The OTTOMANS Coffee and coffeehouses were well established in the Levant before coming to Istanbul. Spreading north from Egypt up through Syria, by the mid-sixteenth century coffeehouses had become the most important institutions of social intercourse. Unlike the degenerate pits described by some writers, the coffeehouses in cosmopolitan centers of the Levant, like Damascus, were luxurious—consciously modeled on the Arabic vision of Paradise. Many of them were situated by parks and rivers and had a relaxing, garden-like atmosphere. Inside, there were plants and sometimes even ornate fountains. Customers would sit on benches and divans that lined the walls. Outside, there were seats for those who wanted to drink in the cool of the breeze and, like habitués of the modern metropolitan café, watch the passers-by.

Do you boil it, bake it, or fry it in a pan? For many hundreds of years the answer seemed to be to grind the whole thing up, mix it with oil or grease, and spread it on something, as one would com do with butter. Except this was butter with a kick. It was, historians of commodities believe, used by nomadic tribes to help them go that extra mile when things were especially difficult—giving them a little boost when they were running on empty. But there is also evidence of something more sinister. Stories emerged of a trail of tears lined with coffee trees leading through Kenya along the route where the slavers took their human cargo. The berries may have been used, some think, to keep those half-starved captives conscious enough to complete their hellish journey.

t was at that very moment that a strange vision appeared to him: a goat that had been nibbling at the ripe, red berries from one of those mysterious Antoine Galland, a professor of Arabic in Paris and one of the early writers trees that had grown on the hilltop since time began (or, at least, as far back on the subject of coffee, talked about witnessing an amazing procession of as memory allowed) suddenly stood on its hind legs and started to dance. the Istanbul coffee guilds late in the seventeenth century. By the seventeenth century the consumption of coffee in Turkey had become an economic force to be reckoned with. It was soon so prevalent a drink that the Grand Viziers used part of their fortunes to build ornate coffeehouses, rented them out, and watched their earnings soar. Women used the withholding of coffee by their husbands as a legal excuse to sue for divorce. And wealthy agas, when they were feeling especially benevolent, would order that a pot of coffee be brewed to fill up the begging bowls held in the trembling hands of the caffeine-starved Coffee: A Life dervishes who waited, restlessly, outside their houses. In 1638 a comprehensive survey of Istanbul was begun in order to try and disentangle the complex infrastructure that had become an organizational nightmare for the new sultan, Murad IV. The result gives a fascinating insight into the melange of competitive forces that radiated from the administrative center of the Ottoman world. What stands out, strikingly, is its enormous diversity: the cultural, ethnic, and religious make-up of Istanbul in the seventeenth century shows it to be one of the most cosmopolitan cities on earth. Though the ultimate authority was A thousand years ago in the highlands of Abyssinia—the country we firmly in Muslim hands, the population itself was a heady mix of almost now call Ethiopia—a young goatherd was looking after his flock.
