, roof replacement, and geothermal installation.​A $1.75 million commitment to electrifying 60 passenger vehicles and construction of charging locations was presented as a key element in meeting

net-zero targets.

The recommended capital plan includes the eventual construction of a Tompkins County Center of Government to be located in Downtown Ithaca which would house several County departments and eliminate the need for leased space and improve facilities for those departments. The building is estimated to cost just over $30 million and would be funded through federal and state grants, county general funds, and bonds estimated at $14.6 million.

The Public Safety Building that houses the Tompkins County Sheriff ’s Office and the Tompkins County Jail is slated for improvements under this plan, estimated at $4 million. The recommendation to improve the current building rather than construct a new one follows bail and criminal justice reforms which have led to the local jail population (housed in the building) declining to unprecedented levels. The local jail’s population hovers between 20-40 individuals reported monthly at the legislature’s Public Safety Committee meetings. The improvements to facilities would start in 2022. Legislator Amanda Champion (D-Ithaca) sought more information on the decision to improve the current building rather than construct a new building.

Holmes responded that with the change in the landscape with the aforementioned reforms and COVID-19 it would be very difficult to anticipate the size of the needed building, whereas this $4 million represents essential improvements for the health and safety of building users and inhabitants. Holmes indicated that further discussion on the improvements and other building concerns would happen in the Legislature’s Public Safety Committee.

Included in the plan is the continuation of the County’s 10-year highway rehabilitation, reconstruction, and maintenance plan. The highway plan includes eight bridge projects, six culvert replacements, facility improvements and the annual road maintenance program. The highway plan is funded by state, local, and American Rescue Plan Act funds.

Liz Susmann: Opening Doors to English for our new neighbors

remember the interview I did with Rich Bernstein of Ithaca when he was chosen to be part of the U.S. delegation to Israel to participate in the Maccabiah Games in 2017 (the Maccabiah Games are often referred to as the Jewish Olympics). Rich was still working for the Ithaca City School District at that time — he had coached hundreds of cross country runners to reach deeper than they thought they could to be-

come better runners, and he was always willing to help me with a story. He knew that young athletes enjoyed — and benefited from — media attention, and he liked being part of their evolution as athletes and people.

Since that time, Rich was instrumental in launching the cross country program at TC3, retired from ICSD, and always loved to talk about (what he thought was) the once-in-alifetime experience of going to the Maccabiah Games as an assistant coach. Well, when the invitation came to go back to the Games next summer — this time as the head coach — Rich was as grateful as he was

We talked about this new development, and Rich told me, “The Maccabiah Games are held the year after the Olympics, so it was supposed to be this summer, but obviously, everything got postponed a year.” He added, “I am really looking forward to it, and I would describe it as continued on page 7

iz Susmann’s parents, Anna and Herb Susmann, moved to Ithaca for Herb’s graduate program in Engineering at Cornell before Liz was born. Growing up in West Danby and then Brooktondale, Liz was raised in a close family with loving role models. Many of us admired and enjoyed Anna and Herb’s greenhouse business.

Young adults incarcerated in maximum secure facilities became enthusiastic gardeners with Mrs. Susmann as their leader. Herb, formerly an electrical engineer for Vector Magnetics, is also known among birders through his work with Lang Elliot on audibility of bird song.

Growing up, Liz enjoyed singing with the Ithaca Children’s Choir, participating in 4-H programs, connecting with friends through Ithaca’s vibrant homeschooling community, and attending and graduating from the Lehman Alternative Community School. After completing her Bachelor’s in elementary and special education at Messiah College, Liz returned to Ithaca and worked as a substitute teacher.

When she was introduced to the world of adult English as a Second Language (ESL), she knew this was her niche. Discovering the field of ESL led Liz to obtain her master’s degree from SUNY Cortland in 2014.

In 2019, she and seven other colleagues founded Open Doors English (ODE), an ESL school serving adults in Tompkins County and beyond.

despite the challenges of the pandemic.

This year, like last year, more than 200 adult students have savored their time in ODE classes, finding community and connections that help overcome the isolation of the pandemic and other challenges many immigrants face.

William, from Colombia, said: “I’m really happy because here [at ODE] I know different people from different countries with different cultures, and all of them have taught me valuable lessons.”

Wei-Wei, from China: “I love ODE because the teachers see the students’ hearts. My English is small, and sometimes I can’t say what I want. But the teachers feel their students’ hearts.”

Kate, from Ukraine: “I will never be tired of saying that ODE is not just a school or ESL program. You’re a miracle in the lives of people who come to the U.S. You know how to make people smile and feel happy in a new country despite all the difficulties we have.”

As businesses throughout the U.S. struggle to fill job positions for farm workers, CNA aides in nursing homes and construction workers, we realize how our essential needs are enhanced by families coming to America. Our newly-arrived community members need language skills as they find their way in

a rugged, three-week adventure.” Asked why he described it that way, Rich said, “Well, it takes a lot of energy to plan out the schedules and chaperone high school students 24/7. We go on tours of ancient historical sites, we put in hundreds of miles on buses, and it’s 100 degrees every day.” Making sure not to leave out one of the most important components, Bernstein said, “We also have to factor in where and when to train.”

The Games feature every Olympic sport, and in Rich’s words, “Our actual competitions will be held during the last week, and in 2017, during our down time we went to watch other events, like basketball, golf and a few other things.”

Rich feels very confident about going as the head coach, and he told me, “I know the schedules, I have familiarity with the security measures we have to take, I’m looking forward to it.” Asked to elaborate a bit, he pointed out that any large gathering faces a degree of risk, and he said, “We have Army soldiers on the bus with us. You always have to be aware of who you are and what you are. In fact, last time, we had a young lady who went to take some photos and we had to go and find her.” I heard a sigh of relief when he shared the happy ending of that story. He continued, “I love being a part of this, as it is a great experience for the kids. It’s

cool seeing the look of wonder on their faces when we first get there, and I’m very happy to go again.”

Asked if his long and fruitful career as a track coach opened the door for him, Rich laughed and said, “Yes. And, of course, I’m Jewish.”

Many thanks to Cornell Athletics for welcoming the 1971 Cornell lacrosse team to take part in the Homecoming festivities. About 15 of the guys showed up to celebrate the 50th anniversary of the program’s first (of three) titles. The players surrounded their beloved coach Richie Moran on the Schoellkopf Terrace, and they all looked happy and proud as the video camera splashed their mugs on the Jumbotron screen for all 12,000 fans to see. They got a rousing ovation, then spent the rest of the weekend celebrating a half-century of friendship. It was a great gathering, and I was honored to be a part of it.

a new culture. ODE student Jose T. told Liz, “Each dollar, each gift to ODE doesn’t just improve a student’s life, but also the student’s family, and then the community.

Since I improved my English, I could get a new job and go to the job interview alone.

I could talk to the boss to be sure I could still take my English classes…” Liz adds that Jose’s son, still in Guatemala, has also been able to join ODE classes remotely.

When the pandemic hit, ODE had to pause in-person classes and present their classes online. ODE’s staff quickly recognized the need for technology assistance for students — a need far greater than ODE’s stretched financial resources could handle. Through the generosity of the Park Foundation and another notfor-profit, ODE was able to purchase six Wi-Fi hotspots to provide mobile internet and 20 laptops, helping ODE students attend classes virtually.

“Some students had little or no access to technology for continuing ODE classes.

Those without computers attended class on their tablets or over their phones. One out-of-town farmworker stayed late after work to use an office computer to ‘attend’ his evening class. When we were able to loan him a mobile hotspot and lend him a computer, this student could head home after work, help with childcare, eat with his family, and then join in the ODE evening class from home. Having access

to convenient, reliable technology made all the difference!”

A silver lining during the pandemic was ODE’s launch of their Conversation Partner Program. Community members are paired with ODE students, building friendships through conversation. “Conversation partners communicate regularly

by Zoom, email, phone, or even text messages. It’s been a really important way for our students to connect with the Ithaca community during a time of increased isolation.”

As we reflect on the challenges our new community members face, we note that ODE’s staff overcoming language barriers is essential, so that new members can become comfortable in their new home and eventually fill much needed jobs in our community.

e need an indoor mask mandate in Tompkins County We are in high community transmission. With the closure of the downtown testing site, many are no longer bothering to test— meaning our reported case numbers may well be unintentionally lower than they actually are.

Similarly, although Cornell is testing most people on campus weekly, Ithaca College is only testing a small random sample weekly — again making reported numbers likely lower than they actually are.

During the recent public meeting on Covid cases, many in the chat (still available on Youtube) questioned your refusal to impose an indoor mask mandate. You said that if anyone felt uncomfortable with the lack of masks anywhere, they could always leave. That statement is at base, discriminatory.

Few small stores have enough room to appropriately social distance. Workers in stores cannot simply walk out if they feel uncomfortable that customers are not wearing masks. They need their jobs— and their health. Indoor mask mandates protect them.

Few apartment buildings have good ventilation or wide hallways. Renters downtown cannot break leases if they feel uncomfortable that their fellow renters

are not wearing masks. Again, requiring masks indoors makes good sense. The downtown renters both older and younger need to stay where they have leases. They don’t generally have a choice. Indoor mask mandates protect them.

Children under 12 go into stores, play downtown, live in rental buildings as well.

They cannot yet be vaccinated. Kindly remember that in many cases, parents do not have or cannot afford babysitters.

You also stated that you feared that if you imposed a mask mandate, and it did not work, then you would have to move to lockdown, and that we all knew the effect of that… May I remind you that a mask mandate does not — at all — mean that a lockdown is in the works? Lockdowns are imposed only if severe outbreaks occur — and even then only when they are necessary. A mask mandate would likely lower our case count— even if our case count happened to be accurate— and would help prevent any move to a lockdown.

Again, I’m asking you to reconsider and impose an indoor mask mandate in the county.

Four Planning Board members, the bare minimum required to grant approval, were in attendance at the Sept. 14 meeting — McKenzie Jones, Garrick Blalock, CJ Randall and Mitch Glass.

Glass said he was ready at the last meeting to approve the project and still felt the same way, though he did note that he was disappointed there would be no straight shot from State Street to the creek walk behind the building.

“It’s a real missed opportunity for the creek walk,” he said.

At the August meeting engineer Brian Bouchard explained that there’s an electrical transformer nearby that can’t be moved, so there will be public access to the stairs and elevator in one portion of the building to provide a path.

Glass added he hopes the stairway is designed and lit nicely so that it’s a pleas-

The other board members present agreed with Glass.

“I share [Glass’] comment about the access from the street to the water, but every project can’t be perfect in every way,” Blalock said. “I think it’s the best that can be done under the circumstances.”

He added that overall, the project is a positive for the city.

“I see a lot to like about this project,” Blalock said. “It puts housing where we need housing […] It’s replacing a surface lot with housing, it’s drawing attention to a natural area amenity close to the city.”

Ultimately the vote was unanimous to approve the project, about a year after the process started.

“I’d like to think you’d miss us, but I’m sure you’re ready to move on,” Jones joked.

DRAWING THE LINES The redistricting efforts are well underway in New York state. How might things look for Tompkins County?

ith the census data released, redistricting is officially upon us. And with the release of the first draft of maps, we’re not much closer to knowing what the outcome will be.

So what is redistricting? The American Civil Liberties Union defined redistricting as the process of drawing the lines of districts from which public officials are elected.

“When it’s conducted fairly, it accurately reflects population changes and racial diversity, and is used by legislators to equita8 T

bly allocate representation in Congress and state legislatures,” the ACLU website says.

STATE REDISTRICTING

The Constitution requires redistricting to reflect shifts and growth in their populations. New York state is losing one house seat after coming up 89 people short to retain its 27 seats.

“Even if the total population doesn’t go up or down, people shift and move around,” Tompkins County Legislator Martha Robertson said. “You have to make sure your lines are fair and equitable.”

Robertson added that her understanding is the population grew more downstate than upstate, moving the state’s center of gravity, so to speak, downstate. This year, for the first time, New York is using an interdependent redistricting commission that comprises five Democrat-appointed members and five Republican-appointed members in an effort to prevent gerrymandering. Gerrymandering is when redistricting is used as a tool (often by a specific political party) to manipulate electoral outcomes or discriminate against certain groups.

Robertson said that the legislature has no control over what the state’s redistricting commission decides, but she said there are preferential outcomes for Tompkins County. She said they like Assembly District 125 because it leaves the whole county intact.

“That feels great, along with the western part of Cortland County which is also a good fit,” she said.

Tompkins County is part of Congressional District 23, which extends along the border with Pennsylvania and includes Alleghany, Cattaraugus, Chautauqua, Chemung, Schuyler, Seneca, Steuben and Yates

counties, along with parts of Ontario and Tioga counties. The district is primarily rural with the exceptions of Ithaca and Elmira. The county remains intact in this district as well.

As for state senate, Tompkins County is part of New York’s 58th State Senate district and includes some of all of Chemung, Schuyler, Steuben and Yates counties. It splits Tompkins County near Lansing, and includes Ithaca, Newfield, Enfield, Trumansburg and continues west to Hornell and south as far as the Pennsylvania border. Another rural county with the exceptions of Ithaca and Elmira.

Both the Senate and Congressional districts are represented by Republians, Tom O’Mara and Tom Reed respectively, despite Ithaca and much of Tompkins County reliably voting Democratic.

Robertson said that she believes Tompkins County should be attached to Cortland County in the Senate and Congressional districts as well as the Assembly district because “we have a lot more in common with Cortland County than with the counties to our west.”

“We share [Tompkins Cortland Community College] with them, we know their legislature, we jointly serve our community college constituents. That’s a big deal,” she said.

She added that in addition to sharing TC3 and an Assembly district, both counties have higher-ed based economies because of SUNY Cortland, Ithaca College and Cornell University.

“That’s one of the things the commission is supposed to look at,” she said.

In addition to shared interests, there is also a high number of commuters between the two counties; Cortland County is Tompkin County’s highest commuter-in and commuter-out counties by a lot.

“We hate that,” she said. “We want one senator who knows us. These are the points [the legislature] has agreed on and are trying to communicate.”

She added that the views of the Tompkins County Legislature were backed up by officials in the western counties who made the case that they’re agricultural counties and shouldn’t be put in with bigger cities along the thruway.

“They were pointing out that those counties are mostly agricultural and it’s not our main driver at all,” she said.

Losing one seat tends to have a bigger effect on upstate districts than downstate districts because the population is much more spread out.

“All of the districts are going to have to have more people, and in upstate New York that means bigger geographically,” she said. “Downstate congressional districts are like single blocks. It’s such a different thing when you’re looking downstate.”

Before former Gov. Andrew Cuomo left office, he had talked about filing a lawsuit to try and retain the state’s 27 congressional seats since it was only an 89-person difference. However, Robertson said this is not going to happen.

“They must have looked at it and realized they didn’t have a leg to stand on,” she said. “How could we say anything was done wrong so we didn’t have 89 more people?

There’s no evidence that someone was left out.”

She said many people anticipated New York losing two seats, so “the fact we almost kept all of them was way better than expected.”

The first drafts of the newly drawn maps were released Sept. 15, and to the surprise of many, there were two versions as the group couldn’t come to an agreement.

“More people go to Cortland County for work than any other outlying county,” she said. “That’s another part of our shared community. It makes a whole lot of sense for us that we’d like to be included with Cortland rather than with the west.”

THE DRAFTS: NAMES VS. LETTERS

The “Names” draft of the Assembly district cuts Tompkins County just west of Ithaca. Ithaca, Lansing, and the remainder of the county to the east, is included with much rural land. No part of Cortland County is included, and the district stops shy of Johnson City and Binghamton. Ithaca would be the largest city included. The western portion of the county that isn’t included in is part of a large county that encompasses much of the areas surrounding Owasco Lake and Seneca Lake, plus the eastern southern shore of Canandaigua Lake.

The “Letters” draft of the Assembly district includes all of Tompkins County and north and south of it. It does not include Cortland or any part of Cortland County, but does include Marcellus and about twothirds of the eastern shoreline of Cayuga Lake, plus the southern end of Owasco Lake, as well as half of its eastern shore.

The “Names” draft of the Senate district keeps the county intact and includes it with all of Cayuga Lake’s shoreline, as well as Geneva and parts of the eastern shoreline of Seneca Lake. It extends west to include Canandaigua and almost all of Canandaigua Lake, and beyond (stopping short of Rochester).

Again, the “Letters” draft is significantly different. Tompkins County is intact, though again does not include Cortland in any way. It encompasses all of Tompkins County and then south and east, including Binghamton and the area along the Pennsylvania border.

These maps are now out for public comments and there will be a series of public hearings around the state. Robertson said presumably from there they will revise the maps based on public opinion and then present them to the state legislature in early January. Maps ideally need to be approved

by February when petitioning starts. According to Robertson there is a law up for referendum in November this year that would speed the calendar up by shortening the time period from when the commission presents the maps to when the legislature can vote.

“It shortens the timeline, we’re really concerned with how late it is when people find out what the lines are,” Robertson said.

“Every week really matters — the more time the better.”

COUNTY REDISTRICTING

Much like the state, the county will be drawing new maps using an independent redistricting commission. Legislator Amanda Champion is heading the charge and said this process was put into place 10 years ago.

The commission will comprise nine independent volunteers, meaning they cannot be a current elected official or officer in a political party. They can be registered to a particular party, of course, but have to be independent from any organizations.

“These folks will work with the county staff and start sifting through census data […] to see where populations have shifted in the county and decide if our district lines need to change,” Champion said.

She added that Tompkins County can have anywhere from 13-17 legislators (there are currently 14), so theoretically the commissioners could decide that there’s been enough population growth to add a legislator seat.

“Rumor has it that the city of Ithaca has increased its population,” Champion said, confirming that it’s possible a fifth legislator could be added for the city.

“I know the town of Lansing has been growing quite a bit too,” she said.

As far as how lines are drawn within the county, Champion said it’s nice to keep towns intact if possible, but currently the towns of Ithaca and Enfield are split up.

“It’s really based on population,” she said.

The process in the county will follow a similar path as the state, redrawing lines, getting public input and coming up with a final plan to present to the legislature through the Government Operations Committee. The legislature does have the ability to send it back and offer feedback, but Champion said the legislature will likely respect the role of the commissioners.

“The commission isn’t just off in a closed room,” she said. “They’ll have the support of the county administration, probably a legislation clerk. They can bring in other experts if they want more opinions. The commission is a guiding force, looking at the bigger picture alongside staff who are experts in this field.”

One difference from the state, though, is the county commission isn’t on quite the same time crunch. However, Champion said she hopes they move along at a good pace and have it done in 6-8 months.

‘13 Ways to Eat A Fly’

Local author uses children’s books to teach students about nutrition, math and space without skimping on the fun.

ocal author, Sue Heavenrich, brought her fly catcher net with her to Candor’s Story Hour this summer to celebrate her latest children’s book, “13 Ways to Eat A Fly.” Besides all the many ways there were to eat a fly, Heavenrich also clarified that it was okay for humans to eat a fly — just in case one got caught in your mouth.

“It’s protein, and good for you,” she said.

Heavenrich writes about science and environmental issues and is passionate about insects. She has followed ants in the Arizona desert, tagged bumblebees in the Rocky Mountains, and tallied insects on Cocos Island in Costa Rica. Her writings for children have appeared in Ranger Rick, Cobblestone, and Highlights for Children.

Penguin Random House describes it as a STEM (science, technology, engineering,

math) picture book with “plenty of ewww factor to please young readers.” A swarm of 13 flies buzzes along, losing one at a time to predators along the way. Whether the insects are “zapped or wrapped, liquified or zombified, the science is real — and hilariously gross.” There’s also a guide to eating bugs, complete with nutritional information for a single serving of flies.

Stoughton Farm’s eight-acre corn maze, MAiZE will operate during the day and add a night maze in October. The MAiZE admission prices for ages 3 and under are free, ages 4-9 cost $6.95 and ages 10 and older cost $10.95.

IRON KETTLE FARM

Iron Kettle Farm offers a two-acre traditional corn maze which opens for the fall season the

last weekend of September and runs through Oct. 31.

Partner Bonnie Jensen at Iron Kettle Farm said if you don’t get lost in the maze, it takes about 15 minutes.

“You go in and you just need to make the right turns and find your way out,” Jensen said.

Pricing for fall attractions varies. Tickets are $1.50 each and $15 for a dozen tickets.

Attractions include the corn maze, hay rides, a spook barn, pedal tractors, a pumpkin slingshot and more.

The farm is open everyday from 9 a.m. to 6 p.m., but fall activities will run from noon to 5:30 p.m. Monday through Friday and from 10 a.m. to 5:30 p.m. Saturdays and Sundays.

Smithome Farms offers a three-acre corn maze that changes annually. The maze requires four tickets, with tickets costing $1.50 each or $17 for 12 tickets. The corn maze offers a different trivia game each year — this year’s theme is famous people in Chemung County.

Maureen Smith, co-owner of Smithome Farms said her husband took the farm over in the early ‘90s.

“We’ve been doing this about 20 years and it’s just gotten a little bigger each year,” Smith said.

Other attractions the farm offers include a hayride, duck races and a new apple cannon attraction.

The farm is open Sept. 18 until Oct. 31, operating from 11 a.m. to 5 p.m. Saturdays, Sundays and Columbus Day.

SPRINGSIDE FARM

Springside Farms offers a “Maze Park Pass” which allows people to enjoy unlimited access to several mazes and fall festivities. The farm offers New York’s largest hedgerow maze along with a three-acre corn maze, tree mazes and jungle maze.

The “Maze Park Pass” is $10 per person, with a $60 deal for families with more than six members. Ages 2 and under are free and there is a senior discount.

Paulie Drexler with Springside Farm said the farm offers a zipline, which he said kids love, as well as countless other attractions.

“Many people come when we open and don’t leave till we close,” Drexler said. “It’s an affordable day out with the kids.”

hether you’re seeking encounters with friendly animals, apple picking spots, farm-fresh produce, local goodies, pumpkin patches or some artisan shopping, there is a farm waiting for you. As the leaves change and a chill begins to fill the air, visit these local farms to make the most of your fall experience.

LITTLETREE ORCHARDS

The 10,000 dwarf apple trees across 60 acres of land at Littletree Orchards spawn over 60 apple varieties that you can pick yourself. As you pick them, bite into popular varieties like Red Delicious and Mcintosh, specialty types like Melrose and Fuji, old fashioned apples like Rome Beauty and Baldwin — and many more.

Make sure to try a yearly favorite, the Burgundies. Littletree Orchards is one of the only orchards where this variety grows.

“They’re this really beautiful dark shade of burgundy color and they’re a pretty tart apple,” Amara Steinkraus, orchard manager said.

“They’re really awesome for making pies and sauce.”

Stop into the Apple Barn for a map of the best picking spots, walking trails, and picnic tables. In the Apple Barn play a game of ping

pong or find a spot to sit and relax. This year, the farm plans to have its wagon rides start up again.

The farm offers produce beyond apples, growing peaches, sweet cherries, brussel sprouts, pumpkins, gourds, squash and the list goes on. No matter what you pick and nibble on, you are sure to have a fun-filled, hands-on experience.

“Spending a couple hours here is really nice because you can wander around the property which has a couple of swing sets and a slide, and some picnic tables,” Steinkraus said. “People can come relax, bring a lunch, and have a nice afternoon.”

over 50 other apple varieties. Around the farm visit the fields to find pumpkins, winter squash and brussels sprouts which you can pick yourself and take home to eat.

“It’s a beautiful piece of land with lots to pick,” owner Stephen Cummins said. “We’ve got a nice apple crop, nice peach crop, nice vegetable crop. So basically I’m hoping for good weather and health this season.”

Visitors can also enjoy the picturesque, “park-like atmosphere” of the farm with picnic tables and swings activities sprinkled across the property.

A long day of picking and wandering the grounds in the crisp fall air will leave you thirsty for some cider and craving some treats — the farm stand is there to satisfy these cravings, and you can also pick up some more freshly grown goods before heading out.

Cummins has a few tips to make the most out of your visit, the first of which is to “be careful driving.”

“Aside from being safe, bring a soccer ball to kick around, bring a picnic,” he said. “Bring something to eat, make a day of it, bring the whole family, spend some time walking around.”

Cabin View Alpacas sits on land with a robust history stemming all the way back to the Revolutionary War. Once filled with

grape vines, livestock and grazing sheep, approximately 50 alpacas now roam the land just north of Trumansburg. The farm welcomes the public to take tours of the land by appointment on Friday, Saturday and Sunday.

On the walking tour, you will learn all about alpacas and might even have the chance to feed a few of them. This fall, there will be baby alpacas on the farm who will be hovering around two months of age. Visitors should take note that Cabin View Alpacas is not a petting farm, but rather a breeding farm.

“We’re not a petting farm, so some people do get disappointed that [the alpacas] are so cute and fuzzy and they can’t cuddle them,” co-owner Chris Houseworth said. “We are a breeding farm, so our purpose is to upgrade the alpaca. People are a little disappointed that they can’t hug them, but they’ll eat out of their hands and people just love watching them because they’re so mesmerizing.”

Beyond the excitement of meeting, learning about, and potentially feeding these fleecy animals, the views of Cayuga Lake will dazzle you.

“The farm has a beautiful view of the lake, and it’s really nice here in the fall with the leaves and the humidity gone,” Houseworth said. “It’s a really nice family event to come in and do the tours and college kids love it too.”

The tour, during which you might also meet the farm’s resident donkeys and goats, will end at the Farm/Gift Shop laden with alpaca products — sweaters, scarves, hats, stuffed animals — and other locally crafted artisan gifts.

Over 20 varieties of apples await you at Apples and Moore in Watkins Glen. The farm provides its visitors with plenty of wagons and bags to haul fruit through the orchards. Choose from apples like Ida Red, Sansa, Snapdragon, Jonagold and Zestar varieties.

“It will be a really good year for apples,” owner Alec Moore said. “The weather has really accommodated us this year with all the rain which is a big bonus. I enjoy letting all people get out here and pick, it’s really a fun time of year all around for everybody.”

According to Moore, a favorite apple variety among visitors is the honey crisp.

For some more fall produce, head to the mass displays by the sale barn to find a bountiful harvest of pumpkins, squash and gourds. If the sweetness of the apples doesn’t suffice, satisfy your sweet tooth with homemade apple cider donuts and freshly made apple cider.

BRIGHT RAVEN FARM AND APIARY

Bright Raven Farm and Apiary, which produces local, raw, varietal honey, is sure to offer a sweet experience. Located in Jacksonville, NY, the beekeepers care for over 80 hives. They also maintain a farm that they restored in 2000 with sound ecological farming practices. With the rich soil, the farm has been actively engaged in increasing and enhancing its pollinator habitat, planting species of plants that provide nutritious nectar to pollinators such as honey bees, monarch butterflies, and hummingbirds. In addition to viewing the hives, you can visit the Honeybee Embassy, the property’s farm store which sells raw honey, natural honey-sweetened sodas and other hive products. waterfall at the end of the lower portion of the gorge is approximately 215 feet high, making it one of the tallest waterfalls in New York — even surpassing Niagara Falls. BUTTERMILK FALLS STATE PARK

BOCK-HARVEY FOREST PRESERVE

This 48-acre preserve, located in Enfield — just 20 minutes west of Ithaca — is an ideal option to peek at the changing leaves during the fall.

The trail throughout the preserve is a little over a mile long, making it one of the easier walks on this list. At the start of the walk, the trail leads you through a grove into a large meadow filled with goldenrod and other wildflowers. Further along the trail, you’ll come across some of the region’s oldest and tallest sugar maple trees, which turn into spectacular shades of yellows, oranges and reds during the peak autumn season.

CAYUGA WATERFRONT TRAIL

Whether you choose to walk, run, or simply sit on a bench and enjoy the view, the Cayuga Waterfront Trail is a fantastic way to experience what Cayuga Lake has to offer. As you go along the eight-mile trail, canopies of oak, hickory and maple trees tower over the peaceful blue waters of the lake, making it a breath-taking view no matter where you are on the trail. The trail also connects to some of the most popular attractions in the area, such as Stewart Park, the Ithaca Farmers Market, Cornell University and Ithaca College Boathouses, and Cass Park. If you’re new to the area, make sure to take a pit stop to one of these places if you choose to walk along this trail.

DANBY STATE FOREST - ABBOT LOOP

Located less than 10 miles from Ithaca, this forest is a popular destination for hikers looking for a tranquil, more seculed setting. The roughly eight-mile trail weaves through wooded areas filled with creeks and oak and hickory trees, providing a tranquil, majestic view of the foliage during the fall. As you go further down the loop, the trail will lead to an overlook called Thatcher’s Pinnacles, which not only provides a unique view of the changing leaves, but also of the Cayuga Inlet Valley.

Named after the Black Diamond Express, which once ran from Buffalo to New York City along the Lehigh Valley Railroad, this trail is the perfect spot to check out views of the fall foliage. As you stroll along the stonedust path, not only will you come across views of streams, brooks and gorges, but also hoards of hemlock, oak, maple and hickory trees, providing a picturesque view of the changing leaves first-hand. The approximately 8.4-mile trail also serves as a connection to other parks in the area, like Taughannock Falls State Park in Trumansburg and Cass Park in Ithaca. If you’re up to the challenge, try planning a day with your friends (or by yourself) to get through all three of these trails and keep track of the types of trees and the different colored leaves that you see.

abernet Franc is the workhorse of the Finger Lakes wine industry, where this French variety is grown by everyone who grows vinifera grapes.

It is used as a blending grape in this region, just as it is in much of the wine-producing world. But in upstate New York, it is also quite commonly bottled, with much pride, as a varietal.

Tréleaven Winery in King Ferry puts Cabernet Franc into four different bottles: the usual barrel-aged varietal, their Meritage (Bordeaux blend), a blend that changes yearly called Premier, and — most unusually — a “stainless steel” Cabernet Franc.

“It’s our take on a refreshing fruit-forward wine,” said winemaker Matt Denci, who has been at Tréleaven for a year and half. “There is less tannin extraction [from the grapes], and it stays in the tank; it is never put in a barrel.” The result is more like a Beaujolais than a Bordeaux.

Denci brought the idea for a stainless steel Cabernet Franc with him to Tréleaven from Keuka Spring Vineyards. He feels it is a nice introduction to the grape. “All the Tréleaven wines were more serious,” he said.

Although Cabernet Franc is grown in France — it is descended from Cabernet sauvignon — it is commonly bottled as a varietal only in the Loire Valley in the cool climate of northwestern France. Denci noted that it is the traditional wine used in Paris bistros, where it is set on the tables in carafes.

Kelley O’Neill of Randolph O’Neill Winery in Ovid was less sanguine about Loire Valley Cabernet Francs. He regards them as “rustic,” although some are “good and interesting.” He once worked at Northside Wine and Liquor in Ithaca, where was able to try more than he can remember. He recalled they were often laced with Brettanomyces (“Brett”), a yeast that imparts a barnyard odor.

Meritage wines, sanctioned by the Meritage Alliance, are required to use only grapes traditionally used to make Bordeaux wine.

Bordeaux wines from east of the Gironde River (Saint-Émilion, Pomerol) are blends of Merlot and Cabernet Franc. West of the Gironde (Médoc, Graves), Cabernet sauvignon is dominant with lesser amounts of Cabernet Franc and several other varieties, including Petit Verdot and Carmenere.

Denci described Tréleaven’s Meritage as its “top end” wine. The proportions of the blend vary from year to year with the nature of the growing season, but last year’s vintage was 50 or 60% Cabernet Franc. “Whatever does well,” he said, “is predominant.”

Shalestone Vineyards in Lodi makes a varietal bottle, a blend called Red Legend, and a Bordeaux blend, but they choose not to pay the Meritage Alliance fee and call theirs “Harmony.” Seth Thomas is the winemaker and vineyard manager at this Seneca Lake winery in Lodi. “Harmony used to be more Cab Franc,” he said, “but now it is more Merlot.”

Why is Cabernet Franc so prevalent in the Finger Lakes? Thomas said that Franc is well suited to the cooler climate of the Finger Lakes.

It has harder wood than Merlot, he said, and its trunks are less likely to freeze during a big temperature swing. The grape clusters are also looser than those of Merlot, Syrah, or Pinot noir, which makes them less susceptible to rot.

Thomas has noted a seeming trend in Finger Lakes growing seasons toward higher “intensity,” with much higher humidity levels and bigger downpours. “A quarter-inch used to be a good rain,” he said. “Now it’s a light rain.”

On average, he said, growing season now starts earlier and lasts longer.

This decreases an advantage once held by Cabernet Franc; it begins to ripen before the other viniferas. And it is important that this grape ripen fully, because otherwise it retains a bell pepper taste that can diminish the quality of the wine. Denci identified it as his primary concern in working with this otherwise relatively easy grape. Upon detecting the pepper “note” he must decide whether to “play it up or down” in the winemaking process. It is more of a difficulty in his stainless-steel bottle, because there is no barrel to “integrate it into the flavor and make it cool and savory.”.

Cornell that helps Cabernet Franc to fully ripen: leaf removal. “You want to get sun to the fruit as soon as possible,” said O’Neill, “even when they are little green peas. It is labor-intensive early in the growing season.”

Otherwise, Cabernet Franc is easy to grow.

O’Neill said he has few problems with birds and deer. “You need a special season to get a good Cab Sauv,” said Denci, “but we regularly get a good harvest of Cab Franc.” Thomas described the fruit as tough and durable. It is when the skin is punctured — by a bird or insect — that rot gets into the grape.

The increased humidity worries Thomas because it promotes both downy mildew early in the season and Botrytis (“royal rot”) later. But Cabernet Franc, with its loose clusters and early ripening, has an advantage. “Even this year,” O’Neill said in late August, “there’s been no downy mildew. It would have appeared by now.

The grapes become immune before the leaves.”

When he first met it, O’Neill was not overly fond of Cabernet Franc as a wine. But he came around to it. “I settled on growing Cab Franc because it’s consistent,” he said. “I’ve grown to love it. It’s so versatile; it goes with a wide variety of foods, and it makes a fantastic rosé.

Thomas finds the wine easy to make. “It is one of the easiest grapes; it ferments well, going through primary fermentation quickly and secondary fermentation well. And it’s not finicky when it comes to matching yeasts to the wine.

Denci likes Cabernet Franc for its centeredness. “It’s not a big monster grape,” he said. “Cab sauv is high acid and high tannin, and Merlot is plush and fruity. Cab Franc is the middle child; it does a little bit of everything.”

Cider, any way you make it LESS REGULATED THAN WINE MAKING, CIDER MAKING IS AS COMPLEX AS IT IS VARIED. B y Bill Chaisson

T

here seems to be as many ways to make cider as there are cider makers.

You can start with heritage varieties or you can start with seedling apples from a tree at the side of the road. You can employ the yeast in the air around you or you can inoculate your juice with specific yeast cultures. You can use one apple variety or you can use dozens and dozens of them. You still end up with something called cider.

even bleu cheese. He suggests early American ciders were probably like this because they were wild fermented and drunk straight from a barrel. The flavor would change as the live yeasts continued to work on the cider.

Like the colonial Americans, Reynolds makes Blackduck ciders with the yeast present in the ambient environment. “You build up a house culture in your building and in your equipment,” he said. “It makes the flavor of your cider consistent.” He calls whether or not a maker uses wild yeast or inoculated yeast a “divide” in the artisanal cider community. To use specific yeast cultures, Reynolds said, you first have to kill the existing yeast with sulfites, something he will not do.

Reynolds makes some cider out of crabapples. “Crabby Pip” varies between 70 and 100% crabs from year to year; sometimes the crabs are just too intense. It sits in the bottle for six to 12 months, which mellows it. It has 0% residual sugar.

Blackduck’s “Bankers Blend” (named for Edith Banker Ford) is a tannic English-style cider that includes, among others, Harry Masters Jersey, Kingston Black, and Somerset Redstreak varieties. Their “No Pasarán” (after the Spanish Civil War motto) is made with Spanish varieties in the high acid/low tannin Iberian style.

Many commercial cider makers began making cider for their friends and families years before they started selling it in bottles with a label on it. John Reynolds of Blackduck Cidery in Ovid said he had been fermenting fruit since he was a teenager. At Cornell he received formal training in horticulture, but he has learned to make cider by trial and error and by reading about it.

Reynolds and his wife Shannon O’Connor planted their orchard in the 1990s, started making cider for themselves from those apples (and other fruit) in 2000, and began selling Blackduck in 2014. They grow 100 varieties and only a small number are for eating.

The latter are generally either sweet (low acidity, low tannin) or sharp (high acidity, low tannin) varieties. Apples purely for cider are categorized as either bittersweet (low acidity, high tannin) or bittersharp (high acidity, high tannin). Ciders makers often blend sharp apples into ciders to add some sweetness.

tannic and more acidic. Colonial cider included sharp varieties like Northern Spy, Roxbury Russet and Golden Russet. In contrast, traditional English and French ciders tend

his retirement. He and his family have been growing cider apples at Black Diamond Farm in Trumansburg since the late 1990s. They grow 135 different varieties, and only 50 of them are culinary or dessert apples.

Merwin explained that tannins are polyphenols. He differentiates between the French and English ciders, both of which are tannin-rich, in terms of their polyphenol length and their various aromatic attachments. Longchain polyphenols, which the French favor, are more astringent than bitter. “Bitter you taste on your tongue, but astringency you feel on the insides of your cheeks, as if they were dried.”

The tannins in apples, grapes, and blueberries are antioxidants, he said. “They protect your DNA from mutation.”

Merwin said sweets, like Fuji, Gala or Delicious, are dessert apples. They don’t have a lot of malic acid or tannins, just a lot of sugar.

Tarts or sharps are “culinary apples” and not usually eaten, except in New England and Europe. They have higher malic acid content.

These two types, Merwin said, account for 90% of all apples grown.

There are 500 to 600 varieties of bittersweet apples. They have a lot of sugar, he said, not a lot of acid and more tannins. The bittersharps are the rarest apples; there are only about 80 varieties. They have high levels of tannins, acidity, and sugar. These two categories are the true cider apples. The blended ciders of northeastern U.S. and western Europe are about 25 to 50% sharps and 40 to 60% bittersweet or bittersharp varieties, Merwin said.

If a cider maker does not have access to bittersweet or bittersharp apples, Merwin

continued, then they will try to extract tannins from another source like tea leaves, grape seeds, oak galls, or by storing the cider in oak barrels. The oak tannins are what he called “soft tannins,” more astringent and less bitter.

“People will drive up from Virginia or the Midwest to get bittersweet or bittersharp apples or even just rare sharps,” put in Jackie Merwin, Ian’s wife and partner at Black Diamond. Jackie sells apples for eating at the Farmers Market, but 10 to 50% of the sweets don’t pass the cosmetic standards for sale and are added to Black Diamond ciders.

Some of Black Diamond’s bottles include only one or two cider-apple varieties with perhaps a small amount of sharps. Others combine five or six. If a cider is too bitter or too acidic, Merwin adjusts the flavor with mixes of sharps and even sweets. While he is quite systematic, he knows there are no regulations binding him to that approach. He hopes that someday cider making will be as regulated as wine making.

Lime Hollow Nature Center: CORTLAND’S NATURAL HABITAT FOR ALL b y Mat t Butler

T

he Lime Hollow Nature Center, located in Cortland, is home to miles of trails, acres of forest and a Visitors Center designed to welcome and educate attendees about the center’s history and the environment surrounding it.

The center, which was funoded in 1993, covers a wide swath of land that includes many different varieties of terrain.

There’s swampland, forest, etc, and the preserve has continued to grow since its inception in the early 1990s. In total, at this point, Lime Hollow owns and manages 447 acres of land in and around Cortland, NY. Though it originated as purely a means to maintain the diverse landscape that it covers, the center has additionally established itself as an educational center as well, with The

plenty of field trips offered for local middle and high school students as well as educational courses that provide opportunities for higher education students in the area from Cornell University, Ithaca College, Tompkins Cortland Community College, SUNY-Cortland, etc.

The center operates as a nonprofit organization, sustained by donations and membership fees.

Bikes are currently not allowed on the trails, although the center is trying to make changes that would allow bikes to travel safely on the trails and is asking for help from people who also wish to make that happen.

In summer, there are plenty of trails to explore, but even when the weather turns cold there are still options for those who want to explore. The nature center has snowshoes and cross country skis Ti m es

As for annual events, the nature center offers several, some held regularly and others a oncea-year occurrence. Maple Sugarin’ Day is scheduled annually, once each spring, and allows patrons the chance to view the process of maple syrup production, along with a pancake breakfast (obviously).

There’s often other events in the Fall months that those interested will be able to explore after the brief drive up to Cortland. like nature hikes, Trail Work Days , and Science programs. Among other events, the annual Creatures of the Night event is often held on Oct. in anticipation of the Halloween holiday. The center starts its Christmas tree sales in late November and in Decemeber wreath-making workshop.

Plus, if you’re interested in bringing along your pets, one of the trails is open to dogs on leashes.

The Visitor Center is open Tuesday-Friday from 10am-5pm and Saturday from 12-4 p.m.

On Sundays the building will be open from 12-4 p.m., hopefully, depending upon volunteer support.

All of New York Cider Company’s bottles are blended; they are a mixture of fruit from wild trees, old orchard trees and farm-yard trees. Daughhetee and his business partner Joseph Steuer do not have an orchard block with set varieties. He and his crew pick what they can, get it pressed, and keep it in bulk. “It is not,” said Daughhetee, “a purposeful blend.”

And yet Daughhetee knows in some detail what varieties contribute to his blends. He very much likes Newtown Pippins, which he describes as “relatively high sugar and high acidity with a hint of rose.”

He described Smokehouse as “dull, with little acidity and vanilla flavor notes and with a nice mouth-feel.” He combines this apple with more aromatic sharp varieties that have a higher acidity, like Northern Spy and Rhode Island Greening.

New York Cider Company sells most of their bottles at farmers markets, where customers can taste the cider first. They have developed a following that is in search of interesting ciders and who don’t necessarily want the same thing twice. This makes Daughhetee willing to go out on a limb further than some.

His Firefly is a blend he says accentuates the lactic acid taste, which is sour, but is balanced by a bright tanginess. He bottles it with four different strains of Brettanomyces, a yeast that wine makers try to avoid for its “barnyard” odor.

“There is a market for funky ciders in Brooklyn,” Daughhetee said.

He ferments his cider in plastic totes. It sits on the lees for up to a year to impart complexity to the flavor. He has grown fond of the plastic, which is less permeable than wood, but more permeable than steel; it lets in a certain amount of oxygen.

Daughhetee injects yeasts before bottling in order to stabilize the cider, and so the flavor continues to evolve over time. His 2020 ciders were ready for market in early September, about the time he started pressing his 2021 apples.

Two local artists shine using disrupted realism techniques.

onflating the obstinate thinginess of the still-life with the disassociated color patches, liquid vertical drips, and raw areas common to abstract expressionism, Jessica Warner is one of local painting’s most distinctive voices.

Thirteen of Warner’s oil-on-canvas paintings — mostly larger and more-or-less square — currently fill The Gallery at South Hill.

They compose the bulk of “The Color of Distance” (Sept. 18- Oct. 17), her first one-person show in several years. The exhibition juxtaposes canvases completed during the pandemic with older paintings, as well as a grouping of her quirky, inimitable drawings.

Meanwhile, over at the Community Arts Partnership’s downtown ArtSpace — also known as the Ithaca College Gallery — “Finding Wholeness in Imperfection” (through Sept. 26), features paintings by talented IC senior Julia Bertussi. In different but complementary ways, both mature painter and student investigate the slipperiness of perception, the emotional resonance of movement and distance, and the rootedness of human interaction with the world.

It’s rare to find a local artist not only well-grounded in painting’s history but able to engage in constructive dialogue with past masters. Warner’s approach to the world of domestic objects shows clear connection to that of late 19th century French innovator Paul Cézanne, whose oils and watercolors deand re-composed pieces of contour and tone

into compositions both disarmingly alien and utterly proper.

In mid-20th-century American painting, her work draws from expressionists Joan Mitchell and Philip Guston. Warner’s objects add focus and depth to Mitchell-like animate skeins of paint. Daringly, she reimagines Guston’s late, cartoon-like style from observation.

Drawing is key to Warner’s radical painting. A wall of small, unframed line drawings in blue ink are a good place to start here. The patterned drapery of “Movement, a Series” sets a surprising new departure. Repeated, cartoony motifs — eyes and cable cars — reappear in her new paintings, adding texture and humor.

The two newest (both 2021) are particularly striking in their newly brightened, cleaned-up palette and unusual play with format. Recalling the complex interior/exterior space of Matisse’s “Red Room,” “Sometimes” carves up near and far in fragmented borderlines. “The Blue Distance” is an unusually configured diptych, with a widened-square canvas on the left and an upright on the right. A lovely, lucent blue — the exhibit’s guiding metaphor — threatens to engulf the pale pink objects that form a foreground loop.

Her older paintings, dating back to 2016, are just as good, if not always so immediately attractive. It’s remarkable just how much Warner puts into these paintings; there’s always something going on, even or especially in her backgrounds. Spiky, threatening-looking objects — gift package ribbons — attempt to dominate pieces like “Compress,” “Before Waking,” and “Hide and Seek.” Folds of fabric, doilies, assorted lumps and blocks and tubes, clot the picture-space, taking on lives of their own.

Like Cézanne, Warner asks what it means to see common objects. What allows us to identify patches of color as a bowl of fruit on a table? By further defamiliarizing her own

strange things, she does something new, if palpably indebted.

Although an outlier there, Warner’s work also bears comparison with what the critic and curator John Seed has recently identified as disrupted realism — or in an earlier and more colorful formulation, “discombobulation.”

A hardcover anthology (a copy is available at the local public library) of the former title defines the movement. The painters represented in the book work from the human figure.

They break-up — “disrupt” — recognizable forms, dissolving them into faces, limbs, geometric facets, and brushstrokes. They achieve a sense of incompletion through considerable skill and effort.

Twisting her traditionalist training, Julia Bertussi’s oils at CAP are more familiar as disrupted realism than Warner’s. Completed this past summer as part of IC’s H&S Summer Scholars Program, her pieces incorporate fragmented faces and bodies. Slickly rendered areas — typically faces or part of the face — dissolve into sketchy contours, patches of often thin, murky colors, and blank white space. Like much discombobulation, the effects are sometimes uncomfortably mannered but undeniably engaging.

Going for a Munch-like gothic sickliness, “Indisputable” is a particularly striking piece.

Loosely outlined in red-brown contours with dark gray and sepia washes, three figures nod off with palpable heaviness, barely supporting each others’ bodies.

Ithaca artists often seem both derivative and oddly disconnected: from the history of art, from vital contemporary directions — even from each other. Warner’s work, in particular, is a rich exception. It is heartening to see these two shows in the light that they cast upon each other.

s part of the ongoing “New to Me” Film Festival — basically me watching lots of movies I’ve never seen — I’ve been watching a lot of Nicolas Cage’s more recent movies. He’s working a lot for financial reasons, sure, and for lower budgets, but Cage still seems excited by acting. He’s alive and making his usual unique choices and taking chances. Say what you will about Rob W. King’s “The Humanity Bureau” (2018), a modest, slightly goofy micro-budget futuristic thriller, but Cage hasn’t turned into Bruce Willis. He’s not phoning it in.

I walked into Sion Sono’s “Prisoners of the Ghostland” (RLJE Films-Untitled Entertainment-Patriot Pictures-Union Patriot Capital Management-Eleven ArtsXYZ Films, 2021, 103 min.) expecting a schlocky, jokey action movie along the lines of Nicolas Cage in “Willy’s Wonderland” because Cage also stars here. But this is not a parody like “Black Dynamite” and the “Machete” movies. Okay, sure, we get a few chuckles from Cage’s gonzo line deliveries, but “Prisoners of the Ghostland” isn’t some hyper spoof.

There are affectionate nods to past pulp in this film, like a robot arm that recalls Ash’s chainsaw appendage in “Evil Dead II: Dead By Dawn,” but the big homage is clearly John Carpenter’s “Escape From New York” (1981): Cage plays a ruthless bank robber named Hero who gets sprung from jail by The Governor (Bill Moseley of “Army of Darkness,” clad like Colonel Sanders) of Samurai Town. The Guv wants Hero to travel to Ghostland to rescue his daughter (Sofia Boutella, so striking in “Kingsman: The Secret Service,” “Star Trek Beyond” and “Atomic Blonde”), who has been kidnapped.

But it’s no easy snatch and grab job for Hero. Just as Snake Plissken had explosive charges injected into his body, The Gov-

ernor fits him with what looks like a vinyl sex suit, also with charges ready to blow him to bits if he doesn’t play along. Despite the lunatic nature of the story, there’s a real beating heart inside this movie’s crazed mélange of costumes, sets, atmosphere and plot riffing.

This is my first time seeing the work of Sion Sono. He approaches this story with operatic energy and style, but slightly trashier than, say, Akira Kurosawa. “Prisoners of the Ghostland” is a visual riot of styles in every aspect. Samurai Town is all put together like the streets of Hong Kong, with all kinds of storefronts open for business, while Ghostland is eternally under construction, its buildings in the process of being built, with tarps tacked down everywhere flapping in the wind. Because its residents are so fearful of their collective future, townspeople are always playing tug of war, pulling on a rope attached to the minute hand of the town square clock (Perhaps a reference to “Back to the Future”), literally trying to stop time.

Having seen so many small movies enlivened by Cage’s eccentric energy, it’s nice to see a movie like this with a more substantial budget. And while Cage has fun with his lines of dialogue, he’s all in, whether it be the film’s many fight sequences, or a goofy moment when he starts out for Ghostland in a sleek sports car, switches to a little kid’s pink bicycle — a reference to “Pee Wee’s Big Adventure,” perhaps? — and then switches back to the car because it is actually faster than the bike. Somehow Cage plays the whole scene straight, which makes it much funnier.

The Kitchen is back with a soulful, nostalgic first show

fter 570 days (count ’em), live theater is back in the house, finally –– at the Kitchen Theatre, with an entertaining solo show, “A Boy and His Soul.” And safe viewing is the watchword: 40% of the seats are left open to allow comfortable distancing, and patrons are required to show proof of vaccination or a recent negative test result. And of course, everyone is masked.

Now that you’re reassured, get ready for some classic soul, R&B, and disco tunes –– music that for some of us never gets old.

Equally true for Colman Domingo, the playwright, who’s sharing his own story of growing up in West Philly in the 1970s.

(The multitalented Domingo performed the role when it premiered at the Vineyard in 2009; the play won several awards, including the Lucille Lortel for Best Solo Show.)

Here the performer is smooth talking and swing stepping, the energetic and

warmly personable Jaquay Lamar Thomas, as Jay, a self-described nerd, who’s revisiting his family’s former Philadelphia home, which is about to be sold. The action takes place in the basement, where he discovers boxes of old albums, the music of his youth and the soundtrack for the raucous, loving life of his family.

As JJ narrates his memories, recalling backyard barbecues and musical battle royales, we’re nodding along to the refrains and rhythms of The Temptations, James Brown, Glady Knight, Curtis Mayfield, Earth, Wind, & Fire, Switch… and of course the incomparable Marvin Gaye. (With a little Tom Jones thrown in, for Moms.)

JJ’s story is about growing up Black and gay, when that wasn’t exactly cool, and how his family accepts him, each in their own distinct way –– his fiercely devoted mother; his mensch of a stepfather, Clarence; and his outrageous, outspoken,

chain-smoking sister Averie. Thomas transforms into each of them easily, comically, lovingly; his spirited performance carries us past the play’s ever-hovering excess nostalgia into real emotion for those cherished and times past. (Double-dare you to resist Thomas singing and dancing

to “You’re the Best Thing That Ever Happened to Me.”) If these harmonies of the ’70s and ’80s don’t provide your own personal time machine, well, that’s kind of sad, but still, Thomas’ engaged performance will carry you. And the production’s ambience is attractively crafted, refreshingly, with a creative team that’s entirely artists of color.

The well-paced direction is by Stephanie Weeks; the all-encompassing sound by Chris Lane (who’s work we’ve heard here before). Victor En Yu Tan effectively lights JJ’s memories on that basement set by Marie Laster, with its faded floral wallpaper and scuffed wooden steps. Costumer Deletris Bryant makes sure JJ is stylish and smooth (as he’s now, after several rites of passage, a man comfortable in his gayness).

JJ has discovered his family’s abandoned albums, but he too leaves them behind –– he’s internalized their meaning, these records of their lives.

With this show, the Kitchen, now under new leadership, is off to an auspicious season. And look forward to November’s show, “The Thanksgiving Play,” a satirical comedy by Native American Larissa FastHorse. (I saw it in New York a few seasons back and found it delightful.)

rarely, if ever, voluntarily dine at a motel restaurant unless I find myself out-ot-town and staying in a motel far from other dining establishments. Living at home, in Ithaca, I usually don’t choose to eat at a motel restaurant. However, I do visit the Royal Court restaurant which is part of the Meadow Court motel on Route 13, every few years to update Times readers.

Let’s start with some generalities that haven’t changed since my last review four years ago: Evenings it has a loyal clientele at the bar and in the restaurant and a large portion of seniors comprise both cohorts.

There’s a ‘50s feel about the place, partly due to the patterned wall-to-wall carpet, the plastic tablecloths, the small basket of artificial plastic flowers on each table, paper napkin squares, pendulum Tiffanytype lamps and wall paneling. One of the owners, not knowing I was reviewing, told me she was in her fifth decade of operating the restaurant and a waitress told me she, too, had worked there 45 years.

I think of most of the food offerings as comfort food.

The menu hasn’t changed much except for the expected rise in prices over time.

(Dinner entrées are $12.95-$25.95).

It is noisy at dinner time as the regulars at the bar often get a head start on the diners in the adjacent dining area.

The food is dependable and wellcooked without the use of many seasonings or flavorings. I think of it as if the cooks wanting to be on the safe side and not wanting to offend anyone.

During lunch, the Reuben sandwich is authentic, served on marbled rye with corned beef, Swiss cheese, and sauerkraut.

It’s predictable and pleasant. One side dish is included and I chose coleslaw which is homemade with minced cabbage and tasted like it had sugar in it. All in all, a non-spectacular but enjoyable lunch.

The spinach salad was served with sliced hard-boiled egg, some mushroom slices, and crisp bacon crumbled and strewn across the top. The portion wasn’t large but perfectly reasonable for lunch time.

One evening I chose a special that isn’t on the menu: “Pork Osso Bucco,” which puzzled me. I’ve had many Osso Buccos

none is offered by the bottle.

You can order wine by the glass ($6), half-carafe ($17), or carafe ($34) however you won’t know the country of origin, the winery, or the vintage. Actually, even with the limited offering, the long-term servers I queried didn’t know the price of a carafe which led me to believe that the clientele here orders beer more often than wine and, in fact, there are more than twice as many beers on the menu. Once I ordered “Sauvignon Blanc” only to have the waitress return from the kitchen to ask

in my life and all have been from veal, i.e. cow. Osso Bucco, a classic Italian dish originating in Milan, is the hollowed bone between the leg and shoulder of the animal. The veal is normally slowly braised in a broth of white wine and seasoned stock, along with vegetables. This entrée, which could have been called pork shank, was tender and did seem slow cooked, however, instead of being offered in a thin broth it was smothered in a heavy tomatobased sauce.

Another dinner time I had a salmon filet which was cooked perfectly — not so easy to do with a fish that is thick on one end and thin on the other. It was juicy without being fatty and was accompanied by broccoli.

I recently ordered Portabella Mushroom Supreme ($13.95) and enjoyed it.

However I wish there had been more of it.

The mushroom was quite small and was topped with roasted red pepper and spinach. My companion and I agreed, because of the size of the portion, it would have been more appropriate at lunch time.

On Saturday evenings a “slow roasted prime rib” is featured for $24.95. It was a generous portion of tender meat although it was fatty. It was very pleasant, though I would have preferred some identifiable seasonings of some sort.

The wine menu needs help. Not offering a Dry Riesling or a Cabernet Franc in the heart of the Finger Lakes, in my opinion, is a serious error of omission. There are BUSINESS INCLUDE: less than a dozen PATRONS total wines on offer and
