Spring 2016

The Cell The origin of life The microscopic cell is Earth’s greatest success story, and the common ancestor we share with all other organisms. Formed over three and a half billion years ago, life exploded from this minuscule powerhouse, first in the sea and then, over millions of years, across the land to create the complex living forms populating the planet today. How has such a minute organism been so powerful? What has enabled it both to create and to break down life on Earth over billions of years? And how have cells interacted to create such an extraordinary diversity of life? Here, Jack Challoner shines a spotlight on the story of the cell to explore how a myriad of interactions and symbiotic relationships have been the extraordinary catalyst for life. Jack Challoner graduated in physics at Imperial College, London University, and worked in the education unit at London’s Science Museum before launching a career as an author specializing in science and technology. He has written more than 40 books, including The Story of Science (2012) and Real Lives: John Snow (2013). He has also developed television programs for the BBC, and acted as a scientific consultant on numerous books and articles.

Spring 2016

100 of the world’s most remarkable examples, profiled and illustrated ✱ Each virus profile features visuals, maps, and lively text to highlight key features ✱ With 100 examples, selected to reveal the extraordinary diversity of the viral world ✱ A global overview that uncovers the microlife teeming around us

Viruses are the last frontier of undiscovered life on our planet. The most abundant type of organism on Earth, they infect all types of cellular life, and, as micro-organisms that cause disease in their hosts, they are highly opportunistic and relentlessly efficient. They exist at the vanguard of DNA variance, exhibiting more structural diversity than plants, animals, archaea, or even bacteria. This 21st-century guide offers an engaging introductory section explaining exactly what viruses are and how they operate, followed by individual profiles of 100 of the world’s most notable examples, each with its own dazzling mugshot. Dr. Marilyn Roossinck is Professor of Plant Pathology and Environmental Microbiology at the Center for Infectious Disease Dynamics at Penn State University, and the Sir Walter Adjunct Professor at Murdoch University in Perth, Australia. She has published a large number of scientific papers, and writes for Nature magazine, Microbiology Today, and other popular science publications.

30-Second Shakespeare

The 50 most important achievements of a timeless civilization, each explained in half a minute

The 50 crucial concepts, roles, and performers, each explained in half a minute

50 key examples of his works, influence, and legacy, each explained in half a minute

In the West, the story of Ancient China is less familiar to us than that of Ancient Egypt or Rome, but it is no less absorbing, and its rollcall of achievements is easily as impressive. 30-Second Ancient China unlocks the secrets of its Bronze Age glories and offers summaries of everything from the lost cities of the Zhou kings to the birth of Confucianism—the perfect introduction to one of the great ancient civilizations.

Live operatic performance was once part of popular culture yet in modern times it has become caricatured as exclusive, overwhelming, and often very, very long. 30-Second Opera raises the curtain so that anyone can enjoy opera without the elitism. Compiled by respected opera buffs, it serves up all you need to enjoy the spectacle, the music, and above all the voices—from Farinelli to Fassbaender.

30-Second Shakespeare uses the unique approach of the bestselling 30-Second series to grapple with the work and influence of the world’s most famous playwright. Ponsonby’s Curious Compendium

Sea Creatures

Insects & Spiders

For centuries, naturalists have created intricate illustrations of the sheer diversity of the ocean. Ponsonby’s Curious Compendium: Sea Creatures reproduces more than 600 engravings, offering a panorama of the world that sea-dwellers inhabit, from the whale to the shrimp—a tour of the deep that is full of surprises.

Insects and spiders hold a powerful allure—their design is so complex and their scale so entrancingly minute. This compact book, itself hardly bigger than the world’s biggest beetle (which is over five inches long, by the way), contains a generous selection of engravings, every one crammed with detail and enhanced by informative text.

An egg-centric guide to raising poultry ✱ A practical guide to choosing chickens for the most colorful and plentiful eggs ✱ Beautifully artworked feature spreads profile the cock, hen, and egg of the top breeds ✱ A complete reference for keeping healthy chickens, whether you have just two or three, or a flock

The urban chicken movement shows no sign of abating, with home-raised hens considered the poster girls of urban farming campaigns. Chicken & Egg is designed for the new broad hen-owning readership. It offers a complete guide to raising chickens purely for their eggs, featuring artworked guides to the top breeds. It should be on every chicken enthusiast’s must-have list.

CHICKEN & EGG An egg-centric guide to raising poultry

Andy Cawthray is a writer and poultry breeder based in Shropshire, UK. He is a columnist for a number of magazines and newspapers, including The Guardian. James Hermes is Head Advisor, Extension Poultry Specialist, and Associate Professor at the Department of Animal and Rangeland Sciences, Oregon State University. He studied Avian Sciences and Genetics at the University of California.

The Araucana Origins

Features

The Araucana originated among the Arauca tribe of northern Chile, and a British standard was established in Scotland in the early 1900s by George Malcolm. The breed is now raised worldwide.

With its attractive appearance, excellent temperament, and colorful eggs, the Araucana is a popular choice among garden and backyard keepers. A reliable and prolific layer, it usually produces its first eggs at around ten months.

The Araucana cock weighs in at 6–7lb (2.7–3.2kg) and is alert and active. It has a bright-red pea comb and this Lavender example has a blue-grey plumage that is even throughout.

Choosing the right birds to make up your flock is like selecting the best ingredients with which to mix a cake. It’s all very well choosing a dozen components that taste delicious on their own, but if they don’t blend well then you’ll have egg on your face. There are some basic rules to ensure a happy and healthy barnyard.

Temperament

Well-tempered, calm and trusting, the Araucana is a pleasure to keep. It is relaxed when handled and easily tamed.

The Araucana hen exhibits the

pea comb, tufted ears, and lack of wattles, features that combine to make it a very attractive bird. The face is bright-red, the body deep and long, with an average weight of 5–6lb (2.3–2.7kg). This hen has a Lavender plumage, though color variations include Black, White, Silver, and Golden.

The Araucana is an easy-going breed notable for the exquisite pale-blue or pale-green eggs that it lays—up to 200 a year—and as such it deserves its place among the top twenty egg layers. It is related to South American breeds including the Collonca, Quetero, and South American Rumpless. 70

Top 20 Breeds

Andy Cawthray & James Hermes

Care

The Auracana is a hardy breed and willing forager, so care is relatively easy. They are tolerant of heat and cold, fast growers, tough birds, and good flyers to escape predators. Buyers should be careful to buy true Araucana chickens, rather than the hybrid Easter Egg birds, and be aware of the bird’s tendency to go broody. There is also an issue with the gene that creates the tufted ears, which can make breeding difficult.

There are over 200 chicken breeds, so it is essential that you carefully outline your requirements and shortlisting the breeds that are most suited to meet them. If you buy the wrong breeds, you are buying yourself endless problems to solve. If you buy the right breeds, then your flock can quickly become very rewarding, both in terms of fun and as a source of fresh food and potential income. There are a variety of factors to consider, which you can convert into a checklist based on the mnemonic on the right. These individual topics will be considered in depth on the following pages, helping you to identify the breeds that are best suited to where you live, why you want to keep chickens, and what type of breeds appeal to you. Climate is an important factor, as is the environment and space in which you plan to keep your chickens. If you live in a hot climate, where temperatures are up in the nineties in the summer, then you will need to consider “light” breeds such as Seramas or Leghorns

The Araucana eggs are the only blue eggs

produced by a pure-bred domestic chicken. The original turquoise-blue color has been diluted by breeding; today most eggs are powder-blue, sky-blue, or green.

The Araucana

who will be suited to those conditions. If, on the other hand, you live in a climate where temperatures are likely to drop below thirty degrees in the winter, then heavier breeds will be more likely to thrive. You should also consider the number and size of birds that you intend to keep, in relation to the space and size of coop you will be able to manage. There are arguments to be made both for and against hybrid and “superhybrid” breeds. Hybrids can look spectacular, and they may have been bred to lay eggs from a young age and to produce a high number of eggs each year. Traditionalists, though, would argue that older breeds are more hardy, less prone to disease, and cheaper to keep as they are better foragers. The Australorp is a gentle and amicable bird as well as a top layer—it holds the record for the most number of eggs laid a year. In any breed, though, a rooster like the one shown here will tend to be more aggressive than the hens, establishing its place at the top of the pecking order.

Key considerations when choosing your flock:

C

LIMATE Will your birds be subject to extremes of heat or cold? If you live in a hot climate, you should look for “light” breeds, while heavier chickens are better suited to a colder coop.

H

YBRIDS Do you want to keep hybrids or

traditional breeds? Hybrids can be both attractive and productive, but there are advantages to reliable traditional breeds such as greater immunity to disease.

Why did the chicken... ...peck the other chicken? The social order of chickens is established and maintained by the “pecking order.” The dominant hen will have first call on food, drink, and roost, and each hen in your flock will defend her position by pecking those lower down the order.

I

NDEPENDENCE Do you want pets or more independent birds? Some breeds are happiest and healthiest when left forage, while others will respond better to more human interaction.

C

OMPATIBILITY Are you sure that your chickens won’t fight? If you are choosing a mixed flock, you should check carefully that the breeds are compatible and will form a happy pecking order.

K

EY GOALS Are you keeping chickens for meat, eggs, or show? The focus of this book is on keeping chickens for their eggs, and the first step toward this is simply to choose good layer breeds.

E

GGS Will your chicken lay the desired number and type of eggs? Different breeds produce different color eggs, while some strains also have their performance bred out of them when bred for show.

N

ATURE What sort of temperament is your chicken likely to have? Some chickens can be quite aggressive, while other breeds are docile.

Tiny House Build

Spring 2016

Cabin, hut, or hideaway: construct your own There is something so beguiling about tiny houses— they promise a retreat to the basics, a perfect small space of your very own. There are plenty of tiny house look-books out there, but none that show you exactly how to do it yourself ... until now. Tiny House Build includes technical advice, explanatory line drawings, information about preparation, timber, materials, and equipment, and a cutting list for each job, ready for you to take straight to the lumberyard. You can get started right away. Mark Griffiths is an expert designer-maker with a passion for sharing his craft with others. Mark has written for The Woodworker, Furniture & Cabinet Making, Practical Woodworker, and Woodturning. He is Features Writer for Good Woodworking, has contributed to a variety of books, and is the author of Woodworking for the Weekend: 20 Projects Using Reclaimed Timber.

MARK GRIFFITHS

✱ Includes instructions, scaled plans, and stepby-steps; everything you need to build your very own tiny house

4

Tips •

The headers are required to provide support and strength over windows and doors. Headers can be made up in many different ways depending on the window size and weight of the roof. For this cabin I've used two 100x50mm/4x2" lengths fixed side by side at the top with one 100x50mm/4x2" sitting below.

Steps

4

After using your spirit level to check the frame is at 90 degrees to the deck, fix a nail through the end of one bracing bar into the deck, and remove the other. Onto the non-braced end, fix a blocking stud made from two100x50mm/4x2" lengths nailed together, making a 100x100mm/4x4" section. You can now start work on the frame for a sidewall; this will be built and fixed in the same way as the front section and finally the last sidewall.

STEP 2

STEP 3 All that is left to do is raise the frame, line it up so that it is flush with the edge of the deck, and 100mm/4" in from its ends. When you are happy with where it stands, fix it in place with 95mm/3&¾" deck screws at roughly 30cm/12" intervals.

1

1 Lay out, on the base deck, the component parts and line up with each pencil mark. Then reach for your hammer and a fistful of 75mm/10d nails and start framing. Having the components lying on the deck will help keep the parts flush with one another.

2

2 Put your foot on the studs to hold in place while you drive home the two nails for each joint. With all the centre studs fixed in place along with the window headers, finally nail the two side studs on. Again, check the frame is square by running a tape measure across opposing corners, a shunt by hand or a blow with a large mallet should be enough to correct.

3 This size of frame can be raised by just one person; however, if you happen to have one or two buddies ready to lend a hand, now is the time to call them over. If you are working alone, fix two timber lengths with a single nail at the top to the frame sides. Have these side supports overhanging the base of the frame by roughly 50cm/20", as the frame is raised they will swing out and provide some support. Also place a couple of cramps within easy reach; these can be used to secure the sole plate to the base deck.

3

5 After standing back and admiring the lodge taking shape for a few minutes, cut the top plates to size but don't fit them yet as its far easier to mark up the rafters with the plates safely at ground level on your saw horses. As before cramp the long front and back plates face to face and mark the rafter positions following the lodge plans and the 40cm/16" between centre rule. When marked transfer these lines to both edges of the plate. Take one of the 320cm/106" sills and lay it onto the roofs 380cm/149½" ridge beam, centring it so that you have a overhang of 300mm/12" on each end. Transfer the rafter positions from the top plate to the ridge beam, transcribing them on to each face of the beam. Now the top plates can be fixed in place on the top of your frame walls.

6 A traditional bird’s mouth joint will be used where the rafter meets the top plates; it is quick and easy to make and creates a strong weight-bearing connection. By far the best way to set out the rafter joints is by using a speed square, this is a handy, inexpensive tool that will slot into your tool belt with ease, useful for a wide range of marking up tasks. 7 Start by pushing the speed square up against the end of a 100x50mm/ 4x2" lumber length, with the face of the square on the 100mm/4" wide side. Look for the right angle corner of the square where it says 'pivot'; holding this pivot point tight to the lumber, you should drag the opposite end of the square down until the lumber’s edge lines up with 9 on the common scale. Then pencil mark a line along the right-angle edge of the speed square. From where your pivot point was, mark along the lumber 835mm/72" and make a 90-degree pencil line.

Tips •

Get into the habit of checking the frames are 'in level' after each process. This will tell you at which point things went wrong so enabling you to right the problem before it is too late. A frame that is out of square can be adjusted using of temporary props; nailed into place, these will keep walls in square until the OSB board has been fitted this will keep the walls true. STEP 5

It is well worth taking time to read through the instruction leaflet that comes with your speed square and finding out just what its capabilities are. STEP 7

8 Working from the top of one of these scribed angles (the pointy end), measure in 120mm/4¾". Place the pivot point here and again line up with 9 common then score a line, this time only 50mm/2" long. Twist the speed square so that the one of its 90-degree faces lines up along your 50mm/2" line, then pencil a 90-degree line back to the lumber edge.

10

9 Run a quick check. You should have a marked-up rafter that is 835mm/72¾" long with: 1. Two ends at the same angle running in the same direction; and 2. A bird-mouth joint marked 120mm/4¾" in from one sharp end. Once you are satisfied you have the above, then cut along all the pencil marks. This will provide a template for the other fourteen rafters, however before they are cut it is best to reference this up to the ridge beam that will run the length of the roof.

10 The ridge beam has to be fitted in place prior to the rafters. To achieve this, temporary supports must be fitted in place either end of centre. Screwed or cramped to the end wall and extending up slightly above the top of the beam, they must be fitted with lumber blocks onto which the ridge beam will sit, giving a distance of 900mm/35½" between the base of the beam and the top sill. Lift the beam into place and cramp to the supports, being sure to line the rafter reference lines with those of the plates.

TIN Y HOUSE BUILD

SHINGL E LODGE

23

11 Check your rafter against the ridge beam and top plate. If both joints line up nice and snug, go ahead and cut the rest of the rafters, marking the joints from the first. Line the rafters up with each pencil mark, then drive two 75mm/10ds into each joint.

The Art of Making Shadows

How to Avoid a Lightning Strike

Create 100 creatures

190 essential life skills

Using only your hands and a torch, the game of casting shadow animals has an enduring charm. So, if modern party games seem soulless, bring out The Art of Making Shadows. An hour’s practice will have you demonstrating the roar of a lion and the snap of a crocodile; soon you’ll be putting on an entire show. Friends will become competitive and children will queue to learn how to create their favorites.

It’s an urban jungle out there, and if it’s not the survival of the fittest, it’s certainly the survival of the most practical. But how’s a boy or girl supposed to learn life’s essential practicalities in these days of hustle, bustle, and laid-back parenting?

Sophie Collins is a writer whose study of Victorian texts unveiled a talent for casting shadow animals. Specification 165mm x 137mm • 388pp 2x2 • pb • est. 13,000 words 130 pics

How to Make Coffee The science behind the bean Caffeine is the most widely consumed mind-altering molecule in the world; we cannot get enough of it, and drinking good coffee is our delivery system. How is it that coffee has such a hold? It’s all in the chemistry; the molecular structure of caffeine and the flavor-making phenols and fats that can be lured out from the bean by roasting, grinding, and brewing. Making good coffee depends on understanding the science: why water has to be at a certain temperature, what method works best with which grind, how roast affects taste, what happens when you add cream, which bean you start out with. How to Make Coffee lays out the scientific principles for the coffee-loving nonscientist; stick to these and you will never drink ordinary joe again. Lani Kingston is a culinary journalist, a researcher, and a trained chef from Melbourne, Australia—one of the world’s leading “coffee cities.” She travels the world, researching food and drink culture, methods and ingredients, and has consumed and studied more types of coffe than she can count in locations ranging from Mexico to Malaysia. ✱ A clear and fascinating guide to the chemistry of coffee ✱ Comprehensively covers every coffeemaking method ✱ An invaluable handbook for home baristas and coffee lovers

Fall 2015

The science behind the leaf How do you like your tea? An ethereal infusion, the ghost of a scent wafting across your taste buds? Or a mug of traditional brew, so strong that three spoons can stand up in it unaided? We’ve been drinking tea for thousands of years, yet few of us realize that all tea types—from elegant lapsang to pungent pu-erh—come from the same source. How so? It’s all down to science: geography, biology, chemistry, and physics, the application of heat and pressure, and the magic of time and enzymes. Making good tea depends on understanding the leaves in your pot, what water temperature they need, and how long they should infuse. How to Make Tea lays out the scientific principles for the tea-loving nonscientist; stick to these and extract the best from every cup you make. Elinor Hartford studied biochemistry at the University of Cambridge, in part inspired by learning about tea from her uncle, a renowned tea blender. Hartford has gone on to become a Certified Tea Taster herself, and with her partner has established her own import business, buying rare teas from all over the world.
